<p>If you ever wondered if preschool boys had any interest in dinosaurs, let me emphatically assure they do!  For the last 2 weeks we have been learning about dinosaurs in our homeschool preschool.  We talked about meat eaters and plant eaters, we sorted by size, we matched pictures to shadows, we made play doh fossils, and we roared&#8230;A LOT!  We played dino games, made dino puppets and even learned to how to draw dinosaurs!</p>

<p>He drew pictures for dad and all the grandparents and then we mailed out his one of a kind artwork.</p>
<p>We also learned that they came from eggs.  And what better way to learn this, than by making dinosaur eggs!  I found a recipe online for making a dough out of old coffee grounds and flour</p>

<p>The next day, Rex had babies!  (No, we haven&#8217;t had any sex ed classes yet.  <img src='http://www.ourfamilyunit.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   Ever since I got pregnant with Berlin, every now and then he talks about babies being in his tummy.  Then he &#8220;opens the door&#8221; to let them out so they can play.  The door has a latch sound.)  But I digress&#8230;</p>

<p>There are some days that I think this is what I look like as a mom&#8230;and I only have two!</p>

<p>The highlight of the week was pretending to be a paleontologist.  I found this cute <a href="http://www.amazon.com/gp/product/B000BQJNQA/ref=oh_o05_s00_i00_details" target="_blank">kit</a> on Amazon and then Kade and his dad donned their safety glasses and went to work.</p>

<p>I started with 2 file folders and a few scraps of felt that I had lying around.  To begin, I cut some random scenic shapes out of the felt and sewed them directly onto the first folder in layers.  Then for the &#8220;cover&#8221; I used the second file folder as a stencil and cut out one large piece of brown felt.  Now because I had already sewn the felt on the inside, the first folder was a bit thicker than the second.  So to enable the second folder to give a bit and wrap around everything without pulling, I split it down the center fold.  Then I stitched the large piece of felt to the now 2 pieces of folder.  I then attached a square of felt to act as an outside pocket for the pieces, and then finally stitched the two folders together back-to-back.  Voila!  An outdoor scene!</p>

<p>Next, I googled &#8220;animal silhouettes&#8221; and &#8220;camping silhouettes&#8221; and came up with 2 sets to play with, separately or combined.  Above are my wild mountain animals.  We were going to bear country so I cut out three different bears, these ended up being the only bears we saw on our entire camping trip.  Below is the camping set.  I just sketched out what I couldn&#8217;t find on Google and modified to what I new we had (ie. Jeep SUV and pop-out trailer).  My caffeine addiction apparently knows know bounds, as I included a coffee pot and cup as essential camping supplies.  I also decided to take some freedom with my creative expression and dressed &#8220;myself&#8221; in a red sundress.  I&#8217;m pretty sure I&#8217;ve never worn a dress in the wilderness, but who&#8217;s to say it can&#8217;t happen.</p>

<p>Either way, Kade seems to love it.  He makes up stories about the animals chasing each other and how they try to hide in our camp.  It&#8217;s probably one of the simplest and cheapest toys  we have and still a hit.  So embrace the felt, succumb to the creativity and cut out your story &#8211; it&#8217;s sure to be fun!</p>

<p>I don&#8217;t know if this happens to anyone else, but sometimes it feels like our days are <em>intense</em>.  Not intensely bad or good, necessarily.  But we eat our breakfast intensely, clean up furiously, then play vigorously.  Emotions are only felt in the extreme.  We giggle instead of laugh, sob instead of fuss, scream instead of yell.  Some days this doesn&#8217;t just go for the kids, but me too.  My theory today is that it&#8217;s because of the weather.  The mornings lately are cold and gray and dull &#8211; so everything else is vibrant and INTENSE to compensate.  That goes for the editing of these pictures from our afternoon at the park this week, too.  Whatever the reason, sometimes being a mom just calls for a little intensity.  Today I&#8217;m intensely grateful!</p>

