Saiba comprar e conservar e constate ainda que combinar queijo e vinho não é tão simples como se pensa.&lt;br /&gt;&lt;br /&gt;A matéria-prima é sempre a mesma, o leite. Mas é possível produzir bons queijos finos no Brasil? Sim. “Nas regiões montanhosas de Minas Gerais, as noites e manhãs são frias e os patos ricos em minerais. Soma-se a isso uma forte cultura queijeira de quase três séculos e um plantel de gado leiteiro muito bem adaptado. Ou seja, condições para um verdadeiro ‘terroir’, que garante matéria-prima de qualidade”, diz o maître fromager Jair Jorge Leandro.&lt;br /&gt;&lt;br /&gt;O mesmo ocorre em algumas regiões de São Paulo e na serra do Rio de Janeiro. Assim como o vinho, um fator que diferencia um queijo nacional de um similar importado é o “terroir”, que combina detalhes específicos de solo e condições climáticas. Ou seja, o leite produzido na região dos Queijos Especiais, conhecida como “Circuito dos Queijos Finos” – uma espécie de quadrilátero, tendo como vértices as cidades de Lavras, Cruzília, Andrelândia e Madre de Deus – em Minas Gerais, é diferente do leite da França ou da Itália, por exemplo.&lt;br /&gt;&lt;br /&gt;A legislação brasileira também exige que o leite seja pasteurizado, enquanto na Europa, os queijos são feitos com leite cru. Leandro ressalta outro aspecto importante: o tempo de maturação, que influencia no sabor, na textura e no aroma. “O brasileiro está habituado a comer queijos no estágio inicial de maturação, já o europeu consome queijos próximos do ápice ou até após a maturação”, ele explica.&lt;br /&gt;&lt;br /&gt;Apesar do consumo de queijos no Brasil ser irrisório (2,7 quilos per capita) comparado a países como Grécia (28 quilos), França (23 quilos) ou mesmo ao nosso vizinho, a Argentina (11 quilos), produzimos mais de 200 tipos de praticamente todas as famílias. Entre elas estão as de mofo branco, como o Camembert e o Brie; mofo azul, como o Gorgonzola; de pasta filada, como o Provolone; de fermentação propiônica, típica dos grandes queijos suíços, como o Gruyère; de casca tratada, como o Saint Paulin; massa cozida, como o Creme Bola ou o Gouda; chèvres (queijos de cabra) e duros, como o parmesão.&lt;br /&gt;&lt;br /&gt;O queijo é um alimento com dez mil anos de história. “No Brasil, ela remonta ao século 18, na região do Serro Frio (Minas Gerais) quando portugueses tentaram obter um queijo similar aos do tipo Serra, comuns em Portugal, porém, com leite de vaca, já que não havia ovelhas leiteiras naquelas paragens. Foi o início do Queijo Minas”, conta Jair Jorge Leandro, autor do livro “Queijos - do Campo à Mesa”, da Editora Melhoramentos e da Empresa das Artes.&lt;br /&gt;&lt;br /&gt;“Em 1880, um comerciante português trouxe dois queijeiros da Holanda para produzir o Edam nas terras de Palmyra, na Serra da Mantiqueira, no Vale do Paraíba, que originou o popular Queijo do Reino. Em 1920, foram os dinamarqueses que se instalaram na região, hoje conhecida como o Circuito dos Queijos Especiais. Eles lançaram o queijo prato (diferente do encontrado nos mercados), criaram a variedade Minas Frescal e diversos queijos, todos de origem dinamarquesa, mas que foram batizados com nomes de produtos semelhantes produzidos em outros países, como Gouda, Gruyère e Gorgonzola.”&lt;br /&gt;&lt;br /&gt;Com alto valor nutricional, rico em cálcio, fósforo, proteína e vitamina A, o queijo é excelente para a alimentação diária. “Ele também possui ácido linoléico conjugado que ajuda a combater a gordura abdominal”, garante Silmara Figueiredo, consultora de marketing da Associação Brasileira das Indústrias de Queijo (Abiq). “O consumo dos tipos comuns, como o prato, representa 65% e é maior entre o público feminino”, ela explica. “Já os queijos finos, de sabor pronunciado, são mais apreciados pelos homens e estão associados ao prazer e às bebidas alcoólicas.” (Especial para o Mídia News)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Dicas de como comprar e degustar&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Como comprar&lt;br /&gt;&lt;br /&gt;Veja se a loja está acostumada a trabalhar com esse produto. Para isso, verifique se o estoque é variado e se os equipamentos usados para a conservação dos queijos estão em bom estado. Compre só a quantidade a ser consumida, evitando armazenar por muito tempo.