Are you thinking of throwing an authentic Mexican fiesta and are unsure where to start? The trick to making your guests feel like they're really in a party in Mexico is to decorate the place with vibrant colors, have Mexican games, play the country's music, and serve the native delicacies. Below are some of the tips on how to have a great Mexican fiesta:

• Decorate your place with balloons and streamers using the colors of the Mexican flag -- red, white, and green.

• Use plants and flowers indigenous to Mexico like dahlias, poinsettias, and plumerias to add color.

• Adorn the walls with Mexican shawls called serapes. You can also use these as table runners.

• Add other Mexican accessories like sombreros, terra-cotta pots, and steer skull to showcase the country's culture.

• Prepare a playlist of Latin-American or Mexican music like salsa or samba, and inspire people to dance by hiring your own mariachi band. Make sure there's enough space for dancing!

Mexican food is always a crowd pleaser. Serving Mexican food and drinks at a Mexico-themed birthday party will make the celebration even more memorable. This list of savory Mexican foods features simple, party-friendly eats. While some originated in Mexico, others transform traditional American dishes into south-of-the-border favorites. Many of these dishes can be made in advance, giving you more time to enjoy your margarita.
1. Chips and Dips. Corn tortilla chips alongside guacamole, salsa and bean dip are a must for any Mexican food party table. Also popular is chile con queso, a spicy, hot cheese dip.

2. Mini Tacos. Seek out small, soft corn tortillas. Fillings can include beans, cheese, fish or meats. You can pre-make the tacos or set up a taco bar where guests can make their own.

3. Chile Cheese Tarts. 1-inch pre-made appetizer pastry shells are the best thing that's happened to parties since the wine charm phenomenon. You can fill these bite-sized cups with any filling you can think of, savory or sweet. We suggest a combination of fresh green chiles and cheese. Depending on guests' preferences, you may adjust the heat accordingly.

4. Agua Fria. This refreshing drink can be made from almost any blended fruit. First, liquefy a fruit such as watermelon in the blender. Strain the mixture to eliminate seeds. Serve with a mint leaf garnish if you like.

5. Sliders Mexican Style. Try a spicy take on the slider phenomenon by adding salsa, cornmeal and pepper jack cheese to these much-loved miniature burgers.

6. Quesadillas. Tuck spinach and mushrooms with cheddar cheese between two flour tortillas and saute until brown. You can use smaller-sized tortillas for individual portions. If you're using 10-inch or larger tortillas, you may slice the quesadilla into smaller servings once cooked.

7. Chile Spiced Nuts. You'll find these spiced nuts on many bars throughout Mexico. Roast shelled, unsalted, blanched peanuts in vegetable oil in a skillet. When cool, mix in chile powder. You can add as much or as little as you like depending on your tolerance for heat. Salt nuts to taste and garnish with lime wedges. They can be stored for weeks in an airtight container.

8. Flan. This steamed caramel custard dessert has a creamy texture and is easy to make in advance. It can be served cold or at room temperature in small, individual-sized ramekins.

Here are some easy Green Party Foods and lots of green recipes that will feed your family that are perfect for St Patty's Day.

Why not begin your kid's day with a Green Breakfast?
Green Pancakes are simple to make...use your normal recipe, but add a few drops of green food coloring. Don't like pancakes? How about some Kiwi fruit or cantaloupe to start off your day then. They are both tasty, nutritious and green! Is your family more of an egg breakfast family? Well, you've heard of Green Eggs and Ham, haven't you? Make your eggs with a couple drops of the good old green, food coloring that is. Prepare them as you normally would...scrambled, fried, over easy or sunny side up. There is another green egg idea for you...the Salsa Verde Omelet. Salsa Verde is green salsa! Prepare your omelet as usual and add some Salsa Verde, it will be the best Irish Mexican Omelet you ever had! Then for the family that is in a rush...how about some green cream cheese on a bagel?

Green Lunch Ideas
Get yourself a large salad...can't get much greener than that! There is always pasta with pesto sauce for those of you who like a heavier lunch. And last, but not least, how about a bowl of Pea Soup?

Irish Dinner Ideas
The first dish on the list is not one of the green food ideas. Of course, it's Corned Beef and Cabbage with some boiled potatoes. Delicious! You can eat it as a dinner or make sandwiches on rye bread with mustard. This is also a good party menu idea. Don't really like Corned Beef? Well then get out the pasta and pesto sauce, this is good for lunch or dinner.

What About Green Party Food?
Make a dip out of guacamole and Salsa Verde... all you have to do is add some chips! You can also mix the Salsa Verde with cream cheese for a delicious dip. Get out the food coloring again...you are going to need it for the green icing on your green cupcakes! If you like pistachio, add some pistachio pudding mix to your frosting and put that on your cake or cupcakes. Top them with a Shamrock pick!

Green Drink Ideas
Now you need a green drink... Limeade is sure to be green enough. It's usually found in the freezer section of your food store. Mix equal amounts of Limeaid and Ginger Ale or 7 Up in a punch bowl. Scoop some Lime Sherbet into it and your Patty's Party Punch is ready to go. Then finally, there is always green beer...which requires some greener food coloring!

