IN THE KITCHEN | Watermelon All-Fruit Cake

We were finally able to celebrate Em's March birthday last week so, of course, her annually requested fresh fruit watermelon cake was in order.

We went with a rectangular shape this year to change things up because you know I always like to push the creative boundaries and challenge myself to come up with something new.

However, I can't take the credit for the finished cake this year. I only helped with some final shaping of the watermelon base before Em and her friend worked together to add all of the other fruit. It turned out beautiful. I love the attention to detail with the placement of fruit varieties...especially how they used the sliced strawberries in alternating rows to finish off the top of the cake.

If you've never tried your hand at making a fresh fruit watermelon cake I hope this post inspires you. (see the step-by-step linked below)

They are the prettiest and yummiest guilt-free whole food cake and hits the mark on everyone's dietary restrictions, unless you can't eat fruit, since it's dairy-free, gluten-free, grain-free, processed sugar-free, nut-free, vegan and my favorite...whole30 approved.

When we slice it up for family, we usually have whipped cream for those that want it. (for the vegan and dairy-free people, you can also serve it with the canned almond whipped cream or coconut whipped cream varieties found in the refrigerated section of your local grocery stores).

COVID-19 social distancing was the reason for the delay in being able to celebrate with Em.
A wonderful visit from her and a her friend last week helped make it happen. She actually thought she was just coming up for a visit...the whole time I was scheming to surprise her with a belated 21st birthday celebration! We even got her with silly string - also a family birthday tradition. *wink*

RECIPE | Chicken Lazone

I'm always excited to try new recipes to help keep me inspired in the kitchen.

This week I tried a recipe from a friend and it did not disappoint.

I knew going into it this would be a meal Ella and Jay would thoroughly enjoy because of the pasta...

AND it would be a meal I could easily adapt to meet my own personal preferences for clean eating.

That mindset is actually how I go about meal planning each week. I always try to figure out something I can make that will satisfy everyone's appetites but also meet the desired food related preferences I have for clean eating.

The recipe calls for deliciously seasoned chicken served on a bed of pasta swimming in a delightful creamy sauce. I simply eliminated the sauce and pasta and enjoyed my chicken on a fresh bed of romaine. (and we all enjoyed some steamed green beans as a side).

I sure hope you'll try it. It won't disappoint.

I will say, it's quite spicy so I would eliminate the red pepper altogether or at least reduce it by half if your family doesn't prefer the "kick".

RECIPE | Fish Tacos - easy, delicious and whole30 approved

I've been posting my weekly dinner menus on the Pen + Paper Flowers Instagram feed and I had so many requests asking for my Fish Tacos recipe, I decided to post it here on the blog.

They are quite easy to put together and pack quite a flavor explosion with every bite.
And trust me when I say I love preparing simple meals that can be altered to fit everyone's dietary preferences without having to make completely separate meals. This meal is a perfect example of that. I eat mine in lettuce cups (as pictured) to keep them whole30 approved for myself but Ella and Jay prefer flour tortillas.

There's a delicious citrus dressing used to garnish the tacos and a refreshing easy coleslaw you can use as garnish and a side dish.

This is definitely a family favorite of ours...light, clean, refreshing and satisfying.

Even though I've upped my exercise routine through this whole COVID-19 #stayhome stuff...and been killin' it I might add...

I've also been baking and eating my feelings too.

BUT...this week I'm getting back on track and keeping my food in check.

Already feeling better. But man...what a roller coaster of emotions.

Sometimes I'm totally fine...rockin' the staying home thing and feeling pretty sane.

The next minute...I just feel sad...and off...with no energy and just want to curl up in a ball and fall asleep. Anyone else?

As we are staying home during this interesting and unusual period in history with COVID-19, I've really decided to try my best to make sure my perspective is one of hope, opportunity, and joy. Here's an example...

OPPORTUNITY
A couple of weeks ago, with the anticipation of another month of isolation, I decided to use April as an opportunity to get some Spring Cleaning done. With Ella home, it's also a chance to work side-by-side with her on deep cleaning tasks I haven't taught her yet.

HOPE
My approach going into this was very methodical -> I wanted it to be achievable and as easy as possible...no overwhelm or added stress. With that in mind, I created a good sized checklist so as to pick one or two things to accomplish every day with Ella's assistance and be completely finished by the end of the month. Basically, 30 days to a deep cleaned home.

JOY
I turned this list into a beautiful printable that makes me happy when I look at it and now I'm excited to share it with you. My hope is that it will inspire you to do a little Spring Cleaning in your own home and with your family's help too. Can you imagine how happy we'll all feel when we get to the end of the month with everything completed and our homes sparkling clean?

What an interesting time we are living in right now my friends.
The entire world has come to a stop due to COVID-19...schools have closed, businesses have shut down, states are issuing "stay in place" orders, grocery store shelves are completely empty, hospitals are without proper medical masks and equipment, there are thousands of people who've contracted the virus and sadly, thousands who've succumbed to it.

