Dosi per 4:&lt;br /&gt;
300  g  insalata belga&lt;br /&gt;
300  g  mele renette&lt;br /&gt;
300  g  patate lesse&lt;br /&gt;
4  cucchiai  olio&lt;br /&gt;
2  cucchiai  aceto&lt;br /&gt;
1  cucchiaino  senape&lt;br /&gt;
4  pizzichi  sale&lt;br /&gt;
8--10 noci  facoltative&lt;br /&gt;
&lt;br /&gt;
Lessare le patate con la buccia. Intanto pulire l'insalata e tagliarla a pezzi, pulire le mele e farle a fettine. Sbucciare le patate e quando saranno fredde, tagliarle a fettine. Mettere in una ciotola olio, aceto, sale e senape. Sbattere bene formando un'emulsione con cui condire l'insalata. Lavare, pulire e cuocere separatamente al vapore 600 g. di piccoli funghi porcini, 250 g. di fagiolini, 1 grossa carota tagliata a rondelle e 6 rape bianche affettate.&lt;br /&gt;
&lt;br /&gt;
Preparare un'insalata con questi ingredienti e 250 g. di funghi champignons crudi affettati.&lt;br /&gt;
&lt;br /&gt;
Condire con 2 spicchi d'aglio tritati, sale, pepe e uno spruzzo di aceto di vino bianco.&lt;br /&gt;
&lt;br /&gt;

Cuocere le fave in acqua bollente salata per 10', scolarle, passarle sotto acqua fredda e togliere la pellicola che le riveste. Spezzettare l'insalata, tagliare a striscioline il peperone e a fette sottili il cetriolo. Riunire tutti gli ingredienti. Mescolare una presa di sale, una di pepe, 2 cucchiai di aceto, 5 di olio e maggiorana e emulsionare con una frusta. Riunite in una insalatiera il mais ed i pisellini scolati del loro liquido e passati sotto l'acqua corrente.&lt;br /&gt;
&lt;br /&gt;
Aggiungete un cucchiaio di prezzemolo tritato, il cetriolo affettato finemente, la carota ed i rapanelli tagliati a lamelle, il sedano tagliato sottile ed infine le foglie interne e piccole della lattuga.&lt;br /&gt;
&lt;br /&gt;
Le foglie più grandi saranno lavate accuratamente e le appoggerete sul piatto di portata.&lt;br /&gt;
&lt;br /&gt;
Condite l'insalata con la salsina ottenuta amalgamando lo yoghurt con l'olio d'oliva, la menta fresca tritata, la senape, il sale, il pepe nero macinato fesco ed il formaggio sbriciolato.&lt;br /&gt;

250  g  prosciutto crudo  tagliato grosso&lt;br /&gt;

Cuocete gli asparagi in acqua salata. Mettete il burro in una casseruola con il sale, una raschiatina di noce moscata e un quarto d'acqua. Quando avrà preso il bollore aggiungete le carotine tagliate a rondelle ed il cavolo rapa tagliato a listarelle. Dopo una quindicina di minuti aggiungete la farina ed addensate il sughetto rimasto.
