1 rotolo  pasta sfoglia surgelata&lt;br /&gt;
500 g spinaci cotti  (circa 1 kg crudo)&lt;br /&gt;
2  uova sode&lt;br /&gt;
4  filetti di acciughe&lt;br /&gt;
2 tazze da thè pecorino grattuggiato  (2,5 se si accompagna con purea di patate)&lt;br /&gt;
  sale&lt;br /&gt;
  pepe&lt;br /&gt;
q.b.   olio oliva&lt;br /&gt;
1  uovo&lt;br /&gt;
&lt;br /&gt;
Preparazione:&lt;br /&gt;
&lt;br /&gt;
   1. se non giè fatto, cuocere (bollire per 10 minuti) gli spinaci (scolare ed eliminare l'acqua in eccesso) e far rassodare le uova&lt;br /&gt;
   2. far rosolare gli spinaci in padella con olio d'oliva ed aggiustare di sale e pepe&lt;br /&gt;
   3. sminuzzare e schiacciare in una scodella le uova sode, amalgamandovi i filetti di acciuga con un po' d'olio d'oliva (si consiglia di eseguire l'operazione con le uova leggermente calde, aiuta), unire gli spinaci (si consiglia anche di sminuzzare grossolanamente con il coltello) ed il pecorino (tenere da parte 5 cucchiai per l'eventuale purea di patate d'accompagnamento)&lt;br /&gt;
   4. far raffreddare il composto di uova e spinaci&lt;br /&gt;
   5. stendere la sfoglia ed coprire con il composto di uova e spinaci&lt;br /&gt;
   6. arrotolare delicatamente, formando un .. siluro ... che si chiuderà alle estremità premendo con le dita e spennellando con il rosso di un uovo&lt;br /&gt;
   7. mettere in forno a 170oC per circa 30/40 min. (meglio se appoggiato su teglia con carta da forno che eviti l'incollarsi sul contenitore)&lt;br /&gt;
   8. servire a fette (3 cad.) su piatto con contorno di purea di patate (amalgamata con molto burro, 2 tazzine da caffè di latte e 4/5 cucchiai di pecorino) &lt;br /&gt;

Alzarla lungo i bordi. Riempire con il ragù e spruzzare con parmigiano grattugiato e fiocchetti di burro. Ricoprire con l'altra metà della pasta frolla. Ingredienti:&lt;br /&gt;
Per 6--8 persone: 2  hg  farina&lt;br /&gt;
1.5  hg  burro&lt;br /&gt;
3   tuorli d'uovo&lt;br /&gt;
2   uova&lt;br /&gt;
2  hg  pancetta di maiale affumicata&lt;br /&gt;
4  dl  crema di latte&lt;br /&gt;
  sale&lt;br /&gt;
&lt;br /&gt;
Mettete sulla tavola di cucina 200 grammi di farina di buona qualità, disponeteli a fontana e nel mezzo mettete 100 grammi di burro a pezzetti, un torlo d'uovo e un buon pizzico di sale. Impastate tutto aggiungendo qualche cucchiaiata d'acqua, fino ad ottenere una pasta omogenea e di giusta consistenza. Non la lavorate troppo, e appena pronta lasciatela riposare tra due salviette infarinate, tenendola in luogo fresco.&lt;br /&gt;
&lt;br /&gt;
Provvedete due ettogrammi di buon bacon (pancetta di maiale affumicata all'uso inglese) in fettine. Portate via ad ogni fetta la cotenna e poi tuffate per un minuto queste fette in acqua bollente, tiratele su e mettetele da parte. Rompete in una terrinetta due uova intiere e due rossi. Sbatteteli come per frittata, conditeli con un pizzico di sale e poi scioglieteli con quattro decilitri di crema di latte, oppure, più economicamente, due decilitri di crema e due di latte.&lt;br /&gt;
&lt;br /&gt;
Prendete un cerchio da flan di venti centimetri di diametro, appoggiatelo nel mezzo della placcca del forno ed ungete leggermente di burro il cerchio e la porzione di placca che esso circoscrive. Stendete la pasta all'altezza di mezzo centimetro e con essa foderate il cerchio, ottenendo una specie di scatola. Passate il rulletto sull'orlo del flan, allo scopo di eliminare la pasta supreflua, e poi punzecchiate il fondo della scatola di pasta. Sul fondo di questa scatola allineate le fette di bacon e sulle fette versate poi il composto di uova e crema. Completate aggiungendo una trentina di grammi di burro tagliato a pezzettini che disseminerete sul composto cremoso. Passate il flan in forno al giusto calore per una quarantina di minuti, avvertendo che il calore del forno sia maggiore nella parte inferiore, affinché la pasta possa cuocere bene. Quando il flan sarà cotto estraete la placca dal forno, e prima di togliere il cerchio di latta attendete che la ``quique" abbia perso il suo grande calore. Insinuate allora (dopo aver tolto il cerchio) un coperchio di casseruola tra il flan e la placca, sollevate il flan e fatelo slittare nel piatto di servizio. La ``quique" va mangiata tiepida.&lt;br /&gt;