We are living in uncertain times, for sure, and with all of the collective what-ifs and worry, I'm choosing to cling to the positives. (while staying home)

What an incredible blessing this could be...if we allow it to be; An amazing gift of time.
This could actually be the pause button we've all wished for on those days when we were wishing hard for a breather...a break from the busyness.

This is an opportunity to take a step back and really put into perspective what's REALLY important. Never in the history of our world has everyone on the entire planet been more simultaneously united by anything...ever. Pretty crazy, right?

It's astonishing to think about, actually. And something we may never experience again.
I'm choosing to view this moment in history as miraculous. Yes, sadly, there will be some of us who will lose our lives to this...but I also believe there will be many more who will unexpectedly, through this experience, have life restored to them.

........

So...homemade bread...because homemade bread gives me life.
And I think we could all use a little comfort food right now.
This recipe makes some beautiful, delicious loaves and the ingredients are simple.
And...your family will pretty much think you're a superstar. (scroll down for recipe)

It's delicious all on it's own but exceptionally yummy with a little butter.

Homemade Classic White Bread Loaves

Simple ingredients - delicious results.

Ingredients:

5 cups hot water
3 TBSP yeast
2/3 cup honey
2/3 cup olive oil
2TBSP salt
1/3 cup wheat gluten
8 cups white flour
small bowl of olive oil - for hands while kneading
Note: I used Bread flour because that's all I had and still used the wheat gluten - even though it's not necessary with bread flour.

Instructions:

How to cook Homemade Classic White Bread Loaves

Preheat oven to 350º.
Grease 4 loaf pans, generously, with olive oil or baking spray.
Set aside.
Mix 5 cups warm water, yeast, honey, and olive oil in large stand mixer with whisk attachment. Allow yeast mixture to sit for 5 minutes to activate. (mixture should become bubbly - if not, allow more time to sit).
Remove whisk attachment and replace with dough hook attachment.
Add 2 TBSP salt, wheat gluten, and 2 cups flour to bowl
Mix well and scrape the bowl with rubber spatula.
With mixer on low, add remaining 6 cups of flour to avoid dust cloud.
Once flour is integrated, mix on medium high until thoroughly combined.
Dough should begin to pull away from sides of bowl after a few minutes.
If not, slowly add more flour until it does.
Dough should be firm but not dry - moist but not overly sticky.
Turn dough onto floured surface.
Dip fingers in a small amount of oil and rub hands together.
Begin kneading dough while maintaining oily hands - this keeps dough pliable, smooth, and easy to work with throughout the kneading process.
Knead for 5-10 minutes, continually folding the dough towards the middle and pushing down with your palms - adding small amounts of oil to your fingers and hands as necessary.
When dough is nice and smooth, form into large ball and quarter it, using a sharp knife.
Form each of the four sections into small loaves and place in prepared pans.
Place on stovetop or counter and allow to rise until dough doubles in size. (spritzing every 15 minutes with a water bottle). This can take 30 minutes to an hour.
Bake for 30 minutes, tops should be golden brown.
Remove from oven and invert loaf into your heat-protected hand.
Tap on the bottom of the loaf - a hollow sound determines it's done.
Allow to cool on a wire rack before slicing.
Slice and store in bread keeper, zip top bag or air tight container.
PRO TIP: Use an electric knife to slice when cooled for perfectly sliced bread.

Ghirardelli Bars <-- here are the ones I used

FREE printable Ghirardelli candy bar labels <-- linked below

white card stock or paper

scissors or paper trimmer

tape

DIRECTIONS

Print FREE Ghirardelli Bar labels of choice.

Trim to size using scissors or paper trimmer.

Remove outer cardboard Ghirardelli packaging - to expose inner gold foil wrapped bar

Wrap label around candy bar being careful to align and center image on from of candy bar.

Secure with tape on back.

TIPS:

1. Secure bottom flap of label to gold foil to prevent the label from sliding.

2. Since the product information has been removed, feel free to note the flavor of the candy bar on the

back of the label if you'd like to indicate to your recipient what delicious flavor they are receiving.

Please Note: Ghirardelli has two different 3.5oz candy bar selections. These labels have been designed to accommodate both. For the smaller 3.5oz bar, I chose to trim off a little more of the sides to expose more of the pretty gold wrapper underneath.

RECIPE | Butter Crunch Bars

The real name for these delicious after-school morsels is "Sunflower Seed Butter Crunch Bars".

Knowing Ella would put her nose up to something that remotely sounded healthy, I opted to shorten them to "Butter Crunch Bars" when she asked me what I was making the other day. *wink*

After-school snacks are always a bit of a struggle.

