Wake up too early because of another earthquake and manage to get a chance to shoot a sunrise timelapse again. While in progress, I notice the big cloud from a far that looks there is a volcanic eruption somewhere. Further checking in FB lead me to an information about a factory thats attacked by armed rebels and commit arson.

Tinuy-an Falls, Bislig, Surigao del Sur

This is our second time visiting Tinuy-an Falls. The first time around is with my BoB buddies. And this time I'm with my gf's workmates, the BEST buddies. It is our first stop for our 2 days Surigao trip.

We even get the chance to climb up the falls and see the series of stairs like small falls, which we did not do when we first visit here. The view from the top is amazing.

During this visit, it is very evident that the water going down the falls is not as much as we first visit. Even the locals are saying that because of the El Niño, the water's current have significantly decrease. Yes there's still plenty as what is in the pictures but I just miss the drizzle effect of the falls which covers the whole front area. Where taking a picture near the falls has a foggy moisture effect and sometimes also adds effect on the lenses itself due to the fine water droplets scattered across the vicinity. I just want to relive it. Its kinda romantic and movie like scene. He he.

Lechon Turkey for Kol Arnold's Birthday

If my blog can talk, it will surely scold me for hours. Whew, it is been ages since my last update. But as one wise someone said, it's better late that never!

That's a turkey by the way. Kol Arnold's family raise a few of these and sells them for extra income. Normally, he feeds them so they'll grow and become fat fit for a good price. But on his birthday, he was placed in an uncomfortable situation. There was no other person to kill these birds for him so he did it himself. As what he said while we were eating, these turkeys looked at him while he was slitting their throats. That event made him a little teary, I guess. One morning he was feeding them, then in the afternoon he's killing them for his visitors. Ahahah. I felt sorry for him but honestly speaking, Kol Arnold cooked one fine lechon turkey. It was very delicious and the aroma kinda reminds me of my childhood. When I was young and we hunt birds and try cooking our game ala lechon style. Lol.

Pork Sinigang with a Twist

The laziness strikes again on me, been ages since I last updated this blog. But anyways, let's break the ice with a very delicious and a very suitable dish for the coming cold or rainy season here in the Philippines, with Pork Sinigang! Now, you might ask what's the twist we can do with a Pork Sinigang. Well, keep reading and I'll tell you along the way.

Ingredients:

Pork belly or liempo - adobo cut, 1.5in cube
Tamarind or sinigang mix - if you are not comfortable with using tamarind, there are lots of pre-made sinigang mix you can choose from. I would suggest the one with Gabi in it, so you soup would be thick.
Gabi - or carlang as what we call it, but if using the sinigang mix with gabi it fine to not include this.
String beans
Kangkong or water spinach
Eggplant
Radish
Finger Pepper or Siling Espada - about 3-5pcs, chop 1pc or 1/2pc
Onions
Tomato
Garlic - chopped
Soy sauce - 3-5tsp.
Vinegar - 3-5tsp.
Pepper powder
Salt
Vetsin

Direction:

Marinate pork with garlic, pepper, a little salt, soy sauce and vinegar. Make sure to squeeze the pork a couple of times to let the marinate mixture sip inside the pork. Marinate it for just about 5-10mins.
Slice or prepare the vegetables. Right after you set aside the pork, start preparing the vegetables. Slice the vegetables to your liking. When you're halfway on the vegetables, your marinated pork is done simultaneously. Now you have to..
Deep fry the marinated pork. Hope you can deal with a lot of multitasking hihih. When the oil is hot, add the marinated pork, make sure not to cook it very well since we will still cook it along with the vegetables later. Of course, since you are halfway with the preparation of your vegetables, you can now finish it while frying the pork. After finishing the preparation of vegetables and frying the pork, remove the pork from the pan and settle it somewhere to let the oil drip away from it. Then the next step is..
Boil 3-5cups of water. Add the onions and finger pepper right away. While waiting for the water to boil you can start..
Chop the fried pork crosswise. It's still hot so use fork to hold it. After chopping the pork, wait for the water to boil, and it it is boiling already..
Add the vegetables to the boiling water. Make sure you know how the vegetable are sorted base on how fast they will be cooked. Faster cooked last always, so add the string beans and radish first. But if you are using Gabi and tamarind, add them along with the onions since it's not easily get cooked like other vegetables. After the radish and string beans, 5mins later, add the eggplant and the pork. 5mins later add the sinigang mix and vetsin. 5mins later, add tomato and water spinach. Then let is boil for a few minutes to cook the last vegetables you added.
Add salt. Now you may ask why the salt is added at last part, it is because there is a weird relationship with sour taste and saltiness I discovered. When it is sour and you add salt, it will increase the sour taste also it will taste very salty. So if you soup is very sour already, don't add too much salt. After adding salt, stir a little and turn off the heat. You're ready to serve you Pork Sinigang!

