It goes well with any Mexican entree.  It's an  easy dish to take to a pot luck party and always gets rave reviews. 1 can chicken broth 14 oz.&lt;br /&gt;
1 can green chili enchilada sauce 10  oz.&lt;br /&gt;
1 Tblsp dried minced onion&lt;br /&gt;
1 can diced green chilis&lt;br /&gt;
1 can original  Rotelle tomatoes&lt;br /&gt;
shredded Cheddar or Monterey Jack cheese for the  top&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Drain liquid off tomates.  (If you prefer a less  spicy version, just omit the tomatoes.)  &lt;br /&gt;
Combine everything except the  cheese in an 8 x 8 baking dish.&lt;br /&gt;
&lt;br /&gt;

Mix it all up and bake  uncovered for 35 minutes at 350 degrees.&lt;br /&gt;

You can serve this  with additional toppings if you like, such as fresh chopped tomatoes, guacamole,  olives, sour cream, cooked chicken, etc.&lt;br /&gt;
Note  I usually increase the recipe  by using a 28 oz. can of green chili enchilada sauce, 2 cans of broth, 4 cups  rice, and 2 Tblsp onion. 1 6 oz. can  tomato paste or 8 oz. tomato&amp;nbsp;sauce&lt;br /&gt;
1 Tblsp olive oil&lt;br /&gt;
1 small yellow onion finely diced&lt;br /&gt;
2   tsp. minced garlic&lt;br /&gt;
1 Tblsp. balsamic vinegar&lt;br /&gt;
1 Tblsp. brown sugar&lt;br /&gt;
1  Tblsp. dried basil leaves&lt;br /&gt;
1/2 Tblsp. ground oregano&lt;br /&gt;
2 whole bay leaves&lt;br /&gt;
1  tsp salt&lt;br /&gt;
1/4 tsp  coarse ground black pepper&lt;br /&gt;
or crushed red pepper flakes if you like it spicy&lt;br /&gt;
&lt;br /&gt;
&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;Put everything into  the crock pot, cover with a&amp;nbsp;tight fitting lid and simmer on low for 8 hours. 1 pkg Angel Food cake mix&lt;br /&gt;

&lt;/div&gt;I have had many requests for the directions to the snowflake block I used on my Snowman quilt. &lt;br /&gt;
I designed this quilt using a panel several years ago and didn't write anything down.  So I have re-figured the block and here are the dimensions and directions for you.  Enjoy!&lt;br /&gt;
Background fabric (blue)&lt;br /&gt;
4  2 1/2" squares&lt;br /&gt;
Snowflake fabric (white)&lt;br /&gt;
1  5" square&lt;br /&gt;

&lt;div style="text-align: left;"&gt;Draw a diagonal line on the wrong side of four&lt;/div&gt;&lt;div style="text-align: left;"&gt;white 2 1/2" squares. Place the white squares with right sides together on top of four blue squares.&lt;/div&gt;&lt;div style="text-align: left;"&gt;Stitch 1/4" from each side of the drawn line.&lt;/div&gt;&lt;div style="text-align: left;"&gt;Cut on the drawn line. Press toward the blue fabric.  Trim each to 2" square. Repeat with remaining 3 blue squares to make 8 blue/white 2" half-square triangles.&lt;/div&gt;&lt;br /&gt;

&lt;br /&gt;
Place a towel or piece of fabric on your pressing station.&amp;nbsp;&amp;nbsp; Sprinkle some salt on the fabric.&amp;nbsp; I used coarse salt like the kind you get on soft pretzels.&lt;br /&gt;

At the end of the year we each had a large assortment of black and white fabrics to use however we wanted.&amp;nbsp; This is what I made from mine.&amp;nbsp;&amp;nbsp; I called it Circle Fun.&amp;nbsp; It is approximately 70" x 90".&lt;br /&gt;

