RSV WHAT A NIGHTMARE!!

OK! The day before this picture was taken, Paityn was at URGENT CARE for 2 hours and then in the ER for 5 hours. My poor peanut was so sick and I couldn't figure out what it was...finally the diagnosis came in. RSV and a double ear infection, my poor little peanut was in pain. She couldn't breathe and had to have a breathing treatment and lots of meds to pull her through. The doctor said she was on the verge of pnemonia! I want to THANK GOD for holding our angel in his arms while he mended her little body. She is about 94% better and has her gummy smile back! Thank you GOD!

Our sleeping beauty! So tired after a the first two days of having RSV!

WINTER PEAR SALAD

Staying in this Valentines Weekend?

Enjoy this beautiful salad as part of your Valentines dinner menu!

Winter Pear Salad

Dressing:

5 tablespoons olive oil

2 tablespoons Balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 tablespoon chopped green onions

Salt and fresh ground pepper

Mix dressing ingredients in jar, shake well and refrigerate.

Salad

½ head green leaf lettuce, washed and torn

½ head red leaf lettuce, washed and torn

2 ripe d’anjou pears, thinly sliced

2 ounces Asiago cheese, shredded

½ cup cashews, toasted*

In salad bowl, combine greens, 1 ½ sliced pears, cheese, and ¾ of the dressing. Arrange remaining pears, cashews and sprinkle some extra cheese over salad. Drizzle remaining dressing.

*Toasted cashews: place on foil-lined baking sheet and toast at 350°F for 10 minutes.

CINNAMIN TWISTS

Delicious & Divine......

Cinnamon Twists

1 cup sour cream

3 Tbsp. shortening

3 3/8 tsp. yeast

½ cup warm water

4 tsp. sugar

1 tsp. salt

¼ tsp. soda

3 cups flour

1 egg

Filling

¼ cup soft butter

½ cup brown sugar

1 tsp. cinnamon

Frosting:

2 cups powdered sugar

2-3 Tbsp. milk

2 Tbsp. soft butter

1 tsp. vanilla

In saucepan, combine sour cream and shortening. Let it come to a boil and remove from heat. Let cool. Mix yeast, water and sugar. When dissolved, add dry ingredients. Mix well and add egg. Mix and add sour cream mixture. Work dough until soft and smooth (by either kneading or using a mixer). Let dough rise for 20-30 minutes. Roll dough into a rectangle. Spread cinnamon filling over half of the rectangle. Fold dough over, cut with a pizza cutter into small strips and twist. Bake at 375°F for 12 minutes. When cool, drizzle frosting over twists.

BANANA CAKE

Banana Cake

Cream:

½ cup sour cream

½ cup margarine or butter

1 ¼ cup sugar

2 eggs

Add:

3-4 mashed ripe bananas

2 cups flour

1 tsp. vanilla

½ tsp. salt

½ tsp. baking powder

½ tsp. soda

Grease and flour Jelly Roll (10x15) pan or 2 bread pans. Bake at 350° F for 20 minutes (sometimes a few extra minutes – check middle of cake).

Frosting:

1 stick butter

4 oz. cream cheese

3 cups powdered sugar

3 Tbls. Milk

½ - 1 tsp. vanilla

The story behind the knives!

In 2007 I met the designers of Ergo Chef at a gourmet show. I used the cutlery on stage during my demo and was given a set to take home. FRIGIDAIRE DISHWASHER REVIEW

So I am happy to tell all of you that I have almost finished my video on my new Frigidaire dishwasher. Hubby and I are going to show you all of the fabulous features and all of the options that this dishwasher offers.

So stay tuned the video showing you exactly what it looks like inside will be coming soon.

I also wanted to share with you that the new line of Frigidaire dishwashers just received the EPA's prestigious 2010 Energy Star award for their "Swap and Save" Energy Star Promotion.
This tells us that Frigidaire is committed to smart energy management and they will make every effort to share the importance of energy with everyone.

So how much energy will the new collections save us??? The dishwashers will use at least 41% less enrgy and 40% less water than used 10 years ago. If you don't need a dishwasher the washers will use up to 82% less energy and 60% less water! How cool is that...we need to think of a greener approach when it comes to saving energy!

As a full-time working Mom and a part-time blogger, I can honestly tell you I don't cook as much as I would like to. Hubby has been cooking a lot more than I have so it works out great. Spring Chickens

Here they are. The first of the Easter Cake Pops. I’ve had lots of requests over the last few days for these, so I spent some time working out ideas for you guys. I’ll show you the others in the coming days.

