Healthy 74 Calorie Banana Muffin Recipe

anyone who knows me knows that i LOVE to make low fat/calorie versions of food... it doesn't always work out the way i envisioned them, but most of the time, i have a new recipe to add to my "someday when i write a cookbook" stash! well, i love muffins. a lot. i knew that there were about a million ways to make a healthy muffin, but naturally, i wanted the fastest, easiest, lowest calorie, lowest fat recipe! it's a lot to ask for, and i didn't exactly find it, so i ended up taking bits and pieces from several recipes, and putting my own spin on it! ;) let me just say, they turned out DELICIOUS! trust me, you want to make these too!!

Healthy 74 Calorie Banana Muffin Recipe:

- makes 10 muffins

2 bananas (mashed)

1/2 cup of whole wheat flour

1/2 cup of quick oats (oatmeal)

1 egg

1 Tbsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/8 tsp salt

1/2 tsp vanilla extract

6 packets of stevia in the raw (or any sweetener that you prefer. just keep in mind that the 74 calories is with stevia in the raw, which has no calories)

1/4 cup applesauce

preheat your oven to 350 degrees, and get two bowls- one for wet, and one for dry ingredients. put all of your dry ingredients (flour, oatmeal, baking powder, baking soda, cinnamon, salt, stevia) into a bowl, and mix until combined. in a separate bowl, mash your two bananas. after they are mashed, add in applesauce, egg, and vanilla, and mix until well combined. now add the wet and dry ingredients together and stir, stir, stir!

break out that muffin pan, and pop in those cupcake liners! now fill them with your yummy muffin batter and bake for 15-20 minutes. let them cool, and you are ready to devour only 74 calories of pure heaven!

next, i am going to try these with bananas and blueberries, and maybe greek yogurt instead of applesauce?! the possibilities are truly endless!

i got this idea from the beautiful casey, and thought it might be fun! would you like to join me for some coffee? ;)

if we were having coffee together, i would probably tell you that i am SO tired.

that i haven't been sleeping well, and i have no idea why.

i would tell you that yesterday was race day! i finished my first 5K in 30:19!

i would tell you that it felt amazing. to achieve my goal. to have all of my hard work pay off. i would tell you that you can do anything you set your mind to. i would tell you that if you don't think you can do it, at the very least... just take the first step. surprise yourself. you can do it.

i would tell you that this weekend was incredible. i saw so many people that i haven't seen in ages, and talking with them really encouraged me. i feel so refreshed. so renewed. it's amazing how God puts the right people in your path just when you need it.

i would tell you that i am ready for summer. swimming is my favorite thing in the world. i can't wait for sno cones, summer nights, and sunshine.

i would tell you that my dreams are changing. i am changing. this year has taught me so much already. and we are not even half way through it! i can't wait to see what else God has in store!

1. Are you a thrift shopper? YES. I have to go to the thrift store AT LEAST once every week. I seriously wish we had more thrift stores around here, because I would go every day! ;)

2. You just had a very bad dream, what do you do? I don't usually have nightmares, but when I do, I usually wake up for a second, remember it was a dream, and go back to sleep!!

3. What is your favorite flavor of Ice Cream? Mint chocolate chip! It has been my favorite since forever! And mint fro-yo? ohmygoodness. SO delicious!

4. What do you do with your money? (spend it, save it, invest it, bury it, etc)... I am SUPER frugal. I always have been! I usually save like 85-90% of my money, and leave myself a teeny bit to spend on fun things (thrifting, fro-yo, lunch out, etc...). The way I see it, every penny I am spending is one less that I will have to pay for a car, house, and all of that crazy stuff that I will have to deal with in the near future!

5. What was the last quote or statement you heard that really hit you? "Lose ONE friend, lose ALL friends, lose YOURSELF". Do I have any boy meets world fans in the house? please say yes! ;)

6. What do you do when you're driving alone? (ex: dance, sing, listen to talk radio, etc)
I listen to the radio! Usually k-love (christian radio station), or a country station (remember... I live in Texas)! :)

7. Did you watch the premier of Bachelorette? If so, who was your favorite bachelor? Ummm... I don't watch the Bachelor or the Bachelorette! I know! Such a square! hehe ;) I have only seen it once... I think it is kinda silly to find love on a reality tv show, but that is just me!

