I went to a “social” friend’s house, basically a friend of a friend. They were doing their part to reduce carbon footprints, according to them.

They were burning all their paper products in a burn barrel, I was aghast to think they honestly thought they were doing the world a favor. Biting my tongue I decided to do a little educating on the matter.

I tried to explain yes, they are keeping it out of the landfills, BUT, let’s face it paper does break down its not a major landfill concern, that’s plastic. BUT, I tried to explain to them, but not actually recycling it, they are not helping with the reduction of tree’s being cut down for the need for people to have paper products.

I swear this woman just didn’t understand what I was trying to say, they truly believed burning was recycling!!!

All in all, sorry for all the lack of posts lately, we have been overly busy here getting things ready for the planting season.

Well, this may explain how slow it’s been over here at One Acre Farming. I spent the last 9 days in the hospital and 2 days home in miserable pain. I went into the hospital with stomach complaints and had a ton of tests, after most of those tests I ended up having a bad episode with my stomach and next thing I know I have a bruise across my stomach that’s 4 inches wide by 2 inches thick. It’s nasty looking. I showed the doctors, the nurses and complains of how much pain its causing. I was ignored and told it was nothing, I was told I had a CT scan and it showed nothing, no matter how many times I kept saying this happened AFTER all the tests, no one would listen.  It happened after a really bad bout of throwing up, I told the doctor I think I tore a muscle, as it burned badly when it happened, or maybe a hernia, he ignored all my complaints.

I was growing frustrated, crying a lot, due to pain. If I was upset, cried or complained of pain they just shot me up with another 2mg of Dilaudid through my IV. I was told this medication is 7 times stronger than morphine.

On the last day, the doctor came in and told me they found the problem, I was over the moon with happiness until the quack opened his mouth and said it was my gallbladder. I had my gallbladder removed 3 years ago. I was beside myself, I was pissed, I was upset, and I couldn’t believe it and once I opened my mouth to say WTH, I was offered a psych consult. The nurses were stunned, everyone was stunned.  Right then and there I asked to be released. I wanted out; I wanted to leave to find a better doctor to figure out all this pain and the source of having symptoms much the same as the stomach flu.

The nurses felt bad and ended up writing up all my test results so I could find another doctor. They put my last blood test results on there too. It amazes me how much was wrong on these tests, but I was told they were all unfounded.  You see I have nursing school background; I am not stupid to these tests, or the terms they use.  I have since learned my liver enzymes are raised, I have 4 lesions on my liver, my white blood count is high, I have an ovarian cyst that’s 4cm (with a note from the surgeon to follow up with a gynecologist, but never was told this), I have gastritis, and scattered small air-fluid through the bowel, to name a few things. All in all, it means I have a ton of small problems that combined made me miserable. All are very treatable, but, since he wants to blame it on a nonexistent gallbladder, none are being treated until I find a new doctor.

I am disgusted, in a lot of pain and just wanting it all to be over. Will I follow up with a new doctor? Chances are slim, I will probably wait it out to get better because I am tired of being drugged, poked and prodded and getting nowhere. 

Oh just a few more key things that happened during this stay.

• 9 IV’s collapsed many due to bad placement
• Centipedes in my room (They called it the “bug room”)
• Nurse decided to dump my dilaudid into the garbage, all my syringes went into the garbage also (possibly to pick them back up later for ????)
• electrical outlets where coming out of the wall
• Nurses failed to tell doctors of complaints
• Nurses where constantly late on meds, meals, just normal patient checks
• Room was in deplorable state, including mold, cracks in floor, paneling coming off the wall.
• I took many pictures, thankfully for a cell phone, but I am tired now and will report more about this all at a later date.

One thing I have never been able to wrap my brain around is the cost of green products, and prices. I would love to remodel my entire house green, but being realistic, I can’t afford it. Minus out the recycled products we use, I am just talking in general for example flooring. Since this is a huge job we just tackled.

The floor I put in 2 years ago that got ruined.

This was an unexpected repair, typically if we are going to do a remodeling job it’s budgeted in and saved for so we can use the products we want to use. But sadly, these jobs was sprung on us and let’s face it when you find a hidden leak and it has rotted through your 100+ year old maple flooring, you have no choice but to get what you can at the price you can afford to ensure the floor is safe for your children.