As a parent, I want to feel good about giving Ella something without all of the sugar and processed junk in typical snacks...but also something she is excited to eat because it actually tastes good.

These delicious butter crunch bars are the exact thing Ella and I have both been looking for.

They are filled with good-for-you ingredients, are easy to whip up, and are quite tasty! (maybe even a little addicting).

Adding the little heart sprinkles was a complete after-thought but...

how cute would these be for a guilt-free indulgence on Valentine's Day?!

Yield: 24 - 1 inch squares

Guilt-Free Butter Crunch Snack Bars (adapted from the Eat What You Love Cookbook)

Delicious, no-bake wholesome treats for after school, or packed lunches.

ingredients:

1 cup pecans, finely chopped
2/3 cup plus 3 TBSP pure maple syrup
pinch of fine sea salt
1 - 3.5oz. Lindt Bar, chopped
1 - TBSP or more of Godiva bittersweet chips
2 tsp virgin coconut oil
1 cup unsweetened sunflower seed butter
1/2 cup arrowroot powder
6 TBSP coconut flour
1/4 cup melted raw cacao butter
1/2 tsp pure vanilla extract
1/2 tsp salt
NUT FREE VERSION: Skip the pecans altogether. (also eliminating 3 TBSP maple syrup and pinch of sea salt).

instructions:

How to cook Guilt-Free Butter Crunch Snack Bars (adapted from the Eat What You Love Cookbook)

Preheat oven to 350º.
Line a baking sheet with parchment paper.
In a small bowl combine finely chopped pecans, 3 TBSP maple syrup, and a pinch of salt. Stir to coat evenly. Spread on baking sheet in single layer.
Bake for 15 minutes or until syrup is bubbling.
Remove from oven.
Using coconut oil, lightly grease sides and bottom of 8x11 glass baking pan.
Line bottom and long sides of pan with parchment, allowing ends to hang over sides of pan. (will be used as handles for lifting finished bars from pan).
Place chopped Lindt bar in 1 cup measuring cup. Add 1 TBSP or more of Godiva chips to fill the rest of the measuring cup. Add 2 teaspoons of coconut oil plus measured chocolate in top pan of double boiler and set aside.
Add 2 inches of water to bottom pan of double boiler and bring to boil. Add top pan with chocolate and oil and remove from heat. Allow to sit and melt while moving forward with the rest of the directions.
In a medium bowl, add sunflower seed butter, 2/3 cup maple syrup , arrowroot powder, coconut flour, cacao butter, vanilla, 1/2 tsp. salt. Stir together. Add candied pecans and press mixture into prepared pan.
Stir melted chocolate in double boiler. Pour chocolate over sunflower butter mixture. Using spatula, gently spread chocolate to cover and smooth top. Cover with plastic wrap. Chill for 1 hour or overnight.
Gently lift parchment flaps to remove slab from pan.
Use a sharp knife to cut into 1 inch square bars.
Store in airtight container in refrigerator.
Keeps for up to 2 weeks.

STYLING | Valentine's Day Hot Cocoa Bars

Fresh florals to replace the fresh cedar and now we've got a whole new look for the Snickerdoodle Hot Cocoa Bar I created for Christmas. I love how everything else was kept exactly the same except for the florals and now it looks like a completely different hot cocoa bar - perfectly perfect for Valentine's Day or a winter wedding. I then took things a step farther after a fun poll on Instagram stories.
I gave everyone over there 3 different "Valentine's-ish" sign options to choose from and here's what they picked...

Same florals, different sign and now another different vibe....even more Valentine's-esque.
This "Cuddles + Cocoa" sign is just so simple and charming and was actually my personal favorite of the three options I let everyone choose from.

I went into designing this with the idea of creating a cozy, dreamy, romantic setting for a night of snuggling on the couch with Jay while sipping on mugs of delicious hot cocoa and binge-watching Netflix together. *wink*

I hope this inspires you...knowing how simple changes can create an entirely new vibe - for your home decor, for your wardrobe, heck...even a recipe. *wink*

KEEPING IT REAL
The cozy, dreamy Valentine's Day night I mentioned?
Well...it's actually going to look just a tiny bit different.
There's a daddy daughter dance that evening and Ella's bestie is coming to town for the weekend. So much for the "romantic" part of the evening! Ha!! We love when Elise is here and I'm totally looking forward to snuggling all together for a movie after they return from the dance. Lol!

Slow start to my January with regards to my blog but slayin' things on the homefront with getting organized, decluttering and setting goals for 2020.
I love using the entire month of January to reflect on the previous year...giving myself time to set some well thought-out goals.

I knew going into creating our Snickerdoodle Hot Cocoa + Cookies Bar I wanted to include cinnamon marshmallows as a topping option.

At first, I thought I'd just purchase a bag of cinnamon marshmallows from the popular brands out there but was surprised to find the cinnamon flavor doesn't exist. What?

