I am still not to sure if I am ready for Fall. We didn't have much of a summer here is South Western Ontario, so it really feels like it has arrived too soon!

Oh well, I am looking forward to one thing; watching the leaves change colours. That is definitely my favourite thing about Fall.

Yum-O Apple Raspberry Crisp

We interrupt this regular programing to bring you yummy treats!!

This was toooo good not to share with someone, and since BF took a last minute trip to Vancouver yesterday, I thought that I would share it with you!

Boy did I treat myself tonight! I had a lovely Asian Beef Stir-Fry, and decided to whip up some homemade Apple Raspberry Crisp.

I actually made up this recipe, but it is so simple you probably won't even need to write it down.

Apple Raspberry Crisp
1 McIntosh Apple, sliced thin, skin removed
6 fresh large Raspberries
1 tbsp cinnamon sugar (just a half and half mixture of cinnamon and white sugar. I bought it in a jar, but you can just mix this together yourself)
1 tbsp margarine
1/4 cup instant oats
2 tbsp brown sugar

To start, thinly slice 1 apple, spread a single layer on the bottom of a small ramekin. Throw three raspberries into the middle. Continue to layer the sliced apple around the outside.

Next, melt margarine in a microwave safe bowl (15 seconds or so, I put mine in for 30 but it exploded everywhere around the 15 sec mark). Take time to clean splatter off microwave (if needed ;) ). Add in the 1/4 cup of instant oats, stir until margarine is absorbed, add brown sugar and continue to mix until absorbed.

Divide oats/sugar mixture into two equal parts in the bowl. Top each apple/raspberry ramekin with mixture.

Bake in a pre-heated 350 degree oven for 10-15 minutes, or until the top crusts.

(Please do ignore the burnt splatter on the bottom of my oven. BF had a freak accident with a lasagna when I wasn't home, don't know how it happened, but it did.)

Now you can twiddle your thumbs while you wait............ ding!

Remove from oven and let cool for 5 minutes (this will be hard, but you must show restraint!)

I then topped mine with more raspberries, low-fat vanilla ice cream and a shop of whipped cream! YUM-O!!!

Now the best part... Enjoy!

I wanted to make a quicky announcement letting you all know that I made the very hard decision to close my store at DPH. The group of ladies there are wonderful and extremely talented, and made my stay there very enjoyable.

I just wanted to pop in and let you all know that yes, I am still here! It's been a while I know, but I have been very, very busy! In both real life and digi life!

I'm gearing up for the opening of Polka Dot Plum (which will happen sometime in July.... can't tell you when, it's a surprise!) so I thought that I would give you a little peek at a my newest kit, which you can grab Grand Opening weekend!