So in the end we had to settle for ripping out the floor all the way to the joists, laying down thick plywood and putting down a tile floor. Now, almost 3 years ago I bought my house. 2 years ago to the date of finding this leak, we replaced the floor already do to a leak we found. I replaced the floor, fixed the leak, temp floor placed and life went on. I been slowly going room by room and removing all the layers of flooring, exposing the beautiful hardwood floors and refinishing them. I only wish now I had started in the kitchen, because I may have found the hidden leak (doubtful), but I am really beating myself up over this.

So I made sure to spend the least bit possible with very basic use of stuff not to have more left in a landfill when we replace it with what I want, because my goal is a green house. Slowly and surely I will get there.  So now you see why I been a little slow in posting, this section of the floor is a small section done, we still have two more sections to complete but in the midst of all this, we are getting the entire house rewired.  We have all old knob and tube wiring, and just recently found out (Due to a fire) that the previous owners did a lot of unsafe fixes himself with little knowledge of how to do it safely. I love my house, its an old house, but sometimes I feel like Shelly Long from The Money Pit.

Now that you have learned how to grow your own ginger what do you do with all the excessive ginger you know have? Usually after I harvest ginger, I start straight back to growing more with the smaller rhizomes.  This leaves me a pretty large supply of ginger, and let’s face it I don’t use a ton in a lot of recipes. But I have come up with some creative things to make with ginger and I will be sharing those over the next few days.

I have tried various methods, including dehydrating and then crushing the ginger into powder. Now that’s fine, but I just don’t like the taste of ginger that has been powdered and left to sit. To me it leaves an aftertaste I just don’t like. Call me weird, but it is what it is.

You can freeze them, you can leave them unwashed, in a ziplock in your crisper drawer and you will gain 2 months, but I was looking for longer term solutions. So below is a list of ways I preserve my ginger to ensure I always have it on hand.

Ginger Preserving Methods

1. Pickled canned ginger, this does not affect the taste in using it in many Asian dishes.  As long as this is properly done and containers are properly sealed the ginger will last years.
2. Leave dirty, store in the “root cellar” will last up to 6 months this way. But remember you have to make sure this is properly done, by using mulch; you want to store it in a dry, cool, dark area. If it gets wet, you risk mold.
3. Vodka, Sake, and Dry Sherry, grate, chunk, mince the ginger whatever your chosen method, pour vodka, sake, or dry sherry. You can store this in the refrigerator, the best thing about this method is a great ginger infused alcohol that is great to use in other recipes.  I was told this last at least 2 months, but I have a bottle in my fridge that is over 4 months old and it’s perfectly fine. So use caution and do some experimenting.

We cook a lot of Asian food in our home and many recipes call for ginger. I absolutely hated the taste of ginger you brought from the store and usually just omitted it from a lot of recipes. I ended up engaged in conversation with a lady at the Chinese restaurant and told her how I love to make Asian foods, but couldn’t stand the taste of ginger, but it tasted so much different when going out to eat or sharing a meal with our Asian friends. She flat out laughed and said; get fresh ginger the taste is completely different. Now I do realize there is a drastic difference from store bought herbs, roots, seasonings, etc, but I honestly was not prepared for this drastic of a difference.

After the prices of seeing organic ginger in the store, I figured there had to be another way. So this post is born of growing ginger in my own home.

Ginger is a rhizome, they have “eye buds”, when selecting your ginger there are two things you want to look for the most important being organic, this way you don’t have to worry about chemicals (growth inhibitors) stunting the growth, which means you won’t have much luck. The second is trying to find one with some eye buds already growing; this will speed up the process a lot. Yes, you will spend a bit more buying organic, but in the end you will save a ton of money growing your own.

I use a large pot to plant mine and fill it with rich soil. You only have to plant your ginger about two inches beneath the soil, making sure your eye buds are facing upwards, the eye buds should not be planted down in the soil.

I plant one ginger root in a 6” inch container, but this year I will be starting 4 roots in a 24” beautiful container that I found that will compliment my kitchen.  Make sure you use a durable container that can handle some digging, after all you will be digging for roots, so stay away from plaster, ceramic and terra cotta pots.

Keep your ginger, out of direct sun, they prefer partial shade, they also like to be kept moist. Now the biggest thing is to wait it out, the longer you let it grow the bigger the roots will be when you harvest them.  Once they reach a height of 2 feet you can easily harvest or let them stay a bit longer. Also remember to save some of your root, so you can replant and keep your ginger supply going.

Also keep in mind, your not going to be growing pretty ginger, don’t expect flowers and a plant you can show your family and friends, it will just be a basic stalk, sort of like a corn stalk in its early growth.
