<p>Toate lucrurile simple sunt, de fapt, foarte complicate. In cazul de fata, friptura. De vita, de purcel, de &#8222;pasare&#8221;, de oaie, de orice. Pana de curand, orice taietor de lemne sau cioban putea sa aprinda trei vreascuri sa scoata o bucata de carne din desaga si sa o arda/prajeasca la foc pe o nuia de alun. Era simplu, era gustos, era eficient. </p>



<p>Mai modern, am inceput sa ne gandim la metode complicate prin care o bucata de animal ajunge sa se transforme in mancare. Baituim cu 3 zile inante nu stiu carne, punem vin peste alta, lasam la marinat, la fezandat, la maturat. Sufocam la sous-vide cate 12-48 de ore bucati de carne pana se taie cu lingura. Tinem cuptorul aprins cate 6 ore pentru un &#8222;vitel la tava&#8221; care pana la urma tot &#8222;talpa de bocanc&#8221; ne iese, insipid ca un bolovan spalat de apa. Ca vitelul e de fapt manzat, si nici ala prea juvenil. </p>



<p>Avem si placerea de a ne abera destul de mult cu ce e bine sa faci cand ai o bucata de carne. Unii o prajesc ca niste fanatici &#8211; nu cumva sa curga vreun firicel de zeama ca &#8222;nu e facuta&#8221; si ca ne imbolnavim si murim cu totii. Altii, pe de alta parte, o plimba pe langa gratar si o mananca asa, cruda, de zici ca se antreneaza sa traiasca in salbaticie doar cu un cutit si fara chibrit (nu ca ar putea sa comita vreo crima impotriva vreunui animal). </p>



<p>Eu n-am pretentia ca sunt un guru al fripturii, dar, in &#8222;episoadele&#8221; urmatoare va zic cum sa faceti daca vreti sa faceti carne buna pe care sa o mancati cu placere. Fie ca e de vita, de porc, de pui sau de altceva. </p>



<p>In episodul de azi, <strong>carnea de vita.</strong></p>



<h2 class="wp-block-heading">Carnea</h2>



<p>Mai important decat orice este sa ai o bucata de carne buna. Asta devine si mai important la noi in tara, unde vitele de carne sunt putine, iar alea care sunt, traiesc mult si greu. </p>



<p>Ce inseamna buna? In primul rand inseamna ca animalul a fost dintr-o <em>rasa de carne</em>. Cum n-ai de unde sa stii asta, mergi catre al doilea aspect, maturarea. </p>



<p>O <em>carne de vita maturata</em> minim 20 de zile devine mult mai frageda decat una proaspata. Cu cat mai indelungata maturarea, cu atat carnea este mai aromata, mai gustoasa si mai frageda. Dar aceasta maturare vine si cu un cost suplimentar. </p>



<p>Un punct important: <em>grasimea</em>. Nu vei face niciodata o friptura buna daca carnea nu are putina grasime. De preferat mai multa. Ajuta la multe grasimea aia. Mai jos sunt doua bucati de carne. Care credeti ca iese mai gustoasa si mai suculenta? </p>



<p>Si nu in ultimul rand, este foarte importanta <em>grosimea. </em>Daca e cat un deget de tractorist, ne declaram multuimiti. Daca e mai mult, e si mai bine. Daca e mai putin, nu e bine. </p>

<p>Am experimentat de-a lungul timpului cu multe feluri de carne de vita si, in acest moment, pentru publicul larg, am doar o recomandare: <strong><a rel="noreferrer noopener" href="http://gurmandapetit.ro/products/" target="_blank">Gurmand Apetit </a></strong>. Nu, nu m-au platit sa zic de ei, n-am nici o legatura cu ei. Dar din toate incercarile mele, daca vreau sa merg la sigur, merg catre ei. Ziceti voi in comentarii daca stiti ceva similar sau mai bun. </p>



<h2 class="wp-block-heading">Tigaia</h2>



<p>Pentru utilizatorul casnic o tigaie buna face cat toate celelalte unelte din bucatarie. Pentru friptura iti trebuie o tigaie groasa, care mentine caldura. Nu trebuie sa fie neaparat &#8222;non-stick&#8221; (sau &#8222;de teflon&#8221;). Recomandarea mea calduroasa este sa ai in casa (cel putin) o tigaie de fonta. Gasesti cam peste tot acum, important e sa ai grija de ea, <a rel="noreferrer noopener" href="https://www.youtube.com/watch?v=KLGSLCaksdY" target="_blank">sa o tratezi corect</a> si te va tine toata viata (a ta si a nepotilor). </p>



