Apan-apan: Kangkong with Pork and Ginamos-Iloilo (Salted Shrimp Paste)

It's actually my first time to try cooking this dish using the original 'ginamos ng iloilo' (salted shrimp paste). I also used pork, not the usual Iloilo's apan-apan with chicken meat.

Iloilo's 'ginamos' is different from the 'alamang bagoong' of Luzon, or the 'uyap' of the Cebuanos or Mindanaoans. Primarily, it's not as salty as the other shrimp pastes; it's wrapped in dried banana leaves; it's not as watery as the others; the texture is finer; the color is more natural (lesser food coloring mix) than the pinkish shrimp pastes; and etc.

kangkong, tomatoes, onion and garlic

Well, the recipe basically consists of
(1) kangkong (leaves and stalks)
(2) meat - pork or chicken
(3) 'ginamos-iloilo' or bagoong alamang
(4) tomatoes
(5) onions
(6) garlic
(7) vinegar
(8) seasoning

The way I cooked Apan-apan:
1) Saute garlic until slightly brown, then add onions, and tomatoes

Ginamos-Iloilo (Salted Shrimp Paste)

2) Add in meat (pork or chicken), a pinch of salt, a little soy sauce and seasoning; simmer while occasionally stirring until cooked. Add a bit of water if it starts to stick on the pan.
3) Add in 'ginamos' or 'alamang' to stir fry.
4) Add in kangkong leaves and stir fry.

To complement, pair with 'daing na bangus' for a delicious pinoy (Filipino) meal.

Pinoy Meal: Blanched Alugbate and Spanish Sardines

I thought blanched alugbate will not be that appealing to the taste buds. It was my niece who taught me how to prepare it and let me try it. Blanching the alugbate leaves can be done by just pouring hot water on it. It's just like washing the alugbate leaves with hot water, so that it would still be a bit crunchy.

I think the secret to a tasty blanched alubate would be to match it with a chili hot, a bit sweet and sour vinegar. To iterate the sauce details... mix to vinegar: chili flakes or ground pepper, crushed or powdered garlic, a little salt and a little sugar. Mix to your desired taste and sourness (hmmm). You just have to dip the blanched alugbate leaves to the vinegar sauce.

As for the spanish sardines, I just bought the canned (Philippine made) ones. You can heat it or just have it straight from the can. It's a light meal yet a tasty one. Happy eating pinoy meals!

House Bill No. 4244, known as the RH Bill, is completely entitled as the "Responsible Parenthood, Reproductive Health and Population and Development Act of 2011".

I personally keep quiet when asked of my stand regarding the RH Bill. As a Catholic and born in a large family, my natural leaning is to go against this Bill... I have my reasons, I have my faith...

... but asking others why they support the RH Bill, they only cite the poverty that they claim to be caused solely by the rising population. I don't condemned people promoting the Bill, but I am indifferent to persons who strongly approve the Bill without even having read the entire text of it.

...well, honestly, I am also reluctant to say I am against the House Bill No. 4244 just because I am a Catholic, without even trying to read the RH Bill.

I urge everyone (including myself) to take a stand, but do the first step first: Know the RH Bill by reading the full text.

Ever wondered what cities in the country are promising locations for condominium developments? Inquirer Property did a quick survey of top developers and found out that Cebu, Angeles, Davao and Cagayan de Oro topped the list, which also included other promising areas such as Marikina and Muntinlupa.

Bobby Dy, Ayala Land Inc. senior vice president and head of residential business group, said that “Cebu, for us, is a growing market.”

“As an important city in the South with the various ingredients of tourism, industry and increasing affluence, we have seen Ayala Land Premier, Alveo and Avida entering the market with a good deal of success. Likewise, areas like Angeles, Davao and Cagayan de Oro are promising centers of growth—these are areas where we see a growing acceptance for condo living, and as such we will be bringing Alveo and Avida products to these markets in the coming months.”

