Drink Up: White Tea Sangria
When you think of summer, a nice glass of iced tea often comes to mind. But tea can be used in other summer drinks, too.

White tea, which comes from the young bud of a tea leaf, has many health benefits, like its black and green cousins. It’s high in antioxidants and nutrients, and is very low in caffeine, according to Anthony Arnold, one of the co-founders of Remedy Teas, a shop on Capitol Hill (345 15th Ave. E.). Remedy created this sangria using a fruity white tea.

WHITE TEA SANGRIA
Serves: 8-10
1 bottle white wine
2 cups white tea, chilled
2 cups white grape juice
1 orange, sliced
1 lime, sliced
1 lemon, sliced
2 kiwis, sliced
6-12 berries, cleaned
6-12 grapes, cleaned
1 peach, sliced
1 apple, sliced

Choose a fruity white tea (peach, citrus, etc.). Brew the tea for 4 minutes, strain and chill. Fresh fruit choices can change, use light-colored fruits in bite-sized pieces. Add all ingredients to large pitcher. Serve immediately or chill overnight. Serve into tall glasses or wine goblets.

KUMQUAT TEA MOJITO
Drink Up: Kumquat Tea Mojito
Serves: 1
2 kumquats, halved
6 mint leaves
5 teaspoons lime juice
1 teaspoon orange juice
2 teaspoons simple syrup
2 ounces light rum
2 ounces chilled white tea
Club soda
Lime wedges

Choose a fruity white tea (peach, citrus, etc.), Brew tea for 4 minutes, strain and chill. Muddle the kumquats, mint and the fruit juices with simple syrup. Fill tall glass with ice. Add rum and tea, top with soda. Pour into a shaker, shake well and strain into the glass. Squeeze the lime wedges into the drink and leave in the glass. Finish with a splash of soda.
