Healthy Lunch Recipe Links

Its Been a long time since my last post on this favorite Blog of mine, so I thought of just dropping in and posting some amazing links to some sites which I came across while looking out for Health Recipes. In fact I was trying to locate some Quick and Easy recipes which would also be Healthy, especially taking into the account the present need for eating healthy and staying healthy.

I then thought of creating separate post for each category of these Healthy Recipes in that I will now try and have a few posts classifying them into Healthy Breakfast Recipes, Healthy Lunch Recipes, Healthy Dinner Recipes .....and so on. Lets start with Healthy Lunch Recipes for the present.

Let me humbly submit that these are not my Recipes but links to some of the sites on which I found some really interesting and Healthy Quick Prepare Recipes. So check them out for yourself.

HOME MADE ALL TIME FAVORITE "KACCHI / KUTCHI DABELI"

Dear friends, as promised earlier, I could not post a new recipe for quite some time, for which I extend my sincere apologies. Making up for it with two Home Made Snack Recipes, Both prepared by my daughter with me too sharing a part of the spoils. That is how we should spend our time especially in the Lock Down Period, rather than waste our time, so that all in the home are Happy.

This is a totally Home made recipe so you may change the ingredients as per your choice and taste buds.

LIST OF TOTAL INGREDIENTS REQUIRED FOR THE SNACK

1. Boiled Potatoes Mashed.

2. Finely Chopped Onions.

3. Peanuts, skinned, fried and topped with chilli powder, Turmeric powder, salt.

4. Shelled Pomegranate Pods.

5. Zero Shev for Applying and Topping.

6. Butter to Crisp the "Pav"

7. Bread - "Pav" Ladi (Normally you get pack of Six or Eight Pav in one Ladi.

8. Readymade "Kacchi Dabeli Masala" or you can grind and prepare by mixing - One teaspoon each of Saunf, Jeera, Red Chillies, Ajwain, Dalchini, Black Pepper. Fry the spices lightly in a drop of oil , until crisp, then cool down and grind in mixie. You could keep the extra powder for use the next time you make the snack so , use only as much as required and given in actual procedure of preparation.

9. Salt to Taste.

10. Sliced Lemon if you need a tang.

11. Sweet Sour Wet Chutney prepared by mixing Tamarind and Jaggery and creating a thick paste or you could use "Imli Pihkoo" with added sugar to taste.

LETS GET READY TO PREPARE IT NOW!

Preparing this snack is really easy and fast when all ingredients are ready as mentioned above.

In a steel Bowl take enough quantity of the Mashed potatoes , add slowly the readymade or home made "Kacchi Dabeli Masala" and little salt , tasting the mixture until you find it comfortable to your taste. Keep Aside.

Take each "Pav" (Bread) individually and carefully slice open only one side of the "Pav" taking care to keep the other three sides intact. This is like creating a Pocket, in the "Pav". This again is a tricky affair, so some people become lazy and and just slice open the "Pav" from one full side like we do for a "Wada Pav".

Carefully apply the Sweet/Sour chutney inside the Pocket of the "Pav", fill a little of the Spiced Peanuts, Diced Onions, a few pods of Pomegranate, and a spoon of that Spiced Mashed Potato filling it enough to have a complete filling. Carefully pat the open end so as not to allow the filling to call out. Keep a few of them ready on a plate, as many as you want to serve.

On a flat non-stick Tava or Frying pan, kept on a medium flame put a small dollop of butter. Carefully place each filled "Pav" on the Butter, and with a spatula or holding Pincer turn over the "Pav" on all sides ensuring you give it enough of that Yummy Butter to soak into. Let it get a nice Golden Brown color. Carefully remove the Fried "Pav" and dip it into a Plate filled with the Fine Zero Shev from all sides and place it onto the serving plate. Place some spiced peanuts, diced onions, and extra pods of pomegranate if required for taste, and serve hot.

This may sound a very simple Snack but he combination of the "Kacchi Dabeli Masala" in the Mashed potatoes and adding of other condiments is very critical in getting the taste right.

This was the simplest recipe I could share with you, as there are so many other recipes of Authentic "KACCHI / KUTCHI DABELI" that you can find and try out.

Ingredients required for full preparation:

INGREDIENTS FOR KATORI

1. All Purpose Flour (Maida)

2. Black Pepper Powder.

3. Chilli Powder.

4. Haldi / Turmeric Powder.

5. Ajwain/(Ova)"ओवा" seeds powder.

5. Salt.

6. Baking Soda.

7. Vegetable Oil for frying.

INGREDIENTS FOR FILLING AND TOPPINGS

1. Boiled Potatoes mashed lightly.

2. Boiled / Sprouted Brown or Green Chana (Gram).

3. Boiled/Sprouted Moong or sprouts of your choice.

4. Shelled Pomegranate Pods.

5. Finely Diced Onions.

6. Medium Fine Diced Tomatoes.

7. Finely Diced Fresh Coriander.

8. Finely Diced Raw Mango (Especially in this season)

9. Bowl of Cold Curd (Dahi).

10. Sweet Chutney made with Tamarind (Imli) , Jaggery (Gur) / Dates (Khajoor) or you can use "Imli Pichkoo).

11. Fine Zero Shev (Readymade from shop) for topping.

12. Chaat Masala for taste.

LETS GET STARTED WITH THE ACTUAL MAKING OF OUR KATORI FIRST.

As the Atta needs to be kept aside for forming, we should prepare the Dough for the Katori first and then proceed with other preparations. The only other thing you need to prepare with the Dough is boil the Potatoes, and Slightly steam or par-boil the sprouts.

In a shallow bowl, add the required quantity of Maida (All Purpose Flour) normally 500 gms is enough, but depends on number of people in your Party!

Add, Salt to taste, Black Pepper Powder Half teaspoon, Salt to taste, Half Teaspoon Haldi (Turmeric Powder), Half Teaspoon Chilli Powder, Hal teaspoon Ajwain (Ova) powder, and Quarter Teaspoon Baking Soda. (Some people don't like to add any Condiments apart from Salt to taste in the Dough which is fine). Add a teaspoon of oil to help in mixing, and knead into a semi-tough dough, and keep aside covered by a wet napkin or linen cloth, so the surface does not dry. You can keep this dough for about 30 mins until you prepare all other items.

While your dough is forming, you can prepare and set aside in small bowls all other ingredients which I have mentioned in the list for fillings and toppings.

After you are all ready with the Fillings and toppings let us now move on to the actual process of making and frying the "Katori".

To get the right shape of the "Katori" you should find yourself a nice smooth Steel Katori or Bowl in the shape of what you see in the "Katori Chaat" image above . The size depends on your own liking. You could select any size or shape you like.

It all depends on your choice and liking. Take one of them and apply a very fine film of oil on the outer side of the Steel Katori (Bowl) so that the dough will not stick to the Steel Katori (Bowl)when you apply the dough on it. You could keep 5-6 ready at a time to make it easy for quick preparation and frying.

Now once again knead the full dough you had prepared for the "Karoti" properly, and make small balls with your hand taking a judgement to have enough to be able to cover the Steel Katori from the outside and be patted to create the same shape of the Steel Katori (Bowl) when patted from the outside. The thickness of the dough should be not too thick or not too thin, so you have to develop the skill. Hold the oiled Steel Katori (Bowl) upside down, and place the Ball of dough on the center, and pat it slowly , pushing it against the bowl and spreading it evenly and fully covering the inverted bowl. The outer edges of the top of the bow should be trimmed off neatly with a knife or you could even pinch them with your fingers to create a nice design.

Prepare as many "Katori's" as you want, and keep the Bowls inverted.

Now keep a Deep Pan (Kadhai) either conventional or Non-Stick which is is deep enough to fry the "Maida Katori" after you carefully take it off the Steel Katori (Bowl). Fill it with enough Vegetable Oil for Deep frying and keep it on a Medium flame. The technique of removing he Maida Katori Off the Steel Katori (Bowl) is a tricky technique which you have to master with practice. Normally the Katori will just slip off the Steel Katori (Bowl) when you slowly palm the outside and just give a slight twist. Carefully detach the Katori of the Dough from the Steel Katori (Bowl) and delicately fry it in the Deep Pan. Fry evenly to make it crisp, drain excess oil, and when ready keep aside on a Tissue paper to absorb any excess oil, and proceed with same for all balance Katoris.

Some people try to make the process decorative by drawing lines on the outside of the dough with a fork to make the Katori look really like a Basket. You can be as creative as you want. You could even make different shapes of your Katori's. People who don't want to fail even use long handled Round Spoon which they apply the dough on the outer side of the spoon and after it dries for some time directly dip the spoon carefully into the oil which releases the Katori. You could try that too.

With your Katori's ready, your fillings ready and your tummy craving for the Snack lets get ready to setup the dish.

You can be very creative both in your plating as well as in your filling and topping so let your imagination go wild.

Take one Katori at a time, and like I said the nature and order of filling is your choice but always fill the dry ingredients first . So I will guide you - Place the Katori in a Decorative plate or a Steel Plate. Add some mashed potatoes, add various sprouts, top up with Diced Onions, Tomatoes, Diced Mango, Coriander. Add a spoon of cold Curd on the top, and above it add a spoon of your Sweet/Sour Chutney, Top up with Finely Chopped Coriander, and pods of Ripe Pomegranates to add color. Sprinkle that fine Zero Shev on top, and Sprinkle Chaat Masala if you want more Zing.

Your "Katori Chaat" is ready to dive into. Serve with a Spoon or Fork so you can dip in and enjoy every bit of the taste, that is typical to a "Katori Chaat" . How does this look like for a Close up View?

While reading through various sites and articles on the internet to post some of the best Recipes and links on my Blog I came across this wonderful site - Kidspot. Transfer to a warm serving dish and serve immediately.Note: Some types of chorizo become hard with prolonged cooking. To prevent this, cook the slices with the bacon, then remove and set aside. About 10 minutes before serving, return the slices of chorizo to the pan.
