width=&quot;800&quot; /&gt;&lt;/center&gt;&lt;br /&gt;It is fast approaching the end of summer here in the southern hemisphere; but with the inevitable March heatwaves still ahead, it seemed like the ideal time to make some iced green tea with a refreshing mint twist.&lt;br /&gt;&lt;br /&gt;I grew some lovely Moroccan mint this summer and have used it abundantly in salads and main dishes, and frequently swirled into a glass of chilled sparkling water with a slice of lemon, so now that it is starting to fade away I am loathe to say goodbye to such a wonderful harvest. As a last hurrah of sorts, I present to you this delicious iced mint tea!&lt;br /&gt;&lt;br /&gt;I made it with a base of two different teas. After which I made a mint-infused simple syrup, I then added some matcha with mint to some hot water, then a few minutes later I also added some Twinings green tea and mint tea. Just for a bit of variety. Brewed for around two minutes. Then I mixed the syrup with the tea, and left to chill. I served it over ice with extra mint leaves for garnish and a little extra flavour. The mint tea is perfectly nice on its own, but adding a little squeeze of lemon juice really made it shine. Lime would be equally nice and somewhat reminiscent of a mojito.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;(I apologise for the vagueness of this &#39;recipe&#39;.