Impastare la farina con il, il sale e l'acqua necessaria per ottenere la pasta. Tenerla in frigorifero per mezz'ora. Lessare le verdure pulite in acqua poco salata. Rosolare nel burro la cipolla tritata con il prosciutto a dadini. Sbattere le uova con il latte, il parmigiano grattugiato, sale e pepe: aggiungere le verdure e il prosciutto. Appiattire la pasta sfoglia con il matarello e foderare una tortiera imburrata e infarinata. Preparare con le uova, il parmigiano, il sale, il pepe, il latte un composto al quale unire il formaggio e versare il tutto nella tortiera dopo aver posto sulla pasta sfoglia la pancetta e la cipolla. Cuocere in forno a 180--200oC per circa 35 minuti. Salare e pepare. Sbattere le uova con il latte e un po' di sale. Foderare con la pasta uno stampo imburrato, distribuirvi le cipolline e i piselli e il composto di uova. 1.5  cucchiai  farina&lt;br /&gt;
25  g  burro&lt;br /&gt;
1  cucchiaio  olio&lt;br /&gt;
  sale&lt;br /&gt;
  pepe&lt;br /&gt;
&lt;br /&gt;
Mondate gli champignon, lavateli, asciugateli e tagliateli in 4 pezzi o più (dipende dalla grandezza); pelate la cipolla e tritatela finemente.&lt;br /&gt;
&lt;br /&gt;
Scaldate l'olio in una padella. aggiungete del burro e quando è fuso rosolate la cipolla fiché diventi trasparente. Aggiungete gli champignon e fateli quocere 3 min. mescolando regolarmente. Salate e pepate cospargere di farina, lasciate continuare la cottura per altri 2 min. Togliete dal fuoco.&lt;br /&gt;
&lt;br /&gt;
Rompete l'uovo in una insalatiera e sbattetelo; aggiungete il madera e la panna, salate e pepate. Incorporate gli champignon e la cipolla, mescolate ancora una volta e lasciate intiepidire.&lt;br /&gt;
&lt;br /&gt;
Scaldate il forno a 200'.&lt;br /&gt;
&lt;br /&gt;
Sbattere leggermente l'albume e spennellare il disco di pasta brisee. Riempite la crostata con la preparazione di champignon, infornate. Lasciate cuocere per circa 20, 25 min. finché la superfice sia leggermente dorata. Servire caldo&lt;br /&gt;

Scongelare la pasta. Lessare gli asparagi e farne insaporire le punte in una noce di burro. Sbattere le uova con la panna, sale e pepe. Foderare con la pasta una tortiera imburrata, bucherellare il fondo con una forchetta e versarvi il composto di uova, distribuirvi le punte di asparagi e poco burro quindi infornare a 190o fin quando la pasta risulterà ben cotta e il composto rappreso. Stendere la pasta per pizza, divisa in due: con una parte foderare una teglia unta, disporvi sopra la provola affettata, poi il ripieno di scarola e ricotta, indi le acciughe. Lavorare 400 gr di pasta di pane con 2 cucchiai di olio di oliva e un pizzico generoso di pepe bianco. Dividere la pasta in due pezzi. Con il primo pezzo foderare una tortiera da forno leggermente unta con olio. Versarvi 300 gr di gorgonzola spezzettato. Coprire con la seconda parte di pasta. Chiudere bene i bordi della pizza e fare alcuni buchetti sulla superficie. Passare per 20 minuti circa in forno già caldo a 200 gradi. Scaldare il forno a 230', distribuire il composto sulla pasta, irrorare con olio e salare. Cuocere in forno per 15'. Scongelare la pasta. Cuocere per 10' i carciofi surgelati in 2 dl di acqua in ebollizione con 2 cucchiai di olio, l'aglio intero, la metà del prezzemolo e una presa di sale. Sgocciolarli e tagliarli a fettine.
