I made this cake for an extra special family friend who turned 50 this month. Ruth has been part of my life since I was a little kid and her two eldest daughters are my closest friends in the world. So of course when her husband asked me if I'd like to make a birthday cake I jumped at the chance to make something special.

This two tiered cake is covered in white fondant with a blue and purple ribbon trim and I handmade some very bright sugar flowers to complement the ribbon with a splash of pink to really brighten things up. The bottom tier was chocolate mud cake with chocolate butter cream filling and covered in dark chocolate ganache. The top tier was white chocolate mud cake with white chocolate raspberry ganache filling and covered in white chocolate ganache. Can anyone say decadent?!

The top tier was enjoyed by friends and family on a beautiful sunset cruise in Darwin harbour and the bottom tier went home with the birthday girl.

I made this lovely little cake for a friends birthday over the weekend. I can't take credit for the overall design, as it was inspired by a photo of a cake that my friend found somewhere. If you know who the original baker was please let me know so I can credit them!

The cake was two layers of moist vanilla cake with vanilla buttercream and was served up after a delicious tapas dinner on Saturday night. I love making cakes for friends because then I get to eat it after all the hard work I put in!

It's covered in white fondant and the lower half is decorated with a scalloped pattern and trimmed with a ribbon of black fondant. I then fixed one of my handmade sugar flowers on the side to finish it off.

Simple, but very pretty I think. Just like the gorgeous birthday girl. :o)

It's my Mums birthday tomorrow and on Sunday she held a lovely afternoon tea at her place. She invited over some friends and family and we enjoyed all sorts of delicious homemade goodies while enjoying her beautiful and shady garden.

I'd been waiting for the chance to use one of my newly made sugar flowers, so I made Mum a dark chocolate-raspberry birthday cake and covered it in simple white fondant. I then added a yellow patterned trim, edged it with some edible sugar pearls and topped it with my first ever, handmade, Magnolia sugar flower.

Mum loved it and so did I. :o)

I'm so in love with sugar flowers at the moment and have set up a table in the living room with all my tools so that I can play around and make things while I watch TV in the evenings. I'm teaching myself every step of the way and sometimes I feel like I'm floundering, but I think if I keep practising I should be able to achieve some good results.

So, happy birthday to my beautiful mother; I love you very much. xxoo

Pretty pink flowers for competition winner!

So the winner of my 100th fan competition (from waaaaay back last year) collected her second and final box of cupcakes last weekend. She asked for a dozen vanilla cuppies with 'pretty flowers'. I almost didn't want to give these away; they were so gorgeous!

I just thought I'd share this cool photo of freshly iced cupcakes as they sat waiting to be boxed up for the craft fair last Sunday. Don't they look great?!

The flavours you can see are (left to right) vanilla (moist vanilla cupcake with vanilla buttercream and white chocolate shavings), vanilla-strawberry (vanilla cupcake with fresh strawberry buttercream and a slice of strawberry), choc-baileys (rich chocolate mudcake with Baileys buttercream and a drizzle of caramel) and double chocolate (chocolate mudcake base with chocolate buttercream and chocolate ganache drizzle). Yum! Also baked, but not seen in this photo, were banana choc-chip cupcakes and gluten-free choc-raspberry cupcakes.

All cupcakes sold out except for 6 or 7 which the ladies at work enjoyed the next day. Lucky ducks.

A fiery 30th birthday cake

I made this cake a few weeks ago but forgot to put the photos up here.

This was my first attempt at a 'topsy turvy' cake, using a great tutorial that I found online. I know it's not perfect but I think it's pretty bloody awesome considering this is only the third decorated cake I've ever made!

I made this cake for a good friends 30th birthday, with fondant decorations inspired by his tattoos and his love of Holden. The bottom cake was chocolate mud with dark chocolate ganache and the top cake was chocolate mud with chocolate raspberry ganache. Very yummy and I think it went down a treat with all the visiting friends and relatives.

One of my oldest and closest friends is expecting her first baby in just a few weeks, so last weekend her lovely mum and sisters threw her a wonderful baby shower. The theme was green and yellow (they're keeping the baby's sex a surprise) and 'fishy', as the Mum and Dad-to-be are avid fisher-people.

I made this cake and matching cupcakes to serve up at afternoon tea and also to serve as my gift to my friend. The mini-cupcakes were lemon-lime with simple green and yellow fondant dots on them. The cake was white chocolate mudcake with raspberry white chocolate ganache. Oh my! This was the most delicious cake I have made yet and was a huge hit with the ladies at the baby shower. Will definately be making it again.

I decorated the cake with green and yellow 'bubbles' and a handmade fondant crab, octopus and fish. I hope you like this cake as much as I do!

