Depois da estufa, quando o fermento  fez efeito e o panetone cresceu bastante, as formas seguem para o forno. O tempo  no forno varia de acordo com o tamanho do pão. Para meio quilo de panetone ficar  assado, bastam 38 minutos. Em uma panela de pressão grande, aqueça metade do óleo e doure a carne por todos os lados. Retire a carne, coloque os legumes, menos o tomate, com o resto do óleo, o extrato de tomate e doure os legumes. Retire os legumes e reserve. Adicione a carne, a água, o caldo de carne e o louro. Tampe e cozinhe por 30 minutos após iniciar a pressão. Desligue o fogo, deixe sair a pressão, abra a panela, adicione os legumes reservados e o tomate e cozinhe por mais 5 minutos, após iniciada a pressão, ou até que os legumes fiquem macios.
