Think you want to build a career from it? It’s possible, you know – especially when you enroll in the Culinary or Pastry Arts Programs at Platt College.

Some people are just born to make great food – whether it begins with the smell of a loved one’s special recipe, or even through each delectable bite of your favorite dish from a restaurant you love to visit. For others, it’s all about reaping the rewards of the hard work and time spent making a fresh, home-cooked meal… or even the look on a friend’s face as they take that first savory bite. Sometimes the only “thank you” needed is for someone to try the dish you put so much effort into and say, “Wow, that’s delicious!”

Do any of those descriptions sound like you? If you said yes, you’ve come to the right place. Depending on the campus, Platt College offers programs in Pastry Arts, an Associate’s of Science in Culinary Arts, and even a Bachelor of Science in Restaurant Management. With a combination of theory and practical instruction, graduates of these programs will be armed with not only the knowledge to succeed, but hands-on experience to boot. Did we forget to mention graduate placement assistance?

Did we forget to mention the opportunity for networking?
On the Right Path – How Platt College is Teaching Opportunity

By Lindsay Whelchel

Like many young people, Lori Flansburg was attending a traditional four-year college in western Oklahoma, taking class after class. She had accumulated 110 hours at the school, but for her, it wasn’t working out.

“There was nothing that I fell in love with, nothing I wanted to do for the rest of my life,” she says.

Flansburg knew she needed something else. That’s when she made the decision to move to Oklahoma City to attend the Culinary Arts program at Platt College and focus on her love of cooking.

More and more people are making the decision to attend what is commonly referred to as a “career college” and specialize in a particular field. According to a brief by Commissioner Jack Buckley over a report from the National Center of Education Statistics, “In recent years, for-profit institutions have entered the post-secondary marketplace in increasing numbers, and their share of undergraduate enrollment has increased from three percent in 2000 to nine percent in 2009.”

The report looks at numbers for both categories in higher education – traditional two- and four-year schools – and career or technical colleges like Platt, which began in 1979. Platt and other similar schools around the country provide accelerated, skill-focused education programs for students. They are seeing increased enrollment, likely due to the economy, explained Mollie Hager, executive director of Platt College.

“I think with today’s economy, people want to get their education quicker than they can with a four-year university,” she says. Hager explains that although the two paths are difficult to compare, she believes Platt is a good option for people who want an accelerated pathway or are considering a career change. And Hager should know – she was a single mother working in a dead-end job when she entered a career college and irrevocably changed her life.

Hager entered a school for medical assisting, and after graduation took a job as a dental assistant. Eventually, she was given the opportunity to work for Platt College and help initiate their dental assisting program in 1997.

“I know without a doubt the decision I made opened more doors than I ever expected,” she says, and adds, “If students have the determination and drive, and they are willing to take a different path, which is the choice I made, they might have the opportunity to experience doors opening for them, as well.”
Platt College has many program study options, ranging from Associate degrees and diplomas in the Culinary Arts and Home Entertainment and Networking Technology to the medical field, which includes Dental Assistant, Massage Therapy, Medical Lab Technician or Medical Office Specialist, Pharmacy Technician, Respiratory Care, Surgical Technologist and Nursing – including LPN, RN and Vocational, according to Hager.

“We have a range of different programs that offer a variety of careers needed in today’s industries,” says Hager. They focus on the academic side of the education as well as practical instruction within their five locations around Oklahoma – Moore, Tulsa, Lawton, Central and North Oklahoma City – as well as Dallas.

This is echoed by Platt’s Director of Education Cindi Walls, who explains that their Associate and Bachelor degree programs are taught by instructors with Masters Degrees, comparable to traditional schools.

“If you have a specific career in mind, then your decision to come to Platt puts you directly on that path. However, it also provides you with the equivalent number of hours of an Associate Degree in a four-year college, but in an expedited time,” says Walls.

Focusing on academics is emphasized in the Culinary Arts program, explains Dale Tanner, program manager for Culinary Arts.

“There are many places you can go and just learn the kitchen; but to be a chef in the culinary field nowadays really requires the whole package,” Tanner says. The general education requirements often take students by surprise, but they are necessary to succeed in the food service industry. Success is not as easy as the Food Network makes it appear, he explains.

“Platt gives a solid foundation. Students learn all the things a chef needs to be successful nowadays – it’s not just about cooking anymore,” Tanner says. Courses encompass safety and sanitation, the hot kitchen, Garde Manger, baking and pastry arts, as well as food and restaurant management.

But Tanner insists there is a definite appeal to cooking. “I think culinary arts has become, if I can use the word – sexy,” he laughs. This he also attributes in some part to the Food Network, but there are many directions in which students can take their careers as chefs.

