When in Halifax you can stroll the Harbor walk and visit The Daily Grind Cafe and Bar for a fabulous Bagel and Lox.

Carol and I traveled to Nova Scotia for a family event and added on a side trip to Prince Edward Island. We visited Peggy’s Cove to see the world famous lighthouse and were lucky to see the famous Bluenose II sail by. If you are planning a trip to Nova Scotia, it’s a quick flight from Boston to Halifax.

Not to be missed is a tour of Alexander Keith’s Brewery, make a reservation.

Make sure you try the best craft beer in Nova Scotia, Propeller Galaxy IPA.

On Prince Edward Island we visited Green Gables Heritage place to learn all about the author of Anne of Green Gables, Lucy Maud Montgomery.

How To Activate Total Wine & More PayPal Rebate

I figured out why Total Wine & More PayPal rebates were never able to be activated on the app for me.

Their PayPal activation REQUIRES matching: FIRST NAME, LAST NAME, and EMAIL.

I checked my PayPal and the first name on the account was STEPHEN. I changed it to STEVE to match the name I was using on the Total Wine app. After waiting overnight, it worked.

PayPal validation should only rely on EMAIL and not include FIRST and LAST name too. No one does that. Am I right?

If Total Wine continues to require ALL THREE to match, they should note that on the app page so people will know to check that all three match, and alert store managers and customer support so they can help customers.

I never would have thought that First and Last name were being validated.

The Carol and Steve Show - 53 Episodes made in 2005

In 2005 I made 168 videos, 53 of them were the “Carol and Steve Show”. Carol and I made one video a week. Keep in mind that YouTube was founded on February 14, 2005, and I had been posting videos on my video blog since January 1, 2004.

The designer of “The Apprentice” TV Show logo, Bill Dawson, made our show logo for us.

The show was an exercise in producing one video per week and learning all about story telling, shooting, editing and uploading video. The topics we chose were whatever we happened to be doing each weekend.

One of them most memorable moments that came out of hte show was when we were visiting friends Steve and Zadi in California and were at a party. One of their friends that we didn’t know came up to Carol and told that our show saved her from total boredom. She was in a remote part of France and missed America, she said she looked forward to our shows each weekend to see a little slice of home. She especially loved Carol’s accent.

Here’s a list of the shows. The original blog hosting platform, Typepad, is shutting down at the end of September so I’m looking though my posts over there and thinking about how to save a record of all those videos and posts. A few years ago my original video hosting platform, blip tv, shut down and at that time I saved a lot of my video on YouTube.

The Gentle Art of Swedish Death Cleaning Out My Old Cameras

This year I am embracing The Gentle Art of Swedish Death Cleaning.

This “process of clearing out unnecessary belongings can be undertaken at any age or life stage but should be done sooner than later, before others have to do it for you.”

In the photo, I’m with Omer Hecht of CatLABS of JP (Jamaica Plain), a local camera store that buys and sells cameras and also provides film processing.

I’m holding my Minolta SRT-101, the camera I used when taking photos for the yearbook in high school and the student newspaper at UMass Amherst. It had a lot of years of good use. Omer is holding my Canon Powershot, the camera I first used when in addition to taking photos, I used to take videos back in the day.

I used it when teaching as an example of using the camera that you have with you to shoot video. Back then, people didn’t even know that their cameras shot video. I also turned over my faithful Canon GL/2 miniDV video camera that was a mainstay of my video production and steaming business.

Surprisingly I was fine with handing over all these cameras and more. Omar gave me what I consider a fair price and was a joy to work with and talk to. If you go in to CatLABS tell Omer that Steve sent you. 😉

National Grid has been repeatedly calling me from 617-469-2300

National Grid has been repeatedly calling me from 617-469-2300 with automated calls and hanging up on no answer, without leaving a voice mail.

I Googled the phone number and got the image below.

I deduced that it was time to replace my gas meter so I called them at their main phone number, 1-800-233-5325. After waiting 10 minutes, I spoke with a representative and scheduled my meter replacement. Gas meters are replaced every 7 years. It’s been 7 years.

I left them feedback saying that the automated hangup calls were not helpful, and I would have appreciated an email notice that it was time to replace my meter. Also, they could have put a note on my online account. In addition, they could have sent me paper USPS mail.

Also, it would be easier to schedule if they had an online scheduling system.

The instructions that come with the filter are wrong.

Step one, slowly turn the cartridge CLOCKWISE until it stops, to remove it.

Jury Duty.