<h2 class="wp-block-heading">Condimentele</h2>



<p>Daca ai dat o lopata de bani pe o carne buna (da, va costa mult carnea aia), n-are sens sa ii distrugi gustul cu altceva in afare de sare. Si aia pusa la final, daca simti nevoia. Crede-ma se poate si fara sare. Piperul e si el optional. Putin rozmarin proaspat? Sa zicem. </p>



<p>Ajuta totusi sa ai putin unt. Pentru gust, pentru caramelizare, pentru aport de grasime. </p>



<h2 class="wp-block-heading">Metoda</h2>



<p>Dupa ce ai cumparat carne buna, scoate-o din frigider cam cu o ora inainte de o gati. Trebuie sa fie la temperatura camerei, astfel se va gati mai repede si mai uniform. Nu-i da cu sare, nu-i face nimic. Las-o asa. </p>

<p>Pune o tigaie de fonta pe focul mare si las-o acolo pana fumega si inca 2 minute dupa aceea. Nu-i pune ulei, nu-i pune nimic. </p>

<p>Unge carnea cu putin ulei si aseaza-o in tigaie. Focul ramane mare. </p>

<p>Pune un pahar de vin si stai cu ochii pe ceas. Pentru o bucata de carne cu grosime de 2 cm ai nevoie de 3 minute pe fiecare parte. </p>



<p>Atat trebuie sa faci. Sa bei vin si sa stai 3 minute. Nu te atingi de carne, de tigaie, nu te uiti sa vezi daca se arde. Nimic. Astepti. </p>



<p>Dupa 3 minute intorci carnea (pe pariu ca nu-i lipita?) si pui peste ea cateva bucatele de unt. Se va topi incet, va face fumaraie mare, dar e de bine. </p>

<p>Inca 3 minute pe partea asta si e timpul sa scoti carnea intr-o farfurie. </p>



<p>Toarna peste carne tot ce a mai ramas in tigaie, acopera cu cu un capac si &#8230; din nou stai. 6-7 minute cel putin, poate chiar 10, pana cand carnea se relaxeaza si sucurile se raspandesc uniform. N-avea grija, nu se raceste, ca doar n-ai gatit la Polul Nord. </p>



<p>E aproape gata. Scoate carnea pe un tocator si taie felii de-a latul fibrei. Uita-te la ea, o sa iti dai seama cum vine fibra. Pune in farfurii, adauga 3 linguri de piure de cartofi cu mult unt, si sigur o sa ma pomenesti (de bine). Gusta o felie si, daca crezi ca trebuie, adauga putina sare. </p>

<p>Hai ca iar m-am intins la vorba. Pe scurt ar fi asa: </p>

<p>IMPORTANT: metoda si timpii de mai sus sunt pentru o bucata de carne <span style="text-decoration: underline;">de vita/vitel</span> cu grosimea de 2 cm, gatita mediu. Mai adaugati cate 2 minute pe fiecare parte pentru fiecare centimentru in plus la grosime. Pentru o carne &#8222;bine facuta&#8221;, cautati informatii pe alte bloguri.</p>

<p>&#8222;Lucrare grea, în fond, dacã mã gândesc de câte ori am fost pus în fata unor<br>fierturi fade si pietroase, cu gust de orez si ruginã apoasã, denumite inconstient<br>ardei umpluti. Mâncare nationalã, aceastã gãtealã poate fi paradisiac de gustoasã,<br>dar numai cu un pic de efort si cheltuialã.&#8221; </p>

<p>Incepand de la citatul de mai sus, m-am dus intr-o zi la piata gandidu-ma cum sa fac sa fac niste ardei umpluti buni. Si tot gandindu-ma, a rasarit ideea de a face ardei umpluti dar in loc de ardei sa folosesc gogosari. Gogosarii sunt tot (un fel de) ardei, asa ca n-are ce sa strice. Si asa am venit acasa cu 6 gogosari mari si grasani. Teo s-a ocupat sa procure niste carne de porc si restul aveam prin casa. </p>



