Allora questa ricetta è nata da un racconto di mia mamma su un programma visto in tv, spero di dire giusto dicendo che è di James Olivier e spero anche che mi siano stati riferiti tutti gli ingredienti..&lt;br /&gt;
comunque trattasi di ingredienti approssimativi, trattandosi di mia mamma.&lt;br /&gt;
Non che mia mamma sia approssimativa ma quando mi spiega una ricetta i ''vai a occhio'' si moltiplicano ed io per le dosi devo necessariamente fare ad occhio..per cui non so quanto mi sia discostata o avvicinata all'originale.Io vi scrivo come ho fatto io e vi dico che nonostante l'originalità dell'esecuzione e degli accostamenti è riuscito un piatto leggero e molto molto gradevole.&lt;br /&gt;
&lt;br /&gt;
CANNELLONI AL CAVOLFIORE&lt;br /&gt;
&lt;br /&gt;
Ingredienti&lt;br /&gt;
1 confezione di sfogliavelo&lt;br /&gt;
1 cavolfiore&lt;br /&gt;
250 gr ricotta&lt;br /&gt;
olio extra vergine di oliva&lt;br /&gt;
aglio 1 spicchietto&lt;br /&gt;
sale&lt;br /&gt;
pepe&lt;br /&gt;
origano&lt;br /&gt;
curry&lt;br /&gt;
passata di pomodoro--ca 350 ml--&lt;br /&gt;
poco aceto-diciamo una tazzina da caffè&lt;br /&gt;
1 confezione di panna fresca --io ho usato una confezione di panna allo yogurt quella nei bicchierini di yogurt per intendersi-&lt;br /&gt;
grana padano q.b.&lt;br /&gt;
&lt;br /&gt;
Preparazione:&lt;br /&gt;
&lt;br /&gt;
Lessare il cavolfiore.&lt;br /&gt;
Ripassarlo in padella con olio e lo spicchio d'aglio schiacciato.&lt;br /&gt;
Frullarlo--io ovviamente ho tolgo l'aglio-- con la ricotta.&lt;br /&gt;
Io ho pure salato pepato ed aggiunto il curry, ovviamente potete evitare.&lt;br /&gt;
Su ogni sfoglia mettere una riga di ripieno, arrotolare a mo di cannellone e mettere vicini in una teglia con la chiusura verso il basso--io ho usato la teglia ovale perchè ho prontamente rotto quella rettangolare--&lt;br /&gt;
A parte miscelate passata pomodoro, aceto, panna, il tutto a crudo.&lt;br /&gt;
Mettere sui cannelloni, spolverare di parmigiano--grana fate voi..&lt;br /&gt;

Riesco timidamente a riaffacciarmi.&lt;br /&gt;
Forse ho risolto i problemi di blogger, ma ho sempre problemi per il mio archivio personale..ovviamente riportare a mano le ricette è un attimo più laborioso..&lt;br /&gt;

Comunque volevo farvi partecipi di questa pasta molto gustosa, quest'estate l'ho fatta piuttosto spesso perchè è stata molto gradita anche ai bambini.&lt;br /&gt;
&lt;br /&gt;
Spaghetti con pesto di melanzana&lt;br /&gt;
da La cucina Italiana di luglio 2011&lt;br /&gt;
&lt;br /&gt;
Ingredienti&lt;br /&gt;
400 gr melanzane&lt;br /&gt;
350 gr bucatini--io ho usato anche quelli e spaghetti questa volta--&lt;br /&gt;
1 spicchio di aglio--io preferisco una puntina--&lt;br /&gt;
grana--a volontà--&lt;br /&gt;
pomodori&lt;br /&gt;
prezzemolo&lt;br /&gt;
basilico&lt;br /&gt;
origano&lt;br /&gt;
olio extra vergine di oliva&lt;br /&gt;
sale&lt;br /&gt;
Preparazione:&lt;br /&gt;
Tagliare in 2 le melanzane, incidetele con il coltello formando una griglia e metterle a cuocere in una placca oleata e cosparsa di origano a 180° per circa 40'.&lt;br /&gt;
Scavare la polpa e mixarla con le erbe aglio, poco olio, sale, pepe e grana.&lt;br /&gt;
&lt;br /&gt;
Gustate guarnendo a piacere con pomodorini..&lt;br /&gt;

