Beets!

2014-02-03T18:47:00.000-05:00

Beets are rich in sooooo many vitamins - folate, vitamin C and niacin. A great article in the August 2012 Shape magazine issue educated me about this lovely red root.

The article listed tips from chef Hadley Schmitt. Beets with bright green leaves should still be attached when selecting. Beets should be firm and shouldn't have blemishes. Beets should be dry and covered to last longer in the fridge.

Spicy Asparagus Pasta

2014-01-28T20:09:00.003-05:00

I make most of my recipes for one person - me! Haven't gotten everyone on board with the "healthy at all times" eating schedule - LOL! Just wanted to let everyone know so that you know to double, triple or make it as large as you want if you are cooking for additional people. I also buy my dried spices from organic bulk bins. I don't use enough to buy it prepackaged. Also, I save $$$$$$! I also use pecorino to add after it is finished. It tastes delicious! Toss with olive oil ONLY ON LOW HEAT! Olive oil loses nutrient content when heated to high - at least that's what I read.

There is a picture on my Instagram account. I am still waiting for me Geek Squad employee in shining armor to aid me in overcoming my technological ignorance!

Recipe

12 spears Asparagus (Aldi's frozen asparagus)
1 serving Organic Brown Rice Pasta (Trader Joes $1.99)
Slice of onion chopped
Garlic clove chopped
8 black pitted kalamato olives (Costco bulk - I use these A LOT!)
red pepper flakes to taste/spiciness (organic bulk bin)
2 tblspn grape seed oil (Trader Joes $3.99)
2 tblspn dried basil (organic bulk bin)
pinch of cayenne pepper (organic bulk bin)
2 tblspn balsamic vinegar (Costco has GREAT deal)
1 tbslpn olive oil (more if you like it slightly oily to add pecorino to - like I do!)
Pecorino parmesan is optional to add after meal is complete.

Boil water.
Add pasta.
Boil until desired tenderness - I like my pasta al dente.

Add onion, garlic and red pepper to grape seed oil in wok.
Once onion is clear, add frozen asparagus spears chopped - I crack them into smaller pieces. My fingers are FREEZING afterward - lol!!!!
Saute for one minute, then add balsamic vinegar.
Saute on high for thirty seconds.
Lower heat to low.
Add pasta, olives, basil, cayenne pepper and olive oil.
Toss well.

Voila!!!!

Homemade Chicken Tenders

2014-01-27T10:59:00.001-05:00

This is my first attempt at making homemade chicken tenders. I found a recipe three years ago from Shape magazine. I rip out interesting pages from my magazine collection and file just in case I want to try it or need it for something else. I am SOOOOOO glad I snatched this recipe! The tenders were great. My mom even liked them and she is NOT an advocate for going the healthy route on her fave fried foods.

I adjusted the recipe slightly from the Shape one. I will put in parenthesis what Shape suggests. I am on Instagram - organicssense. Check out my picture - I don't know how to save the Instagram pictures to my phone. What I wouldn't give to have a geek squad employee as my bestie! LOL!!!

CHICKEN FINGERS WITH MUSTARD DIPPING SAUCE
Shape magazine February 2011

Chicken Fingers recipe

8 tenders
1 tblspn Dijon mustard
2 tblspn safflower mayo (light mayo)
1/4 tspn garlic powder
1 1/2 tspn grapeseed oil (canola oil)
1 cup whole wheat panko (1/2 cup panko)
1/4 cup almonds (walnuts)
2 tblspn almond meal (wheat germ)
2 tblspn pecorino (parmesan)
1/4 tspn sea salt (kosher salt)
1/4 tspn fresh ground pepper
**cooking spray is suggested by Shape but I did not use

Dipping Sauce recipe
3 tblspn safflower mayo (light mayo)
2 tblspn mustard (grainy mustard)
2 tblspn raw honey (honey)
1 tblspn Dijon mustard
1 tspn fresh lemon juice
salt and pepper to taste
***I added poppy seeds and a little apple cider vinegar

Preheat oven to 425F.
Combine mustard, mayo and garlic powder in shallow dish.
Add tenders and coat well.
Set aside.
***I put in fridge to get cold. Mixture stayed better and wasn't as messy to roll in "crunch" mixture.

