Cold Winter Nights With Hot Buttered Rum

Winter in Alaska is a long, cold, and dark affair. The season alternates between high pressure weather systems with frigid clear skies, and low pressure systems that keep us socked in with snow for days on end. This is a place where winter is often a mental exercise in appreciating the natural attributes of your surroundings for nine months.

The landscapes are often stark.

Love of snow is a must.

Patterns can be found everywhere.

And a Thermos filled with warm drink can work miracles.

The simplest, most soothing activity in winter is to wrap your hands around a warm mug. My beverage of choice is always coffee, but sometimes the season calls for a little more.

Hot Buttered Rum

Beverage:

4oz dark rum

2oz water

1/4 cup (1/2 stick) of unsalted butter

1/4 cup dark brown sugar

2 Tbs maple syrup

1/2 split and seeded vanilla bean

3/4 tsp cinnamon

1/8 tsp cloves

1/8 tsp salt

pinch of nutmeg

pinch of cardamom

2 oz freshly roasted and coarsely ground coffee (for french press)

1 1/2 cups of water (for french press)

Topping:

1/4 cup heavy whipping cream

2 oz Frangelico or other hazelnut liqueur

Heat the brown sugar on medium-high until it is fully melted and stars to caramelize. When it starts to turn a dark, smoky brown, immediately remove from heat. Be careful with this part, as overcooking will lead to a hard caramel. Add the 2 oz of the water, maple syrup, butter, vanilla bean, cinnamon, cloves, salt, nutmeg, and cardamom. Cook on medium heat, stirring frequently, until the mixture is slightly reduced. Remove from heat and add the rum. Meanwhile, prepare the coffee and whipped cream: boil 1.5 cups of water in a kettle, pour over coffee grounds in french press. Allow to steep for 4 minutes. Mix heavy whipping cream and Frangelico liqueur in large bowl; beat on high until whipped. Remove vanilla bean from buttered rum. Pour into two large mugs. Top with freshly pressed coffee and whipped cream. Enjoy in the snow.

Growing up, we camped every summer without fail and I have so many great family memories of our time spent on the Oregon Coast or at a remote lake somewhere. There's something so special about being surrounded by nature, the smell of campfire and the chill of early morning swims, isn't there? Although we didn't get fit a camping trip into our summer this time round, now that our three kids are a little bit older, I think it will be a must-do for the summers to come...especially if we were housed in one of these chic sites! Which would you choose?

Lemon Curd Baby Bites

This recipe is one of my own creations. I was trying to get crafty with some leftover ingredients from previous baking endeavors, and I came up with this super quick and easy recipe for little mini pies. I call it "Lemon Curd Baby Bites" ! Need a fast little dessert to take to a bake sale, party or gathering? This is your go-to recipe! Seriously simple. seriously..

Original Recipe yields 4 Baby Bites
Ingredients:
1/2 of a 8.2oz jar of Lemon Curd (I used Sticky Fingers Bakery version that I found at Marshalls)
1 thawed ready-made pie crust
Vanilla sugar for dusting

Simple enough, right? Below are the steps..

What to do:
1. Preheat your oven to ~300 F (I use a gas oven, so your temperature may need to be a little higher).
2. Roll out your ready made pie crust and slice into 4 equal pieces
3. Mold the center of each piece into greased individual cupcake placements in a cupcake pan. Leave the edges hanging
4. Spoon about 1/2 inch of lemon curd into each pie crust. Use the whole 1/2 of the jar, so keep adding curd wherever its needed.

5. Fold the edges of the crust into the middle so that it creates a little gathered middle (as shown).
6. Sprinkle some vanilla sugar on top (this adds the sweet compliment to the tart lemon)

Then bake in the oven for about 20 minutes, or until you notice the tops of the bites browning and the curd bubbling from the folds.

Timing will vary! I use a gas oven, so my baked goods tend to bake much faster than in a standard electric oven.

Occasionally check them around 18 minutes.

