Dear Blog Readers,

I've decided to take a hiatus from this blog. This was my first blog, so I consider it close to my heart. As time has passed, however, I've started other blogs, other projects, and don't have as much time to update everywhere. I'm always working on my vintage shop, progressing with my BA studies, and we may be in the market for buying a home soon. Rather than popping in on occasion, I choose to focus on my other projects for now and let this blog rest. For all I know, I may be writing this to the void (comments are not plentiful to indicate otherwise) but for those of you who have stuck around, and do leave me feedback, I just wanted you to know what is up!

We're heading out early tomorrow morning for Manzanita, OR. Just a weekend away before Spring term starts at school, and back to work-work-work. We're trying our second rental experience via air B-n-B...a house that sleeps up to eight, just blocks from the ocean and walking distance to the main street of this small coastal town. Looking forward to fresh air, leaving a window open to catch the sound of the ocean, the quiet and slower pace of a small town, morning coffee and pastries at the local bakery, watching some old movies together, beach combing, and clam chowder. Oh, and, yes, we'll be poking our noses into all the little antique, thrift and junk joints along the way...

Recipe: Penne with Butternut Squash and Goat Cheese

Ingredients

Vegetable oil cooking spray
1 (2-pound) butternut squash, peeled, seeded and cut into 3/4-inch cubes
1 onion, diced into 1/2-inch pieces
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 pound penne pasta
1 cup (8 ounces) goat cheese, crumbled
1 cup coarsely chopped walnuts, toasted (see Cook's Note)
1 packed cup chopped fresh basil leaves
1/3 cup finely grated Parmesan

Directions

Put an oven rack in the upper third of the oven. Preheat the oven to 425 degrees F.

Spray a baking sheet, liberally, with vegetable oil cooking spray. Set aside.

Mix the squash and onion together and arrange in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Bake for to 40 to 45 minutes until the vegetables are golden and cooked through. Remove from the oven and set aside to cool slightly.

While the squash mixture is cooling, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 2 cups of the pasta water. Put the pasta, goat cheese and 1 cup of pasta water in a large serving bowl. Toss until the cheese has melted and forms a creamy sauce. Add the squash and onion mixture, the walnuts and the basil. Toss well and season with salt and pepper, to taste. Garnish with Parmesan and serve.

Cook's Note:

To toast the walnuts, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly toasted, about 6 to 8 minutes Cool completely before using.

Road Trip: Aurora Architectural Mills

On a sunny day in February we ventured south of Portland to explore Aurora Architectural Mills. A massive, ramshackle storehouse packed from floor to rafter (and a second floor) with wonderful salvaged house parts, wood, plumbing, fixtures, claw foot bathtubs, stained glass windows, brass and copper widgets galore, furniture, oddities and much, much more.

Their display style is a combo of super-size junk store (read: maximizing every inch) and jumbly-fun vignettes. Just think how many old homes, church buildings, barns and businesses have been dismantled to assemble all of this quality vintage goodness.

The amount of eye candy is overwhelming in such a good, good way. The walls are covered, the ceilings are strung with antique lighting (all for sale), floor space is at a premium. Bins, baskets, wood crates and cupboards overflow with textures. Those brass headboards became secret garden gates in my mind...

My apologies for the slight blur in my photos--forgot my real camera and had to make do with my 3MP cell phone.

Following a dream in the 21st Century

As everyone around us is busy exhibiting his or her professional success, we become more and more susceptible to replicating the professional decisions of others. Infatuation with traveling, global competition, parental pressures, and availability of numerous novel choices to the untrained mind may be some of the other distractions in selecting work according to our own aptitude.

Even if one has a well-defined area of interest, some skills may have turned obsolete in this age due to unavoidable influences such as automation and outsourcing. Formal training and diligence in work do not always pay off. In an environment more suited to the adaptable, the loyal can and do face many disappointments. When contribution is measured only by numbers, one may easily get persuaded to earn more at the cost of peace. But what if you have a dream that does not align with a obtaining a big bank account? What if your aspirations for being an artist or a teacher pull you towards a slower pace of life and a lower success rate? Should you still follow your dreams?

Many of us never experience a non-materialistic dream unless we couple lower levels of greed with an ability to explore what we want in life (besides money). In the way we define it, a “dream in life” is a strong inner aspiration not bound by personal profit, and merely having one is in itself a spiritual achievement. Because it is more selfless, it has to be relatively righteous. And because it is righteous, it will see support from God, who loves supporting us in righteous behaviors. With such a backing, what can go wrong in following a dream?

We have been created with inner mechanisms (our personal gifts) through which we are compelled to act in accordance with our instincts. If we have identified a void in our life arising from a mismatch of our career with our evolving instincts, only exertion in the activity of our interest can fill this void. Just like it is difficult to own a dream, it is difficult to let go of it if we possess one. However, while our deeper interests, once they are unveiled, eventually succeed in attracting us, we can temporarily turn obstinate and try to oppose the bigger plan that has instructions for our own evolution.