“It’s an exciting field to be in, and if you look at all the various food-related avenues – cruise ships, luxury hotels, catering, resorts and other commercial food service establishments – there are great opportunities to which people are drawn.”

What Oklahoma non-chefs might be drawn to, however, are the fruits of the students’ labor. A well-kept secret about the school is their restaurant – Chefs di Domani, located in Quail Springs, near the corner of N. May Ave. and W. Memorial Rd. – in which students in the highest levels of the program prepare no less than gourmet food, offered at a reasonable price. The students also act as servers, and guests can grade them after the meal. Though only open for lunch and dinner each Wednesday, Thursday and Friday, the dining spot is sure to surprise you.

Students choose Platt College for Culinary Arts, Tanner explains, because the school is the only accredited Culinary Arts program in the state. Although not every school opts to be accredited, it is a good basic indicator of quality. Schools accredited by a nationally recognized agency have met certain quality standards established by that accrediting agency. Hager adds that only accredited schools, like Platt, can offer financial aid.

Platt currently has about 1,500 students enrolled within the school. In addition to the previously mentioned benefits, Platt College President Mike Pugliese cites the school’s family-feel as being an added draw. He recognizes that there are many options in higher education out there for people.

“I think all education is good; our main goal is to help people achieve their goals,” Pugliese says. And those who finish the program are impacting the state. “In my weekly travels, I run into our graduates everywhere I go,” he says.

And if the graduates are impacting the state, then the school is impacting the students. Just ask Flansburg, who is nearing the end of her time at Platt. She works in the class that cooks for the college restaurant and has an externship – essentially a short internship that gives students practical experience in their field of study – with a local restaurant.

Today, she is wearing a white chef’s uniform. She is also crying … but not because she’s sad. Rather, it is because she is being fulfilled by her decision to attend Platt College. It was scary at first, she admits, and she couldn’t have done it without the support she received from her family.

“My family has been amazing,” she says. “I’ve been working full-time and going to school, and I’m exhausted.”

Exhausted, yes, but clearly invigorated by her experience. Flansburg says that Platt has taught her technical skills, but beyond that, she has learned professionalism and, for the girl who admits to having low self-esteem, Platt College may have imparted an even more important lesson.

Smiling through her tears, Lori Flansburg says, “It has given me a new sense of self-confidence. I know I can succeed, and I’m excited about my career.”

The days had grown long, with staff forced to acknowledge,
That students were tired and exhausted from learning.
A break was required, for which students were yearning.

"Go ahead, get on out, you've worked hard enough!"
Said the chefs, who agreed, the term had been tough.
"Alright, I give in, put the needles away!"
Future medical assistants, oh yes, they obeyed.

"Remember your flossing and other techniques!"
"Oh yes," said dental students, "For the sake of clean teeth!"
The massage therapy students agreed, as well,
That practice made perfect, so back injuries don’t swell.

So after weeks spent studying and decorating doors,
After time spent on tests and stifling snores,
A short time with Santa, who said, "Be good for good’s sake,"
The students went home to recuperate.

But during this break, you just wouldn’t believe,
Platt College was still busier than you might perceive.
For throughout the hallways, if you'd been there, you'd hear
The sound of jingling bells, laughter, and cheer.

It wasn’t the instructors, as one might expect,
But the hardworking admissions staff as one might suspect.
How they still do it, your guess sure beats mine,
But they left behind gifts, and you won’t guess what kind.

Those gifts are a future, shiny and bright.
For those who would seek it, whose passions have light.
You seek a career? We’ll help you – you’ll see.
Happy holidays from Platt College, with love to you and me.
They love us, and we love them. Just check out this amazing video of some of our students discussing why they decided to attend Platt College:

There’s earning a degree, and there’s getting an education. You can do one, or the other, or both. At Platt, we prefer you do both – as evidenced by the number of students you just watched describe what their lives are like at Platt. Going to college is truly a life-changing experience, and it’s one we’d like to help guide you through every step of the way. Whether it’s with enrollment, financial aid opportunities, or actual in-class interaction, we’re here to make sure you succeed in every facet of your life.

Rather than shuffle students in and out anonymously, we try to make it a point to get to know each and every person that walks through our hallways. We also hope you get to know your classmates, as well. As you just saw in the above video, Platt students develop strong relationships with both the Platt staff and with their classmates, which helps create a fun learning environment and a strong base of support. After all, your new classmates are having the same experience you are – who better to help you get through it?

