Yogurt/ Curd as we all know is known for many health benefits. Its is a great source of calcium and good active bacteria which is very important for our digestive tract. In India we have many yogurt based salads which we call as Raita. We have vegetable raita, boondi raita and even fruit raita. There are some yogurt salads which are made of only specific fruits like pineapple raita, orange raita and apple raita.

The recipe which I am sharing today is vegetable raita. It can be eaten along with your meal. In India raita is had along with lunch or dinner. It also goes very well with Indian Biryani dishes. So here is a super easy salad recipe.

Ingredients

Curd/Yogurt 1 Cup
Cucumber 1 Small
onion 1 small
Tomato 1 Medium
coriander Leaves chopped 2 tsp
Salt to taste
Sugar to taste
Roasted cumin seeds powder ( optional)
Red chilly powder ( optional)

Method

Fine chop all the vegetables. Whip the curd nicely. Now add the chopped vegetables to the whipped curd. Add salt and 1/2 tsp of sugar and mix well. If you want it to be sweeter you may add more sugar. People who prefer spicy food can also add a pinch or two of red chilly powder.

Roasted cumin seeds powder can also be added in vegetable raita. Generally we don't put this for fruit raitas.

Enjoy this super easy and healthy yogurt salad with your meal!

Matar Paneer

Paneer is also known as cottage cheese and is used a lot in Indian vegetarian dishes. Spaghetti is similar to noodles. It is of Italian origin. They are made of various types of flour. Personally I like spaghetti of durum wheat. You can buy thin or thicker spaghetti as you like and try this recipe.

Ingredients
Spaghetti Boiled - 4 Cups
Garlic - 5 Flakes
Onion - 1 Medium
Capsicum - 1 Medium
Beans - 1/2 Cup Chopped
broccoli - 4-5 few small pieces
Carrot - 1 Medium
Spring Onion - 3-4 Strands
Soya Sauce
Chilly Sauce
Chicken Stock Cube
Salt to taste
Oil - 4 Tabsp

Method

This is the Spaghetti which I used in my recipe.
Break Spaghetti into 2 pieces if its too long and boil it in water as per the instruction on the pack. Usually its 10 - 15 mins. Also add little salt and 1 tsp oil while boiling.

After its boiled, strain the water and wash the spaghetti with cold water. Add 2 tsp of oil and spread it into broad vessel and let it cool down for sometime.

Finely chop all the vegetables and keep aside as shown. You can put more or less quantity of vegetables as per your taste. If you don't want you to add some vegetable like beans or broccoli you can. On the other hand if you like peas, you can also add that.

Heat oil in a pan. Add 2 tsp of oil to it. Now add chopped garlic to it.

It is made from Maida, a white flour made from finely milled wheat. It is also used to make nan and tandoori breads. Bhatura is deep fried in oil and is generally eaten with chole which is also one of my hub recipes. Its a very tasty bread and can be prepared quickly. Do try it and enjoy it with family and friends..
Once garlic starts turning golden, add onion and capsicum. Let it get cooked for 3-4 mins. Then add all the 3 sauces and salt. Add little water and boiled pasta to it. Add salt to taste. Now let it cook for 2-3 mins till sauce and pasta is mixed well and gravy has dried. Add chopped spring onion to it.
Heat oil in a pan, add oil and add beated egg to it and pinch of salt. Garnish the pasta on top with scrambled egg and serve.

Carrot - 1 Medium Size
Radish - 1 Medium Size
Coriander Leaf chopped 2 tablespoon
Broccoli - 1 Small Piece
Wheat flour - 2 Cups
Onion - 1 small finely chopped
Ajwain seeds - 1/2 tsp
Refined oil - 4 tsp
Red chilly Powder (Optional)
Garam masala Powder (Optional) - 1/2 tsp
Salt to taste

Method

Grate carrot, radish and broccoli. Mix all the grated vegetables, chopped onion and add coriander leaves to it. The grated vegetable will leave some water, don't throw it. Let it remain, it can be used while making dough. Now add wheat flour to the vegetable mixture and mix well. Add around 2 tsp of oil, salt, ajwain, red chilly powder and garam masala powder. Now add water and make dough.

