<p>Formerly, during the celebration of Easter, the Church forbade eating of a few things, not only meat but also other food including eggs, milk, cheese, and butter.</p>
<p>But people wanted to eat something different, and thus were born the ancestors of <a href="http://recipe-finder.com/recipe/18406987725402627870">pancakes</a>, people mixed wheat flour with water and then spread it thinly on hot stones to cook. Later some prohibitions were removed and the church authorized to include eggs, milk, sugar and butter in the diet of abstinence. Given this opportunity these products were added to the original mixture and <a href="http://recipe-finder.com/recipe/13483157824580194849">pancakes</a> began to be cooked in pans (pan and bread &#8211; hence bread cake or &#8220;pan cake&#8221;) with the addition of butter or fat resulted in cakes that everyone wowed and so did the custom of cooking them stacks and stacks of <a href="http://recipe-finder.com/recipe/9645260451937697717">pancakes</a> for the first Tuesday of fasting. <h2>The different types of pancakes</h2>

<p>Pancakes, or more precisely <a href="http://recipe-finder.com/recipe/15916810861521452599">crêpes</a> as French people call them, are originated from Latin word “crispus”, which means curly, are a gastronomic element made primarily from wheat flour forming a disk-shaped mass. It is usually served as the basis of a dish or dessert applying all kinds of sweet or savory ingredients.</p>
<p>Common ingredients of the baked dough are flour, eggs, milk, butter, salt and sugar. There are generally two types: sweet crêpes with wheat flour and <a href="http://recipe-finder.com/recipe/13466953891330017420">crêpes</a> made with buckwheat flour. They are a result of cooking the batter in an extended disk-shaped pan and are cooked from both sides in a pan or something more specific like a crêpière (specific device made to cook it more easily).</p>
<p>Originated from Brittany, the western part of France, where they are called krampouz, today crêpes is a popular recipe in all European countries, especially on the Chandeleur, the day of carnival, as part of the French tradition. Buckwheat came to Europe from China and came to the Eastern Europe where it gave rise to a similar meal &#8211; <a href="http://recipe-finder.com/recipe/12178652338069532602">blini</a>. In Brittany crêpes are traditionally served with cider.</p>
<p>In central Europe they called palacinka (Czech Republic, Slovenia, Croatia), Palatschinken (Austria), palacsinta (Hungary) &#8211; all terms derived from the Romanian word “placinta” (Latin “placenta”). In some regions it is known as Pfannkuchen (Germany) and pannenkoeken (Holland) which comes from joining the words &#8220;pan&#8221; and &#8220;cake&#8221;.</p>
<p>In Spain it is often served with whipped cream, jam, sugar, chocolate or sausage (usually ham and cheese) for breakfast or as a snack in cafes and restaurants.</p>
<p><a href="http://recipe-finder.com/recipe/16576098704676654867">Blini</a> are sort of pancakes from fine flour, milk, egg and yeast that are cooked in the oven or fried with or without any filling. It is very common in Slavic (Russian, Ukrainian or Polish), as well as in Jewish cuisine.</p>
<p><a href="http://recipe-finder.com/recipe/15197260816310325399">Blini</a> are a type of pancakes or crepes made with a simple batter which extends generally over the surface of a pan. There are many variations in different cultures and countries, not just in the ingredients but in the way of it being served.</p>
<p>In the UK, Ireland, Australia, pancakes are traditionally served in what is called the Shrove Tuesday known as &#8220;Pancake Day&#8221;. (The Shrove Tuesday is better known in the United States, in France and other countries as <strong>Mardi Gras</strong> or better <strong>Fat Tuesday</strong>.) According to the tradition it is the last chance to eat something nutritious before the coming of the Lent.</p>
<p>A blintz, a blintze or blin (plural: blintzes, Russian: blini; Ukrainian: Mlyntsi) is a thin pancake (similar to a crepe).</p>
<p>The English word blintz comes from Yiddish (&#8220;blintse&#8221;), which in turn comes from blin. &#8220;Blin&#8221; comes from the Old Slavic mlin, which means “grind” (compare the Ukrainian word for blin “mlynets”).</p>
<p>Blini had a somewhat ritual significance for early Slavic peoples in pre-Christian times since they were a symbol of the sun, due to its round shape. They were traditionally prepared at the end of winter to honor the rebirth of the new sun (Pancake week, or Maslenitsa).<br />
This tradition was adopted by the Orthodox Church and survived to today. Blini were once served at wakes, to commemorate the recently deceased.</p>
<h2>The Russian Blini</h2>