But for now, it’s… Chicks, man! (Pretend I’m Joel McHale from Talk Soup when you read that. It’s much more effective.)

Here’s how they look on pink.

On blue…

On yellow… (I love spring!)

…and green.

And here, I just played around with a few different designs.

I’m leaning towards just the head. But the little feet are so dang cute. And if the eggshells came off looking a little better, those might be the winner. Big head? Big bottom? All body? Or no body? Whatcha think?

Anyway, if you want to make some, follow the instructions for the basic cake pops.

You’ll need the following supplies:
Cake and Frosting
Yellow Candy Melts
White Candy Melts
Paper Lollipop Sticks
Black Edible Ink Pen
Styrofoam Block
Paramount Crystals
Rainbow Candy Coated Chips
Pastel Wild Flower Sprinkles
Diamond Shape Sprinkles

To decorate solid yellow chicks:

Once the round yellow candy covered cake pops are dry (again, basic cake pops instructions here), use a toothpick to dip into the melted candy coating. Dab a little dot of the coating where you want the beak to go. Then, just take one of the orange rainbow chips and attach it to the pop. It works like glue.
For the feet and wings, use the same technique to glue on the other sprinkle shapes.
Use the edible ink pen to draw the eyes.

Note: to get smoother covered pops, make sure your bowl is deep enough to submerge the entire pop. Try to dip it in one dunking motion and remove. If the chocolate is too thick, add some paramount crystals or some shortening to the melted candy coating to thin it out. Remove the pop, holding it in your left hand. tap your left wrist lightly with your right hand and rotate the lollipop stick over your bowl. The excess chocolate should fall off, smoothing out the coating at the same time. Also, make sure the coating surrounds the stick at the base to secure it.

For the Chicks in Eggshells:

Instead of rolling them round for the pops, shape them by hand to form the chick body.
Once, you’ve made the pops, dipped them, and they have dried, carefully twist and remove the stick. Be aware of the location of the hole that was left.
Then, hold the chick head and dip the bottoms in white candy melts. Dip the end of the same lollipop stick in some of the white candy coating and reinsert. Let dry.
You don’t want your white candy coating to be too hot. It can melt the yellow or it could drip down the sides and mess up your design. So, let it sit and thicken up a little for a few minutes before you start dipping the eggshells.
Then glue the sprinkles on and draw the eyes like above.

Or ditch the sticks altogether!
They’re pretty cute like this, too. Just drop them in a bowl of melted candy coating. Cover them with the chocolate without moving them around in the bowl. Then lift them from the coating with a spoon. Tap off the excess and slide the little chicks carefully off your spoon onto wax paper to set. If the coating pools at the bottom, use a toothpick to draw a separation line. Then, once it dries completely, it will be easier to break off the part you don’t want.

I love to bring new snacks to the office to see what my friends will think when they try it for themselves. I was so impressed with the wonderful FIBER ONE 90 CALORIE CHEWY BARS!!!

YUM! They are so good and filling to!

The bar has a layer of chocolate, a layer of chewy and little dab of chocolate. Its the size of a granola bar, it has the flavor of a candy bar but only 90 calories and 5g of fiber! So good you need to try it yourself!!

BARBIE DVD! SING ALONG WITH BARBIE!

Nevaeh was so happy to get to review the Sing along with Barbie DVD. Neve loves Barbie so anything that has Barbie on it is a winner in her eyes! We think this DVD is wonderful for young kids to watch...you may want your child to be of reading age to be able to sing along with the DVD. I found that Nevaeh was frustrated because she could not read the words. Nevaeh and I agreed that she would be able to watch the DVD and learn the songs as if she was listening to the radio and that seemed to do the trick. So really enjoyed the DVD and only wishes she knew how to read since the words are displayed at the bottom of the page. The graphics and the songs are wonderful and you will not be disappointed.

Featuring 12 songs from popular Barbie movies of the past, the DVD has easy-to-follow, on-screen lyrics, making it possible for children to take part in performing favorite Barbie movie songs. Whether your child likes "All for One" from Barbie & the Three Musketeers or "I Am a Girl Like You" from Barbie as The Princess and the Pauper, they will find extended versions of many Barbie favorites to turn into family room performances.

My Frigidaire Dishwasher is here!!!

