2 SIGNS FROM GOD TODAY .... UNDERSTANDING PARADOXES

Life is full of paradoxes sometimes ....

Its funny that despite the fact that I have always believed that God was male growing up ... its simply because of the "he" ... the gender that was placed in general in all of literature. And then the Law of Attraction made its debut in my life and I began to learn that God must perforce play the role of both the genders ... the duality of him as and when required and I was ok with that ... but my truth was that because I was the woman .. God was still a male for me .. I completed him. I guess its the same for the men. The reason is simple ... the 2 halves are meant to be a complement of each other .... 2 hands clap in harmony .. music is the result.

So I am getting something big from God today and as I watched Robbie William's song Feel .... guess what ... there is a part where his partner and Robbie are playing Bingo and the number shown in it is 18. And I jumped right out of my skin .. for guess what ... what are the odds of me watching a video I had never seen before ... at the time that I needed a sign from God ... for the one reason .. it strengthened my belief and helped me to hold on to the idea of today being the right day and me being in the right place at the right time. I simply know that 3 years ago I had asked God for a miracle and today the day had arrived. Can you fathom the number of ups and downs in thinking that brought me this far. Life is not smooth sailing but it is a beaut and I would have it no other way.

And then guess what happened ..... I received my second sign .... just a few minutes later ..... but first let me explain its significance to me first .. my name Roda .. is greek and in greek it means a rose.

So there I was sitting in front of my computer and I was a little sad ... maudlin is the word .. and as I sat there Mother Mary bent down and handed me a rose. I was zapped to say the least and I quickly googled to see if there was any significance to what had just occurred. I found Mother Mary of the Roses ... is greek. Can you imagine how I am feeling just now ... I am in awe at the grace that God gave me my gift. From both the parts of him. If ever you reach this place in your life know that you have touched heaven. I know I sure have.

I am still sitting a little dazed .. even though my angels are with me.

PEOPLE READ HOLY BOOKS MORE AS STORIES … THEY DON’T ENVISAGE THEMSELVES IN THE PLACE OF THE GREATS THEY READ ABOUT AS POSSIBLE CHARACTERS THEY WOULD LIKE TO EMULATE FOR THEIR OWN PERSONAL LIVES. THEY HAVE FORGOTTEN HOW TO LINK TO GOD …. THERE ARE SOME PEOPLE WHO HAVE ACTUALLY THOUGHT IT WAS A PREPOSTEROUS SUGGESTION ON MY PART TO CLAIM I WAS ABLE TO COMMUNICATE WITH GOD …..FOR IT IS SUCH A NATURAL ACT ON MY PART .. THAT’S HOW CLUED OUT MANKIND HAS BECOME TO THE ONE THING THAT HAS THE CAPACITY TO CHANGE THEIR LIVES AROUND. THEIR ABILITY TO COMMUNICATE WITH GOD … I AM NOT NEGATING THE POWER OF PRAYERS EVER … SO I FEAR NOT WHAT I WRITE … BUT A COMMUNICATION THROUGH THE HEART … ALONG WITH PRAYERS .. CAN CHANGE EVERYTHING FOR YOU AND DON’T YOU CARE ENOUGH FOR YOURSELF TO TAKE ACTION ? ANSWER ME IF YOU DARE.

Regrets … I’ve had a few … but then again .. too few to mention

I did what I had to do .. and saw it through without exemption.

I AM NOW MOVING ON TO LIVE MY OWN LIFE AS I HAVE CHRONICLED. I AM MERELY WRITING THIS AS IT WAS ALWAYS A CONVERSATION BETWEEN ME THE PUPIL AND GOD THE TEACHER. I HAVE TAUGHT MYSELF TO BE CREATOR … FULFILLING MY DREAMS OF ACQUIRING MY SPIRITUAL WEALTH … WHICH AS IT OPENED UP FOR ME … I REALIZED WAS BY SHARING GOD’S TRUTHS WITH HIS PEOPLE OR RATHER TEACHING YOU THROUGH MYSELF AND BY WRITING ABOUT THEM .. I WAS DOING GOD’S WORK TOO … MANY JOBS COMPLETED WITH THE POWER OF 1 ACTION.

