Shame on me! It's not that I stopped cooking, or disappeared off the face of Earth. It's quite the opposite, really. My job keeps me busy, and so does my husband.

Oh yeah, I got married in December, so there's that. We moved in together in September after a really long and grueling process of apartment-hunting. We finally settled on a place that I still kind of hate, but it looked like it was the best option at the time. And here's a thing: my kitchen is still damn small! But at least it has more storage space than my mom's kitchen did, so I manage.

So things are pretty good, generally speaking. I should start posting again soon. I am actually trying to make ice cream at the moment, so if that turns out fine, one brand new post is coming up. In the meantime, enjoy the silence.

Changes

The last time I reincarnated this blog was when I lost my job at the end of last year. I've been unemployed and miserable for a little over 6 months, and blogging has had sort of a therapeutic effect on me. And of course there was the cooking part, which I really got into.

As you can tell, I've been really inactive lately. First there was a problem with bed bugs, which grew into renovations in my apartment, which coincided with Passover, which was the time when some major things happened in my fiance's business (and personal life), which affected me as well. I haven't shared anything about the latter, but we had just started seeing our way out of that tunnel of doom.

And as of Monday of this week, I am employed again. I'm still in training, and I feel like I'm going to lose my mind any minute now, but eventually I'll get comfortable with the hectic environment at the office and get my mind back into place. Still nowhere near the field in which I got my B.A., but it's a job and it pays. Hopefully, within the next month I can find a new apartment so the boy and I can finally move in together and get married.

I am not going to archive this blog. I will try to find time and energy to cook and share recipes. And hopefully my new kitchen will be more than measly 10' by 6'.

Rammstein show videos

Finally uploaded my videos from the Rammstein concert at the IZOD center from this Thursday. I think I could probably eat lentil-based food every day and never get tired of it. Of course, as luck has it, lentils are high in oxalate. High oxalate foods are a no-no for me right now. But I figured that I've been good for a couple of weeks with my diet, so I could cheat a little. So a cheated with this wonderful soup, which is easy to make and delightful to eat.

1/4 cup lentils
1/4 cup black-eyed peas
1 cup dry noodles
1 onion
1/2 green bell pepper
4 quarts beef broth

1. Soak lentils and beans in cold water.
2. Chop up the onion and begin sauteing. When it starts showing some color, chop up the bell pepper and add to the saute for about 5 minutes.

3. Bring beef broth to a boil (make one from scratch, tastes so much better) and add the lentils and the beans. Let them cook for about 20 minutes.

4. When the beans are half-way cooked, add the noodles. Cook for about 10-12 mins.
5. When the noodles are almost done, add the saute, season to taste, and cook for 5-7 more minutes.

Easy! And it tastes so...clean. Each individual ingredient has its own flavor, not masked with anything extra. You'll love it.

Diets, I Hate Thee.

Saw my nephrologist yesterday, expecting good news since I haven't had any pains lately. However, my results came back withe some bad news. My liquid levers are way too low, therefore oxalate concentration is still too high. This basically means that I have to stay on this low-oxalate diet for the rest of my life, quite possibly.
So back to boring food for me. No coffee, chocolate, spinach, strawberries and other wonderful things like that. I guess the plus side to this would be that I can devote most of the space on this blog to low-oxalate recipes, so other people with this problem don't have to search high and low for their dinner options.

Happy Passover!

Tonight we will be celebrating the first day of Passover (Pesach), which is a Jewish Easter. I'm celebrating mainly for secular reasons. Also, that's my last name. So today's recipe will be Pesach-oriented.

I figured that most everyone will be writing about their variations of a matzo-ball soup. While I love that soup, I decided to write about something that's traditional for my family, and Jews from the Caucasus area. Both of my parents are from there, so that's what we eat. It also happens to be my most favorite dish.

It's called "Hoya-Goosh," which literally translates as "eggs and meat." We make it with poultry, and it is divine.

Yields: 4-6 Servings. Prep time: 1 hr. Cook time: 25 mins
3 large onions
Half a chicken, cooked
4 eggs
2 cups chicken broth
Salt & pepper to taste

1) Chop the onions into rings and begin sweating them.

2) While the onions are cooking, shred your cooked chicken with your fingers. I did the whole chicken in prep for tomorrow.