Once baked, remove from oven and place each bite on a wire rack to cool. I use a little pair of rubber tongs to help me get them out of the pan. You can also let them cool in the pan on the rack if you wish.

Lastly, sprinkle them again with a more liberal amount of vanilla sugar, so that the sugar dissolves into the curd that has bubbled out from the folds. Gotta add some more sweet, of course!

Enjoy these baby bites warm, coated with some vanilla ice cream -- or cooled and alone. I told you that was easy, right? Anyone can make these!!

NEST + NOURISH .... mother's day citrus + herb sea salt DIY

The boys and I shared some special time creating this seasoned sea salt for my mother and mother - in- law for their special day. They had so much fun picking the herbs and zesting the fruit! I have included the labels for you to print and use. Some without dear mom to be used as a gift for any special someone. Simply use this template and print on heavy white or creme card stock.

Citrus + Herb Sea Salt Recipe

1 cup coarse sea salt

1 teaspoon each of fresh sage, thyme, and, rosemary

1 teaspoon each of lemon and orange zest

Preheat oven to 200 degrees. Finely chop herbs and zest and mix with the salt. Place on a baking sheet and bake for about 8 minutes, just enough to dry the herbs and zest. When the salt is cooled you or your child may crush together with your fingers or pulse in a food processor to incorporate the flavors of the salt, herbs, and fruit zest. This salt works great on most everything, especially eggs.

I used these weck jars for packaging, but any small jar would work well. enjoy!

DIY Craft Booth SIgn

The craft market season is in full swing and being pretty new to the scene I'm still working on booth ideas. Last week I decided to work my booth sign. It was important to me that the sign continued my brand and added to the atmosphere of my booth, it also had to be done on a tight budget! I had so much fun looking for ideas, there are so many brilliantly creative people out there. Here's a few of my favourite ideas I came across...

I finally decided to make my sign look like a picture that would hang on the wall, I thought this would fit great with my home decor products. I was pretty happy with the result and the low budget cost so I thought it would be useful to share with my crafty counterparts out there.

Ok, so 'how to'...Before you start you'll need to have the following items at hand;

paper and heat transfer printer paper
frame and fabric
scissors and iron
computer and printer
Plexiglass - optional

First of all you're going to need to buy a picture frame. I managed to snag a bargain on sale which makes this a much more cost effective project. The size and shape of your frame will depend upon your business logo and name. My shop logo is quite elongated so I went with a long frame rather than a square one.

Presuming you already have a shop name and logo you will need to transfer this onto paper to get the spacing right. You could do this in Word, Publisher, Illustrator, whatever works for you. Print out your shop title and lay it out on the frame. It may take a couple of attempts to get the correct size that you need.

This next step is really important...you will need to flip the digital image so when it is transfered it reads the right way!!!

Once you are happy with the size and you have flipped the image, print it onto heat transfer paper following the instructions on the paper. Cut around each of the letters and logo, this will give a much cleaner finish, otherwise you will see the plastic around the letter as the image shows. I'd suggest doing a practice letter to get the hang of the transfer printing and also to check the colors are what you want. The colors can differ slightly with the heat transfer.

At this point you should have your title cut out so now you need to work on the base fabric. Take the back off the picture frame and lay it on top of the fabric you want to use as the background. I used the same organic hemp fabric I use for my pillows so it would match my products. Draw around the the backing and then cut out the shape. This will give you the exact size piece of fabric that will fit into your frame. Make sure you iron the fabric before you begin transferring the image.

Lay out your shop logo on the fabric, spacing the letters carefully. Use your iron to press the logo onto the fabric, following the instructions. Peal off the backing carefully to reveal your image underneath.

Give the reverse side of the fabric a press with the iron and then place it into the frame. If you're concerned about transporting the glass you can simply switch this out for some plexiglass at your local hardware store. And voila, you have a booth sign! This could be hung from your canopy frame, stood on a table or on shelving.