Even if our deeper interests are discovered late in life, more often than not our responsibilities do not allow us to follow our dreams in early life. Our affinity to profit is very strong but we can begin by spending a few moments away from our lucrative job working towards our dream. If these moments give us more peace, we will voluntarily start offering more time to these new activities. And as we taste even higher levels of happiness, we may be encouraged to reassess our professional preferences and everyday schedule for something more eternal.

Because dreams in life are guided by our true nature, following them triggers a simultaneous search for peace, which is a permanent attribute of our inner nature. If we do not feel delighted in following our dreams, we probably have not connected to a dream.

“Contribution to the world” is a vague concept in the context of spirituality. While exertion in certain areas of expertise, say technology and economics, may be labeled “more significant” by the onlooker depending upon one’s bias, their results, including all products and most discoveries, are equally perishable in time. Alternatively, after nurturing some happiness within by following our dreams, we can opt to transfer the energy of optimism from our heart to others. This propagation to others can be a more real accomplishment.

Take the stairs!

A set of stairs in Stockholm, Sweden--with a moving escalator next to it--both of which lead to the same spot on the floor of the upper level. A study showed that 97% of the people took the escalator over the stairs. A group of engineers got together, and decided they wanted to reverse that percentage.

The percentage has reversed to a whopping 66% more people choosing the stairs over the escalator. Bravo for engineering!

Borrowing an idea from my art blog I revisited some of my older photos on Flickr. Playing with the theme Bits and Pieces, I cropped small sections of larger images and added a bit of blur to the edges. I thought maybe I could isolate some interesting lines and textures that, in the larger versions, gets a little lost in the overall composition. Not sure that I've achieved that but here, anyway, are my bits and pieces.

Nature: Green Lake

Tragöß is a municipality in the district of Bruck an der Mur in Styria, Austria. It is home to Green Lake (Grüner See), which dries out almost completely in the fall. In the spring the lake is filled with snow melt runoff. This gives the lake crystal clear water, the existing rocks and meadow give the lake its green color.

Throughout the frozen winter months the area is almost completely dry and is used as a county park. It is a particular favorite site for hikers.

But as soon as the temperatures begin to rise in spring, the ice and snow on the mountaintops begins to melt and runs down into the basin of land below.

The park fills up with ice-cold crystal clear water, which gets its distinctive green coloring from the grass and foliage beneath.

The water levels rise from about one or two meters deep in the winter to as much as 10 meters in the late spring and early summer.

The waters are at their highest in June when it becomes a mecca for divers keen to explore the rare phenomenon, before the waters recede at the end of July.

Recipe: Mexican Lasagna

It's still chilly in Portland, and snow and freezing rain are in the forecast for tomorrow afternoon. I saw this recipe prepared on TV, and will be trying it soon...but will add a bit of meat for my carnivorous husband.

Ingredients

Sauce:

1 tablespoon garlic flavoured oil
1 onion, peeled and chopped
1 red bell pepper, seeded and chopped
2 green chiles, chopped, with seeds
1 teaspoon kosher salt or 1/2 teaspoon table salt
2 tablespoons finely chopped cilantro stalks
2 (14-ounce) cans diced tomatoes, plus 1 2/3 cups water to rinse out empty cans
1 tablespoon ketchup

Filling:

2 (15-ounce) cans black beans, drained and rinsed
3 1/4 cups drained canned corn, from about 1 1/2 (15-ounce cans)
2 1/2 cups grated mature goats Cheddar, or cheese of your choice
8 soft flour tortillas (approximately 10-inch diameter)
1 round ovenproof dish, approximately 10 inches diameter and 2 1/4 inches deep
Avocado Salsa (recipe below)

Preheat the oven to 400 degrees F, slipping in a cookie sheet at the same time.

For the sauce: Heat the oil in a saucepan on the stove and fry the onion, bell pepper and chiles. Add the salt and cook gently for 15 minutes, and once soft, add the chopped cilantro stalks.

Add the canned tomatoes then rinse the cans out with water and add this too. Spoon in the ketchup and let things come to a simmer, leaving the sauce to cook while you get on with preparing the filling- about 10 minutes.

For the filling: Mix the drained beans and canned corn in a bowl. Add most of the grated cheese, reserving some to sprinkle on the top at the end, and mix together.

Start to assemble the lasagna by spooning about a third of the salsa into the bottom of your ovenproof dish and smear it about, then layer on 2 tortillas so that they cover the sauce overlapping slightly, like a Venn diagram.

Add a third of the beans and cheese mixture covering the tortillas, and then about a quarter of the remaining salsa and another 2 tortillas.

Repeat with another third of beans and cheese, and more salsa before layering on another 2 tortillas.

Finally, add the last layer of beans and cheese, nearly all of the remaining salsa and cover with the last 2 tortillas. Spread the very last bit of salsa over the tortillas and sprinkle with the remaining cheese.

Bake for 30 minutes, and let it rest for a good 10 to 15 minutes before slicing like a pizza, and eat with the avocado salsa.

