Le violette erano lì, una macchia bellissima in mezzo al verde del prato ed il loro profumo intenso non poteva che inebriare.&lt;br /&gt;
L&#39;occasione di una cena tra amici ha fatto il resto.&lt;br /&gt;

Per la panna cotta:&lt;br /&gt;

Per preparare la gelatina di violetta: lasciare a bagno i fogli di gelatina in acqua fredda per 10 minuti. Nel frattempo frullare i petali con metà dello zucchero, quindi mettere il composto ottenuto in una ciotola con l&#39;acqua ed il rimanente zucchero, mescolando fino a completo scioglimento. Strizzare bene la gelatina e metterla in un pentolino facendola sciogliere senza farla bollire. Pulite e tagliate a rondelle molto sottili il porro. Scaldate due cucchiai di olio in una padella e mettetelo a rosolare.&lt;br /&gt;

Pulite e tagliate a rondelle gli asparagi. Fate lo stesso con i fiori di zucca, sfilettandoli in parti più piccole.&lt;br /&gt;

Aggiungete gli asparagi al soffritto di porro. Salate e lasciate cuocere per circa 20 minuti. 3 minuti prima della cottura degli asparagi unite anche i fiori di zucca.&lt;br /&gt;

Prendete uno teglia di 20 cm circa di diametro e foderatela con carta forno. Ricavate un disco di pasta sfoglia e ricopriteci il fondo e i bordi della teglia.&lt;br /&gt;

Riempite la torta rustica con le verdure, quindi versateci dentro anche la besciamella. Ricoprite con un altro disco di pasta sfoglia, ripiegandoci sopra i bordi.&lt;br /&gt;

Spennellate con un po di latte la superficie della torta rustica e cuocete per 15 minuti in &amp;nbsp;forno già caldo a 180°.&lt;br /&gt;

&amp;nbsp; &amp;nbsp; 500 g di fragole + alcune per la decorazione&lt;/div&gt;

&amp;nbsp; &amp;nbsp; 80 g di zucchero + 4 cucchiai per la macerazione delle fragole&lt;/div&gt;

&amp;nbsp; &amp;nbsp; 1/2 limone&lt;/div&gt;

&amp;nbsp; &amp;nbsp; 500 g di mascarpone&lt;/div&gt;

&amp;nbsp; &amp;nbsp; 1 bicchiere di latte&lt;/div&gt;

&amp;nbsp; &amp;nbsp; 1 pizzico di sale&lt;/div&gt;

&lt;i&gt;Preparazione del Tiramisù alle Fragole:&lt;/i&gt;&lt;/div&gt;
&lt;div&gt;
&amp;nbsp;Affettare sottilmente le fragole nel senso della lunghezza e metterle in una ciotola con il succo di mezzo limone e 4 cucchiai di zucchero. Coprire con una pellicola e lasciar macerare in frigorifero per almeno 2 ore.&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
&amp;nbsp; &amp;nbsp; Nel frattempo separare i tuorli dagli albumi e sbatterli insieme allo zucchero con le fruste elettriche fino ad ottenere un composto spumoso, unire il mascarpone e la vanillina e continuare con le fruste a mescolare.&lt;/div&gt;

&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
&amp;nbsp; &amp;nbsp; A parte montare a neve ferma gli albumi con un pizzico di sale.&lt;/div&gt;

&amp;nbsp; &amp;nbsp; Unirli delicatamente al composto di mascarpone mescolando dal basso verso l’alto fino ad ottenere una crema omogenea.&lt;/div&gt;

&amp;nbsp; &amp;nbsp; Togliere le fragole dal frigo e scolare il succo ottenuto in un piatto fondo, aggiungere il latte ed utilizzare questo liquido per intingere i biscotti.&lt;/div&gt;

&amp;nbsp; &amp;nbsp; Nella pirofila procedere alla creazione del dolce partendo con uno strato di biscotti intinti leggermente nel liquido di macerazione, poi distribuire uniformemente uno strato di crema al mascarpone. Sistemare le fettine di fragole sopra la crema in modo da coprire tutta la superficie.&lt;/div&gt;

&amp;nbsp; &amp;nbsp; Continuare in questo modo fino a formare 4 strati di biscotti.&lt;/div&gt;

Tagliare le cipolle a fettine a farle appassire in una pentola alta, grande e antiaderente nel burro per una ventina di minuti facendo in modo che non si brucino. Aggiungere alle cipolle l’aglio schiacciato, la carota a dadini e il cumino.&lt;br /&gt;2. Dopo averla tagliata a cubi versare nella pentola anche la carne di vitello e lasciar rosolare mescolando di continuo in modo tale che la carne rilasci il suo liquido permettendo alle cipolle di non bruciarsi.&lt;br /&gt;3. Aggiungere la paprika, il sale a piacere e una volta mescolato coprire con un coperchio e lasciar cuocere a fuoco basso, mescolando ogni tanto, per almeno 1 ora aggiungendo solo e soltanto se necessario 1 cucchiaio di brodo nel caso in cui la carne si stia bruciando.&lt;br /&gt;4. Sbucciare e tagliare le patate a cubetti, tagliare anche il pomodoro a cubi dopo aver tolto i semi e allo stesso modo tagliare anche i peperoni, sempre senza semi. Trascorsa l’ora di cottura aggiungere pomodoro e peperoni alla carne e coprire con il brodo lasciando cuocere per un’ora quindi aggiungere anche le patate e il restante brodo lasciando cuocere per altri 45 minuti.&lt;br /&gt;5. Assaggiare, salare se necessario e servire caldissimo facendo in modo che sia denso e cremoso.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;Tempo di preparazione: oltre 3 ore&lt;/i&gt;&lt;br /&gt;&lt;br /&gt;Risultato: cremoso, sostanzioso, dal sapore speziato il gulash è quel piatto semplice ma che regala soddisfazioni. Inutile dire che è pesantuccio vero?&lt;br /&gt;&lt;br /&gt;Variante: qualcuno invece di renderlo cremoso lo preferisce più acquoso quindi volendo si puo’ aggiungere più brodo di verdure per un gulash più brodoso.&lt;/span&gt;&lt;br /&gt;