Pour oil in skillet (I use iron skillet but Shape suggested nonstick skillet) and heat over medium.
Add panko and toast for 3-4 minutes, stirring often, until crumbs are golden.
Transfer to different shallow dish than mayo mixture.

Chop almonds (Shape suggested toasting walnuts and then chopping. I didn't do this)
Add panko, almond meal, pecorino, salt and pepper.
Toss well.

Set wire rack over large baking sheet.
Spray lightly with cooking spray (I didn't use cooking spray)
Dredge chicken in crunch mixture and arrange on rack.
Spray chicken lightly with cooking spray (I didn't do this)
Bake for 12 minutes or until cooked thoroughly.
****After 12 minutes, I broiled on high for 1 minute on each side of tender to give it an extra crunch.

While chicken is baking, combine dipping sauce ingredients in bowl.

Parmesan Zucchini Noodles with Blackened Salmon

2014-01-20T10:36:00.000-05:00

Wow! It's been over 6 months since I've posted. There is no excuse...I've been lazy. Nothing major going on in my life but trying to enjoy life with friends and family. Had to get my order of importance back in line - God, Myself, then Family. Crazy how easy it is to get thrown off track.

Well...I have made yet another resolution to eat better and to be debt free in 2014. I know that I can do it through prayer and faith. This year, I want to try new recipes at least once a week to bring a better variety into my eating regimen. I am getting a little tired of the same old - same old. Here is a recipe that I tried yesterday. I don't use measurements so the ones below are an estimate. And shout out to Inspiralized.com for putting me on to the great Paderno Spiralizer!!!!!

Parmesan Zucchini Noodles with Blackened Salmon

Wild Salmon fillet (Aldi's Wild Salmon $4.49/bag for 4 fillets)
Blackened seasoning (Buy bulk and mix yourself - saves $$$$$)
Medium Zucchini (Hoover's Market $2.99/lb) *
2 Tblspns Pecorino Parmesan (Costco bulk because I use this A LOT!)
1 Tblspn Grape Seed Oil (Hoover's Market $9.99 on sale)
2 Tblspn Dried Basil (Bulk for best deal!)
Thick slice of Onion chopped (Fresh Market $1.69/lb)
2 Cloves of Garlic chopped (Aldi's bag of 3 $0.99)
Red Pepper Flakes to spice preference (Bulk for best deal)
6 Pitted Black Olives chopped (Costco Bulk because I eat a lot of these!)
1 Tblspn Olive Oil (Hoover's Market $9.99 on sale)
Ground pepper and salt to taste
* stands for organic

Put a few drops of grape seed oil in iron skillet. Cover salmon in blackened season and place in iron skillet. Bake on 425 until finished - about 10 minutes.

Spiralize Zucchini. Inspiralized.com has a tutorial for you first-timers! I cut my noodles into long strips instead of using one long strip. It makes it easier for me to toss and eat.

Put grape seed oil, onions, garlic and red pepper flakes in a wok. Heat until onions are translucent. Stir in Zucchini noodles until tenderness. Remove from heat.

Chop up Salmon. Add salmon, olives and Zucchini mixture in a large bowl and toss. Add pecorino, olive oil, basil and toss. Salt and pepper to taste.

Voila!!!

Oatmeal Is Not Just For Eating!

2013-06-24T22:43:00.000-04:00

I found a great article about oatmeal on iVillage today. There were numerous uses that oatmeal has other than eating. I am very interested in healing my skin and health issues with the things God placed here on Earth. I believe that if our body can be healed with natural products, then it is more beneficial than synthetic materials and chemicals.