3) Once your onions start turning translucent, add some chicken broth to keep it moist.
4) When the onions become golden-brown, add the chicken and some more broth. Combine and season.
5) When the chicken starts to brown up a bit, whisk 4 eggs and pour over the mixture. Even it out with a spoon and cover the lid. Let cook for about 8 minutes, or until the eggs set.
6) Serve by itself or over white rice. When the juices seep through the rice, you will be rewarded with a clean, yummy flavor.
Renovations have finished yesterday. Just have to clean up a bit and enjoy the temporary newness. I promise I'll start posting food-related posts starting next week.

What am I overjoyed about, is the fact that I won a ticket to Outnet's birthday sale this year. High-end designer items for only $2, with a limit of 1 item per ticket-holder. Lat year's $1 sale was pure madness, so they got smart and limited the amount of people that could participate. I ended up scoring a beautiful Valentino dress that retailed for a bit over $4K for only two bucks. Early birthday present :)
Still living "out of a box," so to say. Pest control is coming back on the 7th of April, and after that there will be some wall paining and something else. So all in all, I probably won't be cooking/baking anything major for the next 2 weeks. Maybe some chocolate chip cookies, since I've been craving them a lot lately.
But I can't really have chocolate.
But I want to.
But I shouldnt.
Ah, these dilemmas I must face. Woe be me.

In better news, I'm finally starting to get some responses from the places I've been applying to. Yesterday I got a call from Warner Bros. in regards to my application for the position of an Executive Assistant. Hoping for an interview. Also got e-mails from two marketing/PR firms asking for my writing samples. Hopefully they're good enough to score me interviews. Keep your fingers crossed.

I'm still busy with all the crap that's been happening around here lately. I just wanted to stop by and talk briefly about two things.

1) Japan needs our help! The news don't stop, and the updates are not looking good. It's been over a week since the earthquake and the tsunami, but the destruction is continuing. The whole thing with the nuclear power plants is extremely dangerous and frightening.
Please donate whatever you possibly can to help. There are a few ways to do it. If you want to send money, Red Cross is the best way to do it at www.redcross.org Many companies match their employees' donation, so check with your firm. Also, if you're a Chase card holder, you can donate with your reward points. Other banks might be doing that as well; I know about Chase's program because I bank with them. Red Cross is also taking clothing, soap and other necessities as donations. If you can't contribute financially, this is a great way to help as well.

2) And on a less serious note, since I haven't been posting any pictures of food lately, here's a saliva-inducing website, in case you haven't heard about it before--Food Porn Daily. Enjoy.

Infestation

I haven't posted anything food-related in a week. I haven't forgotten about this blog. I just haven't really cooked anything. It's been 6 months since I lost my job, and it getting more and more depressing each day. I just can't catch a break. The only people who seem to respond to my job queries, are scammers.

To make matters worse, last night I found bedbugs in my bed. We've had them for at least 2 months now, but we didn't know what it really was. My mom has been getting bites this whole time yet we could never find the source. And last night I found it. Big, fat, nasty things full of my blood.

We got rid of two couches, washed our bedding sets, sprayed our mattresses with anti-bed bug solution, and covered them in vinyl covers. There is so much more that needs to be done about this, and it's overwhelming. The pest control company basically wants us to remove everything from the apartment in order to come here and do their thing. Sure thing, only where the hell will he put all this stuff?

We should really move out from here, but NY is so damn expensive, it's imposible to find a decent apartment within our budget.

And that's what's been happening lately.

Happy International Women's Day!

Girls, women, mothers, sisters, daughters, grandmothers, mothers-in-law, friends, etc., today is your day! Since I lost my job, I've been going to sleep way too late, and waking up midday. Today, however, my cat woke me up earlier than usual with her hysterical cries. I thought something was wrong, but she was just bored and needed attention. As soon as she got my attention she attacked my feet, where I now have a huge scratch. Well I couldn't sleep after that, so I turned on the TV, where Ina Garten was preparing a meatball and spaghetti dish for her boss. I immediately called my mom to ask her to get me needed ingredients after work, and took notes. Meatballs from scratch is not a difficult task, as I used to think. Delicious and easy = repeat recipe for life.

Adapted from Ina Garten's Meatballs and Spaghetti.
Yields 6-8 servings

For the meatballs:
1 lb of ground beef (80/20)
1/3 cup fresh bread crumbs
1/4 cup seasoned bread crumbs
2 tbs chopped fresh parsley
1 egg
1/3 cup warm water
1 tsp nutmeg
1/2 cup grated parm
1 tbs salt
1tbs ground black pepper
2 cloves garlic, minced

For the sauce:
1 medium-sized onion, chopped
1/3 cup wine
2 cloves garlic, chopped
2 tbs chopped fresh parsley
1 can (2lbs) crushed tomatoes

1. Combine all of the ingredients for the meatballs together with your clean hands. Be thorough.

2. Heat a mix of olive oil and vegetable oil in a pan. Form balls with your hands in and them in the hot skillet. Work in batches, about 8 balls per batch. Brown them on each side and place on a cooling rack lined with paper towels.