<p>La umplutura si la sos sunt multe variante. Eu nu zic ca ar fi vreuna mai buna sau mai rea, dar cred ca reteta de mai jos poate fi considerata de baza. Mai puteti inflori pe ici pe colo, mai puteti adauga, scoate &#8230; dupa gust &#8230; cum ar zice gospodina. </p>



<p>Presupunand ca ai 6 gogosari mari, iti vor trebui cantitatile scrise in aici in dreapta. La jumatate de kilogram de carne pui 50 de grame de orez (in poza e mai mult ca eu am mai facut si alte lucuri daca tot m-am starnit). Daca ai mai multi gogosari, multiplici. Daca ai mai putini as zice ca n-are sens sa arzi gazul. </p>



<p>Ceapa tocata marunt impreuna cu orezul si cu usturoiul se calesc in untura (unt, ulei, ce ai prin casa) impreuna cu sare si piper. Le calesti cat sa fie un orez semi-gatit. Adaugi apoi bulion si cimbru.</p>

<p>In timpul in care se calesc cele de mai sus pregatesti gogosarii. Le faci practic un &#8222;capac&#8221; decupand usor coada. Scoti semintele si vinisoarele albe (pot fi iuti, pot fi amare). </p>

<p>Ideal tot in timpul asta pui condimente pe carnea tocata. Sare si piper ar fi minimul obligatoriu. Boia afumata ajuta daca vrei sa ii dai o nota de fum. Patrunjel, marar sunt binevenite. De aici incepe creativitatea fiecaruia &#8211; pudra de curry, garam masala, scortisoara, nucsoara. Gandeste-te unde vrei sa calatoresti cu mancarea asta si fa-ti de cap. </p>



<p>Cand este gata calita ceapa cu orezul, le lasi putin sa se raceasca si le adaugi peste carne, amestecand si omogenizand. Fiecare imbucatura trebuie sa aiba atat carne cat si ceapa, orez si condimente. </p>



<p>Cu acest amestec umplii acum gogosarii, dupa care le pui capacul si ii asezi intr-un vas incapator si suficient de inalt astfel incat sa poti avea lichid pana la 3/4 din inaltimea ardeilor. </p>

<p>Pentru sos iti recomand sa folosesti supa de pui. Stock cum se mai numeste. Gasesti gasesti de cumparat dar eu n-am fost multumit de nici o varianta. Pe repede inainte, in 30 &#8211; 40 de minute fierbi niste oase / spinari / gaturi de pui si obtii acest lichid pe care il poti folosi. Desigur ca poti face mai mult si il poti tine in congelator luni de zile. </p>



<p>Dar daca n-ai chef sa mai faci si pasul asta, poti pune apa. Nu va fi la fel!</p>



<p>Totodata in sos e bine sa pui bulion si ceva condiment (eu am pus putin tarhon si putina salvie). Dar daca este sezonul rosiilor, feliaza cea mai mare rosie pe care o gasesti si pune cubuletele in tava/oala. </p>

<p>Acopera recipientul cu capac sau cu o folie de alumiu (stransa bine la margini). O ora si jumatate la 180 de grade cu capac. Inca 30 de minute fara capac (si, daca ai optiunea, cu ventilatie), adauga inca putin gust si culoare mancarii. </p>

<p>Acum ai tot ce iti trebuie. Intr-o farfurie pui un gogosar si sos cat iti place. Iar daca vrei sa ai un sos colorat frumos in care toate aromele s-au imbinat, scurge cumva tot lichidul din vas intr-un blender si in cateva secunde vei avea un sos lung si foarte gustos, care complimenteaza perfect gogosarul umplut. </p>

<p>Daca mai demult am facut o <a href="http://www.razvananton.ro/supa-de-rosii/" data-type="post" data-id="3491" target="_blank" rel="noreferrer noopener">supa de rosii clasica</a>, de data asta am modificat putin modul de lucru. Vedeti mai jos cum faceti cam cea mai buna supa de rosii, in cativa pasi simpli. </p>



<p>De la inceput va spun ca ingredientul principal trebuie sa fie de cea mai buna calitate. Nu poti face supa asta in decembrie decat daca folosesti rosii de la conserva. Abia poti sa o faci si acum daca nu ai o sursa de incredere de unde sa iei rosii mari, zemoase, moi. </p>