&lt;br /&gt;&lt;br /&gt;Como guardar&lt;br /&gt;&lt;br /&gt;Guarde as sobras dos queijos dentro de sacos plásticos. Feche bem e coloque na parte baixa da geladeira. Faça verificações periódicas. Se perceber a proliferação de bolor (desde que superficiais), abra o saco e lave com água e sal.&lt;br /&gt;&lt;br /&gt;Como montar uma tábua de queijos&lt;br /&gt;&lt;br /&gt;Uma tábua deve ter no mínimo três tipos de queijos. Geralmente, são utilizados de cinco a sete tipos, de famílias diferentes, como mofo branco, mofo azul, casca tratada, massa cozida, chèvres e duros.&lt;br /&gt;&lt;br /&gt;Como degustar&lt;br /&gt;&lt;br /&gt;Eles devem ser consumidos do sabor mais suave ao mais forte. Para acompanhar, pão (francês ou italiano) é obrigatório. Para fazer sucesso com os convidados não é necessário comprometer o orçamento. É possível servir, por exemplo, o famoso plateau de fromages (ou “tábua de queijos”), hábito tão difundido entre os europeus.&lt;br /&gt;
Considerando a variedade de tipos, é possível realizar dezenas de combinações, o que torna a tarefa de escolher os queijos um agradável exercício de criatividade. Há também de se levar em conta as bebidas e os complementos, que afinal, são determinantes para a correta seleção das peças da mesa da ceia.&lt;br /&gt;
Para não errar na seleção, ter em mente algumas características básicas dos queijos é essencial. O primeiro ponto é que eles são classificados pela textura, segundo pelo processo de fabricação e, posteriormente, por “famílias”.&lt;br /&gt;
Utilizar o último critério para definir o que será servido é a melhor pedida. As “famílias” agrupam queijos que possuem características marcantes em comum: os “Queijos Azuis”, por exemplo, possuem como característica principal a presença do fungo “penicillium roqueforti” na massa. Os representantes mais famosos desta família são o Gorgonzola e o Roquefort.&lt;br /&gt;
Já a família dos “Queijos com Mofo Branco” é composta por tipos como o Camembert e o Brie,&amp;nbsp; maturados pela presença do “penicillium candidum”.&lt;br /&gt;
Há mais famílias, é claro, e as citadas são meramente ilustrativas.&amp;nbsp;&lt;br /&gt;
A divisão, ao contrário de complicar, ajuda a compor a mesa de recepção, porque uma das primeiras regras da apresentação é não mesclar tipos da mesma família. Se o desejo é servir quatro tipos, é possível escolher um de mofo branco, um de mofo azul, um queijo de massa semicozida, como o Colonial e um queijo duro, como Parmesão Premium.&amp;nbsp;&lt;br /&gt;
Utilizando queijos bastante conhecidos para compor a tábua, esta ficaria assim:&lt;br /&gt;
Brie, Gorgonzola, Colonial e Parmesão.&lt;br /&gt;
Para refrescar a degustação, é recomendável servir também um patê ou um boursin. Outros complementos possíveis são os talos de salsão, bastonetes de cenouras, frutas secas, frutas frescas, geléias e castanhas variadas, além dos pães, que são imprescindíveis.&lt;br /&gt;
Os vinhos devem ser escolhidos para harmonizar a maior parte dos queijos presentes na tábua, e não há necessidade de muitos tipos da bebida. Um bom espumante, sempre presente, um vinho tinto e um branco podem proporcionar bons resultados. Se a opção for por cervejas especiais, é interessante que haja uma Pilsen leve e uma Ale mais encorpada.&lt;br /&gt;
A reação dos convidados vai recompensar plenamente o preparo, e o desafio do anfitrião será o de se superar na seleção de novos tipos de queijos para o próximo ano.&lt;br /&gt;