i don't really talk about my journey very much here on the blog... but today i wanted to share, because this week marked the 17 pounds lost point for me. and i think at this point, i am ready to share! last year was a hard year for me in many ways. and because of that, i really wasn't concerned with what i was eating, or exercising at all. my aunt and her family lived with us for a few months. her husband is italian, and he cooked almost every night. in case you didn't know... italian food is not exaaaaaactly healthy. by the time the moved out in september, i was at my all time heaviest, and felt pretty bad about myself. by october i had put on even more weight, and was ready for a change... a BIG change. i needed change so badly. i was sad. i was depressed. i hated the way that i felt. one morning i woke up and decided that i was going to become the person that i wanted to be. i could actually do it. i could have a dream and achieve it. i knew i could. january came around. i had lost about five pounds. it took a lot of re-training my brain, my body, my "comfort zone", but i DID IT! i took up running again. the first time i went running, i ran half a mile and almost DIED! so out of shape... so sad! but it was a start! i kept at it. i started drinking more water. i started cutting out the fried foods that i had grown so accustomed to eating. i kept going. it was a new year. i made a new years resolution that i didn't think i could keep. NO MORE SODAS. NO MORE SWEET TEA. that was big for me. i live in texas. sweet tea IS water here! but it has been FIVE months, and i haven't had a single sweet tea, or a soda! i feel SO much better now! i had no clue that all of that sugar was making me feel horrible!

my second new years resolution was to run a 5k this year. but... i could barely run half a mile! how was i ever going to do such a thing? silly.... i tried to talk myself out of it a million times! i honestly, didn't think that i could do it. but guess what? one day i went out for a run. i ran. and ran. and ran. i didn't track my distance while i was running, i just kept going until i felt like i couldn't go anymore. well, when i stopped, i looked at my pedometer. 2.4 miles!!!! what? i can't run that far?! yes. i could. i kept running several times a week for the next few months, and i started getting faster. running farther. i can run this 5k. this sunday, i will be. at 7 am, i will wake up and achieve my goal. i can't wait! God has brought me SO far over the past 8 months, and i couldn't be more thankful. so i want to encourage you. i want to tell you that if you have a dream, BELIEVE in yourself! believe that God will help you achieve it. don't give up! i NEVER thought that i could lose 17 pounds. i didn't know that i had that much to lose. i just set a goal, and went for it. and i ended up going BEYOND it. i know you can do it!

while i have enjoyed my break from blogging, i have very much missed it!! i am SO excited to be BACK! and i can't wait to share all of the exciting things that have been happening with all of you! did you notice the update i did to my logo? i am still playing with my design a bit, but it should be done soon! i will be updating my shop too... yay! i have an awesome deal in the works with one of my favorite fashion/discount sites, which i couldn't be more excited about! you guys will die. well, i hope you don't actually die. that would be sad. hehe :)

if you live in texas, then you may have heard of the awesome/incredible truck stop/gas station call Buc-ee's. it's a big deal. a REALLY big deal. well, they opened up a brand spankin' new location just 30 minutes down the road from us {HALLELUJAH!} and we stopped by TWICE last week. it is THAT awesome. no joke. i am addicted to their jerky. the only problem is, it is $30 per pound. say what? i know. crazy. but i just get one "piece" at a time, which is usually around $3, so i am happy. but seriously, they have everything. a bakery {best kolaches in the world}, a barbecue counter, a jerky counter, a fudge counter, a restaurant, a grocery section, outdoor section, snack section {like 10 aisles...}, and a bagillion other things! it's awesome. if you live in texas, GO! if you don't, COME! hehe :) i will meet you there!

an awkward photo of me: i am not sure what is going on here... i cropped it, so no. my mom wasn't just taking a picture of me giving someone a death stare! haha! :)

1. You are stuck somewhere you really don't want to be, do you- walk home, call a friend, or stick it out? i would start walking home and call a friend to come pick me up!! ;)

2. Do you like to PLAY sports? yes. i am not very good, but i love a good game of soccer, volleyball, or basketball... back in the day {hehe} i was really good at baseball... but i don't play very much anymore! boo!

3. Everyone has that one "different" song that they secretly love- what's yours? "baby come back to me"... from forever ago! remember... Vanessa Hudgens... circa high school musical. no? oh, well... this is awkward! ;) look it up on itunes!

4. What is one thing you feel you are really good at? running! i used to have such LOW self confidence when it came to running... seriously low, but i am getting so good at it, and i am really excited!! i feel like i turned a new leaf! yesterday i ran a 7 minute mile!!! when i started working out again {seriously} in october, it took me 14 long minutes to run a mile, so that is a HUGE improvement!

5. A dog is running in your direction and barking loudly- what do you do? cross the street and RUN!!!!

6. Star gazing or cloud watching? star gazing. nothing makes you feel closer to God than gazing at the beautiful shining stars against a dark sky... amazing!

