One such dish is Obbattu or pooran poli made for Ugadi in Karnataka.

We love this sweet and it's special to the families here as it's of a high standard accordingly when we serve this to guests.

It's a little lengthy process and tedious for a first timer but worth the effort.

Ingredients:

Filling:

1 cup toor dal

1 cup jaggery powder

fresh coconut grating 1/2 cup

cardamom 2/3

Water to boil the toor dal

For dough:

Maida 1 cup

a pinch of salt and a pinch of turmeric

Oil as required - 1/2 cup and 1/2 cup

water as required

Method:

Firstly boil water in a thick bottom pan and add toor dal and cook almost until 3/4th done...press between fingers to see if it's getting just mashed. Don't overcook.

Strain the dal at this stage and separate water and keep aside. Then and add coconut grating, jaggery powder and cardamom to the dal, put it on stove and mix well to cook nicely until dal is done and the water evaporates to form a mixture.

Cool this and grind/blend smoothly and your filling is ready.

For the dough, in a large bowl mis maida, salt, turmeric and water little by little to form a soft smooth dough, softer than your poori dough.

Then smear oil on dough, cover with wet cloth and keep aside for an hour.

Then again add little 1/4 oil and knead well to form a pilable dough, which is stretching. Keep covered again for another 1 hour.

Now the time is to prepare obbattu.

Take the filling and make large balls of table tennis size ball. Make few and keep aside.

Take a butter paper cut into squares and apply oil, pinch little dough and spread in your hands and put filling and make a round ball... similar to aloo parata. Cardamom - 4/5
Bay leaf - 2
Shahi jeera - 1 tsp
Kasuri methi - 2 tsp
Star anise - 2
Stone flower - few
Turmeric powder - 1/4 tsp
Onion – 2 big
Ginger/garlic – 2 tbsp
Lemon juice - 2 tbsp
Salt to taste
Ghee 3 tbsp

Method:
Firstly, in a large bowl add the cleaned and washed mutton, add curd, ginger/garlic paste, red chilli powder, turmeric powder, and salt required for 1 kg mutton.
Keep aside for marination for 30 mins minimum.

Next take a kadai, add 2 tbsp oil and fry the spices, onion and green chilli (as per paste 1 ingredients). Fry nicely until onion turns brown and allow it to cool and then grind to a fine paste and keep aside.

Next in the same pan, add the washed and dried greens and fry until it is cooked and cool and grind to a paste and keep aside.

Once the marination time is over, cook the mutton with the liquid of marination without adding water in a pressure cooker for 2/3 whistles... As it depends on the type and size of mutton pieces. Check. If it's too tender one whistle should be ok like you cook rice. Otherwise it might need 2/3 whistles. The mutton pieces should be just cooked and not over cooked as it's going to again cook with rice.

Same time, measure 1.5 times of water to the measurement of rice. Example, if you take 1 cup rice, 1.5 cups water is needed as there will be water in masala and cooked mutton .

Now wash the rice nicely and soak for 15 mins... This can be done same time when you start the biryani process on stove.

Heat a large thick bottom vessel, add the oil and all the spices and onion and fry nicely until brown and then add ginger garlic paste and fry well.
And add the cooked mutton, turmeric and mix well and then add the onion/spice paste 1 to it and mix well, cover and cook for 5 mins
And then add the green paste, mix well and allow it to cook for 2-3 mins.
Now add the mutton with water and allow it to boil nicely and then add the required amt of salt for biryani and lemon juice. Mix well and when it's boiling nicely add the soaked rice (ensure you drain all the water completely after soaking)...mix nicely and check for salt and spices at this step and add if required.
Close the lid and cook in medium flame until the water has just evaporated. Now put a tawa on the stove and place the vessel on it and cook in very low flame for 15-20 mins or until done. If you want keep a heavy object on top of the lid too.
Once the rice is cooked and no water left... Its done
Now add the ghee on top and give a nice mix from bottom and it's ready to serve with onion raita and cucumber slices.

Jigarthanda recipe

Madurai Jigarthanda recipe

Ingredients:

1/2 liter full fat milk

1/2 liter any milk

4 tbsp + 4 tbsp sugar

Nannari sharbath as required

Badam gondh or badam pisin as required

200 ml fresh cream

Method:

You have to start your preparation one day before to make Jigarthanda.

Soak the badam pisin overnight in water as required and keep in fridge.

Firstly boil the full fat milk nicely in a low flame until it reduces to 1 cup.
1 cup almond flour (almonds roasted and ground)
3/4 cup whole wheat flour
1 cup powdered sugar (reduce if you don't want to sweet as my cookies were too sweet)
1/3 cup butter at room temperature
1/4 tsp baking soda
1/4 tsp vanilla essence
Pinch of salt
Milk 3-4 tbsp as required
Almonds to decorate

Method:
In a bowl, take sugar and butter... Beat well for few mins.
In a large bowl, add the almond and wheat flour, soda, salt, vanilla essence... Mix well.
Add the butter mixture to the dry ingredients and mix nicely with hand adding milk as required to make a soft dough.
Keep it in refrigerator for 20 mins in a bowl covered with cling wrap or cloth.
Then take it out and make it into equal sized balls, flatten a little and place almond slightly pressed in middle of the cookie. Line them on to a tray lined with parchment paper.
Now switch off the stove. Add the cocoa powder and mix well. Then add milk powder and mix well. Next add the dessicated coconut and mix well. Now add the butter and mix well. After it's mixed well. Add the crumbled cake and mix well without lumps. It forms a sticky dough. If it looks watery add few more spoons of cake/bread crumbs.

Now put it back on stove and mix continuously on low to medium flame. Until it forms a huge lump without sticking to pan. Take a small dough and check if it can form a ball without sticking to your hands. Now the cake mix is ready.

Allow it to cool until warm... Then form the round cakes as per size required and roll in the dessicated coconut mixture. Allow it to cool to room temperature before consuming.

Note: you can also use plain Chocolate cake or butter cream cake for this. However, if you use chocolate cake skip the cocoa powder and for butter cream cake skip the butter.

Tip: you can use the left over cake and biscuits and make the cake too. I have used some left over bread, biscuit and sponge cake to make this.

Banana bread or Banana cake

Healthy cakes using Jaggery and wheat flour

Healthy and nutritious Banana bread or Banana walnut cake

Ingredients:

2 ripe Bananas (big ones)
