En una sartén se dora el cerdo hasta que suelte algo de su grasa. Despues se retira la carne y sobre esa grasa fríe la cebolla picada cuando este transparente se le agrega los ajos, el ají panca, la sal, pimienta y comino se deja dorar pero sin que se queme. Cuando el aderezo esté dorado, se le añade el jugo de la betarraga, el caldo o agua y la carne de cerdo dorada cortada en trozos pequeños. Después de que rompa el hervor incorporar las papas sancochadas, cortadas en cubos pequeños. Aumenta el caldo si así lo consideras conveniente luego echar el mani molido y mezclar hasta que espese, verificar la sal.&lt;/div&gt;

En una olla poner a sancochar la calabaza junto con el clavo de olor y la canela. Cuando esta ya este cocida agregarle la chancaca. Una vez disuelta la chancaca agregar el azúcar.&lt;/div&gt;

En Luego disolver la harina en un poco de agua y vaciarla a la olla. Mover constantemente para que no se queme la mazamorra, durante algunos minutos hasta que cosa bien la harina. Se colocan a un horno de temperatura regular y a cada instante, con una cuchara, se les baña con el aceite de la fuente de hornear hasta que estén cocidas pero sin que se doren y tampoco deben quedar tiesas.