We know it’s tough to find your perfect career... and it’s our job to help make it easier! Got questions? Give us a call, or connect with us on our <a href="http://www.blogger.com/%E2%80%9D" http:="" plattcolleges”="" www.facebook.com="">Facebook page. We’re here to help!
The idea was to have students take photos and write a short description of some of the things they were learning as Platt students and have them post it to our Facebook wall. The prize was suite tickets to a college football game, which definitely got a lot of people excited. We even had some video guys set up shop and record some footage of a few students who were especially pumped about the contest:

It was a definite success, and also involved a lot of tugging on our heartstrings. In the end, we wound up selecting Chelsea Rodgers to come along with us to the game. She told us a unique, heartfelt story relating to the loss of a family member, and we just couldn’t turn her down. Thank you so much for sharing your experience with us, Chelsea. We love having you as a member of the Platt College family!

We love having such dedicated students! Feel free to connect with us (and them) on the Platt College Facebook page.
The Culinary Institute of Platt College and Oklahoma Fit Kids Coalition have teamed up to host an event designed to help create a healthier Oklahoma. On October 15, from 11 a.m. until 1:30 p.m. the parking lot in front of Platt’s north campus at 2727 West Memorial Road will transform into a giant cooking classroom and activity space. The goal of the Platt My Plate event is to get people moving and to teach them to cook a healthy meal based on the USDA “My Plate” guidelines.

In Oklahoma, one in three children are overweight or obese, we rank last in fruit and vegetable consumption and we’re on track to be the most obese state in the nation by 2018. Financially, the numbers are just as staggering. U.S. taxpayers spend $147 billion annually on the treatment of obesity related diseases. Oklahoma spends $853 million.

“The Culinary Arts program at Platt College has been offering our students a broad-based culinary education for over eight years. So, when we heard some of the recent Oklahoma health statistics it made perfect sense for us to use our expertise, our resources, our chefs and students to teach Oklahoman families some simple, healthy ways to cook,” said Mike Pugliese, President of Platt College.

The OK Fit Kids Coalition is a statewide initiative to improve the overall health and well-being of Oklahoma youth and families by reducing childhood obesity. They will be at Platt My Plate with physical activities, games, and kid-friendly recipes to encourage Oklahoma families to eat better and move more.

“Every child in Oklahoma has the right to live a happy, healthy and active life,” Director of Oklahoma Fit Kids Coalition, Amber England said. “Empowering kids to make healthier choices is a way to make that happen and we couldn’t be more thrilled to team up with Platt College for such an amazing event for Oklahoma families that does just that.”

Platt My Plate is free for everyone. Spots are limited for the opportunity to cook a “My Plate” meal with Christine Dowd, Owner and Executive Chef of Trattoria Il Centro and Aunt Pitty Pats, and the award winning chefs of Platt College. Registration is located at www.plattcolleges.edu All the food and cooking materials will be provided by the Culinary Institute of Platt.

“My Plate” replaces the USDA food pyramid with updated nutritional information and encourages all families to choose to fill half their plates with fruits and vegetables at every meal. More information on “My Plate” can be found at www.myplate.gov

Several other Oklahoma organizations are teaming up with Platt and Ok Fit Kids to make this event one to remember. Dairy MAX will be present with a booth for Fuel Up to Play 60, a unique program that empowers students to make healthy eating and physical activity changes for themselves, their classmates and their school. The organization also has a game of “human bingo” planned for the kids. Sunflower Market is providing “make your own” trail mix and Schlegel’s Bicycle is providing a bicycle to giveaway to one lucky participant at Platt My Plate. The Allied Health programs of Platt College and Oklahoma Health Academy will be providing free massages and blood pressure screening.

In addition to a comprehensive program offering students a broad-based culinary education The Culinary Institute of Platt College offers Saturday cooking classes to the public called The Secrets of the Chef. Beginning January of 2012, four free Plate My Plate classes will be added to the Secrets of the Chef schedule, giving Oklahoma families an opportunity to learn to cook a healthy My Plate meal together.
The smell of fall was in the air on Saturday, October 15, 2011. At about 11 a.m., the aroma of cooked apples, cinnamon and fall vegetables and the sounds of giggling children began to escape from a large tent in the parking lot of the Platt College’s north campus as families from all over Oklahoma City and across the state were gathering for Oklahoma’s very own “Food Revolution”. Platt My Plate was a one day event designed to provide Oklahoma families with an opportunity to learn how to cook a USDA My Plate meal.

a My Plate Me

Moms, dads, grand moms, grand dads and children of all ages came from dozens of cities around the state. Martha Alford, came with a bus load from Muskogee. She said, “Platt My Plate was a FANTASTIC event and a wonderful gift to all those who attended.”

The Culinary Institute of Platt College loaded the tent with cooktops, utensils, and all the food necessary for 60 families to cook a healthy meal, in three back-to-back sessions under the direction of Chef Christine Dowd, Owner and Executive Chef of Trattoria il Centro and Aunt Pitty Pats.

According to the Oklahoma Fit Kids Coalition, a partner in the Platt My Plate event, one in three children in Oklahoma are overweight or obese and we’re on track to be the most obese state in the nation by 2018. “Financially, the numbers are just as staggering. U.S. taxpayers spend $147 billion annually on the treatment of obesity related diseases. Oklahoma spends $853 million,” said Amber England, Executive Director of Oklahoma Fit Kids Coalition.

“When we heard these statistics, we were compelled to do something,” said Mollie Hager, Chief Executive Officer of Platt College. “So, we decided to do what we do best. Platt has been teaching people to cook for almost a decade, so we decided to invite Oklahoma families to come out and let us teach them how to cook a healthy USDA My Plate meal,” “That’s how Platt My Plate was born.” Mollie also announced to Saturday’s participants that The Culinary Institute of Platt College is planning to offer four more free Platt My Plate sessions to families in 2012, as part of their “Secrets of the Chef” cooking series.

Sautéed Chicken with Cider Sauce and Squash “Noodles”

Makes 2 servings
1T vegetable oil
½ granny smith apple, sliced thin
1 ½ t packed dark brown sugar
2 - 4 oz boneless skinless chicken breast
¼ t cinnamon
¼ t kosher salt
¼ t fresh ground pepper
½ each medium onion sliced thin and cut into rings
¼ cup apple cider
2 T cider vinegar
1 cup julienne squash, mixed

Directions:

1. In a large nonstick skillet over med. heat, heat 1/2 of the oil. Sauté the apple until lightly browned about 5 min. Sprinkle with the brown sugar; cook, stirring frequently until tender, transfer to plate

2. On a separate plate sprinkle the chicken with cinnamon salt and pepper. In the skillet heat the remaining oil and sauté the chicken until browned, 4 - 5 minutes on each side. Transfer to another plate.

3. In the skillet, cook the onion, covered, until tender, 6 - 8 minutes; stir in the cider & the vinegar. Reduce the heat & simmer 2 minutes. Return the chicken to the skillet; simmer spooning the sauce over the chicken, until the chicken is cooked through and the sauce is reduced by half 4 - 5 minutes.

4. Return the apples to the skillet; cook until heated through about 2 minutes and set aside. Keep warm. Reheat squash in skillet, and arrange the squash “noodles” on a platter; top with the chicken pour apples over top and any remaining sauce over the chicken. Serve with brown rice.

5. Set table sit down and enjoy with friends and family.

Families invited to free hands-on cooking expo

More information on “My Plate” can be found at www.myplate.gov.

Jeff Howard, Jonathan Groth, Dale Tanner and Tiffany Poe.

From August 31 through September 1, the Cox Convention Center was filled with wonderful aroma and hundreds of chefs, restaurant suppliers, restaurant owners, and anyone connected to the food industry in Oklahoma for the 2011 Oswalt Culinary Cook-off.

Chef Tiffany Poe and Chef Jonathan Groth, of the Platt College Culinary Institute, both participated in the contest. Chef Groth made it to the finals where he competed against Chef Tyler Whitson of Tulsa’s The Local Table and Executive Chef David Henry of The Lobby Bar and The Tasting Room in Oklahoma City. They had 60 minutes to prepare a meal using items from a mystery basket that included a veal rack, shredded phyllo dough, blueberries, mangoes, chorizo, green-lipped mussels, chevre, and tamarind. Chef Henry won the competition and Chef Jonathan Groth placed third, bringing home a cash prize of $750, a trophy, and gift certificates.

Platt College students assisted all the chefs in the contest. Kevin Truong, a Platt College Culinary Arts student, assisted the winning chef and earned a $500 cash prize, a medal, and gift certificates. Henry and Truong also won a trip to the National Restaurant Association’s Restaurant Show in Chicago next May.

“I am always amazed at the amount of talent we have in Oklahoma,” said Zena Dater, founder of the Oswalt Culinary Cook-off. “Year after year, the chefs continue to execute incredible skills and showmanship.”

In addition to Henry, Whitson, and Groth, participating chefs included Jonas Favela, Ranch Steakhouse, Oklahoma City; Ladan Raissi, NCED Marriott, Norman; Sarah Leavell, The Canebrake, Wagoner; Cameron Werry, The Chalkboard, Tulsa; Heather Payne, Deep Fork Restaurant, Oklahoma City; Dion Hughes, Renaissance Hotel, Oklahoma City; Tony Fialho, Oak Tree Country Club, Edmond; Chad Willis, Saturn Grill, Oklahoma City; and Tiffany Poe, Foundations Restaurant, Tulsa.

Judges consisted of a panel of five industry professionals, including former White House Chef, John Bennett; renowned Chef Kurt Fleischfresser of The Coach House; food editors Carol Smaglinski of the Oklahoma Gazette and David Cathey of the Oklahoman; and Executive Chef/Partner for A Good Egg Dining Group, Robert Black.
