The instructions for this recipe however differ from my usual method as is it necessary to use the electric mixer to beat the egg yolks. Without having to wash the whisks/beaters of the mixer, the egg whites are first beaten before preparing the yolk batter. Hence, it is important to get ready the necessary ingredients so that the yolk batter can be prepared quickly, otherwise, the beaten egg whites may probably deflate if left aside for too long.&lt;br /&gt;&lt;br /&gt;Other than the sequence, the rest is quite straight forward. Yet, I made a hiccup while preparing the egg whites. I over beat the whites, just slightly, but it still affected the finished product! With the electric handheld mixer (Note: it is not necessary to wash the beaters/whisks after beating the egg whites), beat the mixture on low speed until it turns pale and thick. Add in lightly beaten egg/egg whites.&lt;/li&gt;&lt;li&gt;Add salt, mushroom slices, chili slices and sesame seeds. Mix to combine.&lt;/li&gt;&lt;li&gt;Place mixture in serving dish and steam at high heat for 10mins. Cut into slices (about 5mm thick).&lt;/li&gt;&lt;li&gt;Fill pot with 6 cups of water, add in the luo han guo and red dates, bring to boil. Add yoghurt and whisk with a balloon whisk to combine.&lt;/li&gt;&lt;li&gt;Add egg yolks, one at a time, whisk to combine.&lt;/li&gt;&lt;li&gt;Sieve over the flour mixture, whisk to combine. Small lumps may form once the flour is added, whisk the batter gently till there are no lumps.&lt;/li&gt;&lt;li&gt;Add vanilla extract, whisk to combine.&lt;/li&gt;&lt;li&gt;In a clean, dry mixing bowl, beat egg whites with an electric mixer on low speed until mixture becomes frothy and foamy. Add half of the sugar and turn to medium-high speed and beat the mixture. Continue to add in the remaining sugar mixture in separate additions and beat until the egg whites reaches the soft peak stage.The soft peak stage is reached when the peaks of the whites curl over and droop slightly. Turn to low speed and beat for another 1 to 2 mins (this helps to stabilise the air bubbles).&lt;/li&gt;&lt;li&gt;Add the beaten egg whites to the yolk mixture in 3 separate additions, each time fold with a rubber spatula (I prefer to use a balloon whisk) until just blended.&lt;/li&gt;&lt;li&gt;Pour batter into the prepared cake pan. Tap the pan lightly on a table top to get rid of any trapped air bubbles in the batter.&lt;/li&gt;&lt;li&gt;Place cake pan in a deep baking tray. Fill the baking tray with hot water (the water should rise up to about 1 inch of the cake pan).&lt;/li&gt;&lt;li&gt;Place on the lowest rack of the oven and bake at 160 degC for 60 mins. (Note: every oven works differently, lower the temperature by another 10 degC if the cake rise and expands too quickly or if the top starts to crack).&lt;/li&gt;&lt;li&gt;Remove cake pan from oven and immediately drop the pan at a height of 20~30cm onto the table top. This helps to prevent the cake from shrinking upon cooling. Unmould the cake immediately. To unmold, place a large plate or baking sheet on top of the cake pan, invert the cake pan onto the plate/baking sheet. Remove the cake pan and the parchment paper on the base and sides of the cake (Note: do use oven mitten as the cake pan will be very hot). Next, place a cooling rack on the base of the cake, invert the cake right side up onto the cooling rack and leave to cool completely. Then, I use frozen precooked  shrimp that I&#39;ve thawed. I heat up a little butter and garlic in the  skillet on medium. Then, I toss the shrimp for a bit. Not too long,  since they&#39;re already cooked. Then, top the grits with the shrimp!  