NOURISH .... growing microgreens by five and one.

Microgreens are usually what we grow in our windowsill in the winter to get some fresh green goodness, but they can certainly be grown any time of the year. I wanted to share them with you because they are such a simple way to introduce children to growing food since the sprouts appear in a few days and they can be harvested in 10 days. Typically they are used as a garnish, but I have found them to be a perfect introduction to leafy greens for children. The options are endless. Sprinkle them on vegetables, salads, sandwiches, eggs, or smoothies.

Directions for growing your microgreens

1. Use a large serving platter or container at least a couple of inches deep. I use two platters that are around 15”x15” and use one for a mild seed blend and the other for a spicy seed blend.

2. Fill container with organic soil. Sprinkle the seeds evenly over the soil trying not to layer them and cover lightly with more soil.

3. Water lightly every day and to harvest simply cut off the tops of the green leaves with a kitchen scissors.

simple! simple!
If you harvest the microgreens around 10-14 days be sure and use a fork and rake out the roots to get the soil ready for the next round of seeds. Using a container with drainage holes is certainly fine too, but I have been planting ours in trays with no drainage holes and they have been fine as long as you remove roots before reseeding.
The seed mixes I use are from Growing Microgreens and I usually get the mild mix which includes Broccoli, Kale, Kohlrabi, Arugula, Red Acre Cabbage & Cauliflower and the spicy mix with the same seeds + mustard seeds for additional spice. They last for many, many rounds of micro greens.

Inspired Heights from the Golden Gate

Springtime weather in San Francisco couldn't be more perfect! The sky is the most vibrant color blue and the entire city seems to glow in it's loveliness. There is not a corner of San Francisco that does not look lit from within and inspiration can be found around every corner. I love to visit the Golden Gate Bridge this time of year. The International Orange towers rise up against the bright blue sky and the site always takes my breath away. The bridge is celebrating it's 75th anniversary this year and what better way to celebrate than to take a walk across the bridge for a little inspiration. Here are some pictures from my Saturday morning walk across the bridge. That blue sky gets me every time!

A Crafty DIY - Scratch Card Coupons

Hi there, Helen from Cloth & Ink here, excited to share a crafty DIY with you all. Recently I had been thinking and thinking of a fun, interesting way to give my wonderful customers a coupon for my shop when I came upon the idea of making scratch cards. So the search began...'Tutorials on making scratch cards'. Here's what I found; an idea from Martha Stewart, one by Wonder Forest and finally Artmind, you may like to check them out too. So after deciding on my own version I went ahead and... voila!

So here's the how to: First of all you are going to need cards for the base of the scratch cards. These could be be similar to your business cards but feature the all important coupon code. You could do these yourself or have them printed for you, whichever you find most cost and time effective. Here's what mine look like.

I had mine printed professionally and I decided on five different coupon options:

Free shipping
10% discount
$5 voucher for my shop
$10 voucher for my shop
And the grand prize of a whopping $20 voucher

So you have your base cards, now to begin the fun scratch off panel you're going to need the following:

A sheet of adhesive clear plastic
Acrylic paint
A small roller - it gives a better finish than a paint brush
Washing up liquid - oh yes!
Card

Start off by mixing the washing up liquid with acrylic paint, 1 part soap to 2 parts paint. Many of the tutorials show the classic silver scratch off used on commercial scratch cards, that's great, but I fancied something a little more colorful. I went for a yellow to match my shop branding, you could even do more than one shade if you can't make up your mind!

With your roller, paint the surface of the plastic. You'll have to do 2 or 3 coats depending on the paints you use. I'd recommend trying a test area just to make sure it's going to scratch off the plastic you bought and to make sure the paint isn't too thick. I'm not sure how it works but it's the washing up liquid that makes the magic happen.

With the plastic sheet dry, you can can now cut strips, using a craft knife, big enough to cover the coupon panel on your card. Peel of the backing and stick the plastic to the card.