Celebrate Mardi Gras! This history rich festival makes for the perfect mid-winter party! With the dead of winter upon all of us, it's time to gather friends and family and get everyone out of their winter doldrums. Mardi Gras provides a fun and festive reason for a celebration! Mardi Gras season in the early centuries of Europe, ran from the end of Christmas to the beginning of Lent on the Christian calendar. It always began with the Feast of the Epiphany, the twelfth day after Christmas and ended with the start of Lent on Ash Wednesday. Mardi Gras is French for Fat Tuesday, the day before Ash Wednesday. It provided a last chance to eat, drink and be merry before the austerity of the Lenten season. Here in the United States, this celebration was introduced by the French and first celebrated along the Mississippi River, near what is now New Orleans. This origin is what has established the strong connection between New Orleans and Mardi Gras. In 2011 the official Mardi Gras festivities occur on Tuesday, March 8th, so you have plenty of time to start your own celebration planning.
So you've got some history... now here are some tips to help you plan your our own celebration. A Mardi Gras party is fun for all ages. It can be as much fun for the kids as it as for the adults. Adapt your fun and games according to the age of your guests! Our family has done this party for kids from 6 to 16 in addition to adults.

The official Mardi Gras colors are purple, green and gold representing justice, faith and power, as this was a festival rooted in both religion and monarchy. There has always been a King and Queen of Mardi Gras celebrations.. so let your party include a way to choose ones from among your guests. This can be done by seeing who collects the most Mardi Gras beads; gold coins, has the best costume or finds the Baby King, which is baked into the King cake. A King cake is a traditional dessert.

Invitations are abundant both online and in the stores. Party stores have all kinds of Mardi Gras decorations... so brighten your home with these traditional colors on tablecloths, paper goods and banners or wall décor. Buy a fun jazz CD or put together an I pod play list and let the music add to the ambiance. Don't forget to have tons of beads on hand so that you can bedeck all the guests.

Food for a Fat Tuesday party can be gumbo or jambalaya. Both of these are easy to make and always crowd pleasers. Any kind of shrimp or crab dip with some baguettes or French bread are welcomed appetizers. If this is an adult party you could make a Hurricane punch. Dessert should be the King Cake. This is a lengthy recipe, so my advice.. buy or order one! Just make sure if the Baby King doll is baked into it, you alert your guests. You don't need someone breaking a tooth as they take their first bite. Tradition says who ever finds the Baby King in their cake will receive a year of good luck! You could also make your own desserts and decorate with frostings and sugars in the festive purple and gold colors.

It's seldom you find food with such a deep history as a King Cake. This fabulous cinnamon roll-like cake gets its name from the biblical kings that came to honor Christ on Epiphany (The twelfth day after Christmas). The king cake season is from Epiphany Day or the Twelfth Night to Mardi Gras Day. This year, 2011 Mardi Gras Day falls on Tuesday, March 8. Mardi Gras Day or "Fat Tuesday" is the last day of the Carnival Season and it always falls on the day before Ash Wednesday (The first day of Lent).

The famous King's Cake was brought to the New Orleans area by colonist from France and Spain. New Orleans bakeries feature their own style in the variety of recipes... The most traditional is twisted or braided bread, very similar to brioche. This cake is then topped with sugary icing and decorated purple, green, and gold sugar, icing, and sprinkles. The purple, green, and gold are the traditional carnival colors. Purple meaning Justice, Green for Faith, and Gold standing for Power; these colors were chosen by the Grand Duke Alexis Alexandrovitch Romanoff of Russia during a visit to New Orleans in 1872.

King Cakes in Southern Louisiana date back to the eighteenth century, but in more recent history some New Orleans bakeries have begun to add their own touches to the traditional king cakes by adding a variety of flavored fillings including; apple, blueberry, chocolate, lemon, pineapple, raspberry, bavarian cream, cherry, cream cheese, pecan praline or strawberry. Throughout history, each cake was said to have a small trinket, or "baby" hidden inside. A tradition from the Roman Empire placed a little bean inside; in 1870 this bean was replaced by a porcelain figurine and more recently a plastic baby. It was customarily said this bean, or figuring was to represent Baby Jesus. And tradition declares whoever "gets the baby or finds the figurine in their piece of king cake has the obligation to bring the next cake, or host the next carnival celebration.

Although many of us only picture the New Orleans style, colorful braided cake when we hear the term king cakes; traditionally they were not so. The French style king cake "La galette des Rois" meaning the cake or "wafer" of the Kings looks nothing like our kingcakes. The La galette des Rois is made of flaky puff pastry with a heavy center of frangipane. These French king's cakes also have a trinket hidden inside, but these figurines represent things resembling cartoon characters or even cars. Another twist on the known New Orleans style king cake is the Mexican, "La Rosca de Reyes" or "Roscon de Reyes" both meaning King Cake. The Rosca de Reyes is made in an oval shape with dried or candied fruit for decoration, commonly using figs or cherries. The customary figuring representing the Child Jesus is also followed in these Mexican king's cakes as well.

St. Patrick's Day is only one month away, so thought you might like a few ideas for your St. Patrick's Day party.

St Patrick's Day Room Decorating Ideas:
Decorate any room for a St. Patrick's Day celebration with scene setters and a shamrock door curtain, shamrock cutouts, shamrock lights and clover ceiling dangles. Green and gold balloons will make any room festive!

St Patrick's Day Table Decorating Ideas:

Decorate your table with shamrock theme paper goods and scatter some shamrock confetti. Add some black pots with gold wrapped candy or just the gold candy scattered on the table.

St Partick's Day Party Activity Ideas:

Supply everyone with green hats, beads and boas to make sure no one gets pinched! A few activities could be:

1. Trivia Game - use questions about St. Patrick's Day or things that are green.

Traditional Irish Food would be: corned beef and cabbage, potatoes, soda bread and, of course, Irish Coffee. Or, GO GREEN and serve all green food:
