Ilhabela is right off the coast of São Paulo, approximately 4 hours away from São Paulo city. It's an archipelago of islands, the largest one is Ilha de São Sebastião (St. Sebastian Island). The island is rich in history and tradition, its settlement reaching far back to the time of Amerigo Vespucci and further still to the Tupinambas (Native Indians) who lived there before. Because it was a haven for explorers and the scene of many shipwrecks on its rocky beaches, there are numerous opportunities for diving and checking out ancient wrecks, which are now home to exotic sea life.

The archipelago lives up to its name, beautiful island. The inhabitants live around the shoreline, and the middle is overtaken by Atlantic forest. The rumor is 94% of the island is completely untouched. I don't doubt it. São Sebastião is home to hundreds of freshwater springs, some of which experience no human interference from spring to ocean, meaning the fresh water stream goes from its source to the ocean without encountering human contact, pipes, homes, roads, etc. The most developed area is the part of São Sebastião that faces the continent. From there, there are only trails for 4x4 vehicles that lead to the other side of the island and its hidden beaches.

This is a place for adventurers—for kayakers, divers, hikers, history enthusiasts, sunset lovers, nature appreciators. Or...people who just want to rest. During the summer season (December-February) thousands flock to the islands, but July was the perfect time for us to hide away in this beautiful place.

July did mean cold ocean water, however. We braved it. We convinced ourselves that having just camped in Banff where the water is so cold it hurts your bones, the Atlantic in July was refreshing.

We decided explored two beaches near the hotel: Praia Grande and Praia da Feiticeira. Praia Grande is one of the longer stretches of beach on the island and home to São Benedito Chapel. We splashed in the clear water, took pictures at São Benedito Chapel, and moved on to watch the sun set at Praia da Feiticeira.

There's a beautiful manor overlooking a Praia da Feiticeira, and it's a pastime of almost all who visit to wonder and guess at the history of the ancient place. The legend surrounding the house involves a witch, pirates, and the slave trade. As the story goes, a former owner made a deal with pirates and slave traders who used her beachfront property as a point of entry to smuggle in slaves after slavery was abolished in the 1850s.

Years later, old and disturbed, she made her slaves bury her treasure in the forest. Paranoid and sure they would come back for it, she killed them. Haunted by her actions, she went mad and disappeared, leaving behind her treasure untouched.

The beach itself gives a completely different vibe. It is small and secluded, almost like a private beach just for you. There are no snack stands or noisy roads. It's you, the sand, lapping waves, and the sunset. And maybe a group making a beach bonfire over there.

Jabaquara beach was the furthest we got. We followed the road until it became a dirt path through the forest. Once the road ended, we picked up a couple that was hitchhiking to Jabaquara. They had taken the bus as far as it would go and relied on the kindness of strangers to get to the beach. We saw a few other people getting and giving rides; apparently, it's a common way to get to Jabaquara.

When you go to Brazil, don't get scared of street vendors. They're harmless and often useful. They will be on the side of the road, meandering through traffic, and sometimes at the beach. They set up beach chairs, tables, and parasols in front of their snack stands. Normally they don't charge if you sit at one of them, although it's always nice to order something, even if just a water. They were at Jabaquara. We had to pay for parking, but it was convenient and shady. Others sold snacks, local artisanal trinkets, and natural mosquito repellant.

Let's talk for a second about mosquitoes. Because the island is so conserved and covered in untouched forest, there are plenty of black flies. We didn't necessarily see them, nor were we kept up at night or from enjoying anything because of them, but... we knew they were there. Having been warned, we applied bug spray daily and kept a mosquito repellent plug in our room. Take and apply repellent. They won't give you a tropical disease or anything, but their bites are annoying (you will see several people completely freckled and marked with bites), take a while to disappear, and some people have allergic and painful reactions. Again, if you go prepared you'll be fine.

We walked down through the trees and the view opened up to another beautiful stretch of dark sand and clear waters. Jabaquara is almost deserted. The waves at Jabaquara are my favorite to swim in: they crest high but only break extremely low and close to the shore. It's a tranquil beach with a freshwater lagoon that then flows lazily into the ocean. The freshwater comes from the mountains, so it is colder than the ocean water, but it offers the perfect solution to getting rid of the sticky saltwater before going home.

Ilhabela was a beautiful experience. We want to return someday and explore the other side. But until then, we have the memories and photos.

Ilhabela fica na costa de São Paulo, a aproximadamente 4 horas da cidade de São Paulo. É um arquipélago de ilhas, o maior deles é a Ilha de São Sebastião. A ilha é rica em história e tradição, seu povoamento volta ao tempo de Amerigo Vespucci e ainda mais aos Tupinambás (índios nativos) que viviam lá antes ainda. Por ser um paraíso para os exploradores e o cenário de muitos naufrágios em suas praias rochosas, há inúmeras oportunidades para mergulhar e conferir naufrágios antigos, que agora abrigam a vida marinha exótica.

O arquipélago faz justo ao seu nome, bela ilha. Os habitantes vivem ao redor da costa, e o meio é tomado pela Mata Atlântica. Dizem que 94% da ilha está completamente intocada. Eu não duvido. São Sebastião abriga centenas de nascentes de água doce, algumas das quais não sofrem interferência humana da fonte ao oceano, o que significa que o fluxo de água doce vai da nascente até o oceano sem encontrar contato humano, canos, casas, estradas, etc. A área mais desenvolvida é a parte de São Sebastião que está voltada para o continente. De lá, há apenas trilhas para veículos 4x4 que levam ao outro lado da ilha e suas praias escondidas.

Este é um lugar para aventureiros - para andar de caiaque, mergulhar, fazer trilha, e para entusiastas da história, amantes do pôr do sol, apreciadores da natureza. Ou ... pessoas que só querem descansar. Durante a temporada de verão milhares de pessoas migram para as ilhas, mas julho foi o momento perfeito para nos escondermos neste lindo lugar.

Julho significava, no entanto, água gelada. Nós enfrentamos. Nós nos convencemos que tendo acabado de acampar em Banff onde a água é tão fria que dói os ossos, o Atlântico em julho seria refrescante.

Decidimos explorar duas praias próximas ao hotel: Praia Grande e Praia da Feiticeira. Praia Grande é um dos trechos mais longos de praia da ilha e abriga a Capela de São Benedito. Andamos pela a areia e na beira da água transparente, tirámos fotos na Capela de São Benedito e seguimos para assistir o sol se por na Praia da Feiticeira.

Há uma mansão com vista para a Praia da Feiticeira e é um passatempo de quase todos os que visitam a praia admirar e tentar adivinhar a história do lugar antigo. A lenda da casa envolve uma feiticeira, piratas e o tráfico de escravos. Segundo a história, uma ex-proprietária fez um acordo com piratas e traficantes de escravos que usavam sua propriedade à beira-mar como ponto de entrada para contrabandear escravos depois que a escravidão foi abolida na década de 1850.

Anos depois, velha e perturbada, ela fez seus escravos enterrarem seu tesouro na floresta. Paranoica e com certeza que eles voltariam para roubar suas riquezas, ela os matou. Assombrada por suas ações, ela enlouqueceu e desapareceu, deixando para trás seu tesouro intocado.

Loucura, né?

A praia em si dá uma vibe completamente diferente. É pequena e isolada, quase como uma praia particular só para você. Não há lanchonetes ou estradas barulhentas por perto. Você, a areia, o churuá das ondas e o pôr-do-sol.

A praia do Jabaquara foi a mais longe que visitamos. Nós seguimos a estrada até que se tornou um caminho de terra através da floresta. Quando a estrada acabou, demos carona para um casal que tambem estava indo até Jabaquara. Eles haviam tomado o ônibus até a estrada de terra e ficaram contando com a bondade dos outros para chegar à praia. Vimos algumas outras pessoas recebendo e dando carona; aparentemente, é uma maneira comum de chegar até Jabaquara.

Nós tivemos que pagar pelo estacionamento, mas era conveniente e na sombra. O homem também quis nos vender "repelente natural" mas já tinhamos. Sendo que a ilha é tão conservada e coberta de floresta, há muitos borrachudos. Não nos perturbaram nem atrapalharam o passeio, mas sabiamos que estavam por perto. Estávamos cientes e por isso aplicamos repelente diariamente e mantivemos um repelente fixo no nosso quarto. Se um dia visitar Ilhabela, leve e aplique repelente.

Nós caminhamos através das árvores e a vista se abriu para outro belo trecho de areia escura e águas claras. Jabaquara é quase deserta. As ondas eram do jeito que eu mais gosto: altas, mas só quebram no raso. É uma praia tranquila com uma lagoa de água doce que flui preguiçosamente para o oceano. A água doce vem das montanhas, por isso é mais fria do que a água do oceano, mas oferece a solução ideal para se livrar da água salgada antes de ir para casa.

Ilhabela foi uma experiência linda. Queremos voltar um dia e conhecer o outro lado. Mas por enquanto, temos as memórias e fotos.

Lenda da Praia da Feiticeira

This July we completed two years of marriage. At times it seems so natural like it's been a lifetime. At others, it's really hard to believe our wedding wasn't just last month.

To celebrate, we planned a little getaway within our vacation to Brazil. We were supposed to drive an, admittedly long, four hours to an island on the coast. We caught a bit of traffic crossing São Paulo, but that was expected. The rest was beautiful scenery up and down the sierra surrounded by its lush greens. We stopped at a beach town to raid their grocery store for some last minute supplies and dinner. Off we went making good time.

Until...it was time to board the ferry. The line of cars meandered and stopped. We craned our necks, thanked the street vendors who were selling everything except a faster way to arrive, got out of the car, walked around, hoping the dock was just around the next bend. After two hours, we finally made it onto the ferry. We watched the sunset behind the mainland, and by the time we arrived on the island half-an-hour or so later, it was nighttime.

We passed by our hotel blindly following our GPS. We drove up dark roads, "Is it here?" "No, let's get out of here!" On one side of the road, there were gates, which completely confused me. "That's the ocean down there! Where do these gates lead to?" So we looked at the opposite side. And completely missed the hotel.

It reminded me of our honeymoon. I had no idea where we were going (Vini planned the entire trip, and I only found out as we went along), and as we passed sketchy roads and rundown hotels I kept saying to myself "Please, God, don't let it be this dingy place in the middle of nowhere" and preparing myself to make the best of it even if it were.

But like our honeymoon, when we finally made it to the right place, it was my favorite place around. We stayed at Barra do Piuva. The hotel is built down the slope and ends at the beach. A valet desk is the only space at road level. Stairs lead down to the reception, rooms, amenities, and then down towards the dock. We arrived at our room and heard the waves crashing, saw the moon filtering through the palm trees and sparkling on the water. Finally. We'd made it.

The next morning we realized the whole trip had been worth it. We had a beautiful view of the ocean, the sun glistening on the waves, the ferries in the distance, beaches stretching around the island. We were ready to explore. But first, breakfast.