Beautiful frangipanis

A friend and work colleague requested some mini cupcakes for last weekend, as she was going to have some overseas visitors staying with her. And who wouldn't want a chocolate cupcake with vanilla butter cream after a long flight? :o)

We decided to go with a Darwin / Australia theme but I didn't want to go with kangaroos or Akubras, so I tried my hand at making frangipanis which are pretty much synonymous with Darwin and the tropics in general. I'm so happy with how they turned out! I think they are pretty, look realistic and the best thing is you can eat them!

P.S. I used this great tutorial from Bakingdom for making fondant frangipanis.

Dora the Explorer

Oh my goodness, I'm so happy with my first ever cake! I offered to make a birthday cake for a good friends daughters third birthday. She asked for a Dora the Explorer cake. Yikes! What a challenge for my first go!

I made a vanilla cake with pureed strawberry butter cream frosting, covered it with white fondant and a soft pink ribbon, and topped it with handmade, fondant Dora, Boots and a bunch of Explorer stars. I finished it off with a scattering of pink and blue fondant flowers, three candles and 'Tiah' spelled out in pretty pink.

The birthday girl loved it, although she refused to eat any of the cake and ate Dora and Boots' feet instead. Hehehe.

I still have so much to learn though and I can't wait to keep practising and creating new things.

I had so much fun making all those cute little ladybugs for my Valentine's Day cupcake orders (thanks to all the lovely people who bought a box of these for their someone special!) that I decided I wanted to try my hand at some other animals.

This little guy is my very first attempt at making an elephant from fondant (edible icing) and I think he's absolutely adorable! I named him Jacko for a very special and equally adorable little friend of mine who recently moved interstate with his mum and dad. I hope he likes his namesake. :o)

Teal and chocolate is fast becoming my most popular colour / flavour combination! Lucky, I suppose, that it's also one of my favourite combos.

I made these delicious choc-mud cupcakes for a lady whose friend had these similar cupcakes for her birthday last year. She loved them so much that she wanted some of her own!

The Craft Fair Extravaganza was a great success and I can't wait to do it again this year! I sold out by lunchtime on both days of the fair and I was blown away by all the interest in my stall and all the lovely comments that I received. Thanks to everyone who came along; you made it a great experience. :o)

Here's a pic of my stall that I snapped on my iPhone. I had both regular and mini cupcakes for sale in several flavours and also had some packets of homemade, decorated Christmas biscuits.
Of course, choc-mud was the most popular flavour, followed closely by choc-baileys and banana choc-chip. I guess you all love chocolate as much as I do!

Pink Lily Cupcakes will have a stall at this weekends Christmas Craft Fair Extravaganza.

I'll be selling cupcakes (buy one to eat on the day or buy a box as a gift!) along with some yummy (and gorgeous) Christmas biscuits and macarons that would make a wonderful gift for friends, family or colleagues. Or you could just eat them yourself. ;o)

Pink & green 21st birthday cupcakes

Earlier this year I made a lovely young lady three dozen 'Irish' themed cupcakes for her Rose of Tralee fundraiser night. Well, that lovely young lady was Erin, who recently turned 21 and asked me to make some special Pink Lily Cupcakes to celebrate her big day.

I made a dozen choc-mud cupcakes, a dozen chocolate cupcakes with mint buttercream and a dozen vanilla cupcakes. I decided on a theme of soft pink and mint green for the decorations, as Erin's favourite colour is pink but she didn't want things to be 'too pink'. I made all the decorations myself from homemade marshmallow fondant.

My Nana turned 81 today and my family and I did the drive from Darwin to Katherine to celebrate with her over the weekend. As she lives out of town and doesn't use email or the internet, she has never seen my cupcakes, so I decided to make her some pretty treats to share at her seniors group.

These fluffy lemon cupcakes were topped with passionfruit (fresh from the vine in our backyard)! buttercream frosting and homemade fondant decorations.

These cupcakes, topped with handmade, marshmallow fondant decorations were ordered by a lovely lady for her friend's 70th birthday. The birthday girl's favourite colour is teal, so I tinted the fondant and teamed it with chocolate mud cupcakes for a gorgeous colour combo.

You might remember that a while back I had a little competition to see who would be my lucky 100th fan on Facebook. (I'm now up to 174 fans. Thanks everyone!)

Well, Bonnie was the lucky winner of two dozen cupcakes of her choice (as her friend lived too far away to claim her dozen) and she claimed her first dozen last weekend as a gift for her daughter.

I made these super girly vanilla cupcakes with vanilla buttercream icing and decorated them with handmade pink and white marshmallow fondant flowers and butterflies.

I think they turned out super pretty and I hope Bonnie and her daughter enjoyed eating them as much as I enjoyed making them!

These chocolate-mud cupcakes with vanilla buttercream icing and chocolate star toppers were for the birthday of twins who turned 10 this weekend. I alternated plain chocolate stars with stars covered in little silver dragees for a bit of extra sparkle.

Unfortunately (for me anyway) I didn't have any extra cupcakes leftover for me to sample for afternoon tea. I really must do better next time. ;)