<p style="text-align: left;">Somehow it&#8217;s already Wednesday&#8230;I meant to put this up earlier, but here we go.  We had our Foodie Night on Sunday, continuing our grueling training course in food education.  On the menu was Grilled Tri-Tip, Duchess Potatoes and Zucchini Cakes.  Then for dessert, Brandy Snaps.  All but the tri-tip was courtesy of <a href="http://thepioneerwoman.com/" target="_blank">The Pioneer Woman</a>.  The first thing that was different about this week than any of the previous Foodie Nights, is that I cooked everything the same day.  It made for a loooong day in the kitchen but I guess the good news is that I was really ready to sit down and relax once it all was on the table.  It also meant that I got to wear an apron most of the day, which I&#8217;m not gonna lie &#8211; I kinda liked.  I may start doing it as a cook cereal for breakfast or PBJs at lunch too.  Maybe even for delivery pizza.  Apron&#8217;s are just too cute!  But I&#8217;m getting sidetracked.  Back to the FOOD!</p>

<p style="text-align: left;">Since tri-tip was &#8220;invented&#8221; so close to home (first marketed in Oakland, CA) and known as a local Santa Maria specialty, I figured it was time to try it.  Plus, it&#8217;s a relatively cheap cut of meat, so if I butchered it (pardon the pun), I wasn&#8217;t out a lot of money.  Our recipe (below) called for a load of spices to be mixed together as a rub and then to let the meat sit for a few hours.  I let ours sit about 5 hours and then threw it on the grill &#8211; high heat first to sear it and then slow roasting for about an hour and a half.  Ours came out medium-well and next time I think I&#8217;d try to take it off when it reached medium doneness just to make it a bit more tender.  <em>But talk about amazing flavor!</em>  It was scrumptious!!</p>

<p style="text-align: left;">While the meat was grilling, I worked on the <a href="http://thepioneerwoman.com/cooking/2011/12/duchess-potatoes/" target="_blank">Duchess Potatoes</a>.  I&#8217;m pretty sure that the duchesses who might normally eat these potatoes have servants to do all the  preparing.  These are by far the most work I&#8217;ve <em>ever</em> put into mashed potatoes.  But for a holiday meal or something special &#8211; totally worth it, as they were delicous.  First you peel, then you boil, then you dry out in the oven, then you put through a food grinder, then you add eggs, cream, salt, pepper and NUTMEG, then you put into piping bag (not a ziploc &#8211; found that out the hard way), then you attempt to shape into gloriously fancy mounds, then you refrigerate, then you brush with egg-wash, then you bake!  I was a little bummed because I thought I had the recommended &#8220;large star tip&#8221; in my collection of frosting tips, but as it turned out, I had the small one.  So my gloriously fancy mounds did not come out as I had desired, but it&#8217;s an excuse to get another frosting tip.</p>

<p style="text-align: left;">The <a href="http://thepioneerwoman.com/cooking/2008/07/cooking-with-ryan-zucchini-cakes/" target="_blank">Zucchini Cakes</a> were fast and easy.  Nothing too complicated &#8211; made a &#8220;batter&#8221; out of shredded zucchini, garlic, cheese and egg; then fried it up in a skillet.  I thought they were good, but Kyle wasn&#8217;t a fan at all.  There was plenty of tri-tip to fill up on though, so it didn&#8217;t really make that much difference.</p>