<p>The traditional Russian<a href="http://recipe-finder.com/recipe/18345799546923554209"> blini</a> are made with yeasted batter, which is left to rise and then diluted with cold (zavarnye bliny), boiling water or milk just before baking them in the traditional Russian oven (to this day the process of blini cooking is referred to as baking in Russian, although currently they are pan-fried almost universally, like pancakes). Blintzes (blinchiki in Russian, considered to be a borrowed dish) it is made of unyeasted batter (usually made of flour, milk and eggs) and is almost identical to French crêpes. All kinds of flour can be used to cook <a href="http://recipe-finder.com/recipe/9839845266537726026">blini</a>: wheat and buckwheat to oatmeal and millet, although wheat is currently by far the most popular.</p>
<p><a href="http://recipe-finder.com/recipe/13920826166054512714">Blintz</a> was popularized in the United States by Jewish immigrants as the blintz is a popular dish in Jewish cuisine. While not associated with any specific religious rite in Judaism, <a href="http://recipe-finder.com/recipe/17350811075800822618">blintzes</a> that are stuffed with a cheese filling and then fried in vegetable oil are served on holidays such as Chanukah and Shavuot (when dairy dishes are traditionally served).</p>
<p>Buckwheat blini are a part of traditional Russian cuisine, almost forgotten during the Soviet times, they are still widespread in Ukraine where they are known as hrechanyky and Lithuania in Dzukija region, which produces buckwheat, the only region in the country, traditionally called in Lithuanian “grikiu blynai”.</p>

For many people, New Year&#8217;s Eve is all about going out to party. For some, however, it will still be a time to prepare food for friends and family. If you are in that second group, why not make New Year&#8217;s Eve even more fun by serving food that is traditionally considered to be lucky? Lucky food for the New Year. How can you beat that?</p>

My personal experience has taught me that you need to have all the round things that you can find in order to attract prosperity during the incoming year. Hence, we always had bunches of round fruits at the table. Why don&#8217;t we take a look at lucky food for New Year&#8217;s Eve from different parts of the world?</p>
<h2>Noodles</h2>

<p>This tradition comes from Asia, as you may have surmised. The idea is that the noodles represent long life, and if you eat noodles on New Year&#8217;s Ever (or Day), you will have a long life. There is a condition, though: you cannot break the noodles until all the strands are in your mouth!</p>
<p>If you like noodle-based dishes, then you&#8217;re in luck. You can serve all you want come your New Year party, and have a pretty good reason for it!</p>
<p>Worried that you have no idea how to make a noodle dish? While you only have to buy a pre-packed Oriental noodle mix, I think it still counts as lucky food.</p>

			<content:encoded><![CDATA[<p>Christmas is finally over, and gone with it are the numerous platters of food that everyone somehow found a way to tuck into their already way-too-full tummies. With all that food gone, foodies need not be sad though because New Year is on the way and the partying is just getting started!</p>
<p>New Year&#8217;s Eve is, however, all about cocktail parties, and unlike Christmas day where everyone expects a huge spread of rich filling dishes, these cocktail parties are all about dainty bite-sized concoctions that go down well with wine, cocktails, or whatever drinks you serve. This doesn&#8217;t mean though that cocktail parties are any less labor-intensive, contrary to that, it is actually very time consuming preparing hundreds of appetizers, since that is really how many you usually have to make if you don&#8217;t want to run out of food before the party ends. With that in mind, here are some tips, which I hope will help you throw a successful New Year&#8217;s Eve party without overstretching your resources.</p>