7. What time of the day do you feel the most productive? probably in the morning! i get a TON done in the morning! and at night... the afternoon is my sluggish/slow time! i am working on that! ;)

maternity dress, say what? {a DIY post}

i am going to make a bold statement here. maternity clothes are NOT just for pregnant women. i know. shocking. but it's true. now, let me be real with you for a minute. i buy maternity clothes all the time. not because i need the extra room {ha!}, but because i often find AMAZING deals, and i just CAN'T pass them up!! like this dress... it was $2 at a garage sale. SO cute. it is an old navy maternity dress. before i even tried it on, i knew it was too long! i know that they added the extra ruffle to accommodate a baby bump, but i don't have one. so it looks, well... strange!

but this is the SIMPLEST fix ever. seriously. so simple. all i had to do was cut off the bottom ruffle! and voila! i pretty, regular dress!

making clothes shorter is something that i do all. the. time. i'm a 5'3" female living in a 5'7"+ world. it happens. i try to buy dresses that can be easily altered, like this one! ruffles are always a plus for me, because the completely disguise alterations! yay! i just hemmed some jeans yesterday. it was my first time, and i am SO excited about it!! i will hopefully have the tutorial up soon! WAY too easy, and such a life saver for us petite gals! ;)

in a perfect world, i wouldn't have to shop at thrift stores for the bargains {although i do love it!}. i could buy all of those adorable clothes, accessories, and shoes that i see... right then and there! but would i really like to be able to buy anything i wanted? that would take all of the fun out of shopping! i love to hunt for those good deals! sometimes i like to daydream about my perfect wardrobe. who says that it can't be a reality? maybe i just need to focus on what i want, and hunt for it! i need some inspiration to get me going, though. so i decided to browse a few of my favorite sites for inspiration (etsy, made by lex, and anthropologie).

an awkward photo of me: my four year old brother took this... not bad! my head is actually in the picture, which is good... unfortunately, i don't LOOK good! no makeup + messy hair = scary!! hehe

1. What is your favorite App? DRAW SOMETHING!! ohmygosh. i am completely addicted! completely. get it. it will change your life (slight exaggeration).

2. You have to come up with a book title on the spot- (don't think- just say!)is it the story of my life? if so, i would call it "one big crazy mess"... ha! no, really. that is my life! ;)

3. You are given ...the choice between laughing at everything- always, or never being able to laugh again. Which would you choose? laughing always... i mean sure, it *might* not be the perfect reaction to certain things, but more often then not, it should be ok! hehe :)

4. What natural disaster scares you the most? flood! i have always had this semi irrational fear of floods... i say irrational because we don't live anywhere near a body of water, and this is texas... it never rains! but still...

5. What time do you wake up each day? What time do you go to sleep?

i wake up at 8:30 pretty much every morning, but sometimes i wake up a little earlier. i go to bed around midnight every night... *gasp!* i know... i'm a bad girl! i should go to bed earlier... ;)

happy friday, friends!

i can't believe it is already friday!!! woo hoo!! this week flew by! it was full of swimming, sno cones, thrifting (yay!!!), crafting, and well, some other stuff... like tarantulas! ick! ;)

picture 1: sunbathing at the pool. :) picture 2: going for a walk around the lake- it was SO sunny! picture 3: snapping a picture of my sis on a bench in the park. :) picture 4: swimming!! picture 5: subway. YUM. i could eat subway every day! picture 6: the sky. so pretty and clear! those clouds are dreamy! picture 7: tarantula. i know. why??? well, my cousin was an entomologist. she loves bugs/icky creatures. i am not sure why! ;) she has a few of these as PETS! i know. crazy. people took turns holding them at easter. oh yeah, those and hissing cockroaches. what did you do for easter?? hehe :) picture 8: my yarn collection. remember when knitting and crocheting was super popular? well i was on the bandwagon! i used to knit all. the. time. it's fun, but i just really don't have the patience! if i make something, i want it done that day! :) picture 9: hanging out by the pool... did i mention it was freezing? yeah, it was. my sister told me it wasn't. she lied. i stayed in anyway. :)

Easy Summer Scarf DIY

a few days ago i found this tutorial via pinterest, and knew EXACTLY what shirt i was going to use!! this is truly one of the easiest projects EVER! and it is SO cute!! all you need is an old shirt and some scissors!

here's what you do: cut off the top at the armpit and cut off the bottom seam, then start fringing the bottom. i made my fringe about 5 inches long. after you have fringed the whole thing, pull on each one so they curl up! DONE! too easy!! so perfect for summer. i am going to make 1000 of these! hehe :)

an awkward photo of me: this is what happens when you have me, my sister, a camera, and not a thing to do... there are literally like 20 variations of this picture... oh my! ;)

1. Would you rather have your life be a constant vacation or always stay home?

constant vacation!! considering my life is the second one! ha!! we NEVER take vacations (boo!), so i seriously wouldn't mind vacationing forever. two weeks in italy. one week in france. sounds fabulous. ;)

2. What is your favorite book? (it can be any book! cook book, picture book, whatever!) hmmmm... i have to be honest here, my pretty much all time favorite book is "It's all about Him" by Denise Jackson. it is an amazing book. seriously. i have read it three or four times. SO good.