This was such a fun, no-brainer type&amp;nbsp;quilt to make, and a great way to use up your scraps.&amp;nbsp; I appliqued the quarter circles by hand while waiting at the Dr.'s office or watching TV at night.&amp;nbsp; I find this very relaxing and it takes my mind off the idleness.&amp;nbsp; You could machine applique them very quickly if you prefer.&lt;br /&gt;
&lt;br /&gt;
Fabric Requirements:&lt;br /&gt;
&lt;br /&gt;
70 black 6 1/2" squares&lt;br /&gt;
70 white 6 1/2" squares&lt;br /&gt;
140 bright 3 1/2" squares to cut quarter circles from&lt;br /&gt;
1/2 yard stop border&lt;br /&gt;
1 2/3 yard outer border&lt;br /&gt;
5/8 yard binding&lt;br /&gt;
5 1/2 yards backing&lt;br /&gt;
&lt;br /&gt;
&lt;ol&gt;&lt;li&gt;Place a white 6 1/2" square right sides together on top of a black 6 1/2" square.&lt;/li&gt;
&lt;li&gt;Draw a diagonal line from corner to corner.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Stitch 1/4" away from each side of the line.&amp;nbsp; Cut on the line to make two half-square triangles.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Press, then trim each square to 6".&amp;nbsp;&amp;nbsp;Repeat with all 6 1/2" squares of fabric to make 140 half-square&amp;nbsp;triangles.&lt;/li&gt;
&lt;li&gt;Trace a 5 3/4" circle onto freezer paper.&amp;nbsp; Cut the circle in half twice to make four quarter circles.&lt;/li&gt;
&lt;li&gt;Press a paper template onto the wrong side of a bright fabric scrap.&amp;nbsp; Cut&lt;strong&gt; on&lt;/strong&gt; the straight edge&amp;nbsp;&lt;strong&gt;but&lt;/strong&gt; 1/4" away from the rounded edge.&lt;/li&gt;
&lt;li&gt;Fold the rounded edge over the freezer paper and press well.&amp;nbsp; Make 280 bright quarter-circles.&lt;/li&gt;
&lt;li&gt;Remove the paper and applique a quarter circle&amp;nbsp;into the &lt;strong&gt;two seamless&lt;/strong&gt; corners of each block.&lt;/li&gt;
&lt;/ol&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Note:&amp;nbsp; I just did a random variety of color combinations.&amp;nbsp;&amp;nbsp;You may want to lay out your quilt prior&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; to making the last 10 or 15 blocks so&amp;nbsp;you can adjust the colors if necessary.&lt;br /&gt;
&lt;br /&gt;

You will need the following ingredients:&lt;br /&gt;
&lt;br /&gt;
2 cans low sodium vegetable, chicken, or beef broth&lt;br /&gt;
1-2 cups caramalized onions depending upon how much you love them.&lt;br /&gt;
1/2 tsp fresh minced garlic&lt;br /&gt;

1/4 tsp pepper&lt;br /&gt;
1 beef boullion cube &lt;br /&gt;
2 Tblsp butter&lt;br /&gt;
2 Tblsp flour&lt;br /&gt;
1/4 cup red wine&lt;br /&gt;
1/4 cup white wine&lt;br /&gt;
Sourdough bread, Gruyere,&amp;nbsp;or Swiss and Parmesan Cheese &lt;br /&gt;
&lt;br /&gt;
Optional substitute for the wine is apple juice&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Melt the butter in a medium saucepan.&amp;nbsp; Add the caramalized onions and garlic.&amp;nbsp; Stir for 1 minute.&amp;nbsp; Add the flour and stir for 1 minute.&amp;nbsp; Add the two wines and stir for 2 minutes.&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Add the broth, bay leaf, thyme,&amp;nbsp;pepper, and beef bouillion cube if you like.&amp;nbsp; Bring to a boil while stirring.&amp;nbsp; Reduce heat to low and simmer uncovered on low for 30 minutes.&amp;nbsp; &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;While the soup is simmering, cut the sourdough bread in slices.&amp;nbsp; Place your soup bowl upside down on the bread and trim it into a circle to fit&amp;nbsp;each bowl.&amp;nbsp; Place the bread rounds on a&amp;nbsp;baking sheet under the broiler until lightly toasted.&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Place your oven safe soup bowls on a baking sheet.&amp;nbsp; Remove the bay leaf and thyme sprig from the soup.&amp;nbsp; Spoon&amp;nbsp;the soup into the bowls with a ladle so you get the onions as well as the broth.&amp;nbsp; Add a bread round on top of the soup.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Cover the bread with a slice of cheese.&amp;nbsp; I only had shredded Mozzarella on hand today so that is what I used.&amp;nbsp; Place the soup under the broiler for 2-5 minutes until the cheese is melty.&amp;nbsp; &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