I AM SO HAPPY!!! We received our Frigidaire Dishwasher and I couldn't be happier. I can't explain how good it feels to receive a new dishwasher to help me give my readers the true insight on Frigidaire's quality. For the past three-four years my hubby would complain and complain about our other dishwasher cause it sucked. It would do the job don't get me wrong but if you didn't pre-rinse you would need to run the dishes through a second wash. He would get so pissed off that it actually caused tension between us....since I would just tell him to, " get over it!" So when I found out I get to test drive this dishwasher..I ran out and did a little dance in front of hubby! Yep! I won't have to hear any more bitching!!! Hubby couldn't believe that we were really gonna get to put this dishwasher to the test! As you know we have a new baby girl and we are washing bottles like crazy in our house. So I am relieved that we will have really clean bottles for Paityn.
The day our dishwasher was delivered, I had to come home sick with the flu. So I was totally bummed that I couldn't play around with it the first few days. As soon as I had recovered from the worst case of the flu I ever had....I started playing.
This dishwasher is awesome..it does so much and I can honestly tell you I don't have to pre-rinse. WHHOOOO-HOOOOO!

Well, I am going to finish up our video and start to introduce you to the inside and outside of my new Frigidaire Dishwasher! Over the next few months we are going to show you every little detail and tell you all of our thought on the quality of this dishwasher. I am so excited!!

DIGGITY KIDS!

Diggity Kids had the right idea when they designed their new company. Comfort for kids
when traveling. Many kids are too little to voice their opinions on how they feel in their booster seats. For the kids that can voice their feelings...they will let you know they are uncomfortable when traveling. Their little bums are sore and when they want to sleep their heads roll around on their shoulders which is not safe. Chocolate Chip Cookies

I Love Chocolate Chip cookies !

Every once in a while, I love to surprise my girls with cookies and milk when they return home from school. My mom always baked the best after school cookies, so I guess it runs deep within me. Recently, I have been searching around for a great chocolate chip cookie recipe and was so happy when I came across this one from Our Best Bites

If I try something more than once, then it must mean it's worthy!!
( I have already made these twice in 10 days)

Chocolate Chip Cookies

½ c. butter
½ c. high-quality tub margarine (like Smart Balance)
¾ c. white sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
3 1/2 c. flour
¾ tsp. salt
¾ tsp. baking soda
1 12-oz. bag chocolate chips

Cream together butter, margarine, sugars, eggs, and vanilla. In a separate bowl, sift together flour, salt, and baking soda. Add to creamed mixture and beat well. Stir in chocolate chips.

Bake at 350 degrees for 10-11 minutes until lightly browned. Every oven is different, so make sure to keep your eye on them until you know for sure how they will cook in your oven. Makes about 4 dozen.

*** Note, the original recipe calls for only 3 cups of flour but I always add in an extra 1/2 cup flour for a more chunky cookie. On Saturday, I was out of chocolate chips ( I know, what kitchen is ever out of these?) So, we just chopped up a Hershey's chocolate bar and added in a cup of M&M's -- they were so yummy!

Buttermilk Chocolate Cake

We are Celebrating with Cake Today!

Chocolate Buttermilk Cake

2 cups white sugar

2 cups flour

½ cup cocoa

2 tsp. soda

1 tsp. salt

2 eggs

1 cup buttermilk

1 cup oil

1 tsp. vanilla

Mix all ingredients. Add 1 cup boiling water. Stir only until well blended. Bake 350°F for 35-40 minutes in a lightly greased 9x13 pan.

Fudge Frosting

2 cups white sugar

½ cup butter

1 Tbls. cocoa (level)

½ cup milk

Combine ingredients over medium-high heat and boil for 2 minutes.

Add 1 tsp. vanilla and cool completely.

Beat until slightly thickened. (It will look a bit runny). Spread over cake.

Winter Pear Salad

Staying in this Valentines Weekend?

Enjoy this beautiful salad as part of Valentines dinner menu!

Winter Pear Salad

Dressing:

5 tablespoons olive oil

2 tablespoons Balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 tablespoon chopped green onions

Salt and fresh ground pepper

Mix dressing ingredients in jar, shake well and refrigerate.

Salad

½ head green leaf lettuce, washed and torn

½ head red leaf lettuce, washed and torn

2 ripe d’anjou pears, thinly sliced

2 ounces Asiago cheese, shredded

½ cup cashews, toasted*

In salad bowl, combine greens, 1 ½ sliced pears, cheese, and ¾ of the dressing. Arrange remaining pears, cashews and sprinkle some extra cheese over salad. Drizzle remaining dressing.

*Toasted cashews: place on foil-lined baking sheet and toast at 350°F for 10 minutes.