3. You have to be on a reality tv show- which would you chose?

well, my favorite reality show is biggest loser, but who would want to be on there?? hehe :) so i would go with dancing with the stars! i barely even watch that show anymore, but i would still LOVE to learn how to dance. it looks like so much fun.

4. What is your favorite form of exercise? (running, zumba, step, etc)

biking and swimming are, by far, my favorite! i don't feel like i am working out at all... just having fun!! i wish i loved running, but i just don't! i am working on it, though... :/

5. What is one thing that you've never tried but are CONVINCED you hate? (foods, activities, etc) 

brussel sprouts. no joke. i HATE them. and guess what? i have never tried them. the scent keeps me FAR away! haha! 

6. Do you have any hidden talents?

hidden talents... hmmm... nope! wow. that is so sad!

7. What's the best prank you've ever pulled?

i am so not a prankster. that takes way too much thought/planning/time!! i do like to surprise people, but with fun things, like a box of their favorite candy, or something that they have been wanting. those are the good kind of surprises!!

Weekend review

hello friends! i hope you all had a GREAT easter! mine was a lot of fun (as usual)! easter is my third favorite holiday (after christmas and my birthday... wait. my birthday isn't a holiday? fine! second favorite...). ;) every year we head over to my great-aunt's house for a super fun day of games, egg hunting, eating, and spending time with family! it was so nice. :) then came monday... oh monday.

let me just say that i got my driver's license yesterday!!!! i am so happy that it is over! i had to wake up at 4:50 (yes, A.M.!) to get to the DPS office which is 30 minutes away (too far!) by 6:00... because the first THREE people who are there when they open 2 HOURS later, get to take their driving test that morning. so i did NOT have to wait until april 30th (praise the lord!). :)

we were the FIRST people in line, so that was *awesome*!!! i was feeling pretty sick from only getting about 4 hours of sleep, but i made it through! my driving instructor was ~~really mean~~ not the nicest person in the world, and i barely passed because i am pretty sure she wanted me to fail, but i did pass!! phew! i am SO happy to have that behind me! and i am SO happy to have my license!!

hello lovelies! i am participating in gentri lee's "7 questions" linky party again this week! you should too!

it's required... an awkward photo of myself... sometimes i have too much fun with photobooth. i basically have 500 awkward pictures of myself! haha :)

 1. If you could have a superpower, what would it be and why?

hmmmm.... i would LOVE super strength! that would be so fun! then i could lift cars, and all that jazz. but i can see a down side... like accidentally crushing people when you hug them or something like that. ;)

 2. If you could hold the world record for something, what would it be for and why?

i would want it to be the farthest distance ever run! that would be really cool! i would probably have to have a super power for that one though... 

 3. What is the weirdest thing you've ever eaten?

anyone who knows me will tell you that i DO NOT eat crazy things. for real. to tell you the weirdest thing i have ever eaten requires me to first tell you a little story... my grandma keeps things. she isn't a "hoarder" but she saves LOTS of things... including my aunt's wedding cake. which was about 15 years old when i ate a piece of it. it had been in her freezer for THAT long. i know. gross. but i did. keep in mind, i wasn't BORN until, hmmm... 4 years after my aunt's wedding? so, um... yeah.

 4. Where would you hide something if you didn't want it to be found?

my closet. behind my clothes. i hide stuff there all. the. time. tiny problem, though. i completely forget it's there! haha 

 5. What is one of your Spring and/ or Easter traditions?

going to my aunt's house (not the old wedding cake aunt, a different one!) for easter! we play games, eat lunch, and have a big easter egg hunt for the kids. it is so much fun! plus, i get to see my ENTIRE family, so i love it! :)

 6. Would you rather have to cook dinner from scratch every night, make 
all of your own clothes (including patterns), or walk everywhere you 
wanted to go?

cook dinner from scratch every night! i LOVE cooking! it is so fun. making my own clothes if fun, but i really don't enjoy it THAT much, and walking everywhere? NO WAY!... so cooking, definitely!
 

7. What is your most embarrassing moment? I know, big one.

wow... i hate this question! haha, just kidding... sort of! i think mine is a little too gross/disgusting for me to post, so i will just leave it at, you REALLY don't want to know. trust me. hehe ;)

longest day of my life.

today was the. longest. day. of. my. life. i am beyond tired... because it went something like this:

i have been waiting six long months to get my drivers license (or 16 years... whatevs).

i studied for my test all weekend... today was THE day! excitement. nervousness. nausea... haha!

guess what? you have to schedule a driving test. like, in advance. ummmmm... you could have told me that!?! yeah. *lame* but not suprising! i move on...

you CANNOT schedule driving tests over the phone. or online. you have to wait in line for 2 hours, praying that they have a spot open today. because they won't tell you over the phone. nice.

first DPS office.  i get there. my car dies in the parking lot! ohmygoodness. seriously. we turn the air conditioner off, and it works again. PHEW! but oh so hot! :( and the office is booked up for driving tests. second DPS office... wait in line for 1.5 LONG hours. booked up. BUT super nice. :) brownie points for niceness!! just one problem.... their next opening isn't until april 30th... are you kidding me?! that is like, an eternity!! but at least i have an appointment (thankful for that)!

so i just have to have a *little* more patience! i think God is wanting me to work on that... i seem to be tested on it a lot lately... hehe :)

one a happier note, i have so many fun posts planned for this week!! get excited, people!!

1. What is your favorite color TO WEAR?  GRAY!! i love gray. so much. i will buy pretty much anything if it is gray!

2. You are given the choice between visiting every country and landing on the moon. Which would you choose? every country. helllloooo. i have absolutely NO desire to leave earth. for real. i would much rather see every country! that would be so cool!

3. What's your favorite animal and why? dog. for sure! i decided that i want a weimaraner and i want to name it hailey! they are soooo pretty, and they need lots of exercise, which is a huge plus for me! our dog can't even go on walks, because the will have an asthma attack... so sad! :/

4. You are forced to do one of the following, which would you choose? Sky dive, scuba dive, or this (http://www.youtube.com/watch?v=4B36Lr0Unp4). i am a totally wimp when it comes to dangerous (to me) stuff, but i would have to go with scuba diving! i have always thought that would be fun!  

 5. You are given the chance to go back in time. Which era would you visit?

hmmmm.... the 80's? oh my. i am so lame. but seriously, i think that me and the 80's would get along juuuuuuuust fine!

 6. If you had the power to remove one thing (ie: flies, mosquitos, junk food) from the earth for good- what would it be? hmmmm.... i would probably remove junk food! it sounds silly, but that would probably seriously change the world!

 7. What is one thing you've learned from Pinterest that made you think "GENIUS!"?

i have learned to much from pinterest... how could i choose just one? hehe :) i would have to say that i have learned a lot about DIYing. and i think twice before i get rid of something (that is SO bad), because i think "i bet there is an amazing tutorial on pinterest for this"....

wildflowers + randomness.

yesterday we went on a walk around the lake... it was so nice! there were TONS of wildflowers, and TONS really doesn't even begin to describe how many there were... SO many!! i should have taken a picture of all of them... it was crazy!! but so pretty! 

today we are having a picnic (fun!!), and i am making these cookies! my pride and joy! ha! :) but this time, instead of chocolate chips, i am going to use raisins. even lower fat! in fact, i think it is almost none! and that is how i like it!! :)

reading Reshaping It All by Candace Cameron Bure. It's a great book, but for some reason, I can't seem to finish it! I usually read books in like three days, and this one is taking me months!! :)

writing this blog post! and emails... :)

thinking that i need to get started on school for the day...

smelling my kashi chocolate chip cookie... oh. my. goodness. these are delicious!

wishing that i was drinking a grande iced skinny caramel latte with drizzle (say that ten time fast!). I had one for the first time this week, and it was ah-mazing! i have a buy one get one free coupon, but it wasn't valid on frappuccino's, so i HAD to try something new (boo!)... although it was a good thing, because (1) i have never gotten anything other than a frappuccino at starbuck's... sad! and (2) latte's only have 80 calories, so i will be getting them all the time, thankyouverymuch.

hoping that we go out to dinner tonight... it's friday night, yo! i need to have a little fun!! ;)

wearing pajamas. that is usually my answer! haha :)

loving life. it's pretty awesome, right now. God has seriously blessed me so much, and i am SO thankful for that! there are some rough seasons in life, but it is so worth going through them. God always has a blessing just around the corner!

wanting the pool to open!! it is kinda hot here in texas... i need to go swimming!!

needing new (used) clothes. always! i might have to stop by the thrift store today!! ;)