Well, hopefully this post makes sense. lol. The twist there by the way is how we prepare our pork. Normally, we add the pork directly to the boiling water or leave it for a few hours so the pork will be very tender. But in our case, we deep fried it. We normally don't add garlic on our sinigang, but this time, the fried garlic from the marinated pork adds a little garlic taste to our soup. Also, the soup will eventually be spicy. Not too much though since we only chopped 1 siling mahaba. But if there are some leftovers and you'll going to heat the sinigang, thats the time it will be really spicy. It is bearable and very appetizing, well for me that is. hihih.

New Year Outing: Maxima Aqua Fun

We have been planning an outing for a long time now. And we want to try the adventure offered in Maxima Aqua Fun. I've been there twice already and I surely know my family will enjoy being there. On the new year's day, the day finally came for us to spend a joyous day in a place called "Home of Abyss". Enjoy some of our pics. ahaha.

There are two means of getting to this resort, by land and by sea(by this resort's owned boat). This boat leaves the Santa Ana port around 9:30am. When we all arrive in the port we were the last passengers to board before the boat left. This boat directly bring us to the resort, unlike the bus where after riding a bus we'll then transfer to a single motor cycle to go to this place.

It's more stiff and the slide experience is more exciting! More adrenaline rush!

Gelatin, Three Birds in One Stone

Do you like gelatin/jelly? Well, I do. When I was younger, almost every celebration we have, we prepare gelatins for deserts. It is because it’s very easy to prepare. Well, we are not cooking some high-end super special desert so it’s just easy to prepare.

You might wonder why it’s hitting three birds in one stone when making gelatins for deserts during any celebrations. First, let’s dive a little on how we prepare our recipe and I’ll tell along the way why and how it is so.

Recipe: Gelatin Desert

Ingredients:

Gelatin powder – suit yourself on how many you wanna make

Top water – number of cups depend on the gelatin powder’s water requirement

White sugar – depends on your preference on how sweet you want it

Condensed milk (optional)

Fruit cocktail (optional)

Procedure:

There are 3 ways we prepare our gelatin. But all of them undergo almost same procedure in cooking. Normally, a pack of gelatin powder has a direction and requirement indicated on it. On the brand we are using, it is said to use 6 cups of water per pack/sachet and other brands varies.

1. Put 6 cups of top water in a pot.

2. Slowly pour the powder into the water. While pouring the powder, continuously stir the mixture until the powder is totally dissolved.

3. Heat the pot with gelatin mixture and continuously stir.

In this part, there are 2 ways we can do.

4. When the mixture is about to boil add white sugar. Make sure to stir it well and taste it to meet your desired sweetness. By adding white sugar, you can preserve the color of the gelatin. For example, if it’s green/pandan flavored, the color will stay green and it will be transparent.

Or..

When the mixture is about to boil add the condensed milk. With the brand we are using, 1 can of condensed milk is already enough to make our gelatin sweet. If in any case you want it to be sweeter, you can always add some white sugar. Don’t forget to stir. The outcome of this one will differ in taste and in color. There will be a hint of milk on this one and the color is lighter and not transparent.

5. On the second time around that the mixture is about to boil, remove the pot from the fire and pour the mixture into a molder/container.

6. Let it set and cool. If you want it to have more color and texture, that’s where the fruit cocktail is used. Add in the fruits to the container. We normally add fruits if we are not adding milk in it. That way, the fruits are visible because the gelatin is transparent.

7. Place it inside the refrigerator after adding a few finishing touches to cool it faster. Also, it is best served cold.

Okay, we are done with how to prepare it, right? It’s child’s play recipe so everyone can easily make it, I think. Now, the gelatin is not only served as deserts. Well, it is most of the time. If say you have prepared gelatin, either with or without milk (not the one with fruits ofc. lol) you can add it to your drinks or cocktails. Simply slice the gelatin to small chunks and mix to your drinks. Or if you have prepared another desert, say fruit salad or any sweet salad where you might need an additional color in it. You can always add some gelatin in it. And that’s how you can hit 3 birds with one stone, gelatin style. Lol. Plain gelatin desert, drinks with gelatin and salad with gelatin. Try it, it’s very easy to prepare and also cheap.

This is a mixture of with condense and without condense recipe, the transparent gelatin became my toppings.