<p>Nu iti trebuie cele mai bune rosii ci alea care incep sa se cam duca. Alea pe care le gasesti pe jos in gradina sau care la piata sunt trase mai la marginea tarabei &#8211; rosiile &#8222;de bulion&#8221;. </p>

<p>Iti mai trebuie vreo doua cepe si o capatana de ustoroi. Ceapa si usturoiul le calesti pe aragaz, in unt, intr-o tava care apoi va merge la cuptor. Crede-ma, e cel mai bine asa. </p>

<p>Rosiile le tai bucati mari si scoti partile stricate. Nu te chinui sa dai cojile jos sau altceva. Bucati mari, puse in tava dupa ce s-a calit ceapa. </p>

<p>Peste rosii pui sare, ceva zahar (o lingurita, maxim, ajuta la scaderea aciditatii). Si tava intra la cuptor (180 de grade, foc de sus, ventilator) pana cand pare ca rosiile vor incepe sa se arda. E mult lichid acolo, putin probabil sa se intample asa ceva. Dar 20-25 de minute sunt suficiente. </p>

<p>Acum diferenta la reteta asta o face restul lichidului pe care il adaugi la acest pas. Desigur, poti adauga apa. Asta ar fi cel mai simplu dar pentru ca asta sa devina cea mai buna supa de rosii pe care ai mancat-o pana acum, iti trebuie stock de pui. Adica supa de gaina. Daca nu gasesti la magazin, fierbe niste oase si niste piele de gaina, la foc mic. Daca faci treaba asta la inceputul lucrului, vei avea o supa de pui fix cand ai nevoie de ea. Adica acum. </p>

<p>Opresti focul la cuptor acum si, dupa ce ai pus supa de pui peste rosii, adaugi ceva condiment. De obicei rosiile se asociaza bine cu busuiocul dar si oregano si chiar cu putin cimbru proaspat (nu exagera cu cimbrul, are o aroma foarte puternica). </p>

<p>Mai dai un clocot, mai gusti zeama, mai reglezi de una alta si adaugi smantana. Ca sa fii sigur ca nu se &#8222;branzeste&#8221; intai pui smantana intr-un castron si adaugi incet cate un polonic de zeama, mestecand, astfel incat temperatura smantanii sa creasca usor pana cand ajunge la temperatura lichidului din tava. </p>

<p>Despre crutoane nu-ti mai povestesc, am mai zis la cealalta <a href="http://www.razvananton.ro/supa-de-rosii/" data-type="post" data-id="3491">reteta de supa de rosii</a> cum se face. </p>



<p>In farfurie pui acum supa, stropesti cu ulei de masline, mai adaugi un guguloi de smantana si niste crutoane si mananci. Tot. E greu sa te opresti. Dar nu-i bai, e sezonul rosiilor si mai gasesti cateva sa faci si maine la fel. </p>