<p style="text-align: left;">No, I didn&#8217;t play Jerry&#8217;s &#8220;man-hands&#8221; girlfriend on <em>Seinfeld</em> &#8211; Kyle is holding the Brandy Snap as I was running bath water for the kids.  That&#8217;s how you know that these Foodie Nights are not <em>exactly</em> the same as a relaxing romantic date night.  I&#8217;m pretty sure if we were having dinner at a restaurant, I wouldn&#8217;t need to break to give the kids a bath&#8230;life still goes on, we are just learning about food in the process.  And as a side note, you would not have believed the horrific state of my kitchen that night when I went to bed!  But I don&#8217;t believe in ruining a good night with kitchen clean up chores.  <img src='http://www.ourfamilyunit.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<li class="instruction">Mix together all the spices in a bowl and store in an airtight container at room temperature until ready to use.</li>
<li class="instruction">Use a damp towel to lightly moisten the roast with water, then pat with the prepared rub. Refrigerate for a minimum of 2 hours, up to overnight, for the flavors to fully come together.</li>
<li class="instruction">Preheat an outdoor grill for high heat and lightly oil grate.</li>
<li class="instruction">Place the roast onto the preheated grill and quickly cook until brown on all sides to sear the meat, then remove. Reset the grill for medium-low indirect heat (if using charcoal, move coals to the outside edges of the grill pit).</li>
<li class="instruction">Return the roast to the grill, and cook, turning occasionally, until the desired degree of doneness has been reached, about 1 1/2 hours for medium-well. Remove from the grill and cover with aluminum foil. Allow to rest for 10 minutes before carving across the grain in thin slices to serve.</li>

<p>Welcome to my sad, crowded, disorganized mess of a pantry.  It has needed some TLC for quite some time, but I never got around to doing anything about it until last September I couldn&#8217;t take it anymore.  That&#8217;s when I saw a couple of pantry redos on <a href="http://pinterest.com/luckyfritz/" target="_blank">Pinterest</a> and got inspired.  So I set to work organizing, pulled things out, thought about new placement, emptied ugly store containers to fill labeled Tupperware that I had on hand and stuffed everything back in.  Sadly, the picture above is what it looked like AFTER I &#8220;organized&#8221;.  All that energy and the result was that Kyle couldn&#8217;t find his cereal in the morning because it was on a different shelf!  So, deflated, I walked away for a few weeks.  Then my mom came in October and re-inspired me.  We went to IKEA, land of great cheap organization, and talked paint color and label design.  My Silhouette Cameo didn&#8217;t arrive in time to do the vinyl labels with her, but I started on those a few weeks later.  Right before Christmas, Kyle convinced me to paint and get rid of the tacky contact paper and finally this week, I finished painting the shelves.  After 6 months, it&#8217;s finally complete and I love it!</p>
<p>A little paint and a few cute containers and organizational tools made such a difference!</p>

<p>One of the best ideas was to use the door space.  Although Kyle raised his eye brows a bit at the red baskets (his quote after I told him what I wanted to use them for, &#8220;OK, but what are they <em>supposed</em> to be used for?&#8221;).  And I LOVE having the spices there, hanging pretty on the door, easy to see, easy to reach.  Perfect!  I told Kyle it was what I&#8217;d &#8220;always wanted&#8221; and he said if he&#8217;d known a magnetic board and tin cans would make me this happy, he would have done it a long time ago.  <em>Lesson:  Better Communication &#8211; the key to every good marriage!</em>  <img src='http://www.ourfamilyunit.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   Oh well.</p>

<p>The Silhouette was a godsend.  It was so easy to use and I loved how the vinyl labels turned out.  It had a little trouble doing the tiny labels for the spice cans, not because it wouldn&#8217;t cut the vinyl, just that the little bits it was cutting out tended to get caught in the blade.  It was more trouble to apply the labels than make them.  I&#8217;ve read that transfer paper makes this part easier, so if I ever need to do this again, I think I will go that route.</p>

<p>One thing that I think made my pantry so ugly before is all the little packages of junk that make it look like the baking aisle threw up on the shelf.  So I bought these cute boxes at IKEA and labeled them too.  Now the popcorn salt, taco seasoning, bread crumbs, marshmallows, etc are all hidden away and not cluttering up my pretty pantry.</p>