I then considered making homemade marshmallows but really wanted to keep things simple for myself and also for any of you considering making some.

I discovered the easiest, fastest solution for creating cinnamon marshmallows and wow!
They. are. delicious!

CINNAMON MARSHMALLOWS
1 cup mini marshmallows
1/2 TBSP powdered sugar
1/2 tsp ground cinnamon

Place in ziplock bag. Shake until covered. Enjoy!
..........

Easy, right?

The family voted to bring back the snickerdoodle hot cocoa flavor this year for our annual family hot cocoa bar..and I certainly wasn't going to argue. It's hands-down one of our favorite flavors we've come up with.

It's creamy and delicious, and absolutely "cozy in a cup"...or mug in this case.

I promise, once you've had a mug of this...I'm not certain you'll ever go back to classic hot cocoa mix again - recipe linked at bottom of post.

Since I'd done the "Boho Snickerdoodle Hot Cocoa Bar" previously, I knew I had to come up with ways to make this one unique and a little different.

FOUR DISTINCT DIFFERENCES

Four specific, intentional things I decided to do differently this year was the addition of snickerdoodle cookies to the bar, the creation of cinnamon marshmallows, splurging on some beautiful handmade mugs and plates and the creation of a bulk recipe for Snickerdoodle Hot Cocoa Mix - eliminating the need to add brown sugar and ground cinnamon to your mug like we did last time. THE SIGN

Believe it or not, I started designing the background of this sign November 2018...

I just never had time to finish it for our 2018 hot cocoa season. (just one more reason I had my Christmas decor up by Halloween night this year...so I could ENJOY the holidays this go around). Lol.

Anyway, good thing because the whole vibe of the sign compliments the snickerdoodle theme this year. I'm in love with the subtle snowflake details and the Old World charm. (sign tutorial coming)

Framing out the sign with fresh cedar gives a subtle nod to the Christmas season, which I adore.

Knowing we'd be keeping the hot cocoa bar up through February, as in previous years, I wanted something that would transition seamlessly from Christmas and throughout the winter season. (and allow me to use it for Valentine's Day with a few simple changes - that idea is coming soon).

You'll notice in some of the images, I originally only had greenery on the sign and the hot cocoa mix jar but later decided to add it to the glass dome on the cookies and also chose to lay a piece on the small cake stand holding the wood spoons, paper straws, cinnamon sugar shaker, and the cinnamon sticks used for garnish + decor. It's simple little touches like that that make the overall look feel finished and cohesive. I'm so happy with it.

Simple ingredients, and this beautiful snowflake pan (<- linked here or in the recipe below), made my first attempt at baking shortbread cookies extra delightful.

I made the "classic" shortbread cookies using the recipe booklet that came with the stoneware pan. Since the recipe was so easy and turned out quite delicious, I'm now looking forward to trying some of the other fun flavors included in the booklet...ginger, lemon, chocolate, orange spice and a nut option!

These shortbread cookies are what inspired me to try another shortbread cookie recipe for the pétit Écoliers I shared the other day.

I can't decide which recipe I love better but what I do love about this one is that it requires less ingredients, leaving you with nine cookies total. And yum..those nine cookies are delicious.

The recipe is so easy it'd be a cinch to whip up multiple batches too.

I sure hope you'll try them. I think you'll love'em.

The pan is pretty fancy but I look at it as an heirloom for a classic cookie I know I'll be making for years to come.

Pssst...I'm on the hunt for a Valentine version of this pan now...but have only come across this heart shaped pan so far. If you see any out there, please let me know.

Yield: 9 pan cookies or 1 dozen cut-out cookies

Classic Shortbread Cookies

prep time: 10 Mcook time: 30 Mtotal time: 40 M

A delicious and easy shortbread cookie recipe resulting in all of the buttery, crumbly goodness the classic shortbread cookies are known for.

ingredients:

1/2 cup butter, room temperature
1/3 cup powdered sugar, unsifted
1/4 tsp vanilla
1 cup flour

instructions:

How to cook Classic Shortbread Cookies

Preheat oven to 325º
Cream butter until light and fluffy.
Cream in powdered sugar, followed by vanilla.
Add flour, mix until combined.
Turn dough onto un-floured surface and knead until smooth.

IF USING A DECORATIVE PAN

Spray shortbread pan lightly with baking spray.
Press dough into pan firmly, ensuring even placement in pan.
Use palm of hand to press firmly around edges and center as a final step. (this ensures a prominent impression on cookies from shortbread pan.
Prick entire surface with fork - without touching bottom of pan.
Bake for 30-35 minutes, or until lightly browned. (turn pan halfway through baking to ensure even browning).
Remove from oven and allow to cool in pan for 10 minutes on cooling rack.
Loosen edges with a knife.
Place cutting board on top of pan. Flip pan and cutting board to invert cookies onto board. Lift pan to release cookies. (If cookies do not come right out, tap edge of pan).
Cut shortbread with sharp knife while it's still warm.
Store in airtight container.