When you stay at a hotel in Brazil, do know that breakfast is something you will want to take seriously. It's normally a buffet style spread with tables laden with food and drinks. Savory tarts, cakes, eggs, a variety of bread, rolls, spreads, cheeses, yogurt, fresh fruits, teas, coffees, juices.

We really enjoyed our hotel. There was plenty to do, and it wasn't too busy during the week despite it being July. We divided our time between really taking advantage of the pool, hot tub, sauna, beach, etc., and going to other beaches and exploring the island. Barra do Piuva has complimentary kayaks available for guests, so we took one out to go around Ilha das Cabras. It's a private island, so we only went around it and made up stories about who owns it. The water was clear, and we had a sea turtle friend come up to the surface to say hello.

Em julho deste ano completamos dois anos de casados. Às vezes parece tão natural que tenho certeza que faz uma vida toda. Como tem hora que é difícil acreditar que nosso casamento não foi apenas no mês passado.

Para comemorar, planejamos um passeio dentro de nossas férias para o Brasil. O plano era dirigir quatro horas para chegar em Ilhabela, o que, convenhamos, já era uma viagem semi-longa. Nós pegamos um pouco de tráfego intenso atravessando São Paulo, mas era de se esperar. O resto foi uma viagem muito tranquila subindo e descendo a serra cercada por seus verdes exuberantes. Paramos em uma cidade antes de atravessar na balsa para comprar algumas comidinhas. Continuamos a viagem com planos de chegar cedo no hotel.

Até que chegou a hora de embarcar na balsa. Chegamos na fila e paramos. Esticavamos o pescoço pra tentar ver, agradeciamos os vendedores ambulantes que estavam vendendo de tudo menos uma maneira mais ràpida para chegar. Saímos do carro, andamos pra ver, esperando que a balsa estivesse na próxima curva. Depois de duas horas, finalmente chegou nossa vez de embarcar. Observamos o sol se pondo atrás do continente e, quando chegamos à ilha cerca de meia hora depois, já era noite.

Passamos pelo nosso hotel cegamente seguindo o Waze. Nós subimos estradas escuras, "Será que é aqui?" "Não, não é. Vamos sair logo daqui!" De um lado da rua havia portões, o que me confundiu. "Mas é o oceano lá embaixo! Para onde esses portões levam?" Então nós olhamos para o lado oposto. E completamente deixamos de ver as placas iluminadas do hotel.

Me fez lembrar a nossa lua de mel. Eu não tinha nenhuma ideia de onde estávamos indo (o Vinícius planejou a viagem inteira, e eu só fui descobrindo). Enquanto passávamos por estradas escuras e pousadas decadentes em Recife eu ficava orando para mim mesmo: "Por favor, Deus, não deixe ser esse lugar esquisito no meio do nada" e me preparando para manter o sorriso no rosto mesmo que fosse.

Mas foi igual dois anos atrás em nossa lua de mel. Quando finalmente chegamos ao lugar certo, aconteceu que foi o meu preferido de todos ao redor. Nós ficamos no hotel Barra do Piúva. O hotel é construído na encosta e termina na praia. Uma mesa para o rapaz que pegou nossas malas é o único espaço no nível da rua. Escadas levam até a recepção, quartos, comodidades e, em seguida, em direção a praia. Chegamos ao nosso quarto e ouvimos as ondas quebrando, vimos a lua passando pelas palmeiras e cintilando na água. Finalmente. Chegamos.

Na manhã seguinte, percebemos que a viagem inteira do dia anterior valera a pena. Tinhamos uma vista do oceano, o sol brilhando sobre as ondas, as balsas à distância, praias ao redor da ilha. Nós estávamos prontos para explorar. Mas primeiro, o café da manhã.

E que café da manhã. Aqui os hotéis não tem disso de ter fartura no café da manhã. Sentimos muita a falta disso por que, bom, não sei vocês, mas nós vamos dormir e acordamos pensando no café da manhã. 😆 O Barra do Piúva não deixou a desejar. Tinha várias opções para vegetarianos, inclusive torta de palmito.

Nós realmente aproveitamos o hotel. Havia muito o que fazer, e não estava muito cheio durante a semana, apesar de ser julho. Nós dividimos o nosso tempo entre aproveitar a piscina, hidromassagem, sauna, praia, etc., e indo para outras praias e explorar a ilha. O Barra do Piúva tem caiaques de cortesia disponíveis para os hóspedes, então pegamos uma e demos a volta na Ilha das Cabras. É uma ilha privada, então nós apenas demos a volta imaginando e inventando histórias sobre o(a) dono(a). A água estava limpa e tivemos uma visita de uma tartaruga marinha que veio à superfície para dizer oi.

Innocents Abroad — A Surprise

On Tuesday evening, August 14, Vini and I arrived home after 44 days away. It had been two years since we had gone to Brazil, and boy was it time for us to visit.

It's hard for me to explain what it's like to go back. It brings me so much healing—physically, emotionally, mentally, spiritually. As my brain switches out English for Portuguese, everything else switches a little bit too. Going back centers me, and I am so thankful we had a chance to go when we did.

I thought I'd share a bit about our time there, may I? We were so incredibly busy there (the family has doubled now!) traveling from one place to another and saw so many beautiful things...

But let's start at the beginning. We bought our tickets almost six months ahead of time because we are very spontaneous people, as long as it is all carefully planned. Also because the price was right, obvs. Once the tickets were bought we decided we'd surprise Vini's family.

Y'all. We lied.

We told our family we'd be arriving July 9, when in fact we would be arriving on July 2. A week before we left, we asked Joel and Viviane (family friends, event planners, lovers of surprises, and all around good people who happen to be neighbour's of Vini's family) to pick us up. All we asked was for them to pick us up at the airport, but they went so far beyond.

Here's a little necessary context. Bear with me:
My father-in-law is president of our church's South Brazil Union and my brothers in law also work for the Union, which means they all live on the Union Headquarter property, along with other families. The week we arrived, they were all involved in a new landscaping project and working outside.

Joel and Viviane subtly suggested a community potluck for all the families to be scheduled precisely the day we'd arrive around lunchtime. This guaranteed Vini's family would all be in the same place. They asked all the families to sit side by side and made sure someone was filming.

Viviane parked right behind where his family was sitting, and we hid in the backseat. She knocked quietly on the door when it was time and...

Thank you to everyone who helped us surprise them, to Raquel who helped coordinate, to Ton and Fabricio for filming, and of course to Joel and Viviane for orchestrating. It made them and us so happy.

That was the beginning...

Na terça-feira à noite, 14 de agosto, o Vinícius e eu chegamos em casa depois de 44 dias fora. Fazia dois anos que não íamos para o Brasil (ou seja, desde casamento) e já estava na hora da gente ir pra lá.

É difícil para mim explicar o que sinto quando volto. Me faz muito bem e traz uma cura física, emocional, mental e espiritual. Enquanto meu cérebro troca o inglês para o português, todo o resto muda um pouco também. As visitas me ajudam focar no que é realmente importante e estou muito grata por termos tido a chance de ir quando o fizemos.

Eu pensei em compartilhar um pouco sobre o nosso tempo lá, posso? Nós viajamos muito (a família dobrou agora!) tentanto rever todos e vimos e vivemos muitas coisas bonitas...

Mas vamos começar no começo. Ouvi dizer que é melhor assim...

Compramos nossas passagens quase seis meses antes porque somos pessoas muito espontâneas, desde que tudo seja cuidadosamente planejado. Também porque o preço estava bom, claro. Uma vez que as passagens foram compradas, decidimos que surpreenderíamos a família do Vinícius.

Pessoal. Nós mentimos.

Dissemos à nossa família que chegaríamos no dia 9 de julho, quando, na verdade, chegaríamos no dia 2. Uma semana antes de viajar, pedimos para o Joel e a Viviane (amigos da família, organizadores de eventos, amantes de surpresas e pessoas boas demais que também moram no sítio da União onde meus sogros moram) para nos buscar no aeroporto. Apenas pedimos que nos buscassem no aeroporto, mas eles foram muito além.

Um pouco de contexto:

Meu sogro é presidente da União Sul do Brasil da nossa igreja e meus cunhados também trabalham para a União, o que significa que todos moram no mesmo sítio junto com outras famílias que também trabalham para a Obra. Na semana em que chegamos, todos estavam envolvidos em um novo projeto de paisagismo e trabalhando lá fora.

O Joel e a Viviane sugeriram sutilmente que tivesse um almoço comunitário entre as famílias do sítio justo no dia em que chegaríamos bem na hora do almoço. Isso garantia que meus sogros e cunhados estariam todos juntos na mesma hora. Eles sentaram todas as famílias juntas para evitar suspeita e se certificaram de que alguém estava filmando.

A Viviane estacionou logo atrás de onde os Gessners estavam sentados e nos escondemos no banco de trás. Ela bateu na porta quando chegou a hora e ...

Obrigado a todos que nos ajudaram. Sem vocês seria impossível. Obrigada a Raquel que ajudou a coordenar, ao Ton e o Fabrício pelas filmagens e, claro, ao Joel e a Viviane por orquestrar tudo tão perfeitamente. Isso os fez e a nós tão felizes.

Guava Paste Rolls - Enroladinhos de Goiabada

SUMMERTIME! It's almost here! I can feel it. We're planning loads of fun trips and big changes for this summer. The sun comes out and it feels like we all come alive and become braver to try new things, go new places, get moving...

Maybe you're not going far away this summer, or maybe you're waiting for the day to take off to arrive. Here's a recipe to make and bake in the meantime. It'll give you a taste of a faraway land. It's quick, easy, and tastes sweet and summery.

Introduction to Guava Paste
For this recipe we're using Guava paste or guava marmalade. It's made from guava, native to South America. The guava paste is a thickened jelly that is so firm you can slice it. Its strong sweetness complements deliciously with savory. The deep guava-red hue adds a beautiful flair to dishes. It has a flexible texture meaning you can slice it and pair it with queijo fresco (or probably any cheese; it'd make an excellent addition to your cheese board), or melt it with a few teaspoons of water and use it as a cake filling, or cut it up and use it as a filling for rolls and other pastries. Buy it. Open up the packaging, slice it, throw it on a cracker, welcome to a new world.

Guava Paste Rolls

Ingredients
Dough:
1 cup warm water
1 Tbsp. yeast
1/2 Tbsp. salt
1/2 Tbsp. sugar
6 Tbsp. oil*
2-3 cups flour

*Okay, here's the thing about Brazilian measurements. They use regular silverware, not designated measuring spoons. Also, I learned this recipe from watching my mom do it. Here's how she measures oil (as does my mother-in-law and most Brazilian women I know): she starts a steady stream of oil onto a regular Tablespoon and once the spoon is full she empties it into the bowl in the blink of an eye never interrupting the stream of oil. Fill spoon, empty, repeated x6. Maybe I'll do a video later to show it better. Would that help?

Filling:
Approx. 300g Guava Paste* cut into strips
*Can be found at Walmart, Amazon, Loblaws, and probably most grocery stores with an "international foods" aisle

Optional: Powdered sugar for dusting

Directions
1. Mix water and yeast in a mixing bowl. Add salt, sugar, and oil and mix.
2. Add the 2 cups of flour and mix with a wooden spoon. Knead by hand and, if necessary, add the 1/2 cup little by little until you have a smooth dough.
3. Cover and let the dough rise for 30-40 minutes.
4. Generously sprinkle a clean counter or table surface with flour and roll out the dough. You need to roll it out thinly because the dough will rise in the oven. However, be careful not to roll out too thin and cause tears.
5. With a pizza cutter, cut the dough into squares. (Ball up the scraps, then roll it out again until you run out of dough. Place a piece of filling into the final scrap, roll it into a little ball, and place to bake with the rolls.)
6. Place the guava paste strips diagonally onto the squares of dough and roll from one end to the other like so:

7. Place on a non-stick cookie sheet and bake for approximately 15 minutes in a preheated oven at 350º. (It really depends on your oven. Keep an eye on them and when they're starting to become golden on the top, they're done.)
8. Dust with powdered sugar once cooled, if you want. But they're addictive either way! Enjoy!

Enroladinhos de Goiabada

Ingredientes

Massa:
1 xícara de água morna
1 colher de sopa de fermento biológico
1/2 colher de sopa de sal
1/2 colher de sopa de açúcar
6 colheres de sopa de óleo
2-3 xícaras de farinha de trigo

Recheio:

Aprox. 300g de goiabada cortada em tiras
Opcional: Açúcar de confeiteiro para polvilhar

Modo de preparo
1. Misture a água e o fermento em uma tigela. Adicione o sal, açúcar e óleo e misture.

2. Adicione as duas xícaras de farinha e misture com uma colher de pau. Amasse com a mão e, se necessário, acrescente a meia xícara aos poucos até obter uma massa lisa.

3. Cubra e deixe a massa crescer por 30 a 40 minutos.

4. Polvilhe um balcão limpo ou uma superfície de mesa generosamente com farinha e abra a massa. Precisa abrir a massa bem fina porque a ela vai crescer no forno. No entanto, tenha cuidado para não abrir fina demais e rasgar.

5. Com um cortador de pizza, corte a massa em quadrados. (Junte os restos de massa e abra novamente até acabar a massa. Junte o restinho final, coloque o recheio, forma uma bolinha e coloque para assar junto com os enroladinhos.)

6. Coloque as tiras de goiabada na diagonal sobre os quadrados da massa e enrole de uma extremidade à outra assim:

7. Coloque em uma forma antiaderente e asse em um forno preeaquecido a 180º por aproximadamente 15 minutos. (Depende do seu forno. Fique de olho e quando estiverem começando a dourar por cima, pode tirar.)

8. Polvilhe com açúcar de confeiteiro depois que esfriarem se quiser. Mas eles são viciantes mesmo sem! Aproveite!

A long time ago I pinned this amazing, easy recipe for fluffy, quick, and vegan pancakes. I am so glad that I saved it on an index card in my recipe box, because I looked for it again online, and it has

vanished! The pin linked to a website called "mylittlecelebration", which apparently doesn't exist anymore.

I am going to share the recipe here below. It is not mine, but I do enjoy it immensely! It's my go-to recipe for fluffy deliciousness for brunch (or dinner sometimes...shh). You need a trusty pancake recipe in your culinary repertoire. So here we go...

Ingredients
1 cup flour*
1 Tbsp sugar
2 Tbsp baking powder
a pinch of salt
1 cup vanilla soy milk
1 Tbsp oil
1 Tbsp unsweetened applesauce**
2 tsp vanilla extract
Optional: 1/2 cup fresh fruits, washed, chopped if big***

Directions
1. Start heating your frying pan/skillet/griddle. If it's not a non-stick pan, you may need to coat it lightly with an oil.
2. Mix wet ingredients in a bowl.
3. Add dry ingredients and stir.
4. Add fruits if using.
5. Scoop pancake mix onto pan and cook to desired consistency.
6. Serve immediately with fresh fruits, syrup, whatever your heart desires!

*AP or whole wheat if you want to take the "healthy" up a notch
**I usually just grate a fresh apple or mash a banana and scoop up a Tbsp.
***The original recipe didn't call for it, but I've added fresh berries. My favorite is fresh strawberries. Nom.

Um tempo atrás encontrei uma receita fácil de que resultou em panquecas fofinhas, rápidas e veganas por cima! Traduzi ela aqui para vocês. Não é minha receita, mas o site onde estava não existe mais :( ! Fico muito feliz que a guardei na minha caixinha de receitas.

Todos precisam de uma receita de panqueca em seu repertório culinário. Então vamos lá...

Ingredientes
1 xícara de farinha *
1 colher de sopa de açúcar
2 colheres de sopa de fermento em pó
uma pitada de sal
1 xícara de leite de soja
1 colher de sopa de óleo
1 colher de sopa de compote de maçã**
2 colheres de chá de extrato de baunilha
Opcional: 1/2 xícara de frutas frescas, lavadas, picadas se forem grandes ***

Instruções
1. Aqueca sua frigideira/ chapa. Se não for antiaderente talvez precise untar.
2. Misture os ingredientes molhados em uma tigela.
3. Adicione os ingredientes secos e mexa.
4. Adicione frutas se estiver usando.
5. Dispeje a massa da panqueca na chapa usando uma concha e cozinhe até a consistência desejada. Quando ver que os lados estão firmes, ja pode virar.
6. Sirva imediatamente com frutas frescas, xarope, pasta de amendoim, o que seu coração desejar!

*Pode usar farinha de trigo integral se quiser aumentar o fator "saudável"
** Eu costumo apenas ralar uma maçã fresca ou amassar uma banana e usar uma colher de sopa.
*** A receita original não pedia, mas adicionei frutas frescas. Minha preferida é morango ou mirtilos frescos.

I've been wanting to share this recipe for so long. Really. It's one of my absolute favorites. I'll post the recipe here first, but if you'd like to know why I love it so much, just scroll on through!

Yields: About two dozen (24) cookies
Time: Fast. 8-10 minutes baking

Ingredients

1 cup brown cane sugar
1 cup sugar
½ cup vegan butter or margarine
½ cup oil
2 ripe bananas (mashed) or 1 cup (or a flax egg)
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. vanilla
3 cups AP flour
1 1/2 cups milk chocolate chips or 3/4 cup carob chips

INSTRUCTIONS

Cream butter, oil, and sugars with a mixer. Add bananas and beat until incorporated.
Add remaining ingredients minus the chocolate chips and beat just until cookie dough consistency. Don't overmix.
I always pre-heat my oven right about now. Preheat to 350º and then spoon cookie dough onto a baking sheet lined with parchment paper. You can pat them gently or just leave them in little mounds.
Bake at 350º for 8-10 minutes or until edges begin to brown. (Cookies finish baking when cooling!)

Okay, so STOP. THE. PRESSES. Stop your search for the best chocolate cookie ever. It's not Grandma Nesle Toulouse's chocolate chip recipe. It's this one. Why? LET ME TELL YOU!
First, the results: a chewy, gooey, chocolate-y, delicious, cookie. Second, the preparation: quick (to make and bake), easy (to make and clean up; seriously, look at the recipe and you'll see you use the same measuring utensils repeatedly and one bowl), ingredients you most likely have in your fridge and if you don't, here's the best part: it's SO adaption-friendly. You can make it vegan, or not. (Not necessarily healthy, but vegan.) My mom is allergic to eggs (seriously. no good. can't eat them) so I grew up substituting them in desserts. One of my favorite ways to substitute eggs is with a flax egg. The common way to make a flax egg is found here. But I never use it that way and haven't tried it in this recipe. I normally make it like so: Place 3/4 cup water and 1 Tbsp. of flaxseeds in a pan, stir and allow it to settle. Let boil for about 2-3 minutes. Remove from heat and place the liquid in a bowl. It should be thickened by now and will only get closer to an egg white consistency as it cools. This way's better (imo obv.). Let me know if you try it! BUT for this recipe, I just use 1/2 cup of mashed banana to replace each egg, and it works so well. Notes: make sure they're really well mashed or you'll get clumps of banana. Make sure they're ripe or the cookies will have a strong banana taste. If bananas are really not your thing, sub them for applesauce: 1/4 cup for each egg. No applesauce? We will find a way! Grab an apple and grate it. I've tried both of these; they yielded soft cookies, warm cookies, little spheres of joy. I've also subbed oil for butter, putting about 3/4 cups of oil instead of oil + butter. Maybe try even less? It's tweakable. Worried you'll eat them all yourself if you make the whole recipe? Probably will. But I have tried cutting the recipe in half! Works like a charm. Do it. The point is, this recipe is amazing because it yields deliciousness, yes, but also because it's the perfect chocolate chip cookie template recipe. It was super easy to adapt to make it vegan using regular ingredients and easy processes. I love this recipe, and it's become a staple at our house. It's perfect for when guests come over, for a weekend snack, or when you want to indulge. Enjoy! Would love to hear if you tried it and what substitutions worked for you!

INSTRUÇÕES
1. Bater manteiga, óleo e açúcares com uma batedeira até atingir uma textura cremosa. Adicione as bananas e continue batendo até incorporar bem.
2. Adicione os outros ingredientes exceto as gotas de chocolate e bata apenas até misturar tudo. Evite bater demais.
3. Eu sempre pré-aqueço o meu forno agora antes de montar os cookies. Pré-aqueça a 180º. Agora coloque os cookies de colherada em colherada em uma assadeira forrada com papel manteiga. Se os cookies estiverem em montinhos, você pode achatar-los suavemente com uma colher ou simplesmente deixá-los.