<h2>Pare Things Down</h2>
<p>I&#8217;ve never subscribed to the saying &#8220;the more the merrier&#8221;. Not for homework, not for the pounds, not even for parties, and surprisingly, not even for food. Instead, I have always valued quality over quantity (at least in most things). And when it comes to cocktail parties, you never should listen to the &#8220;more the merrier&#8221; mantra, unless you want to get into trouble.</p>
<p>If you want to throw a great party, make sure you pare down your guest list to a manageable size. Now that manageable size will all depend on your cooking skills and how much help you&#8217;ll be getting. If you&#8217;re going to have a caterer take care of the whole thing for you, then go ahead and invite everyone you know (although be prepared for a big fat check!). But if you&#8217;ll be doing all the cooking and hosting yourself, be realistic and invite only a select number of people.</p>
<p>It also isn&#8217;t just your guest list that you need to pare down. You also need to pare down your menu or food selection. While it is indeed tempting to try to out all the delicious appetizers and amuse-bouche recipes you can find, remember that the food, being bite-sized, takes a lot of time to prepare. So be discriminating in the number and kind of food you choose to decrease the prep time.</p>
<h2>It&#8217;s All in the Food</h2>
<p>I can never stress enough just how much time goes into preparing each and every appetizer by hand. So make sure you opt for recipes that need fewer ingredients and require simpler cooking techniques. Avoid labor-intensive recipes at all costs! And remember, just because something looks simple and elegant doesn&#8217;t mean its easier to make. So check the recipe ingredients AND instructions before deciding on what will make it or not on the evening&#8217;s menu. It&#8217;s also a really good idea to use a single main ingredient for two different appetizers, since this will help shorten your grocery list, as well as prep time.</p>
<p>To help you out, here are some easy-to-make recipes that are ideal for cocktail parties. I have categorized them as appetizers, chips and dip, and desserts, to make it easier for you to mix-and-match the ones different kinds of food you can opt to serve to your guests. Make sure you take into account the prep and cook time for each (which I have indicated for your easy reference) so that you won&#8217;t end up preparing stuff too early or too late.</p>

<p>Truth be told, I am one of those people who enjoy the days following Christmas day itself. I like it because the guests are gone and I can enjoy myself at my own pace. I like it because I can finally really enjoy the gifts my kids got and watch them play. I like it because this is the time I the leftovers start coming out of the fridge ready to just be heated up or to be reincarnated as another yummy dish.</p>
<p>If you are like me, then you&#8217;re already probably an expert in thinking up of creative ways to serve up your leftovers. However, I hope that you still find the following holiday leftover tips useful.</p>
<h2>Plan to have leftovers</h2>
<p>If you want to have lots of leftovers after Christmas, at least enough to get creative, then you&#8217;d better make sure you prepare more food than your family and guests can consume over the course of the day. Make sure your table is filled to overflowing this Christmas, or you can be sure that your fridge will be totally empty the next day.</p>
<p>Most people have a habit of picking on food that is there even when not hungry, you can bet that laying out everything at once will mean no leftovers. So instead of going the overflowing table route, you can just refill serving plates and bowls as they empty out. You can also stash your favorite dishes in your fridge ahead of time so you can be sure that you&#8217;ll have something to nibble on the next day.</p>
<h2>Store leftovers properly</h2>