<p style="text-align: left;">I almost forgot I wanted to share about our first Family Night, if I don&#8217;t I will completely forget everything that happened since I didn&#8217;t take a single picture.  So instead, let&#8217;s pretend that Kade did this to my kitchen when he was making dinner and that it wasn&#8217;t me who emptied the entire contents of the pantry in order to paint shelves this afternoon.</p>
<p style="text-align: left;">Kade and I made pumpkin pancakes with &#8220;raisin faces&#8221;, which to the untrained eye might have looked like raisin polka dots.  Kyle suffered through one of my favorite traditions, eating breakfast food for dinner.  He put on a brave face for the kids though, and was thankful for the bacon.</p>
<p style="text-align: left;">After dinner we played a new game that Kade had received for Christmas, Angry Birds.  It was a fun night, nothing off the charts.  But it&#8217;s another one of our New Year goals (I like that term better than resolutions).  We are trying to be intentional about creating stability in Our Family Unit.  We want to be building an atmosphere of unconditional love and acceptance, where we can all let down our guard and be exactly who we are without fear.  One of the things that does that is Quality Time.  We figure at 3 and 1, our kids are pretty happy to spend an evening with us; but unless we make it a regular part of normal every day life, they might have to be physically tied to a chair to do it when they&#8217;re teenagers.  We want Family Night to be focused on the kids, to hopefully give them something to look forward to, where they&#8217;re in charge of food and entertainment, where we are willing to set aside parental control on nutrition and our definition of fun and let them pick.</p>
<p style="text-align: left;">Parenting&#8230;the Great Experiment&#8230;we&#8217;ll see how it nets out.</p>

<p style="text-align: left;">On the menu this time was Cedar-Plank Salmon, Spicy Pasta Salad with Smoked Gouda, Grape Tomatoes and Basil and for dessert, Lemon Gelato.</p>
<p style="text-align: left;">The salmon was fun.  I got to pull out the <em>unopened</em> cedar planks that were given to us as a house warming gift no less than 5 years ago.  (No, we weren&#8217;t stuck in a rut food-wise!)  The <a href="http://www.realsimple.com/food-recipes/browse-all-recipes/cedar-plank-salmon-10000000635603/index.html" target="_blank">recipe</a> came from an old Real Simple magazine and seasoned the salmon with brown sugar, thyme and a little cayenne pepper.</p>

<p style="text-align: left;">My salmon fillet wasn&#8217;t as big as what the recipe called for, so I cut the time down but I think I should have been watching it even more closely.  Kyle thought it was great, but I thought it was a bit dried out and I should have taken it off the grill about 3-4 minutes sooner than I did.</p>

<p style="text-align: left;">This was the Spicy Pasta Salad from <a href="http://thepioneerwoman.com/cooking/?s=spicy+pasta&amp;submit=" target="_blank">Pioneer Woman</a>.  There was nothing actually wrong with the salad itself.  I love Gouda and grape tomatoes.  The dressing was just tangy enough and the brilliantly green basil added just the right flavor.  It would have been great at a backyard BBQ or a picnic while camping, but it was not the thing to pair with Cedar-Plank salmon.  I should have done a warm side&#8230;totally my fault&#8230;it brought the whole meal down in my book.  Gol dang it!</p>

<p style="text-align: left;">Luckily, the meal did not end on a sad note.  We cleared away the plates and brought out the star of the night, homemade lemon gelato, the William-Sonoma recipe is below.  <em>It was heavenly!</em>   We even learned a bit about gelato (going for the &#8220;study&#8221; points here) vs ice cream.  Gelato has a lower fat content than ice cream, which in turn gives it a more intense flavor (less fat to coat your mouth means that lemon flavor can really hit home!)  There&#8217;s also less overrun (air) mixed into it, so it&#8217;s denser than ice cream.  And one last thing, it served at a slightly warmer temperature than ice cream to keep it creamy.  Gelato has a higher water content than ice cream so freezing it solid would create ice crystals, making it grainy instead of smooth.  And now you know&#8230; <img src='http://www.ourfamilyunit.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p style="text-align: left;">So for the overall rating of the night&#8230;Kyle and I differed.  He really liked the salmon and gave the night a 7.5.  I thought the salmon was dry, the pasta was definitely the wrong choice but the gelato almost made up for the other sins, so gave it a 6.</p>