										<content:encoded><![CDATA[<p style="white-space: pre-line"><b>Ingrediente:</b><br />300 ml lapte  4 linguri de zahar (sau mai mult)   30 gr drojdie proaspata (sau 10 gr drojdie uscata)   500 g faina   50 grame unt   un ou    1/2 lingurita de sare</p>
<p><b>Portii:</b> 24 gogosi</p>
<p>Da, chiar asa! Mai jos este reteta pentru cele mai bune gogosi. Nu glumesc, nu e reclama, nu e minciuna! Sunt pufoase, sunt dulci atat cat trebuie (nu ca nu poti sa mai pui ceva miere peste ele la o adica), sunt putin crocante la exterior si se fac usor in cativa pasi simpli. Alaturi sunt ingredientele si mai jos, pas cu pas, ce trebuie facut pentru a avea un lighean de gogosi pufoase.</p>
<p>Din ingredientele mentionate de mine au iesit 24 de gogosi. Mai mult decat suficient pentru o dupa-amiaza ploioasa.</p>
<p>Inainte de toate, incepem cu doua recomandari.<br />
Ideal ar fi ca ingredientele sa fie la temperatura camerei. <p>Apoi drojdia e bine sa fie proaspata, pentru ca va creste mai frumos, mai repede si o poti portiona mai usor (cati dintre voi aveti cantar care sa cantareasca exact 10 grame de drojdie uscata?). <p>Aluatul se face simplu. In primul rand pui drojdie cu putin zahar, o lingura de faina si cateva linguri de lapte la crescut la loc cald. <p>Intr-un bol amesteci laptele caldut, drojdia crescuta, zahar, oul, sarea si untul topit. Amesteci toata compozitia cu un tel si apoi torni putin cate putin faina (poate fi cernuta daca vrei). Intai merge cu telul dar pe masura ce adaugi faina trebuie sa pui mana la treaba si sa amesteci vreo 20 minute pana cand faina este incorporata. <p>Acum multa vreme, am avut o reteta de pizza scrisa pe aici pe blog. Gandind retrospectiv, nu era deca o coca coapta cu ceva pe deasupra, nu prea semana cu ceea ce s-ar numi &#8222;pizza&#8221;. Dupa multe incercari, modificari, reincercarcari, studiu, vizite in Italia si in sud si in nord, dupa multa coca mancata si idei gandite si uitate, am ajuns la cateva concluzii foarte importante. Asa ca daca vrei sa faci o pizza cat cat de cat apropiata cu ceva dintr-o pizzerie Italiana, am scris mai departe o reteta de aluat si cateva lucruri de tinut minte inainte sa incepi.</p>
<p><strong>1. Timpul</strong><br />
Poate cel mai important aspect in lucrul cu aluatul (fie cozonac, placinta, paste sau pizza) este timpul. Daca n-ai timp, nu te apuca. Nu vorbesc neaparat de timpul in care framanti, masori, cantaresti, desi si ala poate sa varieze. Important este sa ii dai timp aluatului sa creasca, sa se dezvolte. Drojdia este un organism viu care, ca orice organism, poate avea cateodata toane. Si orice toana, fie a pisicii, fie a copilului sau a nevestei, fie a drojdiei se rezolva cu rabdare si cu <strong>timp</strong>.</p>
<p><strong>2. Rabdare</strong><br />
Aluatul ala frumos, cu care se joaca pizzeri prin filme sau pe la live cooking-uri, este un aluat muncit. De multe ori este muncit de o masina (un malaxor profesional). De putine ori este facut cu mana. Orice solutie ai folosi, tine cont ca incepi cu o masa lipicioasa, cleioasa, enervanta, care se lipeste de castron, de maini, de orice. Doar cu multa rabdare poti ajunge la un rezultat care sa semene mai mult cu o coca decat cu o masa amorfa, un amestec de faina si apa fara sanse de a se transforma intr-un blat. Ai <strong>rabdare</strong>. Nu te enerva. Ia o pauza, bea o tuica, orice. Altfel, totul e pierdut.</p>
<p><strong>3. Ingrediente de calitate</strong><br />
Desi pare ca toata faina este la fel, sunt diferente mari intre diverse tipuri de macinaturi, diverse cantitati de proteina si alte specificitati ale graului din care este facuta faina. Sunt carti scrise despre faina, sunt cursuri intregi despre asta. Nu intru in multe detalii doar va spun ca faina este foarte importanta. Folositi faina buna, desi de multe ori poate fi de 4-5 ori mai scumpa decat o &#8222;Baneasa de trei nule&#8221;. Dar nu faceti pizza in fiecare zi.</p>
<p>Pentru reteta asta avem nevoie de faina integrala si de faina 00. Folositi orice doriti dar pentru un rezultat cat mai bun eu va recomand asa:</p>
<ul>
<li>Faina integrala macinata pe piatra de la Molisana. <p>Puteti folosi si alte sortimente, eu pe astea le-am folosit cu succes. Le gasiti la <a href="https://www.supermercato.ro/produse-alimentare-italiene" target="_blank" rel="noopener">SuperMercato</a> sau prin Carrefour-uri.</p>
<p>Drojdia este un organism viu. Sunt multe feluri de drojdie folosite in berarii, la fermentatul vinului, in panificatie sau la producerea de prajituri. Noi, utilizatorii casnici, nu prea stim diferenta dintre ele. Pentru pizza noastra avem nevoie de drojdie proaspata, care sa fi fost pastrata la frigider si care sa fie cat mai departe de termenul de expirare.</p>
<p><strong>4. Temperatura</strong><br />
Temperatura este importanta atat pentru ca drojdia sa faca treaba dar si pentru ca aluatul sa se coaca uniform. In principiu temperaturile de mai jos pot fi obtinute cam cu orice dispozitiv casnic. <p>Cam de lucrurile astea trebuie sa tineti cont inainte sa incepeti. Sunt necesare minim 18 ore, ideal 21 de ore pentru un aluat de calitate. In cea mai mare parte a timpului, acest aluat va sta la frigider sau in afara lui. Dar sunt necesare cateva interventii pe parcusul acestui interval.</p>
<p><strong>Foarte important:</strong></p>
<p>&#8211; cantitatile de mai jos sunt pentru un aluat cu o hidratare de 80%. Acesta este aluatul &#8222;perfect&#8221;, dar este mai greu de manevrat, impaturit, intins deoarece este foarte umed. Daca sunteti incepatori in ale aluaturilor, folositi doar 315 ml de apa. Rezultatul va fi bun!</p>
<p>&#8211; in orice pas v-ati afla, daca aluatul este prea lipicios nu adaugati faina. Ungeti-va mainile cu ulei si continuati.</p>
<p>&#8211; orice abatare de la timpii de mai jos este posibila. Rezultatele vor varia, desigur, dar daca chiar nu va incadrati in timpii de mai jos mai puteti scadea / adauga in functie de program.</p>
<p>Asadar, pentru un aluat de pizza cu 80% hidratare, pasii sunt urmatorii:</p>
<p><strong>Pasul 1</strong><br />
Faina 00 &#8211; 250 g<br />
Faina integrala &#8211; 250 g<br />
Apa la temperatura camerei &#8211; 400 ml<br />
Drojdie proaspata &#8211; 7 grame</p>
<p>Amestecati fainurile intre ele intr-un castron, dizolvati drojdia in apa si turnati tot lichidul peste faina. Amestecati totul cu o furculita pana cand toata faina este incorporata in apa.<br />
Lasati castronul acoperit cu folie de plastic la <em>temperatura camerei</em> (21 &#8211; 22 de grade) timp de <em>o ora</em>.</p>
<p><strong>Pasul 2</strong><br />
Sare &#8211; 15 grame</p>
<p>Adaugati sare si mestecati in continuare cu o furculita. Trebuie sa va inarmati cu rabdare deoarece coca este lipicioasa, apoasa. Incercati sa faceti asta macar 20 de minute, cu cat rezistati mai mult cu atat mai bine. La un moment veti putea continua cu mana, dar aluatul va fi in continuare destul de lipicios.<br />