We&amp;nbsp;started this class in September 2011.&amp;nbsp;&amp;nbsp;The theme this year is&amp;nbsp; "Blocks from Japan".&amp;nbsp; All of the blocks are very geometric.&amp;nbsp; They give us the&amp;nbsp;choice of doing two blocks, a beginner or an intermediate.&amp;nbsp; These are the intermediate blocks I have done so far.&amp;nbsp;&amp;nbsp;A lot of the pieces end up being 1/2" when finished.&amp;nbsp; I don't mind them but it's sometimes hard to get them to line up perfectly.&lt;br /&gt;
&lt;br /&gt;

You will need the following ingredients:&lt;br /&gt;
&lt;br /&gt;
3 chicken breasts&lt;br /&gt;

2&amp;nbsp;ribs celery sliced&lt;br /&gt;
4 green onions sliced&lt;br /&gt;
1 cup frozen peas thawed&lt;br /&gt;
2 small red potatoes chopped&lt;br /&gt;
1/4 cup red pepper chopped&lt;br /&gt;
1 Tblsp olive oil&lt;br /&gt;
1/2&amp;nbsp;tsp rosemary leaves&lt;br /&gt;
1 tsp fresh minced garlic&lt;br /&gt;
1 chicken bouillion cube&lt;br /&gt;
1/2 cup heavy cream&lt;br /&gt;
1/2 cup milk&lt;br /&gt;
1/2 cup flour&lt;br /&gt;
2 Tblsp butter&lt;br /&gt;
salt and pepper to taste&lt;br /&gt;
2 pie crusts either pre-packaged or homemade plus 1 egg for wash.&amp;nbsp; If you want to make a homemade crust, please see my recipe for No Fail Pie Crust on this blog.&amp;nbsp; It is super easy and always turns out&amp;nbsp;nice and flakey.&amp;nbsp; Just type pie crust in the search box.&lt;br /&gt;
&lt;br /&gt;
Heat oil in large fry pan.&amp;nbsp; Add garlic and rosemary.&amp;nbsp;&amp;nbsp; Generously salt and pepper the chicken and add to the pan.&amp;nbsp; Brown well on each side, then cover and simmer for 10-12 minutes to steam the chicken and create a wonderful broth.&lt;br /&gt;

Remove the cooked chicken from the pan and cut into bite sized pieces.&amp;nbsp; (note: my picture shows five breasts but this recipe only calls for 3). &amp;nbsp; Add the chopped veggies (not the peas) to the broth along with 1 cup water and the chicken bouillion cube.&amp;nbsp; Simmer for 10 minutes stirring occasionally.&lt;br /&gt;

&lt;div style="text-align: left;"&gt;Remove the veggies from the pan and measure the broth.&amp;nbsp; Add enough water to make 2 cups.&amp;nbsp; Add the cream and milk to the broth.&lt;/div&gt;&lt;br /&gt;

&lt;div class="separator" style="clear: both; text-align: left;"&gt;Place 1 pie crust in the bottom of a deep baking dish.&amp;nbsp; Add the filling.&amp;nbsp; Cover with a second pie crust and pinch the edges to seal.&amp;nbsp;&amp;nbsp; If you want to be fancy, cut a few leaves or flowers from a small amount of the pie crust with a cookie cutter to add to the top for decoration.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

Beat 1 egg in a small bowl and lightly brush the top of the crust with it.&amp;nbsp; Add the decorations. &amp;nbsp; Sprinkle lightly with salt and pepper and just a few rosemary leaves.&amp;nbsp; Make&amp;nbsp;3-4 small slits in the top of the crust with a knife. &amp;nbsp; Place the&amp;nbsp;pie dish on a cookie sheet in case the filling bubbles over.&lt;br /&gt;

In a medium mixing bowl, combine the flour and salt.&amp;nbsp; Cut the shortening into the flour&amp;nbsp;with&amp;nbsp;two forks until &amp;nbsp;it resembles coarse crumbs.&amp;nbsp;&amp;nbsp;If you really want to have fun, I recommend using a vintage pastry cutter.&amp;nbsp; This makes me think of grandma and always puts a smile on my face.&lt;br /&gt;

Tear off two large sheets of plastic wrap or waxed paper.&amp;nbsp;&amp;nbsp;Divide the dough into two equal balls.&amp;nbsp; Place one ball at a time on a piece of plastic wrap and cover with the other&amp;nbsp;piece.&amp;nbsp; Roll the dough&amp;nbsp;&amp;nbsp;between the sheets into a large circle.&amp;nbsp;This prevents the dough from sticking to your rolling pin and makes it simple to lift into your dish.&lt;br /&gt;