Você pode torná-la vegana, ou não. (Não necessariamente saudável, mas vegana :P) Minha mãe é alérgica aos ovos, então cresci substituindo-os na culinária. Uma das minhas formas preferidas para substituir ovos é com um "ovo de linhaça". Eu normalmente faço assim: Coloque 3/4 xícara de água e 1 colher de sopa. de linhaça em uma panela, mexa e permita que se assente. Deixe ferver por cerca de 2-3 minutos. Retire do fogo e dispense o líquido em uma tigela. Deve ter engrossado até agora e apenas se aproximará mais ainda a consistência da clara de ovo à medida que esfria. MAS, para essa receita eu uso apenas 1/2 xícara de banana amassada para substituir cada ovo e funciona tão bem. Obs. certifique-se de que as bananas estão muito bem amassadas ou os cookies terão pedaços de banana no meio. Certifique-se de que elas estão maduras ou os cookies terão um sabor forte de banana. Se você não gosta de bananas, substitui por compota de maçã: 1/4 de xícara por cada ovo. Não tem compota de maçã? Vamos dar um jeito! Use maçã ralada. Já usei esses dois métodos; renderam cookies macios--pequenas esferas de alegria. Eu também já substitui óleo no lugar da manteiga, colocando cerca de 3/4 xícara de óleo em vez de óleo + manteiga. Talvez coloque ainda menos? É ajustável. Medo de que você vai comê-los todos se fizer a receita inteira? Provavelmente vai mesmo. Mas já tentei cortar a receita pela metade! Funciona. Faça. Today I'm going to share a little bit about real life. Are you ready? I had been wanting to remove the carpet in our apartment ever since before we moved in. It wasn't terrible, but the idea of living on carpet that had been here for who knows how long, plus you can't really truly clean carpet, didn't 100% appeal to me. Last month my wish finally came true. We chose a beautiful replacement and after a week of mess, our floors were installed and everything back into order. We loved how easy they were to clean, the way they looked and felt. Nice. Thirteen days later I was doing laundry when the washing machine simply decided to continue filling and filling and flooded. By the time we saw it had already affected a large area of the living room and the back closet that shares a wall with the laundry closet. We spent that evening using up every dry towel and cloth to clean up as fast as possible. We put fans and heaters on... When I told my grandpa about our little misfortune, he replied with "In all things God be praised". We contacted the floor guy that had been hired by the flooring company to install our floors. We had become friends and found out we are almost neighbours. He came to take a look and found the early signs of mold underneath the boards, despite our best efforts. We had two options. Take care of it ourselves or involve our insurance company (pay a deductible and have a claim on our record, which would disqualify us from future insurance discounts). Robert, the floor guy, offered to do the repairs for less than our insurance deductible, meaning we didn't have to file the claim. The flooring company had overestimated the amount of material that would be needed and had to readjust our quote. The amount they returned ended up being $7 short of how much the repairs will cost. In other words, the repairs will not really go outside of our original flooring budget. Yes, grandpa. God be praised in all things. Even in our messes. Shared on my InstaStories:

I thought it was a great idea and wanted to print it for Vini and I to fill out. I love lists; Vini always makes New Year's Resolutions. It'd be a good thing. However, the image was too small to print out at a decent quality, so I made my own template. I thought I'd share it with you in case you'd like to fill it out too. I really believe in intentionality, and I think this will be a fun way to keep accountable and be intentional about ways I can make next year better. Português Well, that was a longer than anticipated break from our reads! A few months ago I started a little book club to encourage us to read books that inform and deepen our faith. Thank you so much for participating! Our last book, Steps to Christ, was a true blessing to me. If you didn't get to read it, the discussion questions are all posted, and I encourage you to read that book at least once in your life. You'll likely want to reread it often, but do yourself a favor and read it at least once! Now to introduce this month's book: Thoughts from the Mount of Blessing
This book is about the Sermon on the Mount. It provides insight on the Beatitudes, expands on the context of that powerful sermon, and gives practical applications of ways to apply His words to our daily lives and formation of character. I started this little project as part of my own goals of reading more this year and also as an encouragement for my Christian friends to read more too. We often hear we must prepare ourselves for Christ's return, and I think we often feel the need for tangible ways in which to do so. The truth is God doesn't request difficult or impossible things. Too many times what He asks is so simple that we keep putting it off for later. However, we don't know how much time we have. Life is so short; let us dedicate at least a portion of the time we are given to quality time deepening our faith. Let us start with something as simple as reading a few pages each day. This book isn't long. We can do it. Thoughts from the Mount of Blessing is not an expensive book and can be found online for sometimes less than $5. You can also read it on the EGW app or online here: English PDF. As usual, we have a month to finish the book, meaning we'll finish December 6. (That means about 4 pages a day!) But it's not so much about finishing by a deadline as much as it is about reading the book and engaging with it. I will post a few thoughts and/or questions that jump out at me as I read, and I would really love to hear your thoughts as you go along too! So what do you say? Are you in? Personal Histories Project - Peaks and Harbours

Recently I had the immense pleasure of contributing to a super special project over at Peaks and Harbours. The project is by Carina from P&H and it highlights the stories of women from multicultural backgrounds: immigrants, children of immigrants, bi-racial families, etc. As someone who feels lost and found among three different cultures, this series speaks to me strongly. I love celebrating individuals with a deep sense of culture and roots. But what about those of us who feel displaced? I limbo?
I think it's so easy to feel like you don't belong to any culture. I imagine and hope that sharing stories of people carving their own identity from a mix of whatever life has given can be powerful to encourage dialogue about displacement and to come to the conclusion that it's ok to feel this way. It's okay to piece yourself together. It's okay to forge new paths and leave behind what doesn't edify. I happened to contact Carina at the start of the series and ended up as the first interview posted (keener, much! :'D) It was so much fun to participate. There has been another personal history posted since then, and lots more amazing ones are to come! Recentemente tive a oportunidade de colaborar com um projeto super legal. O projeto foi iniciado pela Carina do site Peaks and Harbours e destaca as histórias de mulheres de origens multiculturais: imigrantes, filhas de imigrantes, famílias bi-raciais etc. Como alguém que se perde e se encontra entre três culturas diferentes, esta série se tornou especial para mim. Acho importante celebrar com aqueles que sentem profundo senso de cultura e raízes. Mas e os que se sentem deslocados? Em um limbo? Você já pensou sobre isso? Neste projeto as mulheres compartilham suas histórias sobre as dificuldades de não se encaixar em nenhuma cultura (como por exemplo, sou Brasileira mas só morei no Brasil nos meus primeiro cinco anos de idade. Meu conceito do Brasil é diferente do conceito do Brasileiro que morou no Brasil a vida toda. Até que ponto sou Brasileira? Até que ponto posso opinar sobre a situação do país vendo que nunca morei nele quando adolescente ou adulta?) como também falamos sobre as coisas boas que ganhamos quando fazemos parte de mais de uma cultura. A Vegetarian Thanksgiving - Menu Template Included

Thanksgiving is a North American tradition and therefore a more recent addition to our family's traditions. In the USA, we learned the holiday is observed on the fourth Thursday of November as a day to eat and give thanks. It originated with the pilgrims, and its symbols include turkeys, cornucopias, and pie. In Canada, the holiday arrives on the second Monday of October with little fanfare eclipsed by the ever-nearing Halloween. I think it's earlier in Canada because winter comes earlier too. It's a time to gather and see everyone before we hole up for the winter, which isn't as much of a big deal now as it certainly used to be. It's a time to enjoy the year's harvest and to give thanks.
However, I guess because of its role in promoting thankfulness rather than consumerism, Thanksgiving is often overlooked. We're far more preoccupied with the material giving and receiving than with the thanking, it seems. I think it's also a hard holiday for people who believe in no-one to thank. It's hard, I'd think, to count your blessings only to have Nobody to thank for them. To me, Thanksgiving is an important time. We have so very much to be grateful for and a God so wonderful to thank. The idea of devoting a day just for this purpose is itself a blessing. Plus, food is my love language so I'd say being able to finish the day with a lovingly prepared meal that gets everyone in the kitchen pretty much makes for a perfect holiday! So much so that I've convinced our family to keep both Thanksgivings. They're over a month apart, giving plenty of time to plan a new Thanksgiving! Our meal includes no animals on the table, and every year mother and I figure out a new menu to play around with. But we have our favorites. In case you're inspired to celebrate Thanksgiving this year or to have a vegetarian dinner, or simply looking for new menu ideas, I've written up our Canadian Thanksgiving Menu below. O Dia de Ações de Graça é uma tradição norte-americana e, portanto, uma adição mais recente às tradições da nossa família. Nos EUA, aprendemos que o feriado é observado na quarta quinta-feira de novembro como um dia para comer bastante e agradecer. Manning Park - #thegirltravels

Last Thursday Vini and I decided we'd go camping for the weekend. We were disappointed our plans to go camping during the summer didn't work out, so we thought 'why not go now?' At first, we were pretty skeptical it would work. We had our hearts set on visiting Manning Park, but the forecast kept saying it would snow up there during the weekend. By Thursday the forecast was for clearer skies and higher temperatures. We decided to risk it.
Friday after Vini left work we packed up the car (with enough stuff to last us multiple weekends), downloaded our map, and set off. It was stunning to see how much beauty we're surrounded by. The park is just shy of 2 hours away from where we live, and the trip to get there provided gorgeous views. We set up at the Coldspring Campground on a site at the edge of the Similkameen River. There were barely any campers, just a few people with trailers and the odd tent here and there. It was so nice to have a spot so close to the river. It made for the perfect lullaby at night. By sunset we had a fire going, dinner ready, and were looking forward to our cozy tent.

Sabbath morning we had breakfast and then studied our Sabbath School Lesson. Soon, a few wild friends showed up. At first some curious birds, then the smallest of chipmunks, a squirrel, a few Steller's Jays, and then another chipmunk. While they were most likely interested in our peanut butter from breakfast and the crumbs from last night's dinner, we started calling them our worship buddies. They began to get closer to us and, noticing we posed no harm, became very comfortable. The squirrel chased the chipmunk in circles under and around our chairs, and we studied and sang. That experience was truly a blessing to me. We need to worship in nature more often.

After lunch, we grabbed our water bottles and a snack and headed further into the park. We drove up to the Strawberry Flats and began the Three Falls trail. It was a moderate 3-hour trail that would take us past three falls. We were super excited and only fazed by the bear signs a moderate amount. :'D As we took in the sights, we couldn't help remember the lesson we had studied on how the angels will lead us to the mountain to safe places.

We didn't stay at the last fall for long. Like I said, the bear signs kept us on our toes, as did the fact that we saw only a few people on the trail when we first arrived and then saw none on the way back. We're easing into this guys! We talked the whole way to make sure we didn't surprise any wildlife, and the conversations we had while walking and taking in nature were some of my favorites.

We drove back to the campsite and read on a tree that had fallen over the river. After we had sunset worship by the river, we went to the Manning Park Lodge for a shower. There we saw a wedding and a handful of PCT hikers. The Pacific Crest Trail is this crazy six-month trail from the Mexico/US border all the way to the Canada/US border. It finishes/begins at one of the trails in Manning Park, and we had so much respect for the people who complete it whole or in part. I read Cheryl Strayed's book on her time on the PCT in university. To be that close to it was pretty fantastic. Next time, I'd like to hike (a very small) part of it. That'd be cool.

Once we got back to the camp, Vini made a fire (it was coooold at night and in the mornings!) and we ate way too many smores. Thank you, Silver Hills for having gelatin-free jumbo marshmallows! They were SO good. Once the fire was low we spent some time star-gazing. The clouds had disappeared and the sky was lit up with stars. We put on our pajamas, layered on socks and sweaters, and got under our sleeping bag and blankets (I did not joke around with how many blankets I took :'D).