WITHOUT A DECORATIVE PAN

Place dough on parchment lined cookie sheet.
Roll dough to square or rectangular shape with 1/4 inch thickness
Prick entire surface with fork - without touching cookie sheet underneath.
Bake for 25 minutes, or until lightly browned and golden.
Remove from oven and allow to cool for 5-8 minutes on cooling rack.
Cut shortbread into desired shapes with sharp knife while it's still warm.
Store in airtight container.

CUT OUT SHORTBREAD COOKIES

Place dough on parchment lined cookie sheet.
Roll dough to 1/4 inch thickness
Prick entire surface with fork - without touching cookie sheet underneath.
Create shapes using cookie cutters.
Ensure 2 inch spacing between cookies.
Bake for 25 minutes, or until lightly browned and golden.
Remove from oven and cool completely on cooling rack.
Store in airtight container.

I am on sugar overload with all of the sweets I've been baking...and eating.

BAKING | Chocolate Topped Shortbread Cookies (Homemade Pétit Écoliers)

Looking for a fancy cookie without a lot of fuss?

This. This is the one you want.

Inspired by my recent attempt at easy, delicious shortbread cookies, I decided to try my hand at a homemade version of French pétit Écoliers.

My initial thought was to create a shortbread cookie and marry it with a beautiful molded piece of chocolate. Turns out, I couldn't find beautiful chocolate molds - or at least the ones I envisioned in my head.

So I chose to use a soap mold I found and ordered a set of oval cookie cutters to match and the rest is cookie history.

I'm thrilled it actually worked. I had some doubts but that didn't stop me from trying.

I had to do a little tweaking with the cookie cutter (see "TIP" on the recipe card), otherwise, they were a piece of cake...errr...cookie. *wink*

You start with making your chocolates so they can be ready to place on your slightly cooled but warm-enough-to-melt-chocolate-a-tee-tiny-bit baked cookies. (that was a mouthful - and these cookies will be too). *wink*

Chocolate Topped Shortbread Cookies (Homemade Pétit Écoliers)

Yield: 24 cookies

ingredients:

INGREDIENTS FOR MOLDED CHOCOLATE

2 - 12oz. bags semi sweet chocolate chips

INGREDIENTS FOR SHORTBREAD COOKIES

1 cup butter, room temperature
1 cup powdered sugar
2 + 1/4 cups all purpose flour
2 TBSP pure vanilla
Special Tools:
Oval Chocolate Molds
Oval Cookie Cutters - you'll want to use the largest oval from this set
TIP: Squeeze to adjust the cookie cutter to be more elongated - using your chocolate mold as a guide. The shape of your chocolate and cookie should match...leaving a perfect 1/4 inch edge of cookies showing after molded chocolate has been placed.

How to cook Chocolate Topped Shortbread Cookies (Homemade Pétit Écoliers)

CHOCOLATE TOPPERS

Melt chocolate, 1 bag at a time using microwave or double boiler.
Pour 1 TBSP of melted chocolate into mold cavities.
Allow to cool until set and firm.
Pop out and set aside.
Repeat with 2nd bag of chocolate.

SHORTBREAD COOKIES

Preheat oven to 325º.
Cream butter and powdered sugar using stand mixer on medium to high speed until light and fluffy.
Scrape down sides of bowl.
Turn mixer on low and add flour to butter mixture, just until combined.
Scrape down sides of bowl.
Add vanilla. Mix until combined.
Place dough on lightly floured surface.
Use rolling pin to rolllout the dough to 1/4 inch thickness.
Use oval cookie cutter to cut out 24 cookies.
Place cut out cookies on parchment lined cookie sheet, 1/2 inch apart.
Bake for 15 minutes or until edges are lightly golden brown.
Remove from oven.
Allow to cool 3 minutes - you want them warm but not hot so as not to completely compromise your molded chocolate.
Gently set prepared chocolate pieces onto each warm cookie.
The warmth from the cookies will melt the chocolate enough to beautifully adhere it to the cookies.
TIP: If your cookies are too cool and chocolate does not adhere, simply add a small amount of melted chocolate to cookie as a glue to secure the chocolate.
Allow to set and then package up for gift giving or store in airtight container.

Pecan Praline Dessert Topping

This easy-to-make delicious dessert topping can be enjoyed on cheesecake, pound cake, apple slices, pancakes and ice cream. You'll want to gift jars of this to your favorite people.

ingredients:

1 + 1/4 cups chopped pecans
7 TBSP butter
1 + 1/2 cups light brown sugar
3/4 cup light corn syrup
2/3 cup evaporated milk

instructions:

How to cook Pecan Praline Dessert Topping

Melt butter over low heat in saucepan; add pecans.
Stir until light brown and the aroma of lightly toasted pecans fills your kitchen.
Add brown sugar and corn syrup.
Stir until sugar is completely dissolved.
Remove from heat and stir in evaporated milk.
Serve warm over ice cream, cheesecake, pound cake, cookies, apples or pancakes.
Store in refrigerator.
Reheat in microwave for 15 seconds.

STYLING | Neutral + Natural Gift Wrapping Ideas

I've got 4 gifts wrapped and under the tree my friends!
That's a feat for me with it only being the third day of December.

Admittedly, I'm usually wrapping gifts on Christmas Eve...always with regret for not doing it sooner so I could enjoy all of the pretty details for more than 8-10 hours.

I promised myself to break that unintentional tradition this year and so far so good.

Along with my rolls of Kraft paper and some fresh eucalyptus, I put together a tray of pretty ribbons, tags, strings, twine, yarn, dried oranges, scissors and tape. Having the supplies gathered together makes it really easy, and convenient, to quickly wrap additional gifts leading up to Christmas.

My gift wrapping usually always starts with either brown kraft or white wrapping paper.
I like to keep it pretty neutral to allow the pretty ribbons, fabrics, greenery and tags to be the stars of the "gift wrapping show". I'm using dried oranges again from last year's Christmas decor and gift wrapping. I love them.

TIP: I also love spritzing the dried oranges with orange and clove essential oils. Makes them deliciously fragrant and adds another special element to the gift giving experience.

This year, my gifts will be adorned with an extra special detail...
...these beautiful "fa-la-la-la-la" gift tags hand-lettered by my sweet friend Aedriel.
She collaborated with Sugar Paper LA to create some gorgeous holiday pretties for Target.
These tags are even more gorgeous in real life because the card stock is nice and thick and
the finish of the lettering mimics letterpress. I'm completely smitten.

This neutral style of gift wrapping reaches far beyond Christmas too.

The combination of cotton lace, sheer ribbon and fresh eucalyptus makes it versatile enough for a wedding birthday, or any other special occasion gift.

CHRISTMAS | 25 Days of Christ Advent Devotional

The 25 Days of Christ.

It's an advent devotional ornament kit.

It's purpose? To help keep us focused on Christ through the Christmas season.

25 ornaments.

25 correlating scriptures.

25 days to cuddle up with your family for a few minutes each day and connect.

And by connect I mean to your family and to the "reason for the season".

I purchased the 25 Days of Christ Unfinished Ornament Kit from New Tradition Crafts a couple of years ago. I left my ornaments raw, instead of painting them, and added neutral finishing touches to a few of them to keep them really simple and as organic as possible. I love them.

The set comes with a book with a reading schedule to keep you on track with which scriptures to read and which ornament to hang each day.

This year, I discovered New Tradition Crafts has something new available called "The Good Shepherd Illustrated Book" to go along with the kit, so I added it this year for our family to use with our ornaments.

I failed last year when it came to staying focused on the "reason for the season".

We didn't even do the 25 Days of Christ.

I was so sad about the lack of "feeling" last Christmas I vowed not to have a repeat.

Just another reason why it worked for me to have my Christmas decor up by Halloween night this year. As crazy as that sounds, it's made such a difference already in making sure I have time to "ENJOY" the holidays.

STYLING | Fall Porch - Idea No. 2

As I mentioned in my Fall Porch Idea No. 1 Post,

I was craving charm and simplicity with a warm welcome.

So, I decided to change things up and eliminated the bright orange pumpkins, the sprigs of wheat, pinecones, and some of the other decor and replaced the iron basket with a simplistic $2 thrift store basket to hold my pumpkins.

I added a pretty piece of pottery filled with natural reed grass, a simple blanket next to the basket of pumpkins and a rocking bench cushion topped with a pillow and blanket.

I'm in love with the overall vibe.

This was more the "feel" I was going for.

KEEPING IT REAL

The changes to the front porch made SUCH a big difference to the overall feeling I get every time I walk out there to water plants or when I'm sitting on the rocker snuggling my Ella Pie. I love it.

STYLING | Fall Porch - Idea No. 1

I did two different fall porches this year...

My goal was to use things I had on hand and not purchase anything additional.

This meant no real pumpkins. So, I gathered together my collection of faux pumpkins, and a dried gourd I picked up in an antique store one year, and placed them in an antique planter - taking center stage on my front porch bench.

I added pinecones and lanterns, a splash of more fall color with the use of a piece of fabric used under the planter and I tucked in sprigs of wheat and reed grass to the centerpiece as well as other items on the bench for additional touches of fall.

I loved it.

It screamed "fall" with all of the pinecones, pumpkins and wheat.

Neighbors loved it too and it really did look pretty.

Done.