3. Get rid of the oil from the pan, and add a little bit of fresh olve oil. Keep the bits and pieces of meat. Throw in the onions and saute until translucent, about 8 minutes.

4. Add garlic to the pan. After about a minute pour in the wine to de-glaze the pan on high heat. Let it reduce.
5. Open up your crushed tomatoes and dump them right into the pan. Add parsley, any additional seasonings you like, and mix everything together.
6. Put the meatballs into the sauce, cover, and simmer on low for about 30 minutes.

7. Serve hot over pasta with more parmesan.

I was going to make doggy treats, but most of the recipes call for wheat flour, which I don't have. Then I found a stick on butter on the table, nice and soft, and remembered that I took it out in the morning, but then fell asleep again. So I plugged in my mixer and made these delicious human treats.
Everyone loved them, even my mom who hates peanut butter. My brother said they taste like Reese's cups in a cake form. I disagree, but to each their own.
It reminds me of sushi. I haven't had sushi in about half a year because raw fish=bad for me kidneys. Eel and avocado roll is by far my favorite, and I can't have that one either. So I'm left with smelling soy sauce and sighing heavily.

This was my dinner yesterday (and my breakfast today). I over-sauteed the peppers, and you can clearly see that from the pictures. Next time I'll just throw them in later. otherwise this tuned out very delicious.

Yields 4 servings. Prep time 10mins. Cook time: 20 mins.

You'll need:
1 medium-sized onion
1 red bell pepper
1 yellow bell pepper
1 tomato
2 cloves of garlic
fresh ginger
1/4 cup soy sauce
2 pieces of tilapia fish

1. Cut the onion in half-rings. Begin sauteing in a tiny bit of oil.
2. Cut the peppers (add a green one too for good measure, I just didn't have it) and a tomato julienne-style. Add to the pan once the onions begin to show some color.
3. Cut the garlic and ginger (use the amount you like) in small strips as well and add to the pan once the peppers become a little bit soft.
4. Cut the fish in pieces you're comfortable with. I like smaller ones, plus they cook faster. Lay the pieces on top of the vegetables, pour in the soy sauce (I use low-sodium kind) and close the lid.

The fish will cook for about 10 minutes. After that time, open the lid, lower the heat and let it reduce for about 5 more minutes.
It was my fiance's mom's husband's birthday. Yeah, not his step-dad's, but his mom's husband's. Anyway, the food sucked, so we left early. I just wanted to share a picture of my outfit because this is the first time in a few months that I actually got all dolled up.
2 cups of chicken broth
2 chicken breasts, cooked
1 medium-sized onion
1/2 can sweet corn
1 celery rib
1 cup salsa
2 cups tomato sauce
1.5 cup red wine
3 cups small shell pasta
Salt & pepper to taste

1. Put shells on the stove and cook according to instruction on the box. I used shells with some other types of pasta for variety.

2. Chop the onion and sweat on medium-low heat.
3. Dice chicken breasts into cubes. Add into pan when onions become translucent.
4. While the chicken is browning, finely chop the celery and throw into the pan as well. Also add half a cup of chicken broth.
5. Get your favorite salsa and add about a cup to the pan. Depending on how spicy you like your food, add more/less. Stir into the contents of the pan.

6. Pour in another half a cup of broth. Now is also a good time to add corn.
7. Let that reduce for a couple of minutes. By this time the shells should be ready. Drain them and add to the pan. Stir everything together.

9. Add tomato sauce to give it some color and more flavor.
8. Pour in the wine, a cup of broth, salt, pepper and 2 teaspoons of dry garlic or any other seasoning you want. Mix well and let it reduce, 8-10 minutes.
My boyfriend introduced me to this delightful dish, but unlike him, I actually eat the onions. I love every ingredient, and the way it is cooked. Everything just works so well together.

Making my own version of it has been on my to-do list for a while. I've seen numerous recipes and shows on Food Network about this soup. However, I've never mustered up enough confidence to go ahead and make it. It is French after all, so it is definitely fussy.

Yesterday I was home alone.
I was also hungry.
I saw some onions.
I had an idea.