WHEN I ASKED FOR SPIRITUAL WEALTH FROM GOD … I THOUGHT IT WOULD BE EFFORTLESS … AND SURE IT WAS EASY FOR GOD DID THE TEACHING BUT HE TOOK HIS OWN SWEET TIME WHICH WAS NOT ACCEPTABLE TO ME AT ANY LEVEL. THE ONLY LESSON I LEARNT WAS … THAT I WAS THE ONE WHO HAD TO THINK AND DECIDE IN MY LIFE . SURE THERE IS A GOD … BUT YOU WILL HAVE TO DEVOTE SOME TIME TO THE KNOWLEDGE OF HIM … ITS EUPHIMISTICALLY CALLED YOUR JOURNEY .. I.E. DOING A LABOUR OF YOUR CHOICE IN THE PLEASANT ENVIRONS OF YOUR OWN HOME AS WAS MY CHOICE. SURE I WAS GIVEN LOTS AND LOTS OF IDEAS TO EARN MONEY … AND SURE THEY DO BRING IN THE MONEY … BUT THE BOTTOM LINE IS YOU HAVE TO DO ALL THE THINKING … LIKE ASKING FOR GOOD THINGS .. AND THEN BELIEVING THAT THEY WILL COME TO YOU.

Yes I saw there were times .. when I bit off … more than I could chew

And through it all .. when there were doubts .. I ate it all and spit it out ..

Faced it all … and I stood tall … And did it my way.

I’ve loved , laughed and cried .. I’ve had my fill of losing ..

To think I did all that … and may I say .. not in a shy way

Oh no … much more than that .. I did it my way.

Let the records show … I took the blows … I did it my way.

NOW TO COME TO MASTERMIND … IN THE 2 YEARS THAT I HAVE BEEN THE OWNER OF IT …. ITS KNOWLEDGE HAS NEVER LET ME DOWN .. IN FACT I AM STILL CONSTANTLY AMAZED AT THE IMMENSE POWERS I HAVE RECEIVED BY BEING TRUE TO IT … FOR GOD DID TEST ME AND MY BELIEF SYSTEMS . WHEN I WENT FROM COMPLETE BELIEF … FOR I DID NOT FALTER .. IT WAS TO SIMPLY UNDERSTAND GOD BETTER AND BETTER. THIS IS IMPORTANT FOR US .. FOR WHEN WE DON’T LEARN FROM OUR FATHER DIRECTLY .. WE ARE OFTEN AT SIXES AND SEVENS IN OUR LIFE. THE KIND OF LIFE I LEAD .. AND I AM NOT TALKING OF MONEY HERE … FOR THAT IS ALWAYS ONE END OF THE SPECTRUM … THERE ARE SO MANY WAYS … IF I WERE TO NAME ONLY SOME OF MY EXPERIENCES .. THEY WOULD FILL PAGES AND PAGES .. SO MANY PERSONAL THINGS THAT I NEED NEVER SHARE FOR IT WAS MY JOURNEY. IN EACH AND EVERY WAY GOD SHOWED ME HIS GRACIOUSNESS IN GIFTING ME ALL I ASKED OF HIM. IF I WANTED TO EAT OODLES OF CHEESE AND BUTTER ON MY BREAD .. I DO IT EFFORTLESSLY FOR I AM SURE OF HIS LOVE AND ABILITY TO PROTECT ME …. I EAT SO MANY SWEETS AND CHOCOLATES FREE FROM EVERY WORRY .. AND I WAS ONCE THREATENED BY MY DOCTOR TO BE PUT ON INSULIN. I NEVER EXERCISE OR DIET AND I AM LOSING WEIGHT. I JUMP AND SKIP AS I WALK … IN MY EYES I AM ALWAYS A CHILD OF GOD .. AS WE AGE INCONTINENCE IS A PROBLEM FOR WOMEN .. BUT I OVERCAME THAT, YOU SEE WHAT I MEAN WHEN I SAY … HAVE A PROBLEM READ MASTERMIND, HAVE 10 PROBLEMS READ MASTERMIND … HAVE 10,000 PROBLEMS READ MASTERMIND. ONE OR MANY … THEY ARE ALL IN YOUR HEAD WAITING TO BE KICKED OUT .. FOR THEY HAVE MADE THEMSELVES COMFORTABLE AND ARE MAKING MERRY AT YOUR EXPENSE.