Make Ahead Note: The lasagna can be assembled 1 day ahead. Cool the tomato salsa before assembling. Cover dish tightly with plastic and refrigerate until needed. Bake as directed in recipe, allowing an extra 5 to 10 minutes baking time and checking the lasagna is piping hot in centre before removing from oven.

Freeze Note: The assembled but uncooked lasagna can be frozen for up to 3 months. Wrap dish tightly in double layer of plastic and a layer of aluminium foil. Thaw overnight in fridge and cook as above.

Further Note: Leftovers should be covered and refrigerated as soon as possible. To reheat, put individual slices in ovenproof dish, cover with foil and reheat in oven preheated to 350 degrees F for 15 to 20 minutes. Check the lasagna is piping hot before serving. Wedges of leftover lasagna can be frozen for up to 2 months, tightly wrapped in plastic wrap and then either in foil or in resealable bag. Thaw overnight in refrigerator and reheat as above.

Avocado Salsa:

2 avocados
1 scallion, thinly sliced
3 tablespoons chopped green jalapenos from a jar or can
Salt
1 tablespoon lime juice
1/4 cup roughly chopped fresh cilantro

Halve the avocados, remove the pits, and then, using the tip of a sharp knife, cut lines down the flesh of each half, about a 1/4-inch apart and then the same across. Turn the avocado halves inside out, or otherwise release the pale green cubes into a bowl, then tumble in the scallion, chopped jalapenos, salt to taste, lime juice and most of the cilantro and toss gently to mix. Taste to see if any more salt is needed before scattering with the remaining cilantro and taking to the table.

Brrrr, it's COLD

Brrrr...it's COLD outside! Just went for a walk to the mailbox and my return was brisk. It's a whopping 32 right now, forecast for 24 tonight. I know, it doesn't sound cold to those in the east and mid-western states, but for rainy-moderate Portland, Oregon, this is really chilly.

My plan? Stay inside with my cats and fix a cup of hot tea. Stay warm!

Santa for Soldiers

While researching on e-How.com for a Christmas craft project, I came across this article about How To Play Santa for Soldiers. My husband, a number of the men in my family, as well as a handful of our friends, are veterans. These are simple and effective things almost anyone can do to encourage and brighten the holidays for those that protect our freedom.

1. Donate to Operation Phone Home (AT&T and the USO) and give troops the chance to make a free call home over the holidays.

2. Serve a specific soldier. AnySoldier.com provides directions to donate care packages to soldiers in any branch of the military that are stationed in harm's way. They have helped about 93,861 service members to date. The website provides a list of soldiers' names and their wants and needs and will walk you through the steps to get your care package or letter of encouragement into the hands of a soldier.

3. GoodSearch is a Yahoo-powered search engine that donates 50 percent of its revenue--about a penny per search--to listed American charities and schools designated by its users. The donated money comes from the site's advertisers. If the charity you like to support is not listed, you can add them on GoodSearch's homepage.

4. Many organizations that provide care packages and letters of encouragement to soldiers have enough donations for goods, but lack the postage necessary to ship the packages to Iraq or Afghanistan. In some cases, the organizations spend more than $10,000 a month on postage. Consider donating an amount specifically for postage to defray these costs.

5. Canine soldiers are the often forgotten heroes of war. They sniff out bombs and mines, build morale, relieve stress and provide comfort to men and women fighting abroad. These dogs need a variety of equipment while stationed at these desert locations to keep them comfortable and to help them do their jobs and keep the troops safe.

Some of the top-requested items for dogs supporting U.S. troops include dog brushes; water bowls (including collapsible bowls); large dog beds; latex toys and refillable Kong toys; dog snacks and treats; unscented dog shampoo; and veterinarian-type dog scales, which can be found online.

An RPCM Chilly Dog Cool Vest, which dog handlers recommend to help keep the dogs cool in 135-degree summer heat. Dogs pant more when they are hot, which diminishes their ability to detect explosives and puts military members' lives at risk.

Decorating with Gray

We're considering gray for our office. The shades are black, the shelving is white and black-brown (from Ikea), and we need a change on the walls. I love charcoal but learned my lesson with dark colors when I insisted on chocolate brown for the living room a few years back.

Perhaps just an accent wall?

Spiced Pine Cones

Buy a bag of pine cones or gather your own. Scrub the dirt off the pine cones as you rinse them under warm water and stack them.
Place the pine cones on an old baking pan with two inches between the pine cones on all sides.
Preheat your oven to 300 degrees. Slide the pine cones into the oven and set the timer for one hour to kill any bacteria. When the timer goes off, remove the cones and place onto newspaper.
Collect the spices that you want to use as seasoning for your pine cones. Popular options include ground cinnamon, ground nutmeg and ground clove.
Sprinkle the spices onto the pine cones. Coat them well by turning the pine cone over and sprinkling spices on all sides. Tap off excess spices.
Allow cones to dry then tuck them into a basket and place near your fireplace.