I had jury duty at Chelsea District Court. A great stop before court is Katz Bakery where I got a baker’s dozen of hot fresh bagels, and a side of cream cheese. There is a nice Dunkin’ just across the street from the courthouse.

I was there a little early, because doors open at 8:30 AM. You can’t get in before then, the doors are locked. So I took a walk around Chelsea Square and learned a lot about the history.

Score the sourdough bread, and Bake

After you have proofed your sourdough bread in the fridge, you are ready to bake.

PREHEAT the oven to 500 degrees.

Place covered Dutch Oven in the oven for 1 hour.

While it heats up, score the bread. First, remove the bread from the proofing bowl.

Put a piece of parchment paper on top of the proofing bowl, then place a plate on top of parchment paper.

FLIP the bowl, paper, and plate over.

REMOVE the bowl and plate.

DUST the top of the bread with flour.

SCORE

With a razor blade, score the top of the bread. Here are some good examples,from Make It Dough, How to Score Sourdough Bread (Tips and Scoring Patterns).

BAKE

Take the Dutch Oven out of the oven and remove the cover.

Reduce oven temperature to 450 degrees.

Transfer the dough on parchment paper into the Dutch Oven. Add three pieces of ice just to the side of the parchment paper. Put the cover back on.

BAKE for 30 minutes.

REMOVE COVER and BAKE for 10-15 more minutes. The bread is done at 205 - 210 degrees.

REMOVE bread from Dutch Oven and transfer to cooling rack.

Shape the Sourdough, then Proof

After Bulk Fermenation, the First Rise, you are ready to SHAPE the dough.

I liked how this step is explained in this video: Make Beautiful Sourdough with Claire Saffitz. I also followed tips from Modern Eats Farmhouse Easy Sourdough Bread Recipe. Click through to get the whole recipe and lots of good info.

Scrape the dough out of the bowl onto a floured work surface. Split in half two make two loaves.

PRE-SHAPE the dough by folding each side into the middle.

Let REST under a towel for 15 minutes.

Flour your proofing bowl(s) with rice flour.

Let the FOLDING commence.

FOLD the LEFT side over the CENTER.

FOLD the RIGHT side over the CENTER.

Grab the end and ROLL it up to the TOP.

PULL the dough towards you to create tension on the surface and form a round shape.

PROOF

Place the dough into the proofing basket with the SEAM SIDE UP.

Cover with a towel, and let sit on the counter for 1 1/2 hours.

That's what Claire suggests...

When you can press your finger into the dough and have it slowly spring back, it's ready to proof in the fridge.

There are a lot of options of what to use to cover the dough, or whether to even cover it at all. Some choices I've seen are a towel, Saran Wrap, a shower cap, or a plastic bag.

For this first bake a chose a shower cap from Parkhotel Adler Hinterzarten for one loaf and a plastic IKEA bag for the other.

Then you cover it and put it in the fridge. I've seen times ranging from 1 to 40 hours. It probably depends on how anxious you are. Experience will inform my future decision on this.

Mix the Sourdough, Then Stretch and Fold

I'm following Modern Eats Farmhouse Easy Sourdough Bread Recipe. Click through to get the whole recipe and lots of good info.

MIX the SOURDOUGH

MIX together 100 grams of sourdough starter and 375 grams water.

NOTE: The sourdough starter should have been taken out of the fridge and fed the day before. See: Feeding your sourdough starter.

Then ADD 500 grams bread flour and 12 grams salt

COVER with a damp towel and let rest for 30 minutes.

"Grab underneath one side of the dough and pull straight up to stretch the dough without breaking it, then fold over the center. Give the bowl a quarter turn then repeat again with the next side. Repeat this process until you've stretched and folded all 4 sides of the dough (think North, South, East, West). Cover with a (damp) towel and let rest. Repeat this stretch and fold process every 30 minutes over 2 hours, for a total of 4 times."

Feeding Your Sourdough Starter

I just learned how to make sourdough bread and decided to share what I've learned here. Please comment with any tips you have.

These instructions assume that you have a starter to start with.

Remove starter from fridge.

Place bowl on scale. PRESS ZERO.

ADD 113g of starter to bowl.

PRESS ZERO.

ADD 113g of King Arthur Unbleached Flour to bowl.

PRESS ZERO.

ADD 113g of room temperature filtered water to the bowl.

PRESS ZERO.

MIX.

POUR mixture into Sourdough Starter Glass Jar.

DISCARD REMAING STARTER.

Let stand out at room temperature from 4-6 hours or longer until it at least doubles.

From Easy Sourdough Bread Recipe.:

Feed your starter.

