To Market with the Iovine Brothers
By Carolyn Wyman

Iovine Brothers Produce is the Markets most-visited stand. Their northern sale bins form Iovines most-visited aisle. Shopping lists and dinner menus are routinely discarded at the sight of its $2 blackberries, 99 cent mangos and 33 cent corn.
How are the brothers able to offer such great deals? You might guess the typical boring modern story of commerce conducted in a quiet office on a computer. But the Iovines actually get about half their fruits and vegetables on their bi- to tri-weekly trips to the Philadelphia Wholesale Produce Market—since June 5, in its sparkling-new Essington Avenue facility. (In winter, when Iovine-contracted local farmers arent growing, the percentage from the wholesale market can be as high as 90).
While this new markets setting is minimalist-modern (mini forklifts buzz down the central corridor of its vast industrial space like planet rovers in an outer-space movie) and (literally and figuratively) cool, the food-buying process is old-fashioned. Tagging along with Jimmy Iovine as he and his brother Vincent and store buyer Challie Gangloff visited their favorite vendors there early one recent Tuesday morning, there was almost as much handshaking and backslapping as at a political convention, and a similar amount of sizing up and strategizing.
Hows it goin? Jimmy asks a salesman at Waleski Produce, the source of many of Iovines greens.
Im tight, Neil Markovic replies. South Carolinas (growing season) done. And Richardsons late, he finished, referring to a Jimmy-favored Maryland farmer.
Jimmy grabs an ear of Georgia corn from a big wire vertical tower in front of the Waleski stand, rips away half the green and takes a big bite. If corn is sweet, its sweet raw, Jimmy explains, as he wipes the juice with the back of his hand. But he turns away when he hears hell have to pay $18 for 48 cobs. Thats big bucks. Markovic says the price should come down with increased supply in a couple of weeks.
He and Gangloff like both the looks and the price of some No. 1 quality snack pack or small-sized bananas at an all-banana vendor: Theyre going for $3 less per crate than usual. Jimmy says its his ability to act on daily deals like this that gives Iovines the advantage over supermarket chains with year-long food contracts—deals that, after meeting costs and a minimum profit margin, Iovines passes along to its customers.
But they pass up this particular bargain after Gangloff consults his computer-generated shopping list and sees that they still have 4,000 pounds of bananas back at the store.
Bananas are Iovines best-seller (they sell six tons a week), as they are for most produce sellers. In general, fruit rules over vegetables, Jimmy says, although his many customers with Southern roots mean big sales of fresh black-eyed peas and lima beans (if and when he can get them). These same folks will be first in line for his muscadines (a wild grape popular in wine-making due in August). Good-looking fruit almost always does best, but uglies will sell to penny-pinchers, especially on fruits that people dont directly bite into (like citrus). Asked for a product bomb, Gangloff mentions large bags of potatoes, likely, Jimmy posits, because of the schlep factor for the many customers who come in on-foot.
Depth of selection (that has gotten deeper with the rise of cable cooking shows) and speed have also contributed to the stands success, Jimmy believes. Jimmy learned the value of speed in his first food business: selling hot dogs from a cart to lines of busy doctors and students outside Hahnemann medical school in the 1980s. When he and Vincent took over the Ro and Son Reading Terminal Market stand from their boss, then-owner Ray DiSimone, in 1994, there were only three check-out registers: There are now 12. Jimmy credits Vincent with getting their credit-card transaction time down to a lightning-fast three seconds.
Meanwhile back at the Southwest Philly wholesale market, Gangloff is getting a printout of his purchases from T.M. Kovacevich. In less than an hour, hes dropped $8,000 at this one fruit seller. By late morning, a tractor-trailer full of his mornings purchases will pull up at Reading Terminals loading dock. By noon, some will be busting up Philadelphians shopping lists and dinner plans in Iovines first aisle.

/news/view/135

By Carolyn Wyman, Reading Terminal Market Market Correspondent

Next week marks the official beginning of summer and a different way of cooking and eating for many people: lighter, cold meals eaten and sometimes also cooked outdoors but just as often purchased, because youre too hot and tired for cooking.
The Market can help with all that. How?
Check out the following list of common outdoor dining situations youll likely encounter this summer in Greater Philadelphia and ideas on how to source them from the Market.
Backyard Barbecue. Flavored sausage grillers from Martins or Smuckers; ground beef, hot dogs, beef or poultry steaks or ribs from almost any Market meat stand; veggies for grilling from Iovines, O.K. Lee or Fair Food; ketchup or relishes (hot dog, onion, even zucchini) from Kauffmans; barbecue or jerk sauces and spice rubs from Jonathan Best and the Spice Terminal; and cedar grilling wraps or blocks from Amys Place. Or let Market merchants do the work and simply pick up already-cooked baby-back ribs from The Rib Stand; barbecued chicken from Dienners or Franks A-Lot or fried chicken from Delilahs; smoked turkey legs or wings from L. Halteman, Martins or Godshalls; and cole slaw and potato salad or, for dessert, key lime delight or banana pudding, all from A.J. Pickle Patch. A few pints of Bassetts Ice Cream could be another perfect ending. For other barbecue ideas, browse The Cookbook Stalls shelf of barbecue books including multiple Steven Raichlen titles and Sam the Cooking Guys new Just Grill This!

Lawn Picnic at the Mann. Pinot noir or Riesling from Blue Mountain Vineyards; cooked shrimp and cocktail sauce from one of the Market fish vendors; cheese from Downtown Cheese, Salumeria or Hatville Deli paired with grapes or melon from a Market product stand; Cajun crab dip from L. Haltemans; flavored cream cheese spreads from Hatville Deli or Jonathan Best; tabouli, hummus or baba ghanoush and pita bread from Kamals; Tuscan white bean dip or lentil and walnut salad from Metropolitan Bakery; jarred bruschetta spread or sundried tomato bread dip from Salumeria; sandwich wraps (cut into appetizer-sized pieces) from Jonathan Best; deviled eggs from A.J. Pickle Patch; fruit or pasta salad from By Georges or Mezze; boxed lunch salad or sandwich (pre-ordered) from Tootsies; and for dessert, lemon cooler cake from Termini Bakery or pie from Beilers. Want to make the picnic dishes yourself? Get instruction on how at the Picnic Party for Couples class at La Cucina on Friday, June 3.
Lunch or Snack for a Wissahickon Hike or Schuylkill Trail Bike Ride): Fresh or dried fruit from Iovines, O.K. Lee or Fair Food; nuts or trail mix from Iovines, O.K. Lee or Sweet as Fudge; peanut butter from Kauffmans or L. Halteman; dehydrated vegetable chips from Kauffmans; cheese from Hatville Deli, Downtown Cheese or Salumeria; power bars from Jonathan Best or hearty muenster, oatmeal raisin, or peanut butter cookies from Beilers.
Workday Park Bench Lunch. Sandwich from the Original Turkey, Hatville Deli or Hershels; muffuletta from Becks Cajun Caf, hoagie from Spataros or Carmens or a specialty sandwich from By Georges or Mezze; green or pasta salad from Down Home Diner, Mezze or Tootsies; layered Mexican salad from 12th Street Cantina; faux (vegetarian) chicken or tuna salad sandwich from Basic Four along with their signature ginger beer; lemonade from Lancaster County Dairy, Millers Twist or Jonathan Best; glass-bottle Coke or Sprite from Down Home Diner; and for dessert, a cookie from Famous 4th Street or a whoopie pie from Beilers or Flying Monkey. Or prepare a summer work lunch yourself at home with bread from Le Bus or Metropolitan or tortillas (for wrap sandwiches) from 12th Street Cantina, luncheon meat and/or cheeses from Hatville Deli or Salumeria; crab and shrimp salad from Coastal Cave; veggie sandwich fixins or green salad ingredients from any of the Market produce stands; bulk chicken, Buffalo chicken or ham salad from A.J. Pickle Patch; and salad dressing, mayonnaise, pesto or other spreads from Jonathan Best to pull it all together.
Should you shop on an especially hot day, dont be surprised (or embarrassed) if you decide to bag your outdoor plans and picnic in the Markets air-conditioned comfort.

/news/view/126

Food and love; love and food; a perfect combination. This Valentines Day, six couples continue the tradition of tying the knot at Philadelphias most recognized culinary landmark, the Reading Terminal Market. At noon, Common Pleas Court Judge Jeffrey P. Minehart willpreside over theweddings, one couple at a time, and the couples will be treated to a complimentary dessert reception in the Spice Court seating area hosted by Reading Terminal Market merchants. The entire ensemble will be serenaded by live romantic music provided by Violinist Elizabeth Cary.

The tradition of getting married at Reading Terminal Market started in 2002 when Common Pleas Court Judge Bernard J. Goodheart renewed his famous practice of marrying couples on Valentines Day, putting the name Goodheart on their marriage certificate dated February 14th.. When Judge Goodheart retired in 2005 he passed the tradition onto his friend, Judge Minehart, who lovingly continues the tradition to this day.

text/html2010-09-20 17:00:00-05:00http://www.readingterminalmarket.orgReading Terminal MarketThree Bags Full of School Lunch Ideas by Carolyn Wyman
/news/view/124

We all go to the Market for a quick lunch or to source an ambitious dinner party but did you know it can also provide solutions for that newly returned, weekday problem of what to pack in the kids’ school lunch?

Some people rely on supermarkets for brown bag fixin’s but as with food for the other day parts, Market options are broader, and often cheaper and fresher as well.

Who knows when those peanuts were ground to make a jar of Jif? Whereas you and yours can watch L. Halteman’s classic peanut butter grinder make this kid-favorite with only one ingredient: fresh peanuts. Or try one of Kauffman’s flavored peanut butters (like butterscotch or cappuccino) paired with lower-sugar jelly or seedless jam from Jonathan Best (should you have one of those many kids who hate seeds). Less traditional bread spreads with equal-if-not-greater health appeal include on-the-premises-made hummus, also from Jonathan Best, and baba ghanoush and white Tuscan bean dip from Metropolitan Bakery.

Deli counter offerings at Hatville Deli “meat” every kind of taste preference and some dietary restrictions (like low or no salt turkey and ham) and unlike supermarket rack offerings, can be purchased in any quantity. Or for a change of pace when you’re not doing a lot of leftover-generating dinner cooking, pack your kids’ lunch with sliced meatball sandwiches made with meatballs from By George or barbecued chicken pieces from Dienner’s or Franks A-Lot.

Interesting bread options for those mains could include fresh-made rice cakes (another before-your-eyes experience) at Kauffman’s, pumpkin-seed bread from Le Bus, a soft pretzel from Miller’s Twist or the Pennsylvania General Store, whole wheat or spinach tortillas from 12th Street Cantina, or sliced pizza bread (yes, you read that right) from Beiler’s Bakery.

For sandwich accompaniments, homemade potato chips at A.J. Pickle Patch, oat bran sesame sticks from Jonathan Best, Kiddiesnax trail mix (including animal and cheese crackers, pretzels and M&Ms) from Sweet As Fudge, or bagged baby carrots, nut and seed mix, or fried vegetable chips from Iovine Brothers Produce (for kids who won’t eat vegetables any other way). There are also lots of kid-friendly offerings in A.J. Pickle Patch’s refrigerator cases, including carrot raisin salad, a potato salad/mac and cheese blend called smackaroni, Jell-O salad (with mandarin oranges and pineapple) and dirt pudding (made with vanilla pudding and crushed Oreos).
What else could be for dessert? Beiler’s offers lots of tempting possibilities, including the food-value-filled muenster (i.e. monster) cookies featuring oatmeal, peanut butter, chocolate chips and M&Ms, high-fiber balls (with muenster ingredients plus oat bran) or their Rice Krispies roll, a chocolate chip and M&M-enhanced log version of the famous marshmallow Krispies Treats that can be doled out to multiple lunch bags by the slice. Parents of kids with gluten allergies can find lots of good dessert options at Jonathan Best, including Mary’s Gone Cookies.
Fresh fruit like grapes, a pear or an apple from any one of the Market’s produce stands are other possibilities if you’re lucky enough to have a kid who’ll eat them. More on Market apples and apple delicacies in next month’s column. In the meantime, here’s a sample Reading Terminal Market school lunch menu:

Monday
Butterscotch peanut butter on a rice cake
Kiddiesnax trail mix
Pear

Tuesday
Honey maple turkey breast on pumpkin-seed bread
Homemade potato chips
Muenster cookie

Wednesday
Barbecued chicken wings
Smackaroni salad
Grapes

Thursday
Sliced meatball sandwich on pizza bread
Fried vegetable chips
Slice of Rice Krispies roll

Friday
Hummus on one-half soft pretzel
Baby carrots
Dirt pudding

text/html2010-09-15 19:08:00-05:00http://www.readingterminalmarket.orgReading Terminal Market30th Anniversary of PA Dutch Merchants in the Market
/news/view/123

Wednesday, September 30, 11am, Piano Court
Celebrate the 30th anniversary of Pennsylvania Dutch merchants in the Market!

The year was 1980. Frank Rizzo was Mayor and Jimmy Carter was in the White House. The Phillies, led by Steve Carlton, Pete Rose and Mike Schmidt, were driving towards their first championship. Commuter trains still rumbled in and out of the train shed above. And below it, the Reading Terminal Market was a near ghost town. Only around 20 merchants were left in a decaying building that lacked heat and air conditioning. There was no Convention Center–the surrounding neighborhood was noteworthy mostly for its array of X-rated movie houses and dive bars.

In the summer of that year a couple of young managers for the Reading Company, Jeff Algatt and Steve Park, drove down to Booth’s Corner Farmers Market and invited about a dozen Amish farmers to set up shop in the vacant northwest corner of the Market. Dave Esh of Hatville Deli was one of them, and says today “They didn’t even want their children spending time here, it was so bad.”

Much has changed for the better since then, and our Amish merchants deserve a great deal of credit. This month we celebrate 30 years of the Amish in the Market. Today, the Amish have become synonymous with the Reading Terminal Market, running 13 stands from Wednesday through Saturday.

On Wednesday, September 30th at 11am in Piano Court, we will celebrate the 30th anniversary with a special program featuring the original and current standholders, the former Reading Company managers, and a free slice of shoo fly pie for every customer (while supplies last).

/news/view/121

The Down Home Diner has been a fixture in the Market for 23 years, occupying a couple of different locations in the Market during its long history. After opening in the space now occupied by Amy’s Place in March 1987, the Diner has been in its current location on the Filbert Street side of the Market for 15 years. Founder and Executive Chef Jack McDavid, who early in his career worked under George Perrier at Le Bec Fin and later starred in the Food Network’s “Grillin’ & Chillin with Bobby Flay,” decided it was time for the Down Home Diner to get a makeover. Construction on the new Diner is now underway. When it is finished next month it will feature a new expanded kitchen, a sparkling new dining room, showcases offering house made treats including sticky buns and fruit pies, and its own restroom. In addition, upon re-opening, Jack plans to keep the Diner open later into the evening for dinner. The Diner will be closed for construction until about mid-September; stay tuned for their re-opening announcement! The Down Home Diner and Reading Terminal Market appreciate your patience while the Diner is closed and look forward to serving you again soon when it reopens. Save the Farm!

text/html2010-05-17 13:03:00-05:00http://www.readingterminalmarket.orgReading Terminal MarketVisits to Reading Terminal Market Reach All-Time High in 2009
/news/view/104

The Reading Terminal Market today announced that it reached 5.8 million visits in 2009, the highest total in the Market’s storied 118-year history.

At the same time, the Market also reported that even in the midst of the economic recession, its sales totaled $21.4 million last year, an increase of 3.8% over 2008. The sales and visitor count figures underscore the Market’s position as the most popular destination in Philadelphia.

“To see such positive results in the midst of the Great Recession is certainly heartening, and we are grateful to our customers for their support,” said Paul Steinke, General Manager of the Reading Terminal Market Corporation, the non-profit that manages the Market. “The Market and its merchants have continually strived to respond to the changing needs of our customer base, and we also benefit from the growing popularity of Center City among tourists and locals alike.”

The year-end report for 2009 showed nearly 5.8 million visits to the Market, an increase of 2.8% over 2008, and the largest number of visitors since the Market began measuring visitor traffic in 2002. It was the sixth consecutive year of increased visitor traffic to the Market.

Average visitor counts on Sundays in 2009 increased 14% over 2008 and 26% over 2007, which was the Market’s first full year of Sunday operations. The Market’s busiest day remains Saturday, which averaged 20,895 visitors in 2009.

At the same time, according to the report, comparable store sales increased 3.8% over 2008, to $21,471,000. The Market’s four merchandise categories reported the following comparable store sales results: Fresh Food (including produce, meats, poultry, and seafood) up 7.3%; Food Court/Lunch up 5.7%; Market Basket/Grocery (including bakeries, cheeses, dairy, and packaged foods), no change in comparable store sales; and Mercantile/Non-Food (including cookware, books, jewelry and crafts – the Market’s smallest merchandise category) comparable store sales fell by 2.5%.

The Market last year was the largest redeemer of Supplemental Nutritional Aid Program vouchers (aka “food stamps”) in all of Pennsylvania, according to the U.S. Department of Agriculture. This figure reflects the extraordinary socio-economic diversity of the Market’s growing customer base.

“People from all walks of life visit Reading Terminal Market,” Steinke said, “and we welcome them all.”

About Reading Terminal Market
Reading Terminal Market, founded in 1892, is one of the largest and oldest public markets in the United States. The Market is managed by the Reading Terminal Market Corporation (RTMC), a non-profit corporation created in 1994 to preserve the architectural and historical character, and function, of the Market as an urban farmers market. The Market houses 79 locally-owned and operated small retail tenants, the vast majority of which sell food in one form or another. All of the tenants are locally owned and operated; as a matter of policy, RTMC does not lease to chain or franchise businesses.

/news/view/100

Tuesday, February 16, 11am-2pm,
Center Court

Mardi Gras is coming to Philadelphia with “Philly to New Orleans,” a free celebration at the Reading Terminal Market on Fat Tuesday, February 16, 2010 from 11 a.m. to 2 p.m.

Hosted by Beck’s Cajun Café, “Philly to New Orleans” evokes the joy and revelry of Mardi Gras with the music, spectacle and tastes of the Big Easy in Philadelphia’s historic public market.

“Get ready, it’s going to be a great party,” said Chef Beck, owner of Beck’s Cajun Café. “Everyone should come and enjoy this taste of New Orleans right here in our own backyard. As they say in New Orleans, ‘Laissez les bon temps roulez’!”

The festivities begin at 11 a.m. with Dixieland music and a parade. Chef Beck will serve-up authentic New Orleans favorites including jambalaya, mufaletta and a giant pot of gumbo. Proceeds from the sale of gumbo will benefit the New Orleans Area Habitat for Humanity to help the people of New Orleans displaced by Hurricane Katrina.

At 1 p.m., there will be a cutting of the King Cake, a Mardi Gras tradition. A King Cake is cinnamon-filled dough twisted in the shape of a hollow circle. The cake is sprinkled with colored sugar of purple, green and gold, representing justice, faith and power. A porcelain or plastic “baby” is baked into the King Cake. Tradition holds that whoever finds the baby hosts the next party and is crowned king for the day.

All 14 food vendors, each of them small, independent merchants like those here at Reading Terminal Market, were suddenly put out of business. While the city vows to rebuild the market, it will take at least 18-24 months.