<p><strong>Pasul 3</strong><br />
Scoateti castronul din frigider si din aluat formati bile. In teorie va ajunge pentru 3 pizza, dar daca poftele sunt mari, puteti face si doar 2 bucati. Aluatul ar trebui sa fie acum mult mai maleabil si mai usor de lucrat. Daca este in continuare lipicios, rezistati tentatiei de a adauga faina. Folositi ulei (de masline) pentru a va unge mainile si a prelucra aluatul.</p>
<p>Bilele de aluat formate le veti aseza in containere separate (boluri, castroane) unse generos cu ulei (de masline), si vor intra la loc la <em>frigider (7 grade)</em> pentru inca <em>8 ore.</em></p>
<p><strong>Pasul 4</strong><br />
Scoateti aluatul la<em> temperatura camerei (21 &#8211; 22 grade)</em> si lasati-l sa se &#8222;incalzeasca&#8221; timp de <em>2 ore</em>.</p>
<p><strong>Pasul 5</strong><br />
Incalziti cuptorul la cea mai mare temperatura posibila. Orice depaseste 250 de grade este bine. Ideal ar fi 300 de grade sau chiar 320, dar majoritatea cuptoarelor casnice nu au aceasta &#8222;putere&#8221;. Deci practic sfatul meu este sa dati cuptorul la maxim. Eu mai pun si o placa de otel care se incalzeste si odata cu cuptorul si ajuta la revenirea in scurt timp la cea mai mare temperatura dupa deschiderea usii.</p>
<p>Formati pizze individuale pe care le asezati in tava cuptorului sau in orice alt recipient (rotund sau de orice alta forma).</p>
<p>Ungeti aluatul cu sos de rosii in strat subtire si adaugati ingredientele preferate. Cu cat mai putine ingrediente, cu atat pizza se va coace mai frumos si mai uniform. Cu cat adaugati mai multe ingrediente, cu atat cresc sansele sa aveti aluat necopt, si parca e pacat de orele de asteptare.</p>