“Remove your starter from the fridge, and mix together equal parts starter, water and flour. Discard the remaining starter. I like to keep a discard jar in the fridge that I add to every week. Let your fed starter rise until doubled in size, about 4-6 hours.”

Smoke Alarm Beeping

If it is a Co2 alarm, do not assume it is malfunctioning. Get fresh air and call 911.

BATTERY

If it’s a battery powered alarm, chirping might indicate that it needs the battery replaced.

When our neighbor’s hard wired smoke alarms were going off and it was difficult to figure out why. After changing the batteries in all of them, the alarm went off again.

Changing the batteries did nothing, because they are there as backup if the power goes out.

I just happened to disconnect the smoke alarm that was the faulty one.

Here are some tips I wish I had known earlier.

WHICH ALARM WENT OFF?

Here’s info from Kidde to help determine which alarm is the one that triggered them all to go off:

“If you have interconnected alarms, the first step is finding the initiating unit, as that is the key to stopping all of the interconnected units from sounding: To find the initiating unit, look for one that is flashing RED or GREEN at least once every second while in alarm mode, then follow the reset procedure on that unit. If the alarm stopped on its own before you could find that flashing light, the initiating unit will flash for 1.5 seconds every 10 seconds. If there are no obvious signs of a fire, the alarm should be cleaned before being reinstalled.

False alarms are most commonly caused by something interfering with the sensor. To clean, after disconnecting the alarm and removing any removable battery: hold the unit by its edge and thoroughly blow through the gap on the side of the unit with compressed air (like keyboard cleaner). We recommend cleaning out all of your smoke alarms at least every 6 months to a year and at this point we would recommend cleaning out all of your other alarms as well as a preventative.”

DRAIN THE ALARM

“You can take them down and take the battery out. After you pull the battery out you can hit the test button to drain the remaining energy out of the alarm. Or you can push the test button if it is going off and it will reset if it doesn't detect smoke.”

TAMPER RESISTANT PIN

Also, one one of the smoke alarms I could not twist of off. This is because it had a ‘tamper resistant locking pin’. You can remove that with needle nose pliers.

Safelite Repairs Cracked Windshields

Now I know what the Safelite Replace commercials mean.

CRACK

On Thursday while driving on the highway, a rock hit my windshield, as a large truck with a tarp over the back passed by. Coincidence? Maybe, maybe not.

INSURANCE

I got on the app for my insurance company, Amica Insurance. I haven’t had a claim with them since the time my Saab 900 was flooded after a beer fest at Suffolk Downs back in the day, but that’s another story. The AMICA app led me through the steps to make an appointment with Safelite for a windshield repair since the chip was less than 6 inches. I got an appointment for the next day, Friday!

REPAIR

Dylan came and used the patented Safelite tools to fill and sure the crack. Their website explains: Injection: A specialized resin is injected into the chip/crack. This resin bonds with the glass, restoring its strength and preventing further damage. Curing: The resin is cured using UV light, ensuring a durable and crystal-clear repair. You can barely see that the crack ever happened. Repair is the way to go.

Got up early for a 20 minute walk with luggage from the ship to the train station for the VY scenic train ride from Bergen to Oslo. ÖY!

We started our day with a bus tour in Bergen and then spent the afternoon exploring the city on foot. From the cruise dock, we took a 22-minute walk to the train station. It was a straightforward walk, and we made sure to confirm our train schedule and platform.

We learned that we should board the train 20 minutes before departure. Following our visit to the train station, we strolled through the shopping area and stumbled upon a fascinating bakery where we could see the bread being baked and the dough being rolled right in front of us. It was quite an experience!

After that, we continued to explore the harbor area and ended up at a brewery, where we enjoyed a couple of nice beers at a beautiful table right by the water. We also checked out the outdoor fish market and a local carnival before getting ready for our train journey to Oslo the next day.

We had a great day in Honfleur. Loved the chocolate shop! Ended with a beautiful sunset.

Portsmouth

Today, we took a bus tour from our dock in Portsmouth to Truro. I learned that Portsmouth is an island city. It was the site of the D-Day landings and served as headquarters for Dwight D. Eisenhower. There is lots of history here. We drove up to a high point where the ground was made out of chalk to get an overview of the area.

On our way back, we drove through little quaint villages and stopped at the sea, where we saw one of England‘s longest seaside boardwalks, remnants of a military fort, and a cool lighthouse. ￼

We drove past a new, built-up shopping area, which we returned to on a shuttle. You can identify this area by looking at the tall spinnaker that they built. ￼
