What is a Popover you say? If a pancake and a muffin had a baby it would be a delicious little eggy bundle of joy called a Popover! They are made up of flour, egg, milk and salt. Simple and yet so tasty!

When I was younger, I didn’t appreciate my grandma’s cooking like I do now. She would make homemade bread every day, punching it down again and again, waiting for it to rise and then doing it all over again. She had lots of patience and her house always smelled AMAZING!

She made real whipped cream, butter and jams amongst other time consuming treasures like rosettes, cream puffs and kolaches. And of course, traditional German dishes like ham hocks, head cheese and blood sausage. The last few dishes were not my fave…

As I think back to all of my favorite foods growing up, these are the foods that were made with love. They used simple ingredients, but they took time to make. Now we live in a society where we want things now! Seriously, I put something in the microwave and I can’t even wait until the timer is done, because those last 5 seconds seems like an eternity!

So this weekend, I decided to make a big breakfast instead of our usual cereal or oatmeal. Not because we were entertaining, no this was just for us. I put on a good playlist and cooked for about an hour and a half straight. I made popovers, pancakes, omlets and bacon. It was delicious and almost as good as my grandma would have made!

Popover Recipe (makes 6)

1 1/4 cup Flour          1/2 teaspoon Salt
1 1/4 cup milk           3 large Eggs

Preheat oven to 450 F. Mix together first 3 ingredients. Add eggs, one at a time, beating with a mixer after each addition and scraping down the bowl. Pour into well buttered custard cups or ramekins, filling 3/4 full. Place cups on baking sheet spread apart.

Bake for 25 minutes at 450 degrees, don’t open the oven! Reduce heat to 350 degrees (no peeking) and bake another 20 minutes.

Batter will rise and pop over the top of the cups. These bake best if the cups are not over crowded and close together on the baking sheet. Serve warm and enjoy with butter or jam. I like to eat mine hot out of the oven…mmm!

I didn't have any ramekins, so I just used small glass bowls.

Ingredients:
Cherry Tomatoes
Fresh Basil (chopped)
Garlic (minced)
Sliced Mushrooms (optional)
Parmesan Chesse
Extra Virgin Olive Oil
Favorite Pasta (I used penne)

Boil the noodles until they are ale dante, or just about done cooking. In a large frying pan add cherry tomatoes and mushrooms in a little bit of olive oil. Cook for about 5 minutes on medium heat.

Then add minced garlic and chopped fresh basil to pan. Cook for another 5-10 minutes. Add pasta to pan when done cooking. Add 3-4 teaspoons of olive oil, salt & pepper to taste. Stir. Add cheese to top when serving and enjoy!

This is a simple, quick and fresh dinner!

Taco Cheese Ball
1 packet of Taco Seasoning
1 8 oz. cream cheese (Regular or Light, not fat free)
1 pkg of shredded Taco or Cheddar Cheese
Your favorite crackers or chips

I went to a Tastefully Simple party last night and we sampled a delicious Tempting Taco Cheese Ball Mix for $6.99. That’s when the frugalista came out in me and I thought hey, isn’t this just a taco seasoning packet ($1) mixed with cream cheese?

So the next morning I decided to try it out. I mixed about a 1/4 – 1/2 of the taco seasoning packet with a brick of softened cream cheese and I had the same great taste!

If you like it a little stronger just mix in a little more of the seasoning and let it sit for a few hours. This would also be good rolled in a shredded taco blend of cheese or shredded Cheddar cheese. Serve with crackers or chips and enjoy!

This would also make a great base for a layered taco dip!

As Ella was going down the giant tube slide one last time with a friend she wiped out. I didn’t see the spill, but the girl she went down the slide with came over and got me right away and said “Ella got hurt”.

I ran over to find her laid out flat as a pancake on the mat after the slide. We put ice on her foot and she seemed a little better. Then we headed out to the car. I had to put her down to get my keys out of my purse to open the car. That is when poor Ella let out a cry like I had never heard before. So we headed over to the Emergency room, sweat and all!

They took us back right away and gave her some Tylenol for the pain. Then we got an x-ray on her left foot and ankle. It came back ok, so I thought maybe it was a sprain. The doctor had her try to put weight on it again, but she could not walk. So then we went back for a full leg x-ray just to be safe. And wouldn’t you know it, her left tibia bone was fractured!

She got a splint all the way up to her mid thigh, poor baby. We have to see an orthopedic specialist tomorrow and get her cast on. And since she is only 3 they did not give her crutches, I have to carry her everywhere…this is going to be a long 6 weeks!

My Etsy store is a HUGE success! The Feather Hair Extensions are flying out the door! My original goal for the week has been made in 1 day- WOOHOO!

I am grateful I lost my job as a Home Health Aid a few months ago because it has given me the time to work on my artistic abilities which now fills my soul with an abundance of happiness.

I currently have feather hair extensions that I made from my parents genetic fly tying chickens. Available in natural colors like white, brown, ginger or reddish brown, black/white or grizzly pattern, gray, and cream. I also have hand dyed colors in pink, red, purple, blue, orange and green for a more dramatic look.

You can purchase an extension on a removable clip or install it permanently for up to 3 months with a silicone micro ring. All of the feathers are salon quality and can be washed, dried, curled or flat ironed to fit your unique hairstyle.

Natural color feather hair extension.

I would like to introduce you to my newest product- Feather Hair Extensions! Besides being super cute, they can be washed, dried, curled and even flat ironed.

There are two ways to install them. The first is with a mini extension bead called a silicone micro bead. It comes in brown or blonde and will last in your hair for up to 3  months, depending on how fast your hair grows and how well you care for the feathers. The second option is to buy your feathers on an removable clip, which can be taken out or put in whenever you feel like it! I use the same clips used on professional hair extensions or wigs and they stay in your hair without slipping out like the little claw clips.