<p>Inca mai poti sa gasesti la piata ceva rosii bune, de gradina, cu gust decent. Nu iti trebuie din alea care arata ca pe coperti de reviste, cele mai gustoase sunt alea strambe, deformate. Iar daca ai tot mancat rosii in diverse forme si te-ai saturat de ele, reteta asta le da o alta forma, o textura diferita si le alatura unui fel de branza fina si delicata. Innobilam totul cu doua felii de trufa si putin pesto si ai un antreu/aperitiv sau chiar mic dejun de exceptie.</p>
<p>Gasim burrata in multe locuri acum si, chiar daca au aparut incercari timide de a reproduce burrata in Romania, pana cand ne perfectionam v-as recomanda sa mergeti tot pe cele produse in Italia. <p>Procesul este relativ simplu. Iei cateva rosii super coapte si le pui in blender. Asa cum sunt ele, cu coaja, cu seminte, si nu opresti aparatul pana cand nu ai un sos cremos. Sosul asta, oricum ar fi el, il dai printr-o sita, sa elimi diverse bucatele ramase netocate. <p>Ca sa ajunga jeleu, avem nevoie de foi de gelatina. Folosim foi pentru ca preparatul nu este fiert, iar aceste foi se descurca foarte bine cand e vorba de &#8222;inchegarea&#8221; alimentelor reci. <p>Citesti pe plic cum se folosesc, dar las si eu aici scris, sa ramana mostenire. Foile se lasa la inmuiat in apa 5 minute. Se incalzeste foarte putin o parte din sosul de rosii si se adauga foile de gelatina. Se amesteca pana cand se dizolva complet iar apoi se impreuneaza cu restul sosului.</p>