Make thin chapati from the dough and roast it on tawa with little oil on both sides to golden brown.

Note:

You can also put green chillies in place of red chilly powder if you want.
This recipe is also very good to give to kids as there are lots of vegetables in it.
Ajwain also helps in easy digestion for kids and adults.
If you don't want it to be spicy you can avoid adding chilly powder and garam masala powder.

Chicken - 1 kg
Onions - 3 finely chopped
Garlic Paste - 3 tablespoon
Ginger Paste - 1 teaspoon

Almond/Badaam Powder - 2 tablespoon
Wiped Curd - 4 tablespoon
Chicken Tandoori Masala
Red Chilly Powder - 1/2 teaspoon
Kashmiri red chilly Powder - 1 teaspoon (Optional)
Whole garam masala - Whole Black Pepper : 4, Clove - 3, Cardamom - 3, Cinnamon- 1 Inch
Refined Oil - 4 tablespoon
Kastoori Methi - 1 teaspoon
Salt to taste
Water

Method

Heat the oil in pan. Add whole garam masala to it. Wait for few seconds then add finely chopped onions. As onion starts becoming golden, add ginger garlic paste and let it cook for sometime. After the raw taste of ginger and garlic is gone, add chicken pieces to it. Then add salt, chicken tandoori masala, red chilly and kashmiri red chilly powder. Put the lid and let it cook on simmer for 15- 20 mins. Dont add water at this point as chicken will leave water. When the chicken is cooked and masala becomes nice deep brown color, add kastoori methi. After 1-2 mins add curd and badaam powder and little water around 1/2 cup and let it cook for 5mins.

This can be served with hot Parathas or jeera rice.

Notes

Kashmiri red chilly powder is optional to give spicy flavor as well as color. If you dont have you can add only normal red chilly powder as per taste.

Using chicken tandoori masala saves time for us to make dry masala so generally I go for readily available masala from MDH, Everest, etc. If you dont want to use that, you can also use normal garam masala powder.

200 gms of Paneer
3 table spoon of refined oil
10 flakes of garlic finely chopped
3 green chillies cut vertically into 2 pieces each
Grated ginger 1 tea spoon
1 capsicum
1 Onion
2-3 Strands of Spring Onion
2 table spoon of tomato sauce
2 tea spoon of chilly sauce
2 tea spoon of soya sauce
salt

Method
Chop all the vegetables finely and keep aside. Also cut paneer into medium size cubes and keep aside.
Heat oil in a pan. Add panner pieces to it and let it become golden on both sides. Remove it from oil and keep aside.
In same oil add finely choppen garlic. When garlic starts becoming golden add onion and capsicum to it. Add salt to it. Let this cook for 3-4 mins till it is cooked. Then add grated ginger to it and let it cook for another 2-3mins. As the vegetables start turning golden. Add all the 3 sauces to it. Also add half cup of water. Taste the salt and add again if required. Remember sauces also have salt so you should not add too much salt to it in beginning.

Now add fried paneer pieces to it and let it cook for 2-3 mins till water dries and gravy and paneer get mixed well.

Add the finely choppen spring onion to it and switch it off.

Note: I cut chillies vertically so that it is easily seen and can be removed while eating. Cutting vertically will allow all spicy taste to go in gravy well. If you want you can finely chop chillies.

This can be served with noodles, Chinese rice or hot parathas.

Chicken Sandwich

Ingredients:
Heat a pan and add 1 spoon of oil in it.
Add chicken shreds to it. Add pinch of salt and let it cook for 1-2 mins.
As chicken starts becoming golden brown, put pepper and soya sauce and switch it off.
Dont over fry the chicken else it will become rubbery.
Take it out in a vessel. Grate the cheeze cube and mix it with the chicken made above.
Now fill this mixture in between 2 pieces of bread and roast it in tawa or sandwich maker by applying little oil on both sides of bread. Cook till bread becomes golden brown on both sides.

Enjoy it with tomato sauce.