That&#39;s it! The sweetness was just right for us and I love the chocolatey flavour which was further enhanced by the chocolate chips. Just like any easy muffin recipes, these muffins took me no time to prepare. The most important thing was, I didn&#39;t have to worry about my boy returning home with a box of leftovers ;) &amp;nbsp;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Double Chocolate Chips Muffins&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;(makes 15 small muffins)&lt;br /&gt;&lt;br /&gt;240g plain yoghurt (I used low fat yoghurt)&lt;br /&gt;1 large egg, lightly beaten&lt;br /&gt;4 tablespoons canola or corn oil&lt;br /&gt;1 teaspoon pure vanilla extract&lt;br /&gt;230g plain flour &lt;br /&gt;30g cocoa powder&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1/2 teaspoon baking soda&lt;br /&gt;120g* caster sugar&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;50g~60g mini chocolate chips&lt;br /&gt;&lt;br /&gt;*note: use extra 1~2 tablespoons more sugar if you prefer it to be sweeter&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;In a mixing bowl, whisk together the yoghurt, lightly beaten egg, oil, vanilla extract until just combined.&lt;/li&gt;&lt;li&gt;Sieve flour, cocoa powder, baking powder and baking soda into another mixing bowl. Add sugar, salt and whisk to combine.&lt;/li&gt;&lt;li&gt;Pour the wet ingredients into the dry ingredients. With a rubber spatula, fold the wet ingredients into the dry ingredients and stir only until the ingredients are just combined. Do Not over mix. (Note: stop stirring once the flour incorporates into the batter, but do check that there is no pockets of flour at the bottom of the bowl).&amp;nbsp;&lt;/li&gt;&lt;li&gt;Gently stir in the chocolate chips. Do Not over mix the batter. The finished batter should appear thick and lumpy.&lt;/li&gt;&lt;li&gt;Spoon batter into paper muffin cups, fill it to about 3/4 full.&lt;/li&gt;&lt;li&gt;Bake in preheated oven at 190degC for about 20 mins or until a toothpick inserted in the center of a muffin comes out with a few crumbs or almost clean (do not over bake). It is going to be another great add-on to my baking repertoire, something which I will turn to whenever I feel like baking on a whim :)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Orange and Peach Yoghurt Cake&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;(makes one 7&quot; cake)&lt;br /&gt;&lt;br /&gt;150g unsalted butter, cut into cubes (leave to soften at room temperature for about 15~20mins)&lt;br /&gt;120g caster sugar&lt;br /&gt;2 medium sized eggs, lightly beaten (about 100g without shell)&lt;br /&gt;3 tablespoons orange juice&lt;br /&gt;1 tablespoon orange zest&lt;br /&gt;200g cake flour&lt;br /&gt;1 1/2 teaspoons baking powder&lt;br /&gt;120g plain yoghurt&lt;br /&gt;some canned peach slices&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Grease the sides of a 7&quot; round pan with some butter, dust with flour. Line the base with parchment paper, set aside.&lt;/li&gt;&lt;li&gt;Cut canned peaches into 8 slices. Rinse, drain and pat dry with paper towel, set aside.&lt;/li&gt;&lt;li&gt;Sift cake flour and baking powder together, set aside.&lt;/li&gt;&lt;li&gt;Place butter in a mixing bowl. Using the Bosch MaxoMixx hand blender with the whisk attachment, whisk the butter using speed 8 for about 1 minute. Add in the caster sugar, whisk until the batter becomes pale, creamy and fluffy (takes about 2 mins). Stop in between to scrape down the sides of the mixing bowl with a rubber spatula.&lt;/li&gt;&lt;li&gt;Add in the beaten eggs in a few separate additions, whisk well each time the eggs is added.&lt;/li&gt;&lt;li&gt;Add in the orange juice and orange zest, whisk to combine.&lt;/li&gt;&lt;li&gt;Sift in half of the cake flour/baking powder mixture. With a spatula, stir until the flour mixture is incorporated into the batter.&lt;/li&gt;&lt;li&gt;Add in the yoghurt, stir with spatula until just incorporated.&lt;/li&gt;&lt;li&gt;Sift in the rest of the flour mixture, stir until flour mixture is just incorporated into the batter. Do not over mix. Scrape down the sides and the base of the mixing bowl to make sure there is no residual flour mixture.