Right?

Well...something just wasn't sitting well with me.

It didn't "feel" the way I wanted my Thanksgiving to feel.

Craving charm and simplicity with a warm welcome...

I decided to change things up.

Time.

Time to enjoy the little things the Christmas season brings with it.

I didn't have time last year.

Or rather, I didn't plan and prioritize to ensure I had the time.

Perfect example: these little wood ornaments.

I purchased these hand-crafted beauties at TJMaxx last year with the intention of repainting them and restringing them. The silver details and red ribbon (see below) weren't the woods + whites I was craving.

I knew all I needed was a little time to sit down and paint over the silver details and restring them with a creamy white ribbon to make them exactly what our woods + whites tree needed.

I just didn't have the time.

So they sat in the bag, tags still on them, unpainted.

I resented never having hung them...never having time.

With intentional planning and a little goal setting...they are officially painted...and hanging.

And I love them so much.

It's amazing how much a little paint, a little ribbon, and a little time makes!

I really LOVE how they turned out!

However, I especially love that I made the time this year.

It feels so good.

It feels so right.

I encourage you to find ways to find more time to enjoy the little things that bring you joy this holiday season my friends.

RECIPE | Crockpot Chicken Ranch Tacos

Crockpot Chicken Ranch Tacos my friends - so delicious you won't realize it's clean eating.

This dairy-free, sugar-free, gluten-free weeknight meal is not only simple, it's also delicious and versatile.

One of the toughest things I face as a mom who cooks most nights is finding meals everyone will enjoy equally and not tire of quickly.

I'm always looking for healthy.

Jay wants hearty.

Ella prefers something fun.

And of course...we all want tasty.

This meal makes us all happy! This flavor-packed, tender, shredded chicken allows Ella to have her tortillas, Jay can have his over rice or white potatoes with all of his favorite toppings and I like mine either as a salad or over a sweet potato. Win. Win. Win. -> Recipe at the bottom!

All this requires is throwing chicken in a crockpot, adding my Homemade Taco Seasoning, my Homemade Ranch Seasoning, and little bit of water. Cook on low 6 hours. Done!!

Crockpot Chicken Ranch Tacos

This flavor-packed chicken ranch taco meat may be the easiest crockpot meal you've ever made. Pair it with rice, make classic tortillas or top a sweet potato or salad with it. Using homemade taco seasoning and ranch seasoning ensures clean eating without the extras that come with packaged seasonings. (links to those additional recipes is included below).

ingredients:

6-8 Skinless, boneless chicken thighs (you may substitute chicken breasts)
2 TBSP Homemade Taco Seasoning
2 TBSP Homemade Ranch Seasoning
1/4 (up to 1/2 cup) water

Place chicken in crockpot.
Sprinkle spices over the top.
Add water.
Cook on low for 6 hours.
Serve with tortillas, rice, potatoes or create a Chicken Ranch Taco Salad.

It's almost 8pm on a Friday night as I'm finishing up this post.

HALLOWEEN | Hermione Costume - the smart and simple version

We are officially Harry Potter fans over here.

Quite literally as of a few weeks ago when Ella's class read Harry Potter and the Sorcerer's Stone.

I know...we were probably the only people on the planet who hadn't read the book or seen the movie(s).

So, of course, as Ella was reading the book with her class and Halloween was approaching, she decided she wanted to dress up as Hermione for her costume this year.

As you can imagine, I had to do some research and get help from my friends on Instagram to get the costume together.

I think we pulled it off.

In fact, with Ella's input, she managed to jazz it up a bit and elevated the regular ole Hermione costume into a "hip" Hermione by choosing converse for shoes, a short sleeve white shirt, a black cardigan instead of the wizard robe and an "older Hermione" hairstyle with a simple, black barrette.

My favorite part about this costume is that it's SMART and SIMPLE!

All of the clothing elements can be used in REAL life...long after Halloween has disappeared. (black pleated skirt, white short sleeve shirt, black cardigan, black knee high socks and the "hip" converse shoes). That makes me and my wallet happy.

She's a cutie pie. And she made a great Hermione.

She usually wears glasses but chose not to wear them on Halloween night...just to make sure she was really in costume. *wink*

It's funny...Ella's older sisters, who have both read the book(s) years ago and are HP fans, have always told me Ella reminds them of Hermione. I used to just laugh...not knowing who Hermione was...but now I completely understand what they mean. Ha!!

The cardigan didn't last 5 minutes in our 90º Florida heat on Halloween night...but she was pretty comfortable for a night of trick or treating. *wink*

RECIPE | Fall Snack Mix

Loving this lightly salted and slightly sweet snack mix.

We made some for gifting on our Phantom Pumpkin night and I'm packaging some up to send in to Ella's teachers for Halloween on Thursday.

