Öncelikle kestaneleri içine zarar vermeden arkalı önlü çizeriz. Çizdiğimiz kestaneleri suyla yıkadıktan sonra suyu kaynatmadan kısık ateşte 3 saat kadar pişiririz. Kabukları aralanan kestaneleri bir bıçak yardımıyla dikkatli bir şekilde kabuklarından ayırırız. Bu aşamada bayağı bir kestane çıkarırken parçalanıyor:) Kabuklarından çıkardığımız kestanelerin üzerine diğer tarafta 3 bardak şeker ve 2 bardak suyla kaynattığımız şuruba, vanilyayı da ekledikten sonra kestanelerin üzerine dökeriz. Bu şekilde 3 gün bekletiriz. 3 günün sonunda kestanelerin olduğu tencereyi içi su dolu başka bir tencerenin içine oturtarak (benmari usülü) ocağa alırız. Üzerini geniş bir kapakla kapatarak yarım ateşte 1 saat kadar buharında pişmesini sağlarız. Bu şekilde de 1 gün beklettikten sonra ertesi günü aynı işlemi tekrar yaparız.