Pinoy Dainty: Suman

For the past days, this delicious Pinoy food has been saving me from my hunger. Actually, it's my breakfast already. I buy some after I go to church for misa de gallo (dawn mass). This dainty's main ingredient is white glutinous rice and wrapped with banana leaves. I know how to cook Suman but I prefer not to use or discuss our recipe. ahaha. But the main process is cook the rice, when it's about to be cooked, take the pot away from the fire and let it cool a bit. Then prepare the banana leaves and wrap the rice with it. After wrapping, cook it again in a boiling water so it will surely be cooked, then it's done. ahaha. It's a tedious recipe to cook actually but the result is 100% delicious snack or breakfast.

8th Anniversary

8th years ago, it was December 14 when I got me a girlfriend! ahaha. And yesterday, we went to a restaurant to have some dinner. We went out coz it's our anniversary and the mall is having some sale, till midnight!. So there we were, ordered some chicken combo meal since it's our first time in that restaurant. We don't want to freak out with what we ordered and end up not liking the food they served. ahaha. After I ordered the cashier gave me our order number and it's #14. I laughed coz it was 14, so my girlfriend was confused. So when we settled in our table I hand her the number. She just smiled. And we started taking some pics of it. When the food was served I was gonna took some pics also but then I thought of the posts in the internet about taking pictures before eating them and uploading it to instagram. lol.

Black Forest Cake

I'm not really a big fan of cakes but when I tried Black Forest, well, nothing a lot have changed. heheh. But in all fairness this is the tastiest and delicious cake I ever have. Especially that it's free, courtesy of my Aunt. I'm not sure if all Black Forest taste the same though. I'm sure there are variations and factors that may affect its taste. But as for this Red Ribbon Black Forest cake, and take note, it is free. It is significantly mouth-watering and makes my sweet tooth returned again. Surely, one of this days if there will be a special occasion I'll buy one of these.

Now speaking of cake, I wonder how will I be able eat it for free again. ahaha

2012 Summer Escapade: Davao - Ilo-ilo - Boracay

I'm not sure if it's still a summer escapade, as per PAGASA's report we already entered the rainy season days before our flight. Anyway, even with typhoon Ambo lurking in north of the Philippines we still pursue our vacation to Boracay! Well, we have our flights and rooms booked so its a big waste not to come just because of Ambo. heheh. In our vacation there are lots of firsts that happen, not only for me but also for some of my company, especially my girlfriend.

Davao Airport to Ilo-Ilo Airport

I have to sleep in my girlfriend's house the night before our flight because we are worried about her safety going to the airport alone, because our flight is early and we have to be in the airport 2 hours before our flight. We ride a taxi to the airport, when we arrive there its still so early. After a long time, I finally get back in Davao airport. I think the last time I am in the airport is I am 7 years old and I am with my father watching a big plane taking off. After lining up for some safety check ups we enter the main lobby of the airport where we meet the rest of our company. Most of them are in the academe, teaching IT related subjects. Our good friend Frans is also with us. He is the tour guide since he already been to Boracay.

After a few minutes of waiting outside the airport, after some pictorials the van we contact arrived to fetch us and we are on our way by land.

From the Ilo-ilo airport it is about 5 hours travel by land. But first, we look for a place to have breakfast since our flight is so early we miss our breakfasts. After breakfast the 5 hours travel starts in a rainy road to Caticlan.

When we arrive in Caticlan it's already pass 3pm and we didn't have lunch yet, still we go straight to the port bound to Boracay Island. Sadly I am very preoccupied with our luggage I forgot to take pictures when we arrive. I even miss the to take a picture of the front view of their seaport terminal. tsk2x.

We have to travel by sea now, by a FastCraft they call. The travel is about 5 minutes only. But the catch is the boat have to be filled before it departs. Here are some pics when we are going to the boat and when we arrive in Boracay.

To La Carmela Hotel

I am surprise with what I see while we are traveling to our hotel. Narrow streets, 2 lanes only. It's been raining before we arrive and the streets are flooded, now a pleasant scene to see. But still lots of people are busy, not of minding the flood waters but their own businesses. Boracay is a very commercialized island, large amount of money are poured here everyday, or every hour maybe. Sadly, drainage is maybe not one of their priority. Anyway, time to rest, let's go to the hotel!

Happy 24th birthday to me! Ahaha. Too old for parties, too old for gifts(but expecting one from Mamy hihih) and too old for 'handaan'. These previous years, thats how my birthday is spend at home with family. Sometimes I celebrate with friends but not on the same date.