After sleeping in on Sunday morning, Vini made a fire and I roasted some eggplants and red peppers. Once we got home they became a fire-roasted eggplant and red pepper spread. After a walk at Lightning Lake, we drove home.

That weekend was exactly what we needed. I came home feeling so refreshed, closer to God and so at peace. It was insanely nice to be back in our bed, and I'm still finishing the laundry and putting things away. But I'm sure that weekend will stick with me for a long time, and I can't wait to do it again.

Na quinta-feira passada, eu e o Vini decidimos que iríamos acampar no final de semana. Estávamos desapontados que não deu tempo de acampar durante o verão, então pensamos "por que não ir agora?" No começo estavamos apreensivos. Queriamos muito visitar o Manning Park, mas a previsão dizia que nevaria lá durante o fim de semana. Na quinta-feira, a previsão mudou para um céu mais claro e temperaturas mais altas, então decidimos arriscar. Sexta-feira depois que o Vini saiu do trabalho, colocamos as coisas no carro (suficiente para sobreviver lá durarante vários fins de semana :'D ), baixamos nosso mapa e partimos. Foi deslumbrante ver quanta beleza que nos cerca. O parque é apenas 2 horas de distância de onde vivemos e a viagem para chegar lá ofereceu vistas maravilhosas. Montamos nossa barraca no Coldspring Campground em um espaço à beira do rio Similkameen. Havia apenas algumas pessoas acampando, a maioria pessoas com trailers e uma barraca ou outra aqui e ali. Foi muito legal achar um lugar tão perto do rio; uma canção de ninar perfeita à noite. Antes do pôr-do-sol, fizemos uma fogueira, preparamos o jantar, e estavamos prontos para ir para nossa barraca quentinha.

No dia de sábado, tomamos café da manhã e depois estudamos a nossa Lição da Escola Sabatina. Logo, alguns amigos selvagens apareceram. No começo, alguns pássaros curiosos, então um tâmia (espécia de esquilos bem pequenos), um esquilo, alguns Stewart's Jays e depois outro tâmia. Por mais que eles estavam mais interessados no nosso amendrocrem do café da manhã e as migalhas do jantar da noite passada, começamos a chamá-los de nossos amigos de culto. Eles começaram a se aproximar de nós e, percebendo que não representavamos nenhum perigo, ficaram bem à vontade. O esquilo perseguia o tâmia em círculos debaixo e ao redor de nossas cadeiras, enquanto estudavamos e cantavamos. Essa experiência foi realmente uma benção para mim. Precisamos adorar a Deus na natureza com mais freqüência.

Após o almoço, pegamos nossas garrafas de água e umas barrinhas de cereais e fomos mais para dentro do parque. Dirigimos até o Strawberry Flats e começamos a trilha Three Falls. É uma trilha moderada de 3 horas que nos levaria a três cachoeiras. Estávamos super animados e só um pouco perturbados pelos sinais que informavam que havia ursos na área. :'D À medida que subiamos a montanha, não tinha como não lembrar da lição que estudamos sobre como os anjos nos levarão paras as montanhas para nos manter seguros.

Nós não ficamos na última cachoeira por muito tempo. Como eu disse, os sinais de urso nos mantiveram de cabelo em pé, assim como o fato de termos visto apenas algumas pessoas na trilha quando chegamos pela primeira vez e, em seguida, não vimos ninguém no caminho de volta. Estamos nos acostumando ainda, rsrs! Nós conversamos o caminho todo para ter certeza de que não estariamos surpreendendo nenhuma vida selvagem, e as conversas que tivemos durante a caminhada em meio a natureza foram umas das minhas favoritas.

Voltamos ao acampamento e fomos ler sobre uma árvore que havia caído no rio. Depois do culto do pôr-do-sol no rio, fomos ao Manning Park Lodge para tomar banho. Lá, vimos um casamento e alguns aventureiros da PCT. A Pacific Crest Trail é uma trilha de seis meses da fronteira do México com o EUA até a fronteira entre o Canadá e os EUA. Ela termina/começa em uma das trilhas no Manning Park, e ficamos admirados com as pessoas que a completaram total ou parcialmente. Na universidade, eu li o livro de Cheryl Strayed sobre seu tempo na PCT. Estar tão próximo disso foi fantástico. Na próxima, eu gostaria de andar (em uma muito pequena) parte disso. Seria legal.

Assim que voltamos para o acampamento, o Vini fez um fogo (tava muuuuuito frio à noite e nas manhãs!) e comemos muitos smores (marshmallows assados no fogo, chocolate e biscoito). Ficamos contentes de ter achados marshmallows grandes sem gelatina em uma loja de produtos naturais aqui perto de casa. Quando o fogo abaixou, passamos algum tempo olhando as estrelas. As nuvens haviam desaparecido e o céu estava iluminado pelas estrelas. Nós colocamos nossos pijamas, mergulhamos em meias e blusas, e entramos de baixo de nosso saco de dormir e cobertores (levei praticamente todos que tinha em casa).

Domingo de manhã, o Vini fez um fogo novamente e eu assei algumas berinjelas e pimentões. Quando chegamos em casa, eles se tornaram um creme de passar no pão. Depois de uma caminhada no Lightning Lake, voltamos para casa.

Esse fim de semana foi exatamente o que precisávamos. Cheguei em casa me sentindo revigorada, mais perto de Deus e em paz. Foi incrivelmente bom estar de volta à nossa cama e ainda estou terminando de lavar as roupas e guardar as coisas, mas tenho certeza de que aquele fim de semana vai ficar comigo por um longo tempo. Mal posso esperar para repetir-lo. Tchau riozinho lindo

Autumn Harvest Tomato Soup

Receite em Português Aqui Every year my parents' garden produces a bountiful harvest of tomatoes, which they are generous enough to share with us. At the beginning of the season, we enjoy the tomatoes in salads. I admit it's hard to go from backyard tomatoes to the storebought variety once the season's over.
It always takes some adjusting. To save a taste of summer for fall-spring, mom usually cooks batches of tomatoes and makes them into a sauce which she later cans and stores for the cold months ahead. I'm too lazy to do that, so this I blended the tomatoes with my basil crop and froze it. We'll see how that option works out. Now that the end of the season is here, the tomatoes are ripening in the blink of an eye. Last week, mother invited us over to pick some tomatoes, and I came home with a basinful. Because it's been cold and raining here, I came up with a different way to use up all the tomatoes. I also had lots of corn in my fridge and no potatoes, which the recipes I found online asked for. I figured they're both starchy, might work! Thus was born the tomato soup below. Turned out to be so good. I love that it is low in sodium, made with real ingredients, thick, and creamy. It's also super easy and quick to make, doesn't really make a mess, and serves 4 (meaning leftovers for us!) Okay, so let's get to it. Ingredients in the order you will need them

4 cloves of garlic, minced
1 Tbsp oil (whichever one you use)
1/2 Tbsp onion powder (or 1/2 onion, chopped)
1 tsp paprika
cayenne pepper to taste
2-3 ears of corn (washed, shelled)
1 carrot (peeled, washed, cubed)
1 Tbsp flour
1Tbsp tomato sauce or paste
4-5 large beefsteak tomatoes (or whichever ones you have on hand; Roma tomatoes are smaller, so you'd need more of those. Around 10 medium Roma tomatoes)
opt. 1/2 Tbsp salt
1-2 sprigs of thyme
1-2 bay leaves
3 sprigs of basil

Directions

Add the garlic, oil, onion (powder), paprika, and cayenne to a medium soup pot over medium heat. Let it saute until fragrant, but not until the garlic has browned.
Add the carrot and corn. Cover with a lid, stir every so often. Cook for about 5 minutes. If it begins to stick to the bottom, mix in the Tbsp of tomato sauce.
Dissolve the flour in a little bit of flour and add to the pan. If you have not yet added the tomato sauce, add it now. Stir.
Wash and dice the tomatoes and put them in a bowl. (You can peel them if you have really strong feeling against the skin bits, but once the soup is blended they're not really a problem). Mash them with your hands and add to the pot.
Add the thyme and bay leaves. Cover and let simmer for 30 minutes, stirring every so often.
Dump everything in a blender (in batches if your blender is small). Add the sprigs of basil and salt if you're using it. Blend until smooth. Real smooth.
Pour back into the pan to reheat if necessary.
Serve topped with croutons and olive oil (opt. of course).

Todo ano, o jardim cultivado pelos meus pais produz uma colheita generosa de tomates, que eles compartilham conosco. No início da época comemos muita salada de tomate. Eu admito que estranho muito ter que voltar pra salada de tomate com tomate comprado no mercado. Principalmente aqui onde a maioria das frutas e verduras são colhidas ainda verde e transportadas. Sei la, o gosto e 100% diferente! Para salvar um pouco do sabor do verão para o inverno e primavera, a mamãe geralmente faz molho de tomate e conserva em vidros para os meses frios à frente. Eu já sou muito preguiçosa para fazer isso, então esse ano bati os tomates com a minha colheita de manjericão e congelei. Veremos como essa opção funciona. Agora que o final da temporada está aqui, os tomates estão amadurecendo em um piscar de olhos. Na semana passada, a mamãe nos convidou para colher alguns tomates, e cheguei em casa com uma bacia cheia. Por estar frio e chovendo, queria uma maneira quentinha de usar os tomates em vez de fazer salada. Então,viraram sopa. Eu tinha também bastante milho na geladeira. Assim nasceu a sopa de tomate abaixo. E não é que ficou boa! Gostei muito que vai pouco sal, é cheia de ingredientes saúdáveis, ficou cremosa, e super saborosa. Também é fácil e rápido de fazer, não faz bagunça, e serve 4 (o que pra nós quer dizer que sobra, eba!) Ok, então vamos lá. Ingredientes na ordem em que você vai precisar deles

4 dentes de alho ralado/triturado
1/2 colher de sopa de óleo
1/2 colher de sopa de cebola em pó (ou 1/2 cebola amarela picada)
1 colher de chá de paprika
pimenta caiena ao gosto
2-3 espigas de milho (descascadas, lavadas, e tirado o milho do sabugo)
1 cenoura (descascada, lavada, cortada em cubo)
1 colher de sopa de farinha
1 colher de sopa de molho ou massa de tomate
4-5 tomates caqui grandes (ou qualquer tomate que tiver em casa, os tomates italianos são menores, então você precisaria de mais desses. Cerca de 10 tomates italianos médios.)
1-2 raminhos de tomilho
1-2 folhas de louro
3 raminhos de manjericão
Opcional 1/2 colher de sopa de sal

Instruções

Adicione o alho, o óleo, a cebola, a paprika e a Caiena a uma panela de sopa média em fogo médio. Deixe-o saltear até perfumar, mas não até que o alho tenha dourado.
Adicione a cenoura e o milho. Cubra com uma tampa, mexa de vez em quando. Cozinhe por cerca de 5 minutos. Se começar a grudar no fundo, misture a massa de tomate.
Dissolve a farinha em um pouco de água e adiciona à panela. Se ainda não adicionou a massa de tomate, adicione-o agora. Mexe.
Lave e corte os tomates e coloque-os em uma bacia. (Você pode descascar se você realmente odiar as pelezinhas que ficam, mas uma vez que a sopa é batida não são realmente um problema). Pode esmagar os tomates com as mãos e adicione à panela.
Adicione o tomilho e louro. Cubra com a tampa e deixe cozinhar no fogo baixo por 30 minutos, mexendo de vez em quando.
Remova os raminhos de tomilho e folhas de louro. Despeje em um liquidificador (em partes se o liquidificador for pequeno). Adicione os ramos de manjericão e sal se você estiver usando. Bate até chegar ne uma consistência bem cremosa e sem pedaços.
Despeje na panela. Reaquecer, se necessário.
Sirva com croutons e azeite (opcional, claro).