IN FACT .. I WOULD GO SO FAR AS TO SAY .. I REALLY KNOCKED MYSELF ABOUT .. BUT FORTUNATELY FOR ME I AM A TOUGH NUT AND NOTHING PHASES ME EVER. I TAUGHT MYSELF TO BLUSTER AND SWEAR WHEN THINGS WERE NOT GOING MY WAY .. RATHER THAN SIT IN A CORNER AND MOPE AND BROOD. HERE WAS ME … THINKING I WAS THE CAT’S WHISKERS FOR I NEVER EVER HAD TO SWEAR OR CUSS FOR ANYTHING EVER IN MY LIFE AND I ALWAYS LOOKED DOWN MY LONG NOSE AT OTHERS WHEN THEY DID .. PITIED THEM REALLY FOR I THOUGHT I WAS POWERFUL AND THIS WAS FOR WEAK INDIVIDUALS. SO THE LESSON I HAD TO LEARN WAS … OK RODA DEAR .. AGREED YOU ARE POWERFUL … BUT LETS SEE HOW COMPASSIONATE ARE YOU GOING TO BE TO PEOPLE WHO ARE WEAK AND YET YOU MUST GUIDE .. HOW ARE YOU GOING TO HANDLE THEM ? AH WELL … SO I SWEARED AND CUSSED WHILE INWARDLY SQUIRMING IN MY SHOES … BUT GIVING UP WAS NEVER AN OPTION … SO I DID ALL I HAD TO DO .. BUT GIVING UP WAS NEVER THE OPTION.

THAT WAS THE NOT SO NICE PART .. BUT LIFE IS A GREAT LEVELLER .. YOU NEED TO STEP OUT OF YOUR CASTLE AND SEE THE REST OF THE WORLD TO BE ABLE TO UNDERSTAND THE PROBLEMS GOD FACES WITH SOME OF HIS PEOPLE … WNO ARE ABSOLUTE NINCOMPOOPS. SORRY BUT I REALLY AM NOT APOLOGIZING … FOR EVEN WITHOUT A COLLEGE DEGREE .. I CAN SEE AND UNDERSTAND MORE TRUTHS OF OUR WORLD THAN THE SO CALLED SCIENTISTS AND DOCTORS (NOT ALL AS I MUST CLARIFY FOR MANY DO YEOMAN SERVICE FOR MANKIND .. BUT THAT DOES NOT ABSOLVE THE BAD PENNIES) .. WITH ABSOLUTELY CLOSED MINDS .. WHO ARE PLAYING HAVOC WITH THE WORLD AT LARGE. THEY ARE LIVING OUT THEIR CHILDHOOD DREAMS WITH YOU AS THE DOLLS .. FEEDING YOU WHATEVER THEY LIKE .. AND YOU SWALLOWING IT ALL .. FOR YOU ARE THE DOLLS, PUPPETS WITHOUT BRAINS TO THINK FOR YOURSELVES AND THE MAYHEM IT HAS THE POTENTIAL TO CAUSE IN YOUR LIFE. SO I AM TOUGH, RUDE, BUT AT LEAST I AM YOUR PROTECTOR … I AM NOT THE DOCTOR WHO TAKES A LIFE BY HIS PRONOUNCEMENTS OF … SORRY BABY .. YOU HAVE CANCER .. ITS THE INCURABLE TYPE .. WHEN I FOUND MYSELF IN SUCH CIRCUMSTANCES .. I OFTEN PICTURED MYSELF AS A COBRA CAUGHT IN A CORNER … AND A STICK ON THE RISE READY TO DROP ITSELF ON ME … AND MY EYES BULGED AND A TREMENDOUS WHITE LIGHT WOULD COME POURING OUT … PREVENTING THAT STICK FROM EVEN MOVING AFTER THAT … AