    * 10 colheres de chá de manteiga em temperatura ambiente&lt;br /&gt;
    * 2 colheres de chá de raspas de casca de laranja&lt;br /&gt;
    * 1 colher de sopa de sumo de limão&lt;br /&gt;
    * açúcar em pó q.b.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Aqueça o forno a (200ºC).&lt;br /&gt;
Unte com manteiga e polvilhe com açúcar, retirando o excesso 10 forminhas individuais de soufflé.&lt;br /&gt;
Bata as gemas com o açúcar, o sumo de laranja, o licor e a casca ralada.&lt;br /&gt;
Bata as claras em castelo firme.&lt;br /&gt;
Junte o sumo de limão e misture cuidadosamente.&lt;br /&gt;
Adicione as gemas às claras e envolva sem bater.&lt;br /&gt;
Deite o preparado nas formas.&lt;br /&gt;
Com o polegar, marque um círculo perto da borda (assim o soufflé, ao crescer fica com uma forma bonita).&lt;br /&gt;
Leve ao forno já quente até que esteja bem crescido e louro.&lt;br /&gt;

Confecção:&lt;br /&gt;
&lt;br /&gt;
Lave os morangos, retire os pedúnculos e coloque-os no liquidificador ou no processador de alimentos.&lt;br /&gt;
Processe-os até obter um puré.&lt;br /&gt;
Dissolva a gelatina sem sabor no licor e coloque-a numa panela.&lt;br /&gt;
Leve a aquecer em lume brando.&lt;br /&gt;
Retire do lume e reserve.&lt;br /&gt;
Junte os morangos triturados e misture bem.&lt;br /&gt;
Bata as natas e, à parte, misture as claras com o açúcar e bata-as em castelo.&lt;br /&gt;
Misture o preparado de morangos com as natas e, por último, adicione as claras com movimentos suaves e envolventes.&lt;br /&gt;
Distribua o preparado por copos e deixe no congelador durante 2 horas.     * 20 g de manteiga;&lt;br /&gt;
    * 1 vagem de baunilha;&lt;br /&gt;
    * 1 fatia de pão branco.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Lavar e retirar o caroço às cerejas.&lt;br /&gt;
Levar o sumo de maçã a ferver dentro de um tachinho, juntamente com  açúcar e a vagem de baunilha cortado longitudinalmente em dois.&lt;br /&gt;
Juntar as cerejas, mexer bem e deixar cozer durante 5 minutos.&lt;br /&gt;
Diluír a fécula numa colher de sopa de água.&lt;br /&gt;
Cortar o pão em pequenos cubos e dourá-los na manteiga.&lt;br /&gt;
Passar as cerejas por um passador, e deitar o sumo dea cozedura dentro da caçarola, deixar ferver e incorporar progressivamente a fécula, mexendo sempre.&lt;br /&gt;
Deixar ferver durante 4 minutos.&lt;br /&gt;
Recolocar as cerejas, mexendo bem até levantar fervura.&lt;br /&gt;

Depois de as amêijoas abrirem, deita-se o caldo e as amêijoas com casca sobre o pão de milho.&lt;br /&gt;

    * sal q.b.;&lt;br /&gt;
    * 2 grãos de pimenta branca;&lt;br /&gt;
    * 3 pés de salsa;&lt;br /&gt;
    * pimenta preta em pó;&lt;br /&gt;
    * 1 dl de água;&lt;br /&gt;
    * 2 pedacinhos de raiz de gengibre.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Ferver o vinho branco e a água com os grãos de pimenta, a salsa e o aipo.&lt;br /&gt;
Temperar com sal e cozer os pedaços de peito de frango durante cerca de 25 minutos em lume brando.&lt;br /&gt;
Retirar o frango e deixar arrefecer.&lt;br /&gt;
Cortar o melão ao meio, retirar a polpa e cortá-la em pedaços.&lt;br /&gt;
Juntar ao frango, regar a mistura com o conhaque e deixar marinar durante 15 minutos.&lt;br /&gt;
Entretanto, cortar o gengibre em pequenos nacos e juntá-los à salada.&lt;br /&gt;
Para o molho, bater as natas e juntar a maionese e o ketchup.&lt;br /&gt;

&lt;br /&gt;
Colocar os cogumelos em água quente e passá-los depois por várias águas, cortando-os em fatias finas.&lt;br /&gt;
Aquecer a margarina num tachinho e juntar os cogumelos durante 5 minutos.&lt;br /&gt;
Colocar numa taça e deixar arrefecer.&lt;br /&gt;
Arranjar os espargos e cozê-los numa grande quantidade de água a ferver.&lt;br /&gt;
Escorrer e cortá-los em pequenos pedaços.&lt;br /&gt;
Juntar os cogumelos.&lt;br /&gt;

Arranjar e lavar as pescadinhas, mergulhando-as em seguida no leite durante 10 minutos.&lt;br /&gt;
Retirá-las e esfregá-las com sal e pimenta, passando-as em seguida por farinha.&lt;br /&gt;
Colocar o rabo na boca das pescadinhas.&lt;br /&gt;
Lavar e descascar as batatas, cortá-las ao meio e cozer em água a ferver com um pouco de sal, durante +- 20 minutos.&lt;br /&gt;
Retirá-las, pondo-as numa travessa aquecida, polvilhadas de salsa.&lt;br /&gt;
Aquecer o óleo numa fritadeira e frigir as pescadinhas de ambos os lados, durante 10 minutos.&lt;br /&gt;
Colocá-las em papel absorvente, passando-as depois para a travessa onde estão as batatas.&lt;br /&gt;

Abrem-se as ostras e coa-se por um pano húmido a água que deitarem.&lt;br /&gt;
Coze-se a cebola na manteiga, num tacho tapado, até ficarem transparentes. Juntam-se os cogumelos, cortados em falhas, torna-se a tapar o tacho e deixa-se ferver mais 5 minutos, em lume brando.&lt;br /&gt;
Deitam-se a água das ostras e o vinho branco, no qual se desfez a farinha, e vai-se mexendo até obter um composto cremoso.&lt;br /&gt;
Se começar a ficar muito espesso, dilui-se com água morna.&lt;br /&gt;
Depois de fervinhar alguns minutos retira-se liga-se-lhe a nata e tempera-se com pimenta em pó e sal.&lt;br /&gt;
Espalham-se as ostras no fundo dum prato pírex untado com margarina, cobrem-se com o creme, polvilha-se levemente com pão ralado, e mete-se no forno.&lt;br /&gt;

Para a decoração:&lt;br /&gt;
&lt;br /&gt;
    * 120 g de chocolate branco ralado;&lt;br /&gt;
    * 1 colher de sopa de manteiga derretida;&lt;br /&gt;
    * 25 morangos grandes.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Leve ao lume num tachinho a aquecer 1/2 chávena de chá de natas, o sumo e a raspa do limão. Reduza o lume e adicione o chocolate ralado.&lt;br /&gt;
Misture bem e mexa até o chocolate derreter. Retire do lume e deixe arrefecer um pouco, mas sem deixar endurecer.&lt;br /&gt;
Bata a restante nata com o açúcar em chantilly e junte ao preparado, envolvendo bem.&lt;br /&gt;
Ponha os morangos em copos altos e finos mas só até ao meio.&lt;br /&gt;
Cubra com o molho.&lt;br /&gt;
Ponha as taças no frigorífico durante +- 3 horas.&lt;br /&gt;
Entretanto prepare a decoração: Lave muito bem os morangos e seque-os.&lt;br /&gt;
Leve a derreter em banho-maria, e mexendo sempre, o chocolate com a manteiga.&lt;br /&gt;
Mergulhe metade dos morangos no chocolate e ponha-os numa folha de papel de alumínio untado com óleo de amêndoas doces até que endureçam.&lt;br /&gt;
A seguir ponha-os num prato (não os ponha no frigorífico).&lt;br /&gt;
Sirva as taças com um morango no topo e os restantes no prato.&lt;br /&gt;

&lt;br /&gt;
    * 120 g de chocolate branco ralado;&lt;br /&gt;
    * 1 colher de sopa de manteiga derretida;&lt;br /&gt;
    * 25 morangos grandes.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Leve ao lume num tachinho a aquecer 1/2 chávena de chá de natas, o sumo e a raspa do limão. Reduza o lume e adicione o chocolate ralado.&lt;br /&gt;
Misture bem e mexa até o chocolate derreter. Retire do lume e deixe arrefecer um pouco, mas sem deixar endurecer.&lt;br /&gt;
Bata a restante nata com o açúcar em chantilly e junte ao preparado, envolvendo bem.&lt;br /&gt;
Ponha os morangos em copos altos e finos mas só até ao meio.&lt;br /&gt;
Cubra com o molho.&lt;br /&gt;
Ponha as taças no frigorífico durante +- 3 horas.&lt;br /&gt;
Entretanto prepare a decoração: Lave muito bem os morangos e seque-os.&lt;br /&gt;
Leve a derreter em banho-maria, e mexendo sempre, o chocolate com a manteiga.&lt;br /&gt;
Mergulhe metade dos morangos no chocolate e ponha-os numa folha de papel de alumínio untado com óleo de amêndoas doces até que endureçam.&lt;br /&gt;
A seguir ponha-os num prato (não os ponha no frigorífico).&lt;br /&gt;
Sirva as taças com um morango no topo e os restantes no prato.&lt;br /&gt;