&lt;/li&gt;&lt;li&gt;Pour batter into the prepared pan. Spread and smoothen the top with the spatula. Arrange peach slices on top.&amp;nbsp;&lt;/li&gt;&lt;li&gt;Bake in a pre-heated oven at 180deg for 50-55 mins till the top turns golden brown or until a skewer inserted into the centre of the cake comes out clean.&lt;/li&gt;&lt;li&gt;Remove cake from oven, let cool slightly for about 10mins. Run a knife along the sides of the pan (use oven mitten as the pan will still be hot). Invert the pan onto a plate or baking tray. Remove the pan and the parchment paper on the base of the cake. Place cake right side up on a wire rack and leave to cool completely. I didn&#39;t have the chance to sample the cake while they were still all puffed up. By the time I was done taking pictures, the cakes were well sunken. Nevertheless, the texture was still soft, fluffy and moist. I offered one to my younger child and he ate it in silence. We were not on speaking terms that day as he felt that it was unreasonable of me to scold him for not taking care of his things ;( Anyway, he devoured the cake in no time and I noticed him licking up the crumbs from the ramekin. Under normal circumstances, he would have asked for a second helping. I broke the silence and offered him another serving. He gladly took it and enjoyed the very last crumb, still in silence.&lt;br /&gt;&lt;br /&gt;I kept the leftovers in the fridge for my elder child. When left to chill over night, the texture became rather dense, tasted rich and quite similar to a new york style cheese cake. I personally prefer the lighter version but my younger child liked both.&lt;br /&gt;&lt;br /&gt;If you are keen to give this a try, I would suggest to use fresh apricots instead of canned ones. The canned apricots I bought was a tad too sour for my liking. If using fresh apricots, use a knife to cut around the fruit, break into halves and remove the pit. Add in the caster sugar and beat till smooth, stop to scrape down sides of bowl when needed. Beat in the vanilla bean paste or vanilla extract, if using.&lt;/li&gt;&lt;li&gt;Add half the amount of flour, beat till incorporated. Add half the amount of milk, beat till incorporated. Repeat with the remaining flour followed by the remaining milk. (Note: when beating in the milk, the batter may form small lumps initially, continue to beat and the lumps will dissolve. Alternatively, add in the milk gradually as you beat to avoid lumps from forming.)&lt;/li&gt;&lt;li&gt;In a clean, dry mixing bowl, beat egg whites with an electric whisk on low speed until mixture becomes frothy and foamy. Add half of the sugar and turn to medium-high speed and beat the mixture. Continue to add in the remaining sugar mixture in separate additions and beat until the egg whites reaches the soft peak stage.The soft peak stage is reached when the peaks of the whites curl over and droop slightly. Turn to low speed and beat for another 1 to 2 mins (this helps to stabilise the air bubbles).&lt;/li&gt;&lt;li&gt;Add the beaten egg whites to the cream cheese mixture in 2 separate additions, each time fold with a rubber spatula (I prefer to use a balloon whisk) until just blended.&lt;/li&gt;&lt;li&gt;Pour batter into the prepared ramekins till 80% full. Place ramekins in a baking tray.&lt;/li&gt;&lt;li&gt;Place on middle rack of the oven and bake for 20 mins. (Note: the top may start to crack, but it is perfectly alright.)&lt;/li&gt;&lt;li&gt;Remove ramekins from oven and top each ramekin with an apricot halve. Return ramekins into oven and continue to bake for another 15 to 20mins until golden brown.