1 egg, slightly beaten
1/4 cup sugar
2 3/4 cups milk
3 tbsp Minit tapioca
3/4 tsp vanilla

<ul><li>Measure all ingredients except vanilla in a saucepan or microwave bowl.</li>
<li>Let stand 5 minutes to soak and soften the tapioca.</li>
<li>Cook over medium heat, stirring frequently, until mixture comes to a full boil.<br />
OR<br />
Microwave on high 8 - 10 minutes until boiling. Stir two or three times during cooking.
<li>Remove from heat and stir in vanilla.</li>
<li>The pudding will thicken as it cools.</li>
<li>Stir once after 20 miutes.</li>
<li>Serve warm or cold.</li></ul>

<h3>Variation</h3>
<p>Use ingredients listed in the pudding recipe above, reducing milk to 2 cups.</p>
<ul><li>Separate the egg and beat the white until foamy.</li>
<li>Gradually add two tablespoons of the sugar and beat until stiff peaks form. Set aside.</li>
<li>Combine remaining egg yolk, remaining sugar, salt, milk and tapioca.</li>
<li>Let stand 5 minutes, then cook as directed above for pudding.</li>
<li>Slowly blend the hot mixture into the egg white, and add vanilla.</li>
<li>Stir after 20 minutes.</li>
<li>Serve warm or cold.</li></ul>]]>

<h5>Crust</h5>
<p>1 cup chocolate wafer cookies, finely crushed</p>
<p>2 tablespoon sugar</p>
<p>1/4 cup butter or margarine, melted</p>
<h5>Cake</h5>
<p>3/4 cup white sugar</p>
<p>24 ounces cream cheese, softened</p>
<p>1 cup melted semi-sweet chocolate</p>
<p>3/4 teaspoon pure vanilla extract</p>
<p>1/4 teaspoon almond extract</p>
<p>3 large eggs</p>
<p>Fresh whipped cream</p>

<h4>Directions</h4>

<ol><li>Preheat oven to 350 degrees. Blend all ingredients for crust; spread onto bottom of 9-inch springform pan.</li>
<li>Bake for 10 minutes or until slightly crispy.</li> 
<li>Turn oven heat up to 450 degrees.</li>
<li>While crust cools, mix cream cheese, sugar and the extracts until well blended.</li>
<li>Add eggs; blend until well mixed. Slowly pour chocolate into batter and mix until color is smooth.</li>
<li>Pour batter into springform pan and smooth out the top.</li>
<li>Bake for 10 minutes, then reduce the temperature to 250 degrees and bake for 35 minutes longer.</li>
<li>When done, remove edge from rim of springform pan and cool.</li>
<li>Serve with fresh whipped cream and chocolate garnishes.</li></o>]]>

In fact, sweetened, creamy chocolate is a newcomer compared to earlier, perhaps less tempting forms of chocolate.

The first chocolate creations were enjoyed by the ancient Mayans and Aztecs. These natives of Central and South America didn&apos;t eat chocolate crafted in fine bars or truffles. Instead, they drank their chocolate and they did so in a way that might make a modern chocoholic cringe.

No, we&apos;re not talking creamy cocoa with marshmallows floating on top.

So, how did they enjoy chocolate? Spicy!

Archaeologists and historians of the Mayans and Aztecs say the first forms of chocolate were quite bitter to the taste and generally had a hot and spicy flair. The first chocolate lovers typically blended their chocolate with ingredients such as cornmeal and chili peppers. The resulting concoction was drunk.

Many archaeologists believe that the Mayans and Aztecs would gather, ferment and dry the seeds. They then roasted the beans over an open fire and then removed the shells. The seeds were ground into a paste and blended with other ingredients to make a frothy beverage. Although sugar is not believed to have gone into the mix, it is possible that nectar or honey graced the drink on occasion.

While many chocolate lovers today might compare consumption of their favorite food to a state of ecstasy, for the Mayans and Aztecs it actually was a religious experience. They used the chocolate drink in both religious and social ceremonies. Although it is believed the entire population in these ancient societies would drink chocolate on various occasions, the upper classes made it a very big deal. Archaeologists have uncovered intricate containers decorated with images of everything from animals and kings to ancient gods partaking in the enjoyment of chocolate. The Mayans even wrote about cacao with their ancient glyphic writing.

The Mayans are believed to have used cacao in important religious ceremonies. Archaeologists say chocolate was used in weddings and also in sacrifices. It is believed they poured blood over cacao beans to serve as an offering to their gods.

Although the first chocolate creations didn&apos;t taste like the chocolate modern people are used to, this food served an important role in culture. As time passed, the mystical properties of chocolate have largely been lost, but many chocolate lovers will still say a fine piece of chocolate is close to heaven on earth.

250 ml (1 cup) 35% cream
250 mL (1 cup) frozen berries)
To taste - icing sugar for garnish

<h4>Preparation</h4>

<ol><li>Coarsely chop frozen fruit chunks and set aside.</li>
<li>In a bowl, mix ricotta, sugar, orange zest, orange juice and the chopped frozen fruit.</li>
<li>Whip cream until stiff.</li>
<li>Fold whipped cream into the ricotta mixture.</li>
<li>Pour mixture into dessert dishes and refrigerate for two hours.</li>
<li>15 minutes before serving, remove frozen berries from package.</li>

<![CDATA[1/2 pound chow mein noodles or chunk soba noodles
2 tsp sesame oil
1/4 cup soy sauce (reduced sodium)
1/4 cup chicken broth (reduced sodium)
1 tbsp light peanut butter
2 tsp sugar
2 tsp minced ginger
1 tsp canola or vegetable oil
1 cloves garlic, minced
1/2 - 1/2 tsp red chili pepper flakes
1 pound mixed Oriental-style vegetables (pea pods, carrots, broccoli florets, water chestnuts, etc)
1 pound medium sized shrimp, peeled and deveined
1/4 cup chopped cilantro

<ol><li>Bring a large pot of water to boil over high heat. Add noodles and cook according to package directions. Drain well and toss with sesame oil.</li>
<li>While the noodles are cooking, whisk together the soy sauce, chicken broth, peanut butter, sugar and ginger in a small bowl. Set aside.</li>
<li>Heat canola oil in large non-stick skillet. Stir in garlic and red pepper flakes. Cook 30 seconds.</li>
<li>Add vegetables. Cook and stir over medium-high heat for three to for minutes.</li>
<li> Add shrimp and cook until shrimp turn pink. Stir often enough that everything cooks evenly.</li>
<li>Add the soy mixture to the shrimp and vegetables, and cook stirring constantly for 1 minute.</li>
<li>Toss the shrimp and vegetables with the noodles and sprinkle with cilantro.</li>

Chicken is lightly dredged in flour, browned, then braised in chicken broth flavored with lemon and thyme.
<![CDATA[3 tbsp flour
1/2 tsp salt
1/4 tsp pepper
4 skinless, boneless chicken breast halves (1 pound total)
2 tbsp olive oil
1 medium onion
1 tbsp margarine
1 cup chicken broth
3 tbsp lemon juice
1/2 tsp thyme
lemon wedges (optional)
1 tbsp chopped parsley (optional)

<ol><li>In a plastic or paper bag, combine the flour, salt and pepper and shake to mix. Add the chicken and shake to coat lightly. Remove the chicken and reserve the remaining seasoned flour.</li>
<li>In a large skillet, warm 1 tbsp of the oil over medium heat. Add the chicken and brown on one side, about 5 minutes. Add the remaining oil, turn the chicken and brown well on the second side. Transfer the chicken to a plate and set aside.</li>
<li>Coarsely chop the onion. Add the margarine to the skillet. When it melts, add the onion and cook two or three minutes until softened, stirring constantly.</li>
<li>Stir in the reserved flour and cook, stirring, until the flour is completely blended, about 1 minute.</li>
<li>Add the broth, 2 tablesppons of the lemon juice and the thypme, and bring the mixture to a boil, stirring constantly.</li>
<li>Return the chicken to the skilet, reduce the heat to medium-low, and cover the skillet. Cook until the chicken is tender and opaque throughout, 5 - 10 minutes.</li>
<li>Divide the chicken among 4 plates. Stir the remaining 1 tbsp lemon juice into the sauce in the skillet, then pour over the chicken.</li>
<li>Garnish the chicken with lemon wedges and a sprinkling of parsley if desired. Serve with steamed vegetables and lightly buttered pasta.</li></ol>]]>

2 broiler-fryer chickens, 2 - 3 pounds, cut into quarters
1/4 cup all-purpose flour
1 tsp salt
1/2 tsp pepper
1 tbsp butter
1 tbsp vegetable oil
1 cup chopped onion
1/2 cup diced green pepper
1/2 cup diced red sweet pepper
1 clove garlic, crushed
1 tbsp  curry powder
1 can (1 pound) peeled tomatoes, whole or crushed (do not drain)
1/2 cup dark seedless raisins
4 cups hot cooked rice

<ul><li>Put the flour, salt and pepper into a large plastic bag and shake to mix them well.

<li>Add one or two pieces of chicken to the bag, twist top closed and shake until chicken is coated with flour and spices. Remove chicken from bag, shaking off excess flour. Repeat until all chicken pieces are coated.</li>
<li>Put butter and oil into a 6-quart Dutch oven and heat over moderately high heat. When oil is hot, add chicken, a few pieces at a time, and cook for several minutes, turning to brown well on all sides. Remove browned chicken to platter; repeat for all pieces.</li>
<li>Add onion, green and red pepper, garlic and curry powder to the drippings remaining in Dutch oven. Sauté the vegetables, stirring constantly until the onion is soft (about 5 minutes.) Stir in the tomatoes and raisins. Crush the tomatoes with a fork. Bring the mixture to a boil.</li>
<li>Add the chicken to the sauce mixture. Cover and simmer for 50 to 60 minutes or until chicken is tender. </li>
<li>Cook the rice while the chicken is simmering.</li></ol>

To serve: arrange chicken on serving platter. Spoon some sauce over the chicken. Spoon rice around the edge of the platter and serve with remaining sauce. Makes 8 servings.]]>

1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup dried apricots, chopped
1/2 cup chopped walnuts
3/4 cup ripe banana, mashed
1/2 cup milk
1/2 cup butter
1 egg

<ol><li>Preheat oven to 350°.</li>
<li>In a large bowl, stir together flour, baking powder, baking soda, salt, sugar, apricots and nuts. Mix thoroughly.</li>
<li>In a separate bowl, combine mashed banana, milk, butter and egg.</li>
<li>Stir in dry ingredients, mix until well blended.</li>
<li>Pour mixture into a greased 9" x 5" loaf pan.</li>
<li>Bake for one hour or until bread begins to pull away from the sides of the pan and a wooden toothpick comes out clean.</li>
<li>Let cool in pan for 10 minutes, remobe loaf from pan and place onto a rack to cool completely.</li>

1 can cream of celery soup (10 oz)
! cup shredded cheddar cheese
1 small container sour cream

Topping: 2 cups crushed cornflakes, combined with 1/4 cup melted margarine