    * pimenta moída na altura q.b.&lt;br /&gt;

Lave os mexilhões.&lt;br /&gt;
Aqueça a metade do azeite numa caçarola, ponha os mexilhões, tape e coza durante 5 minutos, agitando a caçarola de vez em quando.&lt;br /&gt;
Retire os que ficarem fechados.&lt;br /&gt;
Coe o caldo da cozedura e reserve.&lt;br /&gt;
Deixe arrefecer os mexilhões e retire das conchas.&lt;br /&gt;
Aqueça o azeite restante e refogue os alhos até que estejam alourados.&lt;br /&gt;
Junte o vinho e o caldo dos mexilhões.&lt;br /&gt;
Leve a ferver durante uns minutos.&lt;br /&gt;

    * 80 g de chocolate para culinária;&lt;br /&gt;
    * 500 g de queijo creme (gordo);&lt;br /&gt;
    * 180 g de biscoitos de amêndoa;&lt;br /&gt;
    * 4 colheres de sopa de essência de amêndoa;&lt;br /&gt;
    * 125 g de chocolate branco + 25 g;&lt;br /&gt;
    * 4,5 dl de natas;&lt;br /&gt;
    * 120 g de açúcar;&lt;br /&gt;
    * 50 g de manteiga derretida;&lt;br /&gt;
    * gengibre ralado fresco ou seco q.b.&lt;br /&gt;
&lt;br /&gt;
Confecção:&lt;br /&gt;
&lt;br /&gt;
Barre com manteiga uma forma de tarte amovível com 20 cm de diâmetro.&lt;br /&gt;
Passe os biscoitos pela máquina 1 2 3.&lt;br /&gt;
Misture muito bem os biscoitos esmagados com a manteiga derretida e deite na forma calcando bem. Ponha a forma no frigorífico durante 15 minutos.&lt;br /&gt;
Entretanto derreta 125 g de chocolate branco partido aos bocados com 2 colheres de sopa de natas em banho-maria.&lt;br /&gt;
Depois de derretido, misture e bata um pouco com o queijo creme, 2 colheres de sopa de xarope de amêndoa, a pitada de gengibre e o açúcar. Reserve.&lt;br /&gt;
Coloque a gelatina e 6 colheres de sopa de água numa tigela e leve ao lume em banho-maria, mexendo de vez em quando para se dissolver totalmente a gelatina. Retire do lume e reserve.&lt;br /&gt;
Engrosse um pouco as natas (3 dl) e adicione à mistura anterior, juntamente com a gelatina dissolvida misturando bem.&lt;br /&gt;
Retire a forma do frigorífico.&lt;br /&gt;
Deite esta massa às colheradas para dentro da forma, alise e ponha novamente no frigorífico.&lt;br /&gt;
Misture o chocolate para culinária partido com o xarope de amêndoas e leve ao lume em banho-maria para derreter.&lt;br /&gt;
Derreta também em banho-maria o restante (25 g) de chocolate branco com 2 colheres de sopa de natas.&lt;br /&gt;
Depois de derretido, deixe arrefecer um pouco, retire o doce do frigorífico e deite por cima do bolo.&lt;br /&gt;
Com ajuda de um garfo fino ou de um palito misture levemente os dois chocolates para dar aspecto de marmoreado.&lt;br /&gt;

Leve ao lume um tacho que seja largo com água temperada com sal.&lt;br /&gt;
Assim que a água começar a ferver, pegue o lavagante pela carcaça e ponha-o no tacho. Deixe cozer cerca de 15 minutos. Retire-o da água e parta-o ao meio no sentido do comprimento.&lt;br /&gt;
Derreter 20 g de margarina numa frigideira grande, leve a alourar em lume médio as cebolas picadinhas, as ervas aromáticas e as cenouras cortadas aos cubos muito miúdo. Mexa lentamente.&lt;br /&gt;
Coloque cuidadosamente as metades do lavagante na frigideira e regue com o champanhe.&lt;br /&gt;
Derreta o resto da margarina no molho e verta sobre o lavagante.&lt;br /&gt;
Tempere com a pimenta-de-caiena.&lt;br /&gt;

Num tacho, leve o óleo a aquecer, junte o alho muito picadinho e a cebola, mexa durante +- 2 minutos em lume forte, junte as gambas e a farinha de milho e mexa mais 2 minutos; depois deite o molho de soja, a maizena dissolvida no caldo de galinha, o Aji-no-Moto, o picante, e as ervilhas.&lt;br /&gt;