Vegan Chicken Pot Pie - Torta de "galinha" vegetariana

versão português aqui Hello, friend! Wednesday I posted our lunch on Instagram: individual "chicken" pot pies. A friend asked for the recipe, and I thought I'd leave them here with a few modifications I have tried. I'm also adding the recipes in Portuguese below for my Brazilian friends.
This is such an easy lunch to make because it does really well on its own or with a side salad. Quick. Easy. Delicious. WIN! I use Dessert for Two's 15-minute puff-pastry for the crust (15 minutes max. to make and then about an hour to chill). I really love this dough for all things savory or sweet. I also like to put a crust on the bottom and the top of pot pies because puff pastry is delicious. To make this vegan just sub vegan butter. I've also tried vegetable shortening when in a pinch. It worked well, so you can try that too. I based the filling on Minimalist Baker's Vegan Pot Pie. Funny story about the vegetable stock, when Vini and I were doing our raw week, we tried to make a veggie smoothie in our Nutri Bullet. He put in beets and carrots and blended. Only, we didn't strain the juice and it was a big mess, hard to drink (it was very very thick) and in the end, I froze most of it in an ice tray to use as stock. I love having those cubes in the freezer! Anytime a recipe calls for vegetable stock I dissolve one of those in water and add a bit of soy sauce. Voila. I add chopped "chicken nuggets" from Morning Star to the filling. You could also use cubed tofu, and I'm sure it'd work just as well. Remember to either season the tofu beforehand or adjust your filling seasoning. This could be a nice potluck dish too. You can make it ahead of time and freeze it (before the baking step), or make it on Friday and reheat at church potluck. Let me know if you give it a try! Tudo bem? Ontem compartilhei nosso almoço no Instagram: essas tortas de "galinha". A Patricia pediu a receita entao decidi compartilhar com vocês essas duas receitas que gosto muito. A primeira é da massa folhada. Eu uso a receita do site Dessert for Two. Leva 15 minutos para preparar a massa e depois uma hora de repouso na geladeira. A receita é: Ingredientes 1 xícara (125 gramas) de farinha de trigo 1/4 colher de chá de sal fino 10 colheres de sopa de manteiga de alta qualidade (aproximadamente 141 gramas), bem gelada 1/3 xícara de água super gelada Método 1. Em uma tigela média, adicione a farinha e o sal. Mexa para misturar. 2. Em seguida, cube a manteiga e adicione-a à tigela de farinha. Usando um garfo ou um pastry blender, corte a manteiga na massa. Misture até a manteiga estar em pedaços uniformes do tamanho de ervilhas. 3. Em seguida, faça um buraco no centro da massa e despeje toda a água. Usando um garfo, mexa para combinar a massa. 4. Polvilhe uma tábua com farinha e adicione a massa. Com a mão, forme um quadrado com a massa. Você ainda verá os pedaços de manteiga e a massa pode parecer muito seca, mas não adicione água. A massa vai se juntar conforme for abrindo com o rolo. 5. Polvilhe o rolo com farinha e abra a massa até formar um retângulo. Não precisa ser muito preciso aqui. 6. Enquanto a massa estiver na geladeira, vamos fazer o recheio. Para o recheio eu usei a receita da Minimalist Baker como base com algumas modificações. A receita é: Ingredientes 3/4 xícara de cebola amarela picada (~ 1/2 cebola média) 1 dente de alho grande, triturado 2 xícaras de caldo vegetariano* 2 xícaras de vegetais misturados congelados (milho, feijão verde, cenoura ou podem ser vegetais frescos) 1/4 xícara de leite de amêndoa (ou soja) ~ 1/4 xícara de farinha de trigo 2 folhas de louro Pitada cada sal Opcional: eu gosto de usar uma "carne de galinha" vegetal que temos aqui. Você pode substituir por proteína de soja ou pedaços de tofu temperado ou palmito! Método 1. Pré-aqueça o forno a 425 graus F (218 C). 2. Adicione 2 colheres de sopa de azeite em uma panela grande no fogo médio. Em seguida, adicione a cebola e alho e uma pitada de sal - mexa. Cozinhe até ficar tudo macio - cerca de 7 minutos. 3. Adicione a farinha e mexa, depois acrescente lentamente o caldo. 4. Adicione o leite de amêndoa e as folhas de louro e mexa. Misture até a mistura engrossar (cerca de uns 10 minutos). Se ainda parecer muito fino, dissolva 1-2 colheres de sopa de farinha em 1/2 xícara de caldo. Adicione a panela para engrossar. Espere alguns minutos. Repita se necessário. 5. Uma vez que o molho estiver engrossado, adicione os vegetais congelados e a "carne" se for usar. Cozinhe por 4-5 minutos. Experimente e tempere, adicionando mais sal se necessário. 6. Tire a massa da geladeira e separe em dois pedaços. Um para a parte de cima e outro para a parte de baixo da forma. A parte de baixo deveria ser um pouco maior para cobrir os lados da forma tambem. 7. Coloque a massa de baixo na forma. Tire as folhas de louro e coloque o recheio na forma e cubra com a massa de cima. Pincela com manteiga ou azeite. 8. Coloque uma forma raza em baixo da forma com a torta para se o recheio transbordar não sujar o forno e asse até a parte de cima dourar e o recheio borbulhar (cerca de 14-17 minutos). Deixe esfriar por 5 minutos antes de servir. Bom apetite! Se você experimentar esta receita, me fala como ficou :). Porém não coamos, e o suco e ficou muito grosso! Findei congelando aquela polpa em uma forma de gelo. Depois coloquei em um saquinho no freezer. Agora, quando uma receita pede caldo eu dissolvo aquele cubo em um pouco de agua e coloco shoyu. Funciona que é uma beleza e é uma opção mais saudável que muitos caldos de vegetais do mercado!

Was there a specific chapter that spoke to you? Any lingering questions prompted by what you read? Below are questions I asked myself while reading and things that really stood out to me. Chapter 9 – The Work and the Life: Question 1: On page 78 we read: "If we have tasted and seen that the Lord is good we shall have something to tell". If given the opportunity, what do I have to tell? Question 2: What is my role in the plan of redemption? Why was I given a part? Question 3: What is the only way that I can make my life a blessing? Chapter 10 - Knowledge of God: "No tears are shed that God does not notice. There is no smile that He does not mark," {p.86-87}. Question 1: What three things does God use to reveal Himself to us? Chapter 12 - What to do with Doubt: We know that God looks on the inside. He looks at the heart and takes motives into account. This chapter really drove that point home for me: the importance of motive in study. If we study to confirm our doubts, that's what we will find. But if we study to strengthen our faith, God's Word rewards those who hunger and thirst after it. This led me to purpose to always ask: What is my motive in reading/studying this today? Are my heart and mind in the right place? Chapter 13 - Rejoicing in the Lord: "In every one of His children, Jesus sends a letter to the world," (p. 115). Question 1: What does "my letter" say? Question 2: Who should we go to with doubt? Question 3: I'm really curious to know what you thought about what the chapter says concerning burdening others with our doubts. Se estudarmos para encontrar motivos para ter dúvido, é o que encontraremos. Mas se estudarmos para fortalecer nossa fé, a palavra de Deus recompensa aqueles que têm fome e sede por justiça. Isso me levou ao propósito de sempre me perguntar: Qual é o meu motivo por trás da minha leitura/estudo da bíblia hoje? Meu coração e minha mente estão no lugar certo? versão em português abaixo As I was writing the discussion questions and wrap up post for our book (almost done!) I couldn't cut down the questions for Chapter 11. In fact, it sparked so many ideas that I figured it deserved its own post. So here it is. Chapter 11 The Privilege of Prayer: thoughts, questions, reflections.

Chapter 11 - The Privilege of Prayer: Such a beautiful and powerful chapter! I felt that I too often neglect this powerful tool God has given us. The first three paragraphs also made it clear that God does not want a one-sided relationship with us. It made me wonder how I can develop a true relationship with Him. One that's less about me and more about Him and I. Less about asking and receiving and more about praising Him for all His blessings and the beauty of His creation. That being said, it was also a very empowering chapter that made me think of how much of the potential He has given me has gone unused simply because I have not asked Him to help me fulfill it, to recognize it, or for the opportunities to flex that potential! All of this lead to the following questions and reflections...
Question 1: Jesus found "comfort and joy in communion with His Father" (pp. 94-95). Do I? Or is it a chore?
Question 2: If His promises are unlimited, what are my requests? "Do not fear to trust Him" {pp. 96-97}.
Question 3: What are the conditions He has placed on prayer requests? Is every prayer answered?
Question 4: Does my family have family prayer? Or are the prayers we pray as a family a version of the same prayer made in public or when others are present?
Question 5: Is prayer my first or last resort?
Question 6: "The relations between God and each soul are as distinct and full as though there were not another soul upon the earth to share His watch care, not another soul for whom He gave His beloved Son" {p. 100}. Am I making the most of this? Am I investing in Him Who invested all in me?
Question 7: "God would not have His children, for whom so great salvation has been provided, act as if He were a hard, exacting taskmaster. He is their best friend; and when they worship Him, He expects to be with them, to bless and comfort them, filling their hearts with joy and love," {p 104}. When I first read this paragraph, I thought 'Um, how could worship of Him not include Him? And then I thought of a party. Let's say a friend threw you a party. But it's completely the wrong type of party. Let's say your friend is a great diver and he/she throws you a pool party where the main game is diving off the diving board. But you don't know how to dive! In fact, you're not even a strong swimmer. The banner and invitations claim it was a party for you, but honestly, you get the feeling that it was more of an opportunity for your friend to have fun or even show off in front of your friends. You feel excluded, on the sidelines. Unwelcomed at your own event. Are we guilty of doing the same to God? Do we call it a praise event when in reality it's an opportunity to showcase our talents? Do we call it a mission trip, when in reality it's an opportunity to show our friends/employers/university how good we are? Do we ever make Him feel excluded, on the sidelines, unwelcome in His own home? This chapter made me think hard and ask myself: Does my worship include God? Does my church worship involve Him?