<p>I love leftovers, but I hate spoiled food. Who doesn&#8217;t?</p>
<p>Make sure you don&#8217;t end up giving yourself an unnecessary headache by storing your leftovers improperly and ending up with spoiled and/or contaminated food. Here are some common tips you can follow for <strong>storing leftover food</strong><sup><a href="http://recipe-finder.com/blog/2011/12/22/extended-holiday-fun-with-leftovers/#footnote_0_2544" id="identifier_0_2544" class="footnote-link footnote-identifier-link" title="Real Simple">1</a></sup>:</p>
<ul>
<li>Store all leftovers in airtight, leakproof clear containers or wraps.</li>
<li>Divide leftovers into small, flat containers so that they cool faster. (Some bacteria spores survive the cooking process and may germinate if the food is at room temperature long enough.)</li>
<li>Refrigerate leftovers within two hours of cooking. And there&#8217;s no need to wait for piping-hot foods to cool down before storing them―modern refrigerators can handle the heat.</li>
<li>Remove the stuffing from the turkey and refrigerate it in a separate container. Left together, they may not cool fast enough, which can be unsafe.</li>
<li>Don&#8217;t refrigerate leftover cranberry sauce or other foods in cans. Once a can is opened, residual metal on the rim can leach into food and leave a metallic taste.</li>
<li>Don&#8217;t stuff the refrigerator too full. Cool air needs to circulate to keep food at a safe temperature.</li>

<p>This will probably get the purists’ gag reflex going, but Spam lovers will surely love elevating the Spam by using it for more exotic dishes like the sushi and omusubi, also called onigiri.</p>
<p>Sushi, which is made of vinegared rice (shari), and omusubi, which is made with plain or lightly salted rice, are both very flexible in that you can virtually use any kind of filling you wish to go with the rice. This means that whether or not purists agree to the use of Spam, <a href="http://recipe-finder.com/recipe/17501975556723127397">Spam Sushi Maki Rolls</a> can still indeed be technically called a sushi. The same goes for <a href="http://recipe-finder.com/recipe/9646654012893444934">Sushi Musubi</a>, which might not be in-demand in Japan, but is definitely a big hit in Hawaii.</p>
<p>Making Spam Sushi and Musibi is also a great idea if you want to get your kids to try something different without shocking their palates with raw fish. By introducing sushi and omosubi to the kids while using a more familiar ingredient as filler, they will be less likely to reject the food offhand and increase the chances that they will actually want to try out more traditional sushi and other international food in the future.</p>
<h2>Homemade Vegan Spam (Soyteena)</h2>

<p>If you’re strictly against anything processed or you don’t eat meat, then fear not because we also have a homemade spam recipe for you. Obviously, what you’ll get won’t be real Spam, but apparently the recipe below will produce something pretty similar to SPAM. I’m betting that the vegan SPAM will have more texture to it than the canned variety the rest of us are used to, but since you don’t really eat SPAM anyway, you won’t be able to compare! The photo may also not look that appetizing, but hey, neither does a whole slab of SPAM.</p>
<p>So go ahead and try out this recipe, and maybe you’ll get an idea of why so many people are hooked on SPAM.</p>
<p><strong>Vegan Spam Recipe</strong><sup><a href="http://recipe-finder.com/blog/2011/12/08/getting-creative-with-spam/#footnote_0_2440" id="identifier_0_2440" class="footnote-link footnote-identifier-link" title="I Eat Food">1</a></sup></p>
<p><em>Ingredients</em></p>
<ul>
<li>1 cup dried soybeans</li>
<li>2 cups water</li>
<li>1 cup tomato juice</li>
<li>1/2 cup peanut butter</li>
<li>2 tsp sea salt</li>
<li>1/3 cup finely chopped celery</li>
<li>1/4 cup nutritional yeast</li>
<li>1/3 cup finely chopped onion</li>
<li>1/2 cup soy sauce</li>
<li>1/2 tsp garlic powder</li>
<li>1 cup cornmeal</li>
</ul>
<p><em>Instructions</em></p>
<p>Chop the celery and onion</p>
<p>Place the soybean in a blender and pulse several times until they are pulverized to a powder.</p>
<p>Add all other ingredients except the cornmeal.</p>
<p>Blend until smooth</p>
<p>Place in a bowl and stir in cornmeal until completely mixed.</p>
<p>Oil two cans (the size 14.5 ounces of tomatoes come in; normal can size). Put half of the mixture into each.</p>
<p>Cover each can with foil and secure with a rubber band.</p>
<p>Place the cans into a Dutch oven or large pot and fill with water so they are 1/3 of the way submerged.</p>
<p>Bring the water to a boil, then cover, reduce heat, and simmer, steaming the SPAM for two hours (or longer).</p>
<p>Remove cans from pot and allow to cool, then remove SPAM from cans.</p>