<li class="instruction">In a nonaluminum saucepan, combine the half-and-half and cream. Using a vegetable peeler, remove the zest of 1 lemon in long strips. Add to the cream mixture. Place over medium heat and bring just to a simmer.</li>
<li class="instruction">Meanwhile, grate the zest from the remaining 2 lemons. In a food processor, combine the sugar and grated lemon sest and process until well mixed. In a bowl, combine the egg yolks and lemon sugar. Whisk until pale and smooth. Slowly whisk in the hot cream, then return the mixture to the saucepan and place over medium-low heat. Cook, stirring constantly with a wooden spoon, until the mixture visibly thickens and coats the spoon, about 4 minutes. Do not allow it to boil or it will curdle.</li>
<li class="instruction">Remove from the heat and stir for 1 minute. Let cool for 15 minutes, then whisk in the creme fraiche. Cover and refrigerate until thoroughly chilled, about 8 hours.</li>
<li class="instruction">Strain the mixture into an ice cream maker and freeze according to the manufacturer&#8217;s instructions. To serve, scoop the gelato into serving dishes. Makes about 1 1/2 quarts.</li>

<p>Just want to give a little shout out to my cousin, Amanda.  One afternoon about 20 years ago, she and I went to a thrift store and found the tiniest clothes we could.  They were so small and so cute and she might have been a little baby crazy and pulled me into her craziness.  (I blame her entirely!)  But I ended up saving a pair of shoes and a little plaid vest and this jumper for 20 years so that one day my baby girl could wear them.  But of course, I lost them and forgot about them.  After Christmas, we cleaned out the garage and guess what I found buried in a plastic storage tub!  Only problem, my baby girl wasn&#8217;t a baby anymore and this little jumper was the only thing that fit.  I couldn&#8217;t help but think how things have turned out just like I imagined 20 years ago.  Am I lucky, or what?!</p>

<p>A few weeks ago, a friend introduced me to <a href="http://www.foodily.com/" target="_blank">Foodily</a>, a gloriously inspiring site filled with the most delicious looking recipes.  One night I showed it to Kyle, saying &#8220;Wouldn&#8217;t it be amazing if we actually ate this kind of stuff?&#8221;  He just looked up and said, &#8220;Why don&#8217;t we?&#8221;  Well, there&#8217;s lots of reasons, right?  I don&#8217;t know how.  I don&#8217;t have time.  It costs too much.  It takes to long.  Not to mention that my current culinary conversations revolve around how many Cheerios are on the floor and that cheese on your sandwich tastes the same as cheese on your plate.</p>
<p>Despite all this, we kept talking.  We convinced ourselves that we could actually become Foodies.  It would be an arduous journey&#8230;one filled with burned dinners, soggy sides and fallen souffles.  But if we trained long enough and hard enough (and kept the freezer stocked with emergency pizza), we just might succeed.  Thankfully, I&#8217;ve been blessed with a husband that will eat just about anything and I really would like to expand and improve my cooking skills.  So our goal is that at least twice a month, we&#8217;ll try a totally new to us meal.  We&#8217;ll do it on a night that he&#8217;s home to help babysit, so that I can concentrate on oven timers and the like.  And we&#8217;ll use a rating system, a scale of 1-10.  And finally, most importantly, there will be no hard feelings if it&#8217;s crap.  After all, it&#8217;s an experiment and if it flops, we&#8217;ll be thankful for the Red Barron.</p>
<p>So last night was our first Foodie night.  The menu came from <a href="http://www.amazon.com/Bobby-Flay-Cooks-American-Regional/dp/1401308252/ref=sr_1_11?s=books&amp;ie=UTF8&amp;qid=1326173245&amp;sr=1-11" target="_blank">Bobby Flay Cooks American</a> cookbook:</p>