Quando eu estava preparando o post com as últimas perguntas de discussão e reflexões sobre o nosso livro (que estamos quase terminando!), não consegui reduzir o número de perguntas para o Capítulo 11. Na verdade, este capítulo me trouxe muitas idéias e eu achei que merecia seu próprio post. Então aqui está! Capítulo 11 - O privilégio de falar com Deus: Que capítulo bonito e poderoso! Me fez sentir que muitas vezes negligencio essa poderosa ferramenta que Deus nos deu. Os três primeiros parágrafos também deixaram claro que Deus quer um relacionamento comigo que é menos sobre mim e mais sobre eu e Ele. Menos sobre pedir e receber e mais sobre louvá-Lo por todas as Suas bênçãos e a beleza de Sua criação. Dito isto, também foi um capítulo muito empolgante que me fez pensar quanto do potencial que Deus me deu não esta sendo usado simplesmente porque eu não pedi que Ele me ajudasse a reconhecê-lo ou por oportunidades para experimentar esse potencial! Tudo isso levou às seguintes questões e reflexões...
Pergunta 1: Jesus "encontrava conforto e alegria na comunhão com o Pai." (p. 94). E eu? Posso dizer o mesmo? Ou é simplesmente uma tarefa?
Pergunta 2: Se Suas promessas são ilimitadas, quais são meus pedidos? "Não receeis, pois, confiar nEle," (pp. 96-97).
Pergunta 3: Quais são as condições que Ele colocou em pedidos de oração? Todas as orações são respondidas?
Pergunta 4: A minha família tem oração familiar? Ou são as orações que oramos como família uma versão da mesma oração feita em público ou quando temos visitas em casa?
Pergunta 5: A oração é meu primeiro ou último recurso?
Pergunta 6: "As relações entre Deus e cada pessoa são tão particulares e íntimas, como se não existisse nenhuma outra por quem Ele houvesse dado Seu bem-amado Filho," (p. 100}. Estou aproveitando ao máximo isso? Estou investindo nEle que investiu tudo em mim?
Pergunta 7: "Deus não quer que Seus filhos, para quem preparou uma tão grande salvação, procedam como se Ele fosse um duro e exigente feitor. E seu melhor amigo, e espera que, quando O adorem, possa estar com eles, para os abençoar e confortar, enchendo-lhes o coração de alegria e amor "(p. 104). Quando eu li este parágrafo pela primeira vez, pensei "Ué, como poderia ter adoração dEle e não O incluir? E então pensei em uma festa. Digamos que um amigo fez uma festa em sua homenagem, porém a festa é completamente diferente de você . Seu amigo é um excelente mergulhador e a festa é uma festa de piscina. A principal atração na festa é mergulhar do mais alto ponto. Mas você não sabe como mergulhar! Na verdade, você nem sabe nadar direito. A bandeira e os convites afirmam que foi uma festa para você, mas logo você tem a sensação de que foi mais uma oportunidade para seu amigo se divertir ou mesmo se amostrar na frente de seus amigos. Você se sente excluído, não bem-vindo em seu próprio evento. Será que somos culpados de fazer o mesmo com Deus? Será que chamamos o evento de louvor quando, na realidade, é uma oportunidade para mostrar nossos talentos? Será que chamamos de missão, quando, na realidade, é uma oportunidade para mostrar aos nossos amigos/chefes/escola o quão bom somos? Sera que nós O fazemos sentir excluído e não bem-vindo na própria casa? Este capítulo me fez pensar muito e me perguntar: minha adoração inclui Deus? O culto da minha igreja O envolve?

Hello, everyone! I'm back with a few more discussion questions for chapter 4-8 of our book Steps to Christ. I hope you have been enjoying our reading as much as I have. It addresses so many points that I feel have been ruminating for years. I hope within the pages of our book you are finding answers, as well as new questions to think about. I would love to know some if you'd like to share below! Alrighty, on to our discussion points:

Chapter 4 - Confession: Question 1: Do you think that by making mercy harder to obtain we make it easier to make excuses? Question 2: What is a (or are some) sign(s) of genuine repentance? Can there be true repentance without restitution? Question 3: Do we sometimes avoid calling sin by its name in order to minimize our guilt? "It's not really a sin. That's such a harsh word. It's alright to repeat my mistake..." Thought: Genuine repentance doesn't mean automatic victory over a sin. We may fall again, but the abhorrence of that sin will still be there. Chapter 5 - Consecration: Question 1: Right at the beginning of the chapter the author says: "In giving ourselves to God, we must necessarily give up all that would separate us from Him. Hence the Saviour says, "Whosoever he be of you that forsaketh not all that he hath, he cannot be My disciple," Luke 14:33. Whatever shall draw away the heart from God must be given up," (Steps to Christ, p. 44.1) (emphasis added). She then covers a few common idols. Have we considered what is ours? Question 2: Could symptoms of relying on our own power to obey God be making lists of what Christians should or should not do in order to meet a checklist? Could another be looking at the life of others and comparing them with ourselves? Question 3: What is the interest of everyone in heaven? Chapter 6 - Faith and Acceptance: Question 1: Can you find 6 steps towards a life of faith and acceptance? (Hint: I found steps 1-5 in the 3rd paragraph and number 6 on pg. 51/52.) Question 2: What is one thing that was consistent with everyone Jesus helped while here on earth? Question 3: Is anyone too sinful for Christ to help? Favorite Quote:

Do not wait to feel that you are made whole, but say,

"I believe it: it is so, not because I feel it, but because God has promised."

{Steps to Christ, p.51}

Chapter 7 - The Test of Discipleship: Question 1: What are "two errors against which the children of God...especially need to guard"? Question 2: How can we maintain a connection with Christ? Question 3: What sets faith apart from mere belief? Chapter 8 - Growing Up Into Christ: Question 1: So, how can we grow in Christ? Question 2: How essential is anxiety in this process? Question 3: How are we to be transformed? Bonus: What is the "new birth" that is so often referenced in the Bible? Ponder This: "Not all the wisdom and skill of man can produce life in the smallest object in nature. It is only through the life which God Himself has imparted, that either plant or animal can live," (Steps to Christ, p.67). Every miraculous advance by humanity is a gift from God. Whether we acknowledge Him or not. This too!: "Henceforth through the Spirit, Christ was to abide continually in the hearts of His children. Their union with Him was closer than when He was personally with them," (Steps to Christ, p. 74). Isn't this hopeful for us who have never seen Him personally?

Capítulo 4 - Abra o coração a Deus: Pergunta 1: Você acha que, ao tornar a misericórdia mais difícil de obter, tornamos mais fácil a criação de desculpas para pecar? Pergunta 2: O que é um (ou são alguns) sinal(sinais) de genuíno arrependimento? Pode haver verdadeiro arrependimento sem reforma? Por isso diz o Salvador: “Qualquer de vós que não renuncia a tudo quanto tem não pode ser Meu discí- pulo.” Lucas 14:33. Tudo que afaste de Deus o coração, tem de ser renunciado,"(Caminho a Cristo, p. 29) (ênfase adicionada). Ela então cita alguns ídolos comuns. Já consideramos os nossos? Pergunta 2: Poderia o hábito de criar listas sobre os deveres de um cristão (com o alvo de preencher uma lista e garantir a salvação) ser um sintoma de confiar no nosso próprio poder para obedecer a Deus? Poderia outro sintoma ser olhar para a vida dos outros e compará-los com nós mesmos? Pergunta 3: Qual o interesse de todos no céu? Capítulo 6 - Um direito seu: Pergunta 1: Tente encontrar 6 passos para uma vida de fé. (Dica: Procure os passos 1-5 no terceiro parágrafo e o número 6 na página 34.) Pergunta 2: Cite algo que foi consistente com todos que Jesus ajudou enquanto aqui na Terra? Pergunta 3: Existe pecador terrível demais para que Cristo ajude? Frase preferida:

Pergunta 2: Como podemos manter uma conexão com Cristo? Pergunta 3: O que distingue a fé da mera crença? Capítulo 8 - Crescimento em Cristo: Pergunta 1: Então, como podemos crescer em Cristo? Pergunta 2: Quão essencial é a ansiedade neste processo? Pergunta 3: Como seremos transformados? Bônus: O que significa "nascer de novo," algo frequentemente referenciado na Bíblia? Pense nisso: "Toda a Ciência e habilidade do homem não são capazes de produzir vida no menor objeto da natureza. Hey, everyone! Today was our starting day for our book club. (click here for more info on our book club and to get an online copy of our book!) How timing works: Timing is going to be pretty loose. We all have different schedules and I want to make sure we all have plenty of time to read. This is a shorter book, but I think that's a good place to start, with something "doable". So, my suggestion is to read it in two weeks or 13 nights/mornings. One chapter every day, and boom, you're done with plenty of time to reflect, meditate, and discuss. Sound good? Tonight I'm posting a few discussion questions to get our discussion started for chapters 1-3. How these work:

Chapter 1 - God's Love for Man: Question 1: What are some ways we can know and recognize the character of God the Father? Make a list of key characteristics you can point to in order to emulate. Try to emulate one today. Question 2: In chapter 1, the author says that "God cursed the ground for man's sake. The thorn and the thistle--the difficulties and trials that make his life one of toil and care--were appointed for his good..." (Steps to Christ, p. 9). What do you think of that? Question 3: This chapter drives home the point that despite all the revelations of God's love for man, including His greatest Revelation through His Son, it is all in vain if we do not meditate on these revelations. Let's take 5 minutes, no seriously put your phone's timer on, five minutes. Five minutes to meditate on His life, His sacrifice, and the ways He has manifested His love in your life. What does it look like? Question 2: Chapter 2 mentions that "dreams of progress" and "efforts for the uplifting of humanity" are all in vain if they "neglect the one Source of hope and help for the fallen race" (Steps to Christ, p. 12[20-21]). Does that mean we should not engage in movements, protests, or projects that try to make this world a better place? One Year Later