&lt;br /&gt;&lt;/div&gt;&lt;div&gt;TORTA FREDDA AL CAFFE'&lt;/div&gt;&lt;div&gt;&lt;div&gt;300 gr. di biscotti Digestive&lt;/div&gt;&lt;div&gt;150 gr. di burro fuso&lt;/div&gt;&lt;div&gt;500 ml. di panna fresca&lt;/div&gt;&lt;div&gt;500 ml. di yogurt al caffè&lt;/div&gt;&lt;div&gt;130 gr. di zucchero (le dosi sono soggettive, se piace potete anche non usarlo) &lt;/div&gt;&lt;div&gt;12 gr. di gelatina in fogli&lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;N.B. IO SUGGERISCO DI AUMENTARE IL GUSTO CAFFE' UNENDO UN BEL CUCCHIAIO DI CAFFE' SOLUBILE ALL'IMPASTO DI YOGURT&lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Su un foglio di carta forno (e magari sul piatto che userete per presentarlo) preparate un anello apribile alla misura di 22-24 cm. In un canovaccio da cucina schiacciate i biscotti con un matterello, mettete le briciole ottenute in una ciotolina e uniteci il burro fuso. Versate la miscela ottenuta nel cerchio e livellate bene l'impasto, aiutatevi con un cucchiaio se occorre. Mettete la base ottenuta in frigo e dedicatevi alla crema. &lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Mettete la gelatina ad ammollare nell'acqua, in una terrina versate la panna fresca tenendone da parte mezzo bicchiere, unite lo zucchero a velo e montate a neve ferma, (se usate la panna già zuccherata - non fresca - potete omettere lo zucchero in parte o completamente, a seconda dei vostri gusti) quando pronta unitevi poco per volta lo yogurt e amalgamate con una spatola sempre dal basso verso l'alto.A questo punto scaldate al microonde (oppure a fuoco molto basso) la panna che avete tenuto da parte, non deve bollire ma solo scaldarsi un po'. Strizzate la gelatina e unitela alla panna scaldata, mescolate bene e quando si intiepidisce versatela nella crema. Amalgamate il tutto e versate nella base. Livellate bene, decorate a piacere (io ho usato i rebbi della forchetta) e fate riposare in frigo per almeno 3-4 ore. Togliete delicatamente la carta e poi l'anello. Se notate imperfezioni sui bordi è sufficiente scaldare la lama di un coltello con acqua calda e levigare i bordi&lt;/div&gt;&lt;/div&gt;&lt;div&gt;

Rivestire una teglia con la carta forno quindi ungerla con un filo d'olio d'oliva, adagiarvi i filetti di orata, quindi disporvi intorno le patate tagliate a fettine sottili, ricoprire  il pesce con la zucchina tagliata a rondelle i pomodorini tagliati a metà e spolverizzare con il parmigiano e il pan&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif; font-size: 12px; line-height: 14px; "&gt; grattato. Irrorare con l'olio e cuocere in forno ventilato per 20-30 minuti. A parte montate le uova con lo zucchero. &lt;/div&gt;&lt;div&gt;n  Unite poco alla volta il cioccolato al latte fuso e mescolate delicatamente. Setacciate sul composto la farina con il cacao, il lievito e il sale, alternando con il latte.&lt;/div&gt;&lt;div&gt;Arricchite l’impasto con le mandorle e il cioccolato fondente tritato. Versate la massa nello stampo imburrato e infarinato, poi infornate a 175° per 40 minuti.  Sfornate la torta e sformatela sulla gratella. Aggiungere la cannella, il rum, il succo del limone lo zucchero, il pane grattugiato e gli amaretti sbriciolati. Mescolare e lasciare riposare il composto.&lt;/div&gt;&lt;div&gt;Preparare la pasta frolla con la farina, la ricotta, il burro, il sale, il lievito, lo zucchero a velo, la vanillina (o zucchero vanigliato) e lo zucchero semolato (viene un impasto abbastanza morbido che conviene far riposare nel frigorifero, eventualmente se lo vedete comunque "troppo morbido" aggiungete un altro pochetto di farina) . Poi stendere la pasta (non troppo sottile): circa 45 cm. x 35 cm, su di uno strofinaccio infarinato.&lt;/div&gt;&lt;div&gt;Disporre il ripieno di mele sulla pasta frolla, ripiegare i bordi sovrapponendoli un po’, servendosi dello strofinaccio e chiudere le estremità ripiegandole verso l’interno. Adagiare lo strudel su una teglia imburrata o coperta con carta da forno e spennellare con il tuorlo d'uovo.