Remove the top sheet.  Place your baking dish on top of the dough.  Lift the plastic wrap and flip your dish over. &lt;br /&gt;

The first quilt was from the pattern Mocha Latte.&amp;nbsp; I really liked the light, medium, and dark tones of this pattern.&amp;nbsp; Here is the picture from the book.&lt;br /&gt;

The second quilt I made was from the pattern Jelly Beans.&amp;nbsp; I did this one using the same color scheme as the&amp;nbsp;picture in the book,&amp;nbsp;Lime green, Yellow, Hot Pink, and Orange.&amp;nbsp; It is such a bright, cheery quilt.&amp;nbsp; It has not yet been quilted as I've had too many other projects in front of this one.&amp;nbsp; I think I'll save it for one of my grandkids.&lt;br /&gt;

You will need the following igredients:&lt;br /&gt;
&lt;br /&gt;
1/2 bag of fresh baby spinach leaves&lt;br /&gt;

3-4 tomatoes&lt;br /&gt;
2-3 green onions&lt;br /&gt;
1 cup dry Orzo pasta&lt;br /&gt;
1 Tblsp olive oil&lt;br /&gt;
dash of rosemary leaves,&lt;br /&gt;
red pepper flakes, and&lt;br /&gt;
lemon herb seasoning&lt;br /&gt;
1 tsp fresh minced&amp;nbsp;garlic&lt;br /&gt;
salt and pepper&lt;br /&gt;
Mozzarella or Parmesan cheese&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Cook pasta according to package directions.&amp;nbsp; Drain and rinse in cold water. Either pound the chicken breasts flat or filet them to make them thin.&amp;nbsp; Salt and pepper the chicken.&lt;br /&gt;
Heat oil in a large fry pan.&amp;nbsp; Add 1/2 tsp of the garlic,&amp;nbsp; a couple shakes of rosemary leaves and crushed red pepper flakes.&amp;nbsp; Simmer 20 seconds or so until fragrant. &amp;nbsp;Add the chicken and brown on both sides.&lt;br /&gt;

Cover pan with lid and let chicken simmer about 10 minutes until cooked through.&amp;nbsp; &lt;br /&gt;

While the chicken in simmering, chop the tomatoes and remove the stems from the spinach leaves.&lt;br /&gt;
You do not need to chop the spinach.&lt;br /&gt;
Remove the chicken from the pan and cut into bite sized pieces.&amp;nbsp; Add the cooked pasta to the browned juices in the pan along with the remaining 1/2 tsp of garlic.&amp;nbsp; Stir well to coat.&amp;nbsp;You may want to season with&amp;nbsp;additional rosemary, lemon herb seasoning,  and salt and pepper.&lt;br /&gt;

I thought I should get out this quilt that I designed last year and finish it up quickly so I can hang it over my stairwell for Spring.&amp;nbsp; I only had to put the borders on it.&amp;nbsp; I have drug it around with me to numerous quilt shops over the past 9 months trying to find a batik border for it.&amp;nbsp; I just couldn't find one that didn't detract from the center of the quilt.&amp;nbsp; Do you ever have that problem?&amp;nbsp; &lt;br /&gt;

I decided to just use the fabrics that were in the quilt for the borders so I could finish it up.&lt;br /&gt;
It has 3-D flying geese on the daffodils and the pansy and daffodil centers are made using the Clover Kanzashi Flower Maker tool.&amp;nbsp;&amp;nbsp; This quilt really puts me in the mood to go to the "Tulip Festival" at Thanksgiving point.&amp;nbsp; Acres and acres of gorgeous Spring flowers in bloom around mid April.&lt;br /&gt;

Shape the dough into a loaf.&amp;nbsp; Spray a baking sheet and sprinkle lightly with cornmeal.&amp;nbsp; Place the loaf on the sheet, cut 3-5 slashes in the top with a very sharp knife.&amp;nbsp; Beat 1 egg in a small dish.&amp;nbsp; Use a pastry brush to apply&amp;nbsp;the egg to&amp;nbsp;the top of the dough.&amp;nbsp; This will give it a nice crusty top when baked.&lt;br /&gt;
Allow to raise for at least 30 minutes.&lt;br /&gt;