<p>Pentru ca am cules din gradina doua buchete mari de busuioc care au stat pe masa din bucatarie cateva zile, am tot simtit in toata casa mirosul de busuioc proaspat si mi-am dat seama ca aroma lui nu este potrivita doar pentru mancare. M-am tot gandit ce sa fac cu el, cum sa ii pun aroma in valoare altfel decat in salata sau intr-un pesto, pana cand mi-am dat seama ca poate fi mirosit dintr-un pahar in care se afla si ceva alcool si ceva acidulat.</p>
<p>Important este sa folositi flori de busuioc la &#8222;reteta&#8221; asta, deoarece au mai multa aroma si mai putin gust. Ne intereseaza aici aroma lui, gustul vine de la celelalte ingrediente. Gasiti la piata buchete intregi de busuioc proaspat, asa ca n-aveti nici o scuza.</p>
<p>Busuiocul este de mai multe feluri, dar cele mai intalnite feluri sunt cele de busuioc &#8222;clasic&#8221;, cel verde, si busuiocul rosu sau mov. <p>Pentru bautura asta ne mai trebuie o votca aromata. Eu folosesc Danzka cu aroma de coacaze negre. <p>Cateva afine proaspete ajuta aroma dar si aspectul paharului, iar apa tonica amaruie intregeste gustul. <p>Pentru a putea simti pe deplin aromele, avem nevoie de un pahar cu gura larga, ideal un pahar mare pentru vin, in care sa ne intre si nasul in momentul in care bem. <p>Guacamole!</p>
<p>Astazi gasim acest termen pe multe meniuri de restaurante, bodegi, terase si birturi. Il gasim prin cinematografe, alaturi de cipsuri din tortilla, il gasim pe malul marii alaturi de creveti sau alte &#8222;fructe&#8221; ale marii, si cam pe oriunde vrei sa iei o masa rapida sau un snack.</p>
<p>Desi un preparat in voga, guacamole a fost descoperit prima data in 1697, ca fiind un amestec de avocado, sare si lime, macinate foarte fin intr-un mojar, pana ajung de consistenta unui sos. Asta este preparatul original, care a suferit ceva modificari in trecerea lui prin timp. S-au adaugat rosii, ceapa, usturoi, busuioc, seminte de pin, smantana si multe altele. Asa ca de la reteta de baza, originala, reteta de guacamole s-a dezvoltat putin.</p>
<p>Cel mai important lucru este sa folosesti un avocado bun. Sunt multe <a href="https://www.finedininglovers.com/article/how-many-avocado-varieties-do-you-know-here-are-over-50" target="_blank" rel="noopener">soiuri de avocado</a> pe lumea asta, dar cel mai bun soi pentru guacamole este soiul numit Hass. Este foarte aromat si in acelas timp foarte cremos. Ca sa fii sigur ca iti iese reteta, avocado trebuie sa fie moale la atingere. <p>Daca ai ingredientele la indemana, totul este simplu. Cel mai important, pentru un guacamole cremos, este sa tai rosiile cubulete, sa le dai cu sare si sa le lasi la scurs intr-o sita. <p>Dupa ce cuburile de rosii s-au scurs de zeama, poti marunti restul ingredientelor. Intr-un mojar adaugi avocado si usturoi dat pe razatoarea mica. <p>Daca treci granita pe la Vama Veche spre statiunile Bulgaresti, ai de mers pe coasta Marii Negre cativa kilometri pana ajungi la statiunile &#8222;de lux&#8221; de pe litoralul Bulgaresc. Dupa ce treci de Burgas, faci dreapta si ajungi la granita cu Turcia. Dai o tura pe la Istambul, faci o baie in Marmara sau, daca vrei, in 4 ore ai ajuns la Alexandroupoli de unde poti sa iei un feribot spre insulele Greciei. In toata calatoria asta, poti gasi cateva variante ale unei supe/sos/fel principal care are la baza iaurtul.</p>
<p>Mai modesta si lungita cu apa in Bulgaria (Tarator), supa este imbogatita cu orez, ou si unt in Turcia (Yayla Corbasi) si este transformata in sos pentru aproape orice in Grecia (<a href="http://www.razvananton.ro/tzatziki/" target="_blank" rel="noopener"><strong>Tzatziki</strong></a>).</p>
<p>Ramanem astazi in Bulgaria, pe malul marii, la o terasa modesta, unde primesti toate felurile de mancare comandate deodata, de nu stii daca sa te apuci de desert, de salata sau de midii. O supa din asta de iaurt racoreste cea mai calduroasa dupa-amiaza si stinge orice paharel de mastika.</p>

<p>Important este sa ai iaurt, castraveti proaspeti, sare si apa. Usturoiul e optional si poate fi inlocuit cu menta proaspata. <li>prajim semintele pana incep sa se coloreze</li>
<li>amestecam iaurtul cu castravetii si usturoiul</li>
<li>adaugam apa rece pana la consistenta dorita</li>
<li>reglam de sare</li>
<li>adaugam deasupra semintele prajite.</li>

<p>Ceva mai rar intalnita in zonele noastre, tocana de peste se gaseste prin lumea larga sub diverse forme, cu ingrediente variate si denumiri pe masura. Moqueca este in Brazilia, Psarosupa in Grecia, Cacciucco sau Buridda in Italia. Mai avem Bouillabaisse in Franta, Cioppino in San Francisco sau Caldo de siete mares, in Mexic.</p>
<p>Cu atatea denumiri vin si ingrediente si metode diferite de gatit, derivate din istoricul local, specificul zonei sau ce gasim in gradina sau in mare. Eu am gasit in Marea Neagra niste hering sarat. Nu era el sarat de-a gata, dar in cateva zile a devenit numai bun de afumat. Doar ca doua bucati au fost arestate pentru o tocana rapida, asa ca prezint si varianta mea de Moqueca. Sau Cacciucco. <p>Am mai avut nevoie de ceva legume &#8211; in general se foloseste ceapa, morcov, ardei colorat, doi-trei catei de usturoi si ce verdeata gasesti pe la coltul casei (patrunjel, oregano, menta). Unii folosesc rosii de la conserva, altii rosii proaspete, unii nu pun rosii deloc. <p>Legumele taiate le-am calit in ulei de masiline pana cand s-au inmuiat putin. <p>Am taiat pestele in bucati potrivite. <p>La foc mediu pestele meu s-a facut in cam 7 -8 minute. Dupa caz (si dupa grosimea pestelui) timpul asta poate varia.</p>