This evening we celebrated our one year anniversary with a picnic in my parent's backyard. My mother and mother-in-law baked, the boys helped set things up, and we spent the evening reminiscing about a year ago, enjoying how good it feels to be together, and thanking God for the blessing this past year has been. The other day we were talking with my dad and he mentioned how it's said that the first year is the hardest. Vini and I looked at each other and high-fived. Seems like the rest of our lives is going to be pretty swell. I can't wait. Whenever any of my friends ask for advice on wedding planning, I tell them to put lots of love into the location they pick. To choose one that's already stunning just the way it is. One they won't have to spend a fortune on decorations to hide imperfections. One that's beautiful on a sunny day, but also works on a rainy or cloudy day. I think my advice would be the same on choosing your life partner. It's only been a year, which hardly qualifies me to be giving advice, so here's just my experience: it's pretty fun when you're married to your best friend. It's so much better when you've chosen someone who you aren't counting on changing. Someone stunning just the way they are. Someone you are proud to stand beside through all the seasons. To our family and friends, thank you for your prayers and love and support. You are such an important part of our journey. To my best friend and partner in everything, I love you more each day. Esta noite celebramos nosso aniversário de um ano de casados com um piquenique no quintal dos meus pais. Minha mãe e minha sogra cozinharam e os meninos ajudaram a arrumar as coisas no quintal. Passamos a noite relembrando os acontecimentos há um ano, desfrutando o quão bom é estar juntos e agradecendo a Deus pelas bênçãos recebidas neste ano de casados. My goal for 2017 is to read two books per month. A long chapter book, and a smaller easy read. I started with an Ellen White book because I have been craving a deeper sense of my faith, beliefs, and relationship with my God. Are you?
As I began this reading challenge, I longed for some company to discuss the books I read. Many things are more enjoyable when shared, right? I believe reading is one of them (I mean, take a look at how many book clubs there are!) Speaking of book clubs... Would you be interested in joining me for a virtual book club that explores topics of faith, grace, love, and living out the Christianity Christ lived as an example for us? I will provide a book selection for each month, the link to a free online/PDF version of the book (when available), discussion questions/reflections throughout the month, and snacks. What do you say? Post Blood Donation Ramblings

Last year I came across a post by our local news announcing upcoming blood donation clinics in the new year. I recognized one clinic was going to be right across the street from us, and Vini and I decided to go. Both of us have family members that are regular donors and we had been wanting to join in, so what better opportunity than the new year!
The first time we donated was on a really really cold day in January. We had no idea what we were doing. We didn't make an appointment, didn't fill out any information beforehand, but the nurses were nice to us and we had as good a time as possible.

At the end of April, we went back. This time, we had our donor cards, filled out our information online, and were just total pros. When you donate blood and you're sitting in that chair watching (or artfully looking away) from your blood flowing into that bag, you can't help but collide with the significance of what's happening.

Have you ever watched medical shows? Next time there's an emergency or a surgery, and they have to do a blood transfusion, notice how many units of blood they ask for. It's never just one. It's a lot. Knowing that you're helping someone can make you feel pretty good, right?

Here's the thing with that, though. No matter what the pamphlets say, you don't really know who you're helping. That's a beautiful thing about the work of nurses, first responders, doctors, and, yes, even donors*. As a donor, you are helping the person that needs the blood transfusion.

You're helping the car crash victim, you're also helping the drunk driver. Your blood can help an innocent child, and it can also be given to a criminal with a terrifying past. There's beauty in doing good without looking to whom. Remind you of anyone?

There's truth to Isaiah's statement that even our good deeds are filthy rags. When we donate blood, we feel good about helping others. I do. It's nice to have a part in saving a life or advancing research. When we donate, we think of all the good people we are helping, the families we are saving, the life we are giving.

Not only is our blood accepted when we can donate, but blood banks are always asking more people to sign up. Giving is a small inconvenience at most. When Christ shed His blood, He knew the recipients of His sacrifice were all guilty. He knew that His blood is enough for all, but that many would not accept it. Christ's death was a sacrifice. He didn't die for us to feel good, but because His character is grace and love to all. To me, to you, to the best person on earth, to the worst. T

hat can be pretty hard to imagine. Think of the worst possible person. Christ's blood was shed for them. But it's also a message of hope. When you're overcome with doubt, feeling like the worst person, unworthy, filthy...Christ's blood was shed for you. His blood is enough. His blood is more powerful to heal than any number of blood units. It'd be sillier to refuse His saving grace than it'd be for someone in need to refuse blood. His blood is freely available to all. And that's pretty neat.

*of course, medical professionals have a much greater role, but you get what I'm sayin'

Read Things That Make You Angry

A case for reading things that make you want to rip pages

Recently, Vini and I visited our local library to each pick out a book for our 2017 reading challenges. After a few years' hiatus, I picked up a fat novel from one of my go-to genres--"historical romances" set in young America. These were books I used to indulge in, reading passively ignoring historical inaccuracies or errors and simply enjoying it. It was kind of like my version of reality TV.

I chose a thick worn paperback that had five short stories revolving around mail-ordered marriages in the Old West. You know the plot already. Circumstances (death of a spouse) leaves widow(er) to care for land and x number of children all alone driving him/her to put an ad in the paper for a spouse. Circumstances (evil family/lack of family) drives protagonist to leave home and into the unknown. The same pattern for all five stories, but I chose the genre, right?

I settled in, cracked open the book relishing in the hope and promise of exciting adventures within the plentiful number of pages in my right hand.

"'Smile, Cinda.'

Cinda stopped just short of running into David Swan in his own front yard. In her worry, her gaze had been focused on the ground and not on where she was going. Now, she looked up at her best friend's new husband with an apologetic smile.

'Oh, hi, David. Is Allison inside?'

'I won't tell you until you smile. You'll never get a husband with that scowl.'"

What. a. sleaze! She's going to hit him, isn't she? She should. For the briefest second, I hope that the genre will surprise me. It'll be about Cinda who eye rolls at David, goes West and forges an amazing life full of adventure all on her own. She'll defy expectations and gender roles, surprise the ranchers struggling beside her and create an empire where they all work for her. Then, when nobody in the area suits her fancy, and because she's not about to settle, her friends jokingly dare her to put an ad in the paper. And she does.

That will be the story, right? Please?

"Cinda gave him a quick, forced smile. The last thing she felt like doing today was smiling.

'You're a pretty girl, Cinda. If you smiled more often and looked up once in awhile, you'd catch a husband in no time.'"

And now, we've reached it. The point where I have become angry. What even is this book? I'm angry at David, yes. Angry at Cinda for complying. And angry at myself for going back to reading these silly things.

But have I really gone backward? Perhaps. Yet, I was moved to notice my interaction with the text. I was affected, active instead of passive. *gasp* oh. my. word. I was responding to a text! Post-grad! Without an assignment to hand in!

In their defense, my teachers and professors made it quite clear that this was exactly what they were desperately trying to do--make my education yield results out of the classroom. I was outraged, so I stopped reading, right? Nah. By this point, I had committed. I read the book. Cinda tries to convince David (and herself) she doesn't need a husband but in the end, she caves to her friends' plot to save her from becoming an old maid. The book wasn't all bad. DiAnn Mills' "Mail-Order Husband" was sort of refreshing. "Changes of the Heart" made me angry too, but if you forgive its underdevelopment, the story had potential to be different. Yet, at least two of the stories allude to or include verbal abuse or physical punishments, while calling the men guilty of such things "good Christian men". Oh, it burned me! Just. so. wrong! While reading these stories, three main reasons kept coming to me to justify reading things that made me uncomfortable and more than a little bit angry.

So, here are some points to consider the next time you're tempted to give up on a book that makes you peeved:

GROWTH Read things that make you angry if only for the sake of recognizing growth in yourself. Not to feel superior, but for feeling good about personal progress, because that's ok. Alternatively, read things that make you angry now but that can push you to grow and learn, because that's important too.

UNDERSTANDING Read things that make you angry but that force you to look at subjects from the perspective of others, through a lens of history or culture. The world is consistently shifting its perspectives and our time period, culture, and perspectives are not the only ones. Plus, *gasp* our perspective might not even be the right one! Can you imagine?!

INTERACTION Lastly, read things that make you angry in order to be fueled. Anger, while often perceived as a negative emotion, can be incredibly powerful. It is uncomfortable and demands a reaction. Anger spurs us to action. To bring about change. Changes in the way we think, which lead to changes in the way we act. Allow the things you read to affect you. Reading can help mold you into the person you want to be; just sometimes that means reading things that go against the grain.

The One With More More News.

On December 17, 2015, my parents, brother, Vini, and I piled into my parents' Ford wagon and—after a quick stop at a gas station flower shop for a nosegay—made our way to downtown Vancouver. A light powder flurried down on the highway, and we continued driving.

After about an hour, my father dropped us off at the Waterfront Station where a marriage commissioner and our photographer (Megan Benger <3) were waiting for us. We gathered at a corner of the busy station and repeated vows after the commissioner. We signed the papers, hugged our witnesses, and made the Christmas-ready city the background for our photos. Then, off to Nuba for lunch.

Vini's family wasn't able to make it for our legal wedding, so we took pictures with pictures of them.

Well, hello FedEx ! :P

We sent off Vini's Permanent Residency application with a copy of our brand new marriage certificate, and after a few weeks that flew by buried in wedding prep said goodbye for the last time in our long-distance relationship.

The One With More News.

Although the busy-ness never lulls, I couldn't let these days pass without mention....

Our engagement came as a surprise to, well frankly, nobody that knew us. Our friendship has run deep for so many years now, and we have overcome the distance through God's grace ever since it began.

When we began dating, we debated wedding dates in order to fix our eyes on a point when the distance would end. It was between this year or the next.

During the GC Session this past fall, Vini and I knew that whatever was decided would mean a change. We have both fallen in love with British Columbia, and our hope was, and still is, to stick around here for a while. If my parents ended up moving, I would stay. But neither of us wanted me to stay here alone.

My dad's transfer back to the USA prompted us to fix a date sooner rather than later—2016 it is.

"So, my dad's been reelected."

"I heard...So, I guess that means they're moving, huh?"

"I guess, eventually."

"So, that means we're getting married, right?"

"Yeah..."

"Whoa..."

"Yeah..."

While the proposal came later, planning a long distance wedding in less than a year waits for no logical timeline. We began arrangements that same month, and here we are.

The week I handed in my last final exam of the semester in December, Vini arrived. That same week, we celebrated our engagement with a photoshoot with the amazing Megan Benger.

It was a lovely day reserved just for us, because it was the only clear and sunny day in all of that week. It was still frigid weather, and our hands were so very cold, but the view was so stunning and Megan's photos so worth it, that I'm immensely grateful we stuck to it.

Thank you so much for the stunning photos, Megan! We had so much fun, despite the cold, and we've loved showing off the photos. They're truly lovely.

I include the photo below because I find it hilarious that in so many of our photos we look like we're trying so hard because we had to constantly remember to smile, or our faces would freeze in serious resting faces in response to the cold. Cue the hands in pocket or squished between us to keep warm.

After spending a wonderful month of holidays and wedding planning together, Vini has gone back home. We have somewhat role reversed, if we subscribe to that mentality. He's dealing with our wedding planner and vendors, and I am dealing with apartment hunting, putting down offers, and waiting to hear back from immigration services.

It's such an exciting time. With all the moving we did growing up, both of us have, admittedly, grown addicted to new beginnings, and we're so looking forward to our very own.

In other words, keep us in your prayers and send us good thoughts because the journey has only just begun, and there's lots more news to come!
