Massageie o cordeiro seco. Tempere generosamente com sal e pimenta. Deixe descansar em temperatura ambiente por 1 hora. Pré-aqueça o forno a 200º C. &lt;br /&gt;
Em uma tigela, misture as migalhas de pão, alho, salsa, alecrim, tomilho, azeite, sal e pimenta. Cubra o cordeiro em todos os lados com a mostarda. Arrume uma parte da mistura de miolo de pão na parte de baixo do cordeiro. &lt;br /&gt;
Coloque o cordeiro, a gordura voltada para cima, em um rack em uma assadeira grande. Arrume a mistura de miolo de pão restante na parte superior e os lados do cordeiro. Leve a assadeira ao forno e asse por 30 minutos. Reduza a temperatura do forno para 180 º C. Continuar assar por mais 1 hora e 15 minutos ou 01 hora e meia. Você pode usar também um termômetro de leitura instantânea inserido na parte mais grossa da carne, do osso, registre mais ou menos 50º C. &lt;br /&gt;
Transfira o cordeiro para uma tábua de corte, tampe sem apertar com papel alumínio e deixe descansar por 20 minutos. Corte o cordeiro em fatias finas e coloque numa travessa aquecida. Sirva imediatamente.&lt;br /&gt;