<li>Pan-Roasted Lamb Chops with Red Wine-Black Currant Sauce</li>
<li>Sweet Potato Biscuits</li>
<li>Spinach Salad with Feta Cheese (I managed to come up with this one on my own)</li>
<li>Maple Custard with Gingersnaps</li>

<p>I was excited to try everything, especially lamb since I&#8217;d never cooked that before.  I thought the lamb was delicious, managed to achieve the perfect doneness.  The sauce was good but I didn&#8217;t take time to reduce it far enough, so I think that could have been better.  But seriously, how long does it take to reduce four cups of liquid down to one?  Anyone?  Anyone??</p>
<p>On to sweet potato biscuits, these also were very good, especially drizzled with a bit of honey.  Thing to learn for next time &#8211; cutting the butter into the flour.  At first I tried the little half circle pie crust cutter thing that I&#8217;ve had in my drawer since my bridal shower and used maybe never.  But that didn&#8217;t seem to be doing much, so then I switched to the food processor.  My only logic being that I thought I remembered someone doing that on the PBS show America&#8217;s Test Kitchen.  (I&#8217;m sure my Chef Sister is cringing right about now).  I still don&#8217;t know what I should have done as it never reached the stage of &#8220;resembling rolled oats&#8221;.  But nevertheless, they were tasty and Berlin and Kade&#8217;s favorite.</p>
<p>The spinach salad prep was difficult, but I managed to pull it together.  Opened bag of spinach, placed on plate, then topped with crumbled feta.</p>

<p>After savoring every bite, it was time for a bit of dessert.  I&#8217;d never made custard before and it didn&#8217;t help that my copy of the cookbook had a printing error and listed 3 ingredients that it never mentioned what I was to do with.  Luckily, I found another copy online and continued.  My next hurdle was that it wanted me to pour the custard into six ramekins &#8211; SIX!  I had only 2 matching cup type dishes that could be used as ramekins, then 2 other mismatched ones that I use for veggie dip or hummus on random occasions, both completely different sized than the first two, and finally a coffee cup that I managed to wedge into the roasting pan half filled with water.  I had zero confidence that they would cook evenly, but in actuality it worked fine.  The custard was SO rich but very maple-y and delicious, and sooo creamy.</p>
<p>Now the one thing I was confident about making for this meal was cookies.  I&#8217;ve made dozens upon dozens of cookies in my life.  I was absolutely certain that these would be amazing and if there would be any fault with them, it would be that Bobby Flay had decided to include pepper and dry mustard in a cookie.  Isn&#8217;t there some saying about pride and tripping or something?  I was rushing, and I wanted to be out of the kitchen and so I crammed too many cookies onto a cookie sheet and in the oven they oozed into a gingersnap sheet cake.  They looked hideous!  I will say though, it was the best mustard and pepper sheet cake I&#8217;ve ever eaten.</p>
<p>Overall, we gave the meal a 7.8.  It was very good, and I did learn a lot.  But to be honest, we both figured for the same cost and effort, we&#8217;d rather have steak than lamb.  The custard, although also delicious, required a lot more work than instant pudding.  If I had the time, I would make it again&#8230;but that might not happen for a few years.  The sweet potato biscuits and gingersnaps will definitely both be added to the regular rotation.</p>

<li class="instruction">Preheat the oven to 375 degrees and line a large baking sheet with parchment paper or nonstick baking mats (or use a nonstick baking sheet). Sift the dry ingredients together into a large bowl. Cut in the shortening until the mixture resembles rolled oats.</li>
<li class="instruction">Make a well in the center of the mixture, add the buttermilk, sweet potatoes, and honey, and stir vigorously until the dough forms a ball. Knead lightly for about 30 seconds, until the dough just begins to look smooth.</li>
<li class="instruction">On a floured surface, pat the dough out 3/4-inch thick, making a 7-by-8-inch rectangle. Cut into 2-inch rounds, rerolling the scraps and cutting out more biscuits. Transfer to the prepared pan, brush tops with egg wash, and bake for 10 &#8211; 12 minutes or until lightly browned.</li>