Please read the article in the link below and let me know if you try any of the remedies. I am going to try all of them. I must let you know, natural remedies don't work as fast as the "quick" fixes you can buy. With my experience, natural remedies heal the problem and do not build a dependency as most "quick" fixes have done for myself. I remember being a slave to acne washes for my skin issues. When I would attempt to wean myself from the chemicals, my acne would return with a vengeance! I did not heal my acne until I focused on a full body cleanse, colonic and clean eating regimen.

Who Knew Asparagus Was This Healthy!?

2013-06-03T16:40:00.000-04:00

I love asparagus! The long stemmed veggie is tasty and easy to make. Richard Kahn's newsletter - http://www.hocfarms.com/ - has a great article about all of the benefits of asparagus. Richard Kahn offers a great newsletter that gives the health benefits of various foods and offers a recipe.

Nutrition Facts

AsparagusAnti-InflammatoryAsparagus not only tastes delicious, but is also a wonderful source of nutrients for a healthy body and mind. Asparagus contains many anti-inflammatory nutrients, such as asparagus saponins and the flavonoids quercetin, rutin, laempferol and isorhamnetin, which all help to combat arthritis, asthma, and autoimmune diseases.

Antioxidants
Glutathione, found in asparagus, contains three amino acids (glumatic acid, glycine and cysteine) that combine into one molecule that serves as a powerful oxidation-reduction agent in our bodies. Along with the antioxidants vitamin C, vitamin A (beta-carotene), zinc, manganese and selenium, the glutathione in asparagus fights against free radicals that cause aging and "cellular rust." Cancer
It is well-known that chronic inflammation and oxidation of the body's cells can lead to a variety of different cancers. With its anti-inflammatory and antioxidant properties, asparagus is a robust fighter against bladder, breast, colon, lung, prostate, ovarian and other cancers.
Heart Health
Folate, a B complex vitamin, is essential for a healthy cardiovascular system and is found in abundance in asparagus (one cup contains 66% of the RDA of folate). Firstly, it is involved in a biochemical event called the methylation cycle, which allows for the proper transcription of DNA, the transformation of norepinephrine to adrenalin and the transformation of serotonin to melatonin. Secondly, folate regulates the amino acid homocysteine, which in high levels can be a strong risk factor in heart disease. And finally, B vitamins such as choline, biotin, and pantothenic acid manage our blood sugar levels by effectively metabolizing sugars and starches.
Birth Defects
Folate is also essential for proper cellular division. Healthy servings of asparagus can prevent a folate-deficiency, which has been linked to birth defects such as spina bifida (a congenital defect in which the spinal cord is exposed through a gap in the backbone).
Diuretic
The amino acid asparagine, found in asparagus, is an effective diuretic and has been historically used to treat swelling, arthritis, rheumatism, and PMS-related water retention.
Diet and Digestion Inulin, a carbohydrate in asparagus, encourages the growth of Bifidobacteria and Lactobacilli, two bacteria that boost nutrient absorption, lower the risk of allergy and colon cancer, and help prevent unfriendly bacteria from taking hold in our intestinal tract. Furthermore, one cup of asparagus contains over 11% of the RDA of dietary fiber and almost 10% of the RDA of protein. The healthy fiber and protein content of asparagus stabilizes our digestion, curbs overeating, maintains a low blood sugar and prevents constipation. And finally, one cup of asparagus also contains only 43 calories. Vitamin K
Asparagus is an excellent source of vitamin K (providing 114% of the RDA in one cup), which is necessary for the synthesis of osteocalcin, a protein that strengthens the composition of our bones. Furthermore, vitamin K prevents calcium build-up in our tissue that can lead to atherosclerosis, cardiovascular disease and stroke.
Vitamin C
As mentioned above, asparagus contains a healthy dose of the strong antioxidant vitamin C (over 30% of the RDA). Other health benefits associated with vitamin C are a lower blood pressure, healthy immune system, and resistance to age-related ocular diseases, such as cataracts and macular degeneration.

