1/3 C. cold butter, cut into small pieces
1/2 C. cold 2% milk
1/2 tsp almond extract
3 C. blueberries
1 Tbs fresh lemon juice
1 tsp lemon zest
1 C. heavy cream
1/2 tsp vanilla extract

1. Heat oven to 425. Whisk together flour, 2 Tbs of sugar, baking powder and salt.

2. With hands, mix butter into flour mixture until coarse crumbs form. Stir in milk and almond extract. Gently gather dough, divide into 6 pieces and place on a baking sheet about 2 inches apart. Bake at 425 for 12-14 minutes, or until lightly browned and cooked through.
3. Meanwhile, combine 1 1/3 C. of the blueberries, 1/2 C. of the sugar, the lemon juice and lemon zest in a small pot. Bring to a simmer over medium heat; cook 6 min. or until blueberries burst and mixture thickens slightly. Stir in remaining 2/3 C. blueberries. Remove from heat and cool slightly.
3. In a medium bowl, beat heavy cream on medium-high speed until foamy. Add vanilla extract and remaining 1 Tbs sugar and beat until stiff peaks form.

4. Slice shortcakes in half lengthwise. Spoon 1/4 C. of the blueberries on top of the bottom half of each shortcake; dollop each with whipped cream. Place top half on shortcake on each and serve.
Position racks in the upper and lower thirds of the oven and preheat to 450. Place all of the pork in a large roasting pan. Sprinkle with the garlic, lemon zest, 1 Tbs salt and 1 1/2 tsp. pepper. Toss well, massaging the garlic and zest into the meat. Transfer half of the pork to a large rimmed baking sheet in the oven. Roast until the meat is browned on top, about 30 minutes. Turn the pork chunks over and roast to brown the other side, 15 minutes. Remove both pans from the oven and lower the oven temp to 325.

2. juice 1 lemon
1 bunch chives, minced (about 1/4 C)
1/2 tsp sea salt, divided
1 Tbsp olive oil, divided
4 cloves garlic, chopped
4 3-oz boneless, skinless tilapia fillets
sweet paprika, to taste, optional

1. Fill medium pot halfway with water. Place on high heat, bring to boil. Reduce heat to medium-low, add potatoes and simmer for 12 min. or until they are easily pierced with fork. Drain potatoes, then place back into hot pot. Do not place pot back on heat, set aside.

2. In a small bowl, add lemon juice, chives, and 1/4 tsp salt. Stir and set aside.

3. In a large, nonstick pan, heat 1 tsp oil on medium-low for 1 minute. Add garlic, and cook for 3 min. until garlic is soft and fragrant. Add garlic to reserved potatoes, setting pan aside. Add 1 tsp oil and remaining 1/4 tsp salt to potatoes. Using a potato masher, mash until smashed but still chunky.

4. Place remaining 1 tsp oil into garlic-scented pan, then heat on medium for 1 minute. Add tilapia and cook for 3 minutes. Gently flip fillets over and continue cooking for another 2 to 3 minutes, until tilapia flakes apart easily with fork and flesh is opaque in center.
3. In a medium bowl, toss together 1 Tbs flour, 1 Tbs sugar, berries, and orange juice. Scatter berry mixture over batter. Bake until cake is golden at edges and a toothpick inserted in center comes out clean, about 35 minutes. Let cake cool in pan on a wire rack 20 minutes before slicing. Serve warm or at room temperature. (Refrigerate cooled cake, wrapped tightly in plastic, up to 5 days.)

Honey-Citrus Vinaigrette

2 1/4 t. active dry yeast
2 c. warm water (105 to 115 degrees F)
5 to 5 1/2 c. all-purpose flour
2 t. fine sea salt
Extra-virgin olive oil, for greasing bowl

Dissolve yeast in warm water, let stand for 5 minutes. Stir in 3 c. flour and the salt,
stirring until smooth. Stir in additional 2 c. flour, adding flour (up to 1/2 c.) 1 T. at a
time, stirring until dough comes away from bowl but is still sticky (I use my KitchenAid
stand mixer for all this). Continue to knead, by hand or in a mixer, until dough is
smooth, elastic, and soft, but still a little tacky, about 10 minutes by hand or 5 minutes in
a mixer.

Shape dough into a ball and transfer to a lightly oiled bowl; turn to coat. Cover with
plastic, let rise in a warm place until it doubles in volume (2-3 hours; when pressed with
finger the indent should remain).

Place pizza stone in oven and preheat to 500. Scrape dough out of bowl onto floured
surface, cut into 4 pieces, and shape into balls. Dust with flour, and cover with plastic.
Let rest 20-30 minutes until dough relaxes and almost doubles. (Note: you can let the
dough rest in the ‘fridge for a few hours rather than 30 minutes on the counter, making
this a viable after-church meal). Cut 4 pieces of parchment paper to the size of your stone.

Holding top edge of 1 dough ball in both hands, let bottom edge touch work surface.
Carefully move hands around edge to form a circle, as if turning a wheel. Hold dough on
back of your hand, letting its weight stretch into a 12-inch round (my husband likes to
toss it; I can’t do that without tearing it).

Transfer dough to parchment paper. Arrange toppings, then transfer the dough and paper
to the hot stone. Bake pizza for 12 minutes or until crust is crisp and golden brown;
remove from oven with peel and serve hot!

Smoothies

Berry Orange: Blend 1 orange, peel and pith removed with a sharp knife, quartered, 1/2 C. yogurt (I'd subsitute something else or omit), 1/2 C. raspberry sorbet, and 1/2 C. 100% cranberry juice. Combine first 3 ingredients in a small saucepan; bring to a boil over medium-high heat. Cook 1 minute or until golden. Drain nut mixture through a fine sieve into a bowl, reserving oil. Toss nuts with 1/8 teaspoon salt and red pepper in a bowl.

2. Combine milk, granulated sugar, and yeast in a large bowl; let stand 5 minutes or until bubbly. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Add reserved oil, 5.7 ounces flour (about 1 1/4 cups), 1 teaspoon salt, and egg yolk to yeast mixture; beat with a mixer at low speed until combined. Gradually add remaining 9 ounces flour (about 2 cups) to oil mixture; beat at low speed until a soft, elastic dough forms (about 3 minutes). Press dough into a jelly-roll pan coated with 1 1/2 tablespoons oil. Cover with plastic wrap; let rise in a warm place (85°) for 40 minutes or until almost doubled in size.

3. Press dough gently with fingertips. Combine remaining 1 1/2 teaspoons oil, powdered sugar, honey, and egg white; stir with a whisk until smooth. Gently brush dough with half of egg white mixture. Bake at 350° for 20 minutes. Remove pan from oven. Brush top of bread with remaining egg white mixture; sprinkle with almonds. Bake an additional 10 minutes or until golden brown.