&lt;/li&gt;&lt;li&gt;Remove from oven and leave to cool slightly. Dust with icing sugar, optional. For light fluffy texture, serve immediately. Bread buns made with tang zhong method do keep well and the texture remains soft even after a couple of days. The next time I were to made these again, I will put in a little extra effort to use a mixture of luncheon meat and mashed potatoes as fillings :)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Luncheon Meat Bread Buns (午餐肉小餐包)&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;(makes 12)&lt;br /&gt;&lt;br /&gt;&lt;i&gt;for the buns:&lt;/i&gt;&lt;br /&gt;tang zhong (water-roux):&lt;br /&gt;20g bread flour&lt;br /&gt;100ml water&lt;br /&gt;&lt;br /&gt;bread dough:&lt;br /&gt;195g bread flour&lt;br /&gt;90g cake flour&lt;br /&gt;12g milk powder&lt;br /&gt;30g caster sugar&lt;br /&gt;6g salt&lt;br /&gt;6g instant yeast&lt;br /&gt;&lt;br /&gt;60g egg, lightly beaten &lt;br /&gt;65g water&lt;br /&gt;75g tang zhong (water-roux)&lt;br /&gt;&lt;br /&gt;45g unsalted butter&lt;br /&gt;&lt;br /&gt;&lt;i&gt;for the fillings:&lt;/i&gt;&lt;br /&gt;some mashed (or sliced) luncheon meat&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;&lt;i&gt;to make tang zhong:&lt;/i&gt;&lt;br /&gt;* Place 20g bread flour in a saucepan. Add 100ml water, mix with a hand whisk till smooth, making sure there are no lumps of flour. Cook over medium to low heat, stirring constantly with the hand whisk to prevent it from burning. Within 1 to 2 mins, the mixture will start to thicken, stop when you see traces in the mixture for every stir you make with the hand whisk. The tang zhong is ready. Immediately transfer the hot tang zhong into a bowl and cover it with a cling wrap, making sure the cling wrap sticks onto the surface of the mixture. This is to prevent a film from forming on the surface. Leave to cool completely before using it.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;to make the bread dough:&lt;/i&gt;&lt;br /&gt;* Place bread flour, cake flour, milk powder, sugar, salt, yeast, egg, water and tang zhong (use 75g) in the mixing bowl of a stand mixer. Let the mixer knead the dough on high speed until the ingredients come together to form a dough, takes about 8 to 10 mins. Add in the butter and continue to knead for another 15~20mins until the dough becomes smooth and elastic. (Upon adding the butter, the dough will become very wet/slack again, add some flour if it remains slack after 10 mins of kneading. Depending on the type of flour used, the dough may still stick to the sides of the mixing bowl after 15-20mins of kneading. If this happens, continue to knead for another 5mins or so, stop the machine, oil or dust hands with flour and proceed to remove the dough from the bowl.&lt;br /&gt;&lt;br /&gt;* Place dough in a lightly greased (use vegetable oil or butter) mixing bowl, cover with cling wrap or a damp cloth and let proof in room temperature (around 28 to 30 degC) for about one hour, or until double in bulk.&lt;br /&gt;&lt;br /&gt;* Remove the dough from the bowl and give a few light kneading to press out the gas in the dough. Divide the dough into 12 equal portions (about 45g each). Roll each dough into smooth rounds, cover with a damp cloth or cling wrap and let the doughs rest for 10mins.&lt;br /&gt;&lt;br /&gt;* On a lightly floured work surface, flatten each dough into a round disc. Press out any trapped air as you flatten the dough. Wrap each dough with one heaped tablespoon of mashed luncheon meat. Pinch and seal the seam tightly. &lt;i&gt;If using sliced luncheon meat, roll dough to form a longish oval shape. Wrap dough with sliced luncheon meat, pinch and seal the seam tightly.  &lt;/i&gt;&lt;br /&gt;&lt;br /&gt;* Place seam side down on a greased (or lined with parchment paper) baking tray. Space doughs two inches apart to allow them to expand. Cover with damp cloth or cling wrap and leave doughs to proof for the second time for about 40mins, or until double in size. &lt;br /&gt;&lt;br /&gt;* Bake in pre-heated oven at 180 deg C for 12 to 15 mins or until golden brown (if necessary, tent the surface with foil if the top browns too quickly closer to the baking time). Remove from oven and transfer to wire track to let cool.
