		<description>Life Post-Competition This past weekend I competed at the NPC Gold Coast Muscle Classic in Culver City, CA. I was in Bikini Class ‘E’ and was competing against politics for placings and, PTL, I placed 3rd! I did it!!!! By the grace and strength of God, I achieved my goal of qualifying for the national contest circuit and the next show on my agenda is in Vegas at the end of July! YAY!   You can continue to follow my progress to the stage and watch me pave my way in Hollywood via Instagram, and Twitter, and Facebook.      For now, I am taking a much appreciated few days to enjoy some simple pleasures in moderation…   …And those include (in case you were interested…): Ordering late night pizza with friends (fun and rebellious, but no matter what time of day it is, it still upset my tummy. So yes, fun! but no more…) :) Sipping an ‘adult’ beverage or two…Irish Whiskey or Scotch, please! :)  NOT drinking 2.5 gallons of water a day, like I had to do the last few days before show (not usually that high, but my lovely little ‘friend’ showed up an inopportune time of the month this time…) ;) My ‘4-ingredient Pancakes’!!!! I missed this simple (CLEAN EATING) pleasure which I’m sharing again with you now! Check out my Clean Grocery Shopping List!  I made this salad from scratch last week when I wanted to add a superfood, super nutrient-dense power side to my boring last-meal-of-the-day protein shake… I was so excited about it that I documented it via iphone photos (I mean, what trainer/nutritionist worth her salt doesn’t photograph her food? Just sayin’.) so that when it was finished and realized it was incredibly delicious (and BOY was it ever) I could share it with you all (with a teaser on Instagram first, of course). So without further ado, here’s the very easy, very fast recipe for my ‘Warm Italian Kale Salad’…Enjoy! INGREDIENTS 1/2 bag of organic kale (I use Trader Joes) 1 T coconut oil 1 cup mushrooms, sliced 1/2 medium sweet or yellow onion, chopped 6–8 asparagus spears, chopped 1/2 cup sun dried tomatoes 1/4 cup parmesan or parmesan &amp;#38; romano cheese (optional) Onion powder, garlic powder, black pepper and sea salt to taste INSTRUCTIONS Heat large skillet over medium heat. Chop onions and asparagus (I used previously steamed asparagus), slice mushrooms. Melt coconut oil and coat pan. Add onions, mushrooms and asparagus to pan, toss to coat with coconut oil, and cover to let steam and simmer. To fully explain, I’ll have to back up a bit and lay down the history that brought me to this opportunity in the first place… When I moved to Los Angeles a few months ago, I knew I was led here; I was supposed to be here, but I didn’t know why. In many ways, it’s still a mystery to me, but pieces are starting to fall into place. As I’ve always done to build my network and presence in which ever city I’m in, I reached out to a networking group for women entrepreneurs called CRAVE. I had seen their books in Seattle, and knew they were a high-caliber socially engaging group of amazing women looking to build eachother up, rather than competing with one another. I found a CRAVE LA meet-up close by and rsvp’d immediately. While attending that event, I met the two beautiful and super stylish owners of Esme &amp;#38; Eve Photography (boudoir photographers), Jennifer Hoffman and Marissa Gallagos. We connected immediately. 		<description>This post is ESPECIALLY for the ladies of Cause Fitness, but men, please read this and share it with the ‘Cardio Queens’ in your life. :) Recently, especially since living in Los Angeles, I’ve realized that women treat weight training like the plague! They literally run…and cycle, and eliptical, and Zumba…away from it, readily accepting their fate, doomed to die on cardio equipment due to the endless hours spent on those machines.   Hey you crazy hamster, get off that dang wheel!!!   Wanna know a secret? Active, fueled muscle tissue, not cardio, will keep you small forever! What does that mean? I’ll try to explain. Read on… YOUR BODY: If we break it down to the VERY basics (bear with me, smarty pants…I’m trying to make it VERY easy to ‘get’) is made up of  organs/tissues/fluids to keep you alive, bones to keep you upright and protect your ‘innards’, muscle to stabilize and move you, and fat which insulates, protects and provides energy for survival. BUT…let’s break it down further and talk strictly aesthetics for a minute. YOU WANNA LOOK GOOD: No, you wanna look GREAT! But you wanna be healthy at the same time right? 		<description>Sirloin Burger with Coconut Cauliflower Mash Today’s recipe comes from cookbook Gourmet Nutrition based off of the certification program I’m studying, Precision Nutrition, so you know it’s healthy and nutritious, and I’ve tried it so I can tell you first hand that it’s  delicious! Get excited, you’re having burgers for dinner tonight without the guilt! I own the Gourmet Nutrition cookbook, and if you like these recipes, and the chicken and pesto pizza recipe I shared earlier, you would LOVE it. Highly recommend grabbing a copy for your cookbook collection.  Sirloin Burger Prep Time: 3 min. Preparation Time, 10 min. Cooking Time INGREDIENTS Ground sirloin or extra lean ground beef (170 g) 6 oz Salt 2 pinches Pepper 1 pinch Chili powder 1 pinch Fresh garlic (minced) 1 tsp Onion (finely chopped) 2 tbsp Worcestershire sauce 1 tsp Olive oil cooking spray   INSTRUCTIONS Preheat a non-stick frying pan on medium heat. Combine all ingredients except cooking spray together in a mixing bowl and stir until completely combined. Form into a round shape about ¾ inch thick. Lightly coat pan with spray and place the sirloin burger into the pan. Cook the burger until lightly browned and then gently flip and brown the other side. Cook all the way through and serve.