I decided to caramelize a bunch of onions, and if they turned out good, I'd go ahead and make the soup.
Confession: I've never had any success with caramelizing onions. They always end up either over-sweated, or burnt. I just couldn't get it right.

This time was no different. They were under the lid for about 20 minutes first. Then I lifted the lid to check up on them, and the steam burned my fingers. After a little bit more time, the caramelization I was waiting for didn't happen. So I had to think about what I'd do with all of these onions.

Yields: 8-10 servings. Prep time: 20 mins Cook time: ~1.5 hrs
6 medium-sized onions
2 Fresh tomatoes
1 canned tomato
1 clove of garlic
1 disk of fresh ginger
Half of an apple
2 cups of red wine
5 medium-sized potatoes
1/2 tsp of nutmeg
1 egg
1 cup of bread crumbs (or panko)
1/2 cup of any cheese you like
Salt & pepper to taste

1. Cut you onions in half-rings and begin sweating them in about a tablespoon of oil on low heat under the lid.

2. After about 20-25 minutes add diced tomatoes, fresh and canned. Keep it on low heat; don't cover.

3. Dice the ginger and garlic very finely, or grate with a micropane. Add to the pan.
4. Peel and dice the potatoes. Try to keep a uniform size. Put them on the stove to boil. When they are done, drain and let cool.
5. After about 8 minutes, cut up the apple julienne-style. Add to the pan.

6. Add the wine to the pan in 7 minutes. Sprinkle in the nutmeg, salt and pepper. Stir and let it reduce on low heat. It'll take about 20 minutes.

7. When the onion mixture is reduced, take it off the heat, and let it cool for about 10 minutes. Meanwhile, pre-heat your oven to 350F.
8. In a casserole dish, or any baking vessel, lay down your potato cubes, covering the whole area.

Then layer in the onion mixture on top, evenly.

Whisk an egg and pour it over the onions, evening it out with a spoon. Then sprinkle the bread crumbs.

And finally add some cheese. I had mozzarella.

9. Place it in the oven and bake for about 25 minutes, or until you see a nice crust formed. As you can see, I overdid it with bread crumbs.

Best served with some sort of protein. I ate it with a Russian-style cutlet. My mom liked it with fish.

Everything Cake

My mom turned forty-something on Sunday.
For his birthday I baked Brown Eyed Baker's Carrot cake. We also bought German Chocolate cake in case my creation turned into a failure. Well, not one person touched that store-bought cake. I felt bad for it, so I ate like a third of it the next day.

Anywho, the point I'm trying to make is that my parents now trust me with dessert. So for mom's birthday my cake was the only baked good in the house. Too bad it couldn't stay for long. Our guests devoured it within 15 minutes. It made me happy. I was also happy with aesthetics of this cake. It actually looked edible.

We're also participating in this lovely thing

This is a very simple recipe. Essentially, the first 6 ingredients are for a basic white cake with a bunch of added flavors. Customize it any way you like
Yields: 6'' bundt cake. Prep time: 15 mins. Bake time: 35 mins

For batter:
1 stick of unsalted butter
2 eggs
1 cup of sugar
1/2 cup of milk
1.5 cups of AP flour
1.5 tsb baking powder
1 tbs of maple syrup
1/2 tsp almond extract
1 cup of coconut flakes
1 tbs of cognac
Zest and juice of half an orange

1 cup of dulce-de-leche
1/2 cup of cocoa powder
1 tsp milk

For glaze:
1 cup of chocolate milk
1 tbs of maple syrup
1 tbs of cream cheese
1/2 cup of confectioner's sugar

1. Beat butter (softened) with sugar until light and fluffy.
2. Beat in the eggs, one at a time, mixing thoroughly after each.
3. In a separate bowl sift together the flour and baking powder. Then add to the wet mixture all at once. Mix well until flour cannot be seen.
4. Mix in the milk. If you have vanilla extract, add it here too. Otherwise, add almond extract.
5. Add orange zest and juice and mix for about a minute.
6. Pour in maple syrup and cognac. Mix well.
7. Finally, add coconut and incorporate.
8. In a separate bowl mix caramel, cocoa and 1 teaspoon of milk.
9. Spray a 6'' bundt with baking spray. Pour half of the batter in. Then pour in the caramel mixture and even it out with a spatula. Add the rest of the batter and place in a preheated oven to 350F for 35 to 40 minutes.
10. When the cake is done baking, take it out of the oven and let it cool for about 10 minutes. Then take it out of the bundt pan and place it on your serving dish.
11. Mix all of the ingredients for the glaze together. The consistency should not be too thick. Pour it over a warm cake. Top with whatever you like. As you can see, I toasted some coconut flakes and almonds.
12. Let the cake cool down completely before serving.