You'll want to include the Maple Infused Walnuts I shared yesterday. Here's the link -> CLICK

The candy corn is what really makes this a "fall themed" snack so feel free to change up the candy to match whatever season you might be celebrating. Or how about adding those candy corn flavored M+M's. That sounds yummy too.

This can be for Halloween or part of your pre-Thanksgiving feast.

Create a large bowl, (or in this case, a pie plate), or fill small jars or clear cellophane bags to share with friends and family. Recipe is at the bottom.

Fall Snack Mix

prep time: 10 Mcook time: 1 hourtotal time: 1 H & 10 M

Delicious snack mix to satisfy even the pickiest snacker. A little bit of sweet and a little bit of salty.

ingredients:

1 large egg white
3 cups cinnamon rice chex
1 + 1/2 cups mini pretzel twists
1 cup candy corn
1 + 1/2 cups maple infused walnuts - this recipe

instructions:

How to cook Fall Snack Mix

Preheat oven to 250º
Line a baking sheet with parchment paper.
Whisk egg white in large bowl until frothy.
Fold in cereal and pretzels, coating evenly.
Pour onto prepared baking sheet, spread to create single layer.
Bake 1 hour, being sure to stir every 20 minutes. (twice)
Remove from oven and allow to cool.
Add candy corn and maple infused walnuts. Toss.
Store in air-tight container.

NOTES:

Ideas: -> midday snack at work. -> after-school snack. -> package in jars or cellophane bags to share with friends and family.

RECIPE | Maple-Infused Walnuts

You know those delicious candied walnuts (or pecans) we all love for snacking and adding to salads?

Well I've got a recipe for you today that'll help remove some of the guilt associated with these delicious...dare I say...addicting little morsels.

Have you ever tried maple-infused walnuts?

This slightly sweet and a lil' bit salty walnut recipe is delicious.

And did you know maple syrup has a low-glycemic index?

Put simply, it means this all natural sweetener doesn't wreak havoc on your blood glucose levels like refined sugar does. And we all know avoiding quick spikes in our blood sugar levels and insulin promotes all sort of wonderful health benefits! (weightloss, a healthy heart, longer lasting energy, increased mental clarity, reduces some cancers, prevents age-related macular degeneration and frankly just keeps you feeling your best)!

That said, I'm not encouraging you to "go nuts" (pun intended) on the maple syrup...everything in moderation my friends.

BUT...what I am saying is this pairing of maple syrup and walnuts (which by the way have their own reputation for being loaded with good things - Omega-3's for instance), sure makes me feel like I'm treating myself but in the best way. A very intentional way. "Intentional Snacking!" Is that a thing?

Add these to salads, trail mixes and package them up in a pretty jar and give them as a gift! (hello...Christmas is right around the corner). Ooo! That just made me think that maybe adding a lil' bit of cinnamon to them for a more festive fall/winter vibe would be good too?)

Maple-Infused Walnuts

prep time: cook time: total time:

Delicious, lightly sweetened + salty walnuts for salads, snacking and gifting.

ingredients:

1 + 1/2 cups raw walnut pieces (or whole if you prefer)
2 TBSP pure maple syrup
1 tsp. extra light tasting olive oil
3/4 tsp. fine sea salt

instructions:

How to cook Maple-Infused Walnuts

Preheat oven to 250º.
Line a baking sheet with parchment paper.
Add walnuts, maple syrup, oil and salt to a small bowl.
Stir until all walnuts have been coated.
Pour walnuts onto prepared cookie sheet and spread evenly.
Bake for 8-10 minutes and stir with wooden spoon.
Bake another 8-10 minutes and stir.
Repeat process until walnut are done. (see note below)
Note: Walnuts are done when the sticky residue from the maple syrup has almost disappeared from the parchment paper.
Remove from oven and let cool slightly, or until walnuts are hardened and dry.
Break apart if necessary and store in airtight container.

NOTES:

IDEAS FOR USE: -> Sprinkle on salads. -> Add to a trail mix. -> Package up for gifting.

I've been on a 44 day challenge (which includes no sugar of any kind) and have been sharing my progress over on Instagram - today is Day 33.

That said, maple syrup has been off limits for me as well which means I'm REALLY looking forward to incorporating these yummy walnuts into my salads soon! Yay!!

Pssst...these apples look pretty fancy, don't they?
Some might even call them "gourmet" caramel apples.

Well let me tell you...the recipe is anything BUT fancy.
I got the recipe from my best friend on Instagram. (she has no idea we are BFF's...not yet anyway). *wink*

Her name is Emily at the Handmade Farmhouse and she is fabulous.
And so is this Caramel Apple recipe she shared recently.

I knew I had to try it and it did not disappoint.
It's not nearly as hard as you would think - and NO CANDY THERMOMETER REQUIRED! Yay!
You should totally try these for the fall season! They are a lot of fun to make.