<p><strong>Bacalao</strong> – Bacalao refers to the dried and salted codfish that is used to a main ingredient for a variety of Portuguese, Brazilian, and Puerto Rican dishes. In Portugal, The traditional Christmas dinner involves boiled bacalao that is served alongside boiled cabbage, potatoes, eggs, and onions, all smothered with olive oil. <p>I cannot count how many times I have heard people mistake these two for being the same. The difference is actually simple to remember. Sashimi is raw fish (or other seafood) sliced thinly and served on its own, with wasabi and soy sauce on the side. You can get wasabi powder at any Japanese grocery store. Sushi, on the other hand, is vinegared rice which is rolled and filled with seafood, egg, and/or vegetable.</p>
<p>Obviously, there are a lot of sashimi and sushi variations, but I am a sucker for tuna and salmon, so here are the three best recipes for sashimi in my opinion:</p>

<p>Now we can&#8217;t talk Japanese food without having ramen somewhere in the conversation, can we? This Japanese noodle dish can be found anywhere &#8211; and I mean anywhere, in and out of Japan. It does wonders for an aching body and a soul in need of comforting as well. If you thought that there are too many kinds of sushi to choose from, you would be blown away if you were to take a long and hard look at all the kinds of ramen there are. Practically every area in Japan has its own version!</p>
<p>In general, however, there are four umbrella categories for ramen: shio (salt), tonkotsu (pork bone), shoyu (soy sauce), and miso. These categories are tied to the soup base. Of these categories, miso is the &#8220;youngest&#8221;. It only became really popular around 1965 and was developed in Hokkaido.</p>
<p>Here is a great ramen recipe to try out, and remember how especially good these can be on a cold winter night.</p>
<p><strong>Miso Ramen Recipe </strong><sup><a href="http://recipe-finder.com/blog/2011/12/02/japanese-food-for-the-home-cook/#footnote_0_2400" id="identifier_0_2400" class="footnote-link footnote-identifier-link" title="Steamy Kitchen">1</a></sup></p>
<p><em>Ingredients</em></p>
<ul>
<li>4 eggs</li>
<li>10 oz (285 g) dried ramen noodles</li>
<li>1/2 cup (200 g) fresh or canned bamboo shoots, sliced</li>
<li>1/2 cup (170 g) fresh or canned corn kernels, drained</li>
<li>1/3 cup (80 g) defrosted frozen or fresh spinach</li>
<li>8 cups (2 liters) store-bought or homemade pork or vegetable broth</li>
<li>2 teaspoons instant dashi granules</li>
<li>1 tablespoon soy sauce, or to taste</li>
<li>4 tablespoons fresh miso paste</li>
<li>1 cup (100 g) fresh bean sprouts</li>
<li>1 stalk green onion (scallions), finely chopped</li>
<li>4 teaspoons chili oil (optional)</li>
</ul>
<p><em>Instructions</em><br />
Place the whole, un-cracked eggs in a medium pot and fill with water to cover eggs by 1 inch (2.5 cm). Turn the heat to high and when boiling, turn the heat off and let the eggs sit in the hot water for 10 minutes. Promptly use a slotted spoon to remove the eggs and peel the egg under cold running water. Slice each egg in half.</p>
<p>Return the same pot of water to a boil. Add the ramen noodles and cook according to package instructions (most ramen noodles only take 3 minutes to cook.) Drain and rinse with cold water to stop the cooking.</p>
<p>Divide the noodles, hardboiled eggs, bamboo shoots, corn and spinach among 4 large serving bowls.</p>
<p>In a large pot, add the stock, instant dashi and soy sauce. Bring to a boil over high heat. Remove from the heat and stir in the miso. Taste the soup and add an additional 1 to 2 tablespoons of miso if you’d like. Ladle soup into each bowl. Top each bowl with fresh bean sprouts, green onions and a drizzle of chili oil, if desired.</p>