10 with 5: #10 Rainbow Couscous

I did it! I came up with 10 recipes with 5 ingredients of less all on my own. While some of them sucked, by the end of it I've progressed.
This last recipe was thrown together on a whim. I just came back from the city, tired and hungry. I grabbed the first thing in my pantry--couscous--and smiled. I wanted to make something with it for a while, and now I was pretty much pushed to it. You could use leftovers for the rest of the ingredients.

Yields 6-8 servings. Total time: 10 minutes.
1 box of couscous
5 cooked egg yolks
1 red bell pepper
1 tbs of dry onions
1 cup hazelnuts
Salt & pepper to taste

Cook couscous according to instructions on the box. I had whole wheat couscous, not really my favorite, but it was ok. Use anything you have.
These egg yolks are leftovers from last night's somewhat-deviled-eggs. Chop very finely, or crumble with your fingers.

Red bell pepper gets a fine chop as well.

As far as nuts go, since couscous is a middle eastern grain, pine nuts would work wonderfully here to keep up with the theme. I didn't have any, so I used hazelnuts. Use any technique you like for crushing them. I like to beat them senseless with a mallet.

Mix everything with cooked couscous, add dry onions, and season.

I served this with some home-made sauerkraut. I wish I added it into the couscous because it tastes so good together.

10 with 5: #9 Anything stuffing

Last night was my mum's birthday. We didn't have a big celebration, but relative always come by anyway, so we did some cooking. I baked a cake, which I will post about later. I also kept with 5 ingredients theme for the challenge and made a salad-like mixture that could be used as stuffing. I wanted to stuff shells with it, but I didn't realize that I was out of big ones. Then I tried rolling it into smoked salmon. Tasted great, but it kept unrolling. Then my mom suggested I hard-boil some eggs, and do it deviled-eggs style. That did it.

Yields about a dozen servings.
1 avocado
1 medium horse radish
2 medium tomatoes
1 tbs of dry onions
1 cup of crab sticks

Pit and peel the avocado. Then chop.
And the tomatoes.
Mix everything and sprinkle with dry onions. You can use fresh ones as well. I like the aroma of dry onions better.

Let stand in the fridge for about 20-30 minutes. Tomatoes will give off some juice that will rehydrate the onions.
I still do. I don't know how popular it is in America, but where my mum came from, it's apparently a staple. Well I spiced it up a little, and here it is.

Yields: 4-6 servings. Total time: 20 mins
1 2lb-can of tomatoes, crushed preferably
3 eggs
1 medium onion
1 tbs of dry basil
1 cup of shredded mozzarella
Salt & pepper to taste

1. Chop up your onion and begin sweating in a wee bit of oil.
2. Open up the tomatoes and dump 'em into the now-translucent onions. Don't drain them. Let the liquids reduce by about half on medium-low heat.

3. Once the tomato reduce, sprinkle the basil on top. Don't mix too much; you want that stuff to stay on top. Just even it out with a spoon.

4. Whisk three eggs together. You can add your seasonings into the eggs as well. I didn't because I think the tomatoes have enough salt in them.
5. Pour the eggs onto the tomatoes slowly, making sure the surface is completely covered.

Then take your wooden spoon and level it so every spot is covered in eggs.

6. Cover with a lid, and let the eggs set; approximately 5-6 minutes.
It will make you forget your ailments, or just take them away. That's what happened to me yesterday. I made this fish, ate it, and then (don't read the rest if you're easily disgusted) passed a kidney stone.

Okay, okay, there's no magic here. And to be honest, with my condition, I really shouldn't be eating this stuff. But it's soooo gooood. So I am going to share it with you, and hope you enjoy it as much as I did, and it eat in larger quantities than I can.

You will need:
1 egg
3 tablespoons of butter, softened
1 tbs of curry
1 tbs dry oregano
1/2 cup bread crumbs
Salt & pepper to taste

1. Cream butter with a mixer. Once it's nice and fluffy, beat in the egg. When you're done, put it aside.
2. Mix the rest of the ingredients together in a separate bowl.
3. Take a piece of fish (I had tilapia), drop it in the egg mixture first, and then in the dry mixture. Cook anyway you like it (I fried mine).
