Comia-se seca, sem nada ou apenas com manteiga. Nessa altura, a Galette Bretã era preparada com uma placa de metal chamada "Bilig" em Bretão, cozida no forno da lareira.&lt;br /&gt;&lt;br /&gt;Na antiguidade, a Galette era o que se mais comia, ao contrário do pão. Foi na introdução do trigo preto em França que tivemos a origem das Galettes de trigo-sarraceno, que é servida ainda quente com ovo, patê, salsicha, sardinha e muitos outros produtos locais. Poderia servir também para decorar sopas e caldos ou enfeite.&lt;br /&gt;&lt;br /&gt;A origem do trigo preto não é típica Bretã, este trigo chegou em Europa no século XII, e começou a ser seriamente cultivada até o século XV. Os cruzados foram a fonte da sua introdução, e nome do trigo foi dado por causa da cor de grão, provavelmente porque sua cor lembrava a cor da população de muçulmanos que foram chamados sarracenos.&lt;br /&gt;&lt;br /&gt;A Crêpe de trigo-sarraceno era uma sobremesa onde se adicionava ovos à massa e, em seguida, perfumado com canela e flor de laranjeira. Misture as gemas com a farinha e o restante leite. Adicione à mistura de leites, quando esta começar a ferver e deixe engrossar, mexendo sempre para não agarrar ao fundo.&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Adicione as 2 colheres restantes de margarina e mexa até derreter. Deite no tabuleiro. Bata as claras e quando começarem a espessar, junte o açúcar.