Alejandro S. Mañalac, board vice chair of National Real Estate Association, said Marikina “would be nice and it has actually started hosting several projects.” Mañalac, who recently joined Century Properties Inc. as senior vice president, said “Muntinlupa also has a good potential, especially with the rehabilitation of the Philippine National Railway. However, developments there should only be low- to medium-rise, no frills condos.....”

CPDRC Dancing Inmates: MJ's 'This Is IT' [They Don't Care About Us]

Watch the video of the CPDRC Dancing Inmates, performing in the music of Michael Jackson's (MJ's) 'This Is It' - They Don't Care About Us.

For those who have not known yet, these dancing inmates are from the Cebu Provincial Detention Rehabilitation Center (CPDRC), a maximum security prison located in Cebu, Philippines. The head of the prison, Byron F. Garcia, started a program of choreographed exercise routines for the inmates. At first, he just wanted to introduce a program for the inmates to have an hour of exercise a day. He claimed that his inspiration came from the movie The Shawshank Redemption, a popular prison drama released in 1994. [Source: Wikipedia on CPDRC]

The CPDRC inmates have produced a number of video dance performances including the Korean dance hit "Nobody" by the Wonder Girls, MJ's "Thriller", JAI HO (Remix) from the popular movie Slum Dog Millionaire, and more.

The U.P. Oblation Statue - Diliman: What's Written

When I first visited the UP Oblation Statue in Diliman last 2009, it was then my first time to see what's written in the statue. It was also then that I have understood what it has been symbolizing... and for the first time, I felt a different sense of patriotism within. My school days' perception of the oblation run was just more of a fraternity initiation, but I was wrong; firstly, because those who run are not the neophytes but full-pledged members of Alpha Phi Omega (see related UP Oblation Run 2009 story), and most of all, the Oblation Statue symbolizes a much deeper and bigger meaning than the annual UP Oblation Run event.

Though I am an Atenean/Atenista from the south of the country, the visit to the UP Oblation Statue have made me own the University of the Philippines as a symbol of Philippine pride and patriotism... through the words of our National Hero, Jose P. Rizal in his "El Filibusterismo" (Pilipino/Tagalog and Spanish texts)...

The Oblation of the University was made by Guillermo E. Tolentino ( 1890 - 1976 ). It begun conceptualization during the presidency of Rafael Palma and was fully concretized during the term of UP Prseident Jorge Bocobo.
The Oblation symbolizes the continuing quest for knowledge and truth, excellence in all human endeavors, love of country and service to country and all humankind. The youth standing straight with arms outstretched and looking heavenwards represents all this youthful aspirations.
The statue is made of hardened concrete and painted to look like bronze. Much of the funds used for its completion in March, 1936 came from the funds of the Student Council during the leadership of Potentiano Ilusorio and Jose B. Laurel.
The statue first stood in the Padre Faura campus until it was brought to Diliman, Quezon City in February, 1949.

The book, "12 Little Things Every Filipino Can Do to Help Our Country" by Alexander 'Alex' L. Lacson, was written when the Philippines was facing a serious financial crisis as publicly announced on July 2004. There was a dramatic call for every Filipino to help the country.

I believe that every Filipino has a great dream for our Nation, the Philippines; although sometimes, we forget or set aside that dream due to the hopelessness of the current political and socio-economic situations that we experience. But let's not stop dreaming, and always remember, that the only way to achieve such a dream is to take actions, no matter how little they may seem. Sometimes we dream of big dreams, but never do the basics as Filipino citizens; sometimes we demand global respect, but we fail to do our own duty as local citizens of this land; sometimes we proclaim to be 'Proud Pinoys', but never value our own treasures as Filipinos; sometimes we demand so much from our government, but fail to groom our own families to be the basic unit of Philippine Society...

The Oblation Run is an annual tradition of the members of the Alpha Phi Omega, one of the prominent U.P. fraternities. Members of the fraternity run around the campus naked (a concept known as streaking) to protest their sentiments about a current political or economic situation. The run started in 1977 to protest the banning of the movie, “Hubad na Bayani,” which depicted human rights abuses in the martial law era.^[5]
Contrary to popular belief, neophytes are forbidden to run.