Last night, I happen to went to bed a bit late. Played GDOnline and told my self 'you have an hour Khatniss'. Khatniss, my weak archer character was derived from my previous post. So weak she can't even change job yet. Lol. After an hour it was bed time. Zzzzz.

There seemed to be no dream i could remember. Suddenly here comes a shake on my leg calling my name 'kuya-kuya', my younger sibling woke me. I was lieing on my belly then turn my face around a bit and told her, 'what!' irritability because maybe of lack of sleep. When i tried to find her to see what she was up to there was a chorus greeting me. I was surprised, secs later i managed to smile. Te Tata and and Wella were on my bedside holding a 'tag peso candle'. It was lit so i raised my body up and about to blow it when Wella emphasized they're gifts. Weeeeeeeeee! I have a Batman party hat(awesome!), which Te Tata bought for her son. A cake(small one), which is a cupcake actually but still a cake. And lastly a balloon(perfect!), a blue one and my favorite color. Then i remember that was for Te Tata's son also. Moreover, Wella was the one who bought that and it not for birthdays. We laughed about it before because what's written on the balloon was happy anniversary, what an epic fail for my sis. Ahaha. I burst to a good laugh and I'm sitting on my bed now blew the candle and tap Wella on the head. We were laughing while they exit my room. I think i did manage to thank them for birthday surprise. Hehe. Then i went back to sleep. When i woke up the first thing i did was take a pic of the gifts, with the balloon text away from the camera. Lol.

The Hunger Games, among the many much anticipated movies of 2012 is now showing in all cinemas world wide. This is the first installment of the bestselling three book trilogy which is written by Suzanne Collins. The book itself is written in a first person perspective and focuses on the lead actress Katniss Everdeen. They live in District 12, a poor district which is under the ruling of Capitol. As a whole, the nation is called Panem (Latin word for Bread). Every year, the Capitol held an event which involved one male and one female from 12-18 years of age each district. The event is call The Hunger Games. Where participants have to battle by themselves till there will be a single player left to be crowned as the Victor. And that's where the whole novel will revolve.

Fill Your Boots Man!

I happen to came across the phrase "Fill your boots man!" last month when my Girlfriend shared an audio recording of a prank call to me. Becky, an 8 year old girl from Dublin, asked a demolition company to destroy her school because her teacher gave her lots of homework during Fridays. The conversation was very hilarious, and as Becky about to end the call she told the demolition man "Fill your boots man!" Thats all for Becky, you can check this video in youtube if you want.

Now, FYI, in UK the phrase "fill your boots" means help oneself. There are other phrases that are same sound of the above phrase. But as how Becky used it I think she was telling the man to help himself fulfill the task she was asking him, to demolish her school.

Last month, I was with my Girlfriend's family and we went to their farm(bukid..hihiih). We were listening to the same Becky recording that time when i noticed these boots lined up. These are the real deal for me in terms of filling one's boots!

Crabs: Simply Deliciously Dangerous

Well, since then this is the best menu i always want. Sadly, we only have this occasionally because of it's availability and price(high, very..lol).

Actually it's very easy to cook crabs like what's on the picture. But eating it is a bit tricky yet it's worth it. It's delicious and sweet meat never fails to make you want to eat more and more. But mind you, crabs are also dangerous for you. That is if you're allergic to it or you have a high blood problem. Crabs are very delicious that it's oozing with uric acid which is bad for our health if it's too much.

So if you have crabs and afraid to eat it, call me. lol

Drunk Passenger

Today is not a regular day for the passengers riding a Talomo public utility vehicle. To think its 3 in the afternoon, its very unusual to find a drunk man that is almost unable to determine if he is still alive or not. I don't know where he come from and what amount of alcohol he take but one thing is for sure. He is flat dead asleep on a jeep going nowhere. Ahahah. Every person coming in the jeep would think trice or more if they're gonna pursue riding that jeep. Every person that sees the sleeping drunk man in the middle of the path screams at the back of their minds saying "Holy Mother of Drunkards!! What the hell is that man doing there!?". Of course seeing a laying man in the ground and not moving, one would surely think like this, "Omg, is he dead?! I should take the next jeep instead!!".

Ahahahah. Luckily this man didn't vomet during our trip. Whew! Else i'll be super troublesome considering i am the one in front of him. I will surely catch all the ewness he'll throw. Ahahahah.

For me its weird to see a traditional Pinoy delicacy paired with a saucy desert. Its weird but taste like heaven. lol I first tasted this when Ate Nene's relatives brought this for the blessing of their house months ago. Sadly I was busy eating other food that I did not had the chance to appreciate it.