How easy is that! Here's my results, I'm so pleased with them. I plan to use them at an upcoming show and I'll be sending one out with each order I receive online. Don't miss out on the fun, visit my shop and see if you can get the grand prize $20 voucher.

DIY: Golden Eggs with Polka Dots

Hello everyone! This is my first time blogging on this community blog. I'm very excited about joining this big family!

Today I'm going to show you how to create an Easter egg that "glows"! It's very easy.

What you'll need:

metallic acrylic paint (I used Gold here)
an egg (Probably not a real one. I found mine in a local craft store, it's made of styrofoam. Plastic ones might work if you can't find styrofoam.)
glitter
craft glue
brushes (a small brush with rounded tip, and two with flat tips)
a tray

Here are the steps:

Apply a thin layer of acrylic paint on the egg. When the first layer is dry, paint a second layer. You might want to use something to hold the egg so that you won't get paint on your fingers.
When the second layer of paint is completely dry, draw dots on the egg using the small brush with a small amount of glue, as shown in picture 3. Note that you don't have to apply glue all over the egg at once, because it may start drying before you apply the glitter.
Apply glitter on the top of each dot. Use a flat brush to carefully clean the glitter around the dots.

Few things to note:

Depending on the material of your egg, you might need to paint it with more than two layers. Also, when you choose the paint, note the opacity of it (usually shown on the package). A high opacity is more desirable.
Acrylics dry very fast, so clean your brush as soon as you finish painting. The paint might damage your brush if it's left on the brush too long.

You can try different colour combinations of the paint and glitter, or experiment with different patterns!

A Simple Addiction: Spicy Garlic-Ginger Noodles

Sometimes the simplest things can be the most satisfying. This week I've been taken with clementine oranges, those tiny cuties with a tart edge. Just peel and eat. Repeat.

Then there are these spicy noodles which I think are almost as easy. Almost. The best thing about them is that you probably have all the ingredients available in your pantry and vegetable crisper. If not, improvise! I used thinly sliced red pepper for colour and crunch, but a bundle or two of baby bok choy or julienned carrots are just as nice.

Got gluten issues? Sub in some 100% buckwheat soba noodles instead of whole wheat pasta. Or use your favourite gluten-free spaghetti. Want to make this dish a vegan affair, just sub in vegan spread for the butter and agave for the honey. Totally easy.

This dish packs quite a punch. I like it spicy and so I've used both fresh jalapeno and my favorite asian condiment, sriracha here. But it's not over the top and there's some sweetness to tame that heat out. But however you make these noodles, I know you'll make them again and again. Addictively delicious.

Spicy Garlic-Ginger Noodles
I've made this with hosin sauce and without and both ways are delicious - the hosin just adds a bit more punch, flavour-wise. But if you don't have any, don't sweat it.

250 grams spaghetti (whole wheat or 100% buckwheat soba is fine)
1 tablespoon butter
1/4 cup onion, finely diced
2 large cloves garlic, minced
1 tablespoon fresh ginger, minced
1/2 large red pepper, sliced thinly (or use 1 carrot julienned, or 1 or 2 bulbs baby bok choy, sliced)
1/2 jalapeno pepper, minced
2 tablespoons soy sauce
1-2 tablespoons honey or agave syrup
1 teaspoon hosin sauce (optional)
1 teaspoon sriracha
1 teaspoon toasted sesame oil
1 teaspoon sesame seeds + additional for serving

In a large pot, bring water to a boil and add in noodles. Meanwhile, in a large skillet, melt butter and add in onion, garlic, and ginger and saute over medium heat. Let this get soft but not browned. Add in the red pepper and jalapeno.

In a small dish, stir together the soy sauce, honey, hosin, sriracha, and sesame oil together. Set aside.

Drain pasta when cooked to al dente, add to pan with the onion-pepper mixture and pour over the sauce. Toss well. Sprinkle with sesame seeds and serve in 2 deep bowls. Garnish with additional sesame seeds.