Lovely Lemons - great article from Heart of Christmas Farms

2013-05-11T08:31:00.003-04:00

Lemons are sooooo great for our body. They improve our digestive system, remove dark spots from our skin and taste great when made into an ade on a hot summer day. These yellow fruits are affordable and easy to attain. If you live in an area that is abundant in lemon trees, you may be able to grab one from a tree overhang during your morning walk. Please read this article from Richard Kahn's blog http://www.hocfarms.com/. Also, sign up for the newsletter - great information and recipes.

Nutrition Facts

Lemons
The Alkalizing Powerfood
Lemons are acidic to the taste, but are alkaline-forming in the body. In fact they are one of the most alkaline-forming foods; this makes them great for balancing a highly acidic condition in the body.
Lemons are a favorite all over the world and an essential food in kitchens everywhere.
“We are living in a world today where lemonade is made from artificial flavors and furniture polish is made from real lemons.” –Alfred E. Newman
16 Health Benefits of Lemons:
1. Lemons are alkalizing for the body: Lemons are acidic to begin with but they are alkaline-forming on body fluids helping to restore balance to the body’s pH.
2. Lemons are rich in vitamin C and flavonoids that work against infections like the flu and colds.
3. Your liver loves lemons: “The lemon is a wonderful stimulant to the liver and is a dissolvent of uric acid and other poisons, liquefies the bile,” says Jethro Kloss in his book Back to Eden. Fresh lemon juice added to a large glass of water in the morning is a great liver detoxifier.
4. Cleans your bowels: Lemons increase peristalsis in the bowels, helping to create a bowel movement thus eliminating waste and helping with regularity. Add the juice of one lemon to warm water and drink first thing in the morning.
5. Scurvy is treated by giving one to two ounces of lemon juice diluted with water every two to four hours. In 1747, a naval surgeon named James Lind cured scurvy with fresh lemons. To this day, the British Navy requires ships to carry enough lemons so that every sailor could have one ounce of juice a day. In the past, lemons were replaced with limes; this is where the English got their nickname “limeys.” Watch this video: “Scurvy Pirates and the Lemon of Love”
6. The citric acid in lemon juice helps to dissolve gallstones, calcium deposits, and kidney stones.
7. Vitamin C in lemons helps to neutralize free radicals linked to aging and most types of disease.
8. The lemon peel contains the potent phytonutrient tangeretin, which has been proven to be effective for brain disorders like Parkinson’s disease.
9. In India, Ayurveda medicine values the lemon as a fruit and for its properties. It is sour, warm, promoter of gastric fire, light, good for vision, pungent and astringent.
10. It destroys intestinal worms.
11. When there is insufficient oxygen and difficulty in breathing (such as when mountain climbing) lemons are very helpful. The first man to reach the top of Mt. Everest, Edmund Hillary, said that his success on Mt. Everest was greatly due to lemons.
12. Lemons have powerful antibacterial properties; experiments have found the juice of lemons destroy the bacteria of malaria, cholera, diphtheria, typhoid and other deadly diseases.
13. Blood vessels are strengthened by the vitamin P (bioflavinoids) in lemon thus prevents internal hemorrhage. Also, making it useful in treating high blood pressure.
14. The symptoms of eye disorders, including diabetic retinopathy have been shown in research to improve due to the rutin, found in lemons.
15. Lemons contain 22 anti-cancer compounds, including naturally occurring limonene; oil which slows or halts the growth of cancer tumors in animals and flavonol glycosides which stop cell division in cancer cells.
16. According to The Reams Biological Ionization Theory (RBTI), the lemon is the ONLY food in the world that is anionic (an ion with a negative charge). All other foods are cationic (the ion has a positive charge.) This makes it extremely useful to health as it is the interaction between anions and cations that ultimately provides all cell energy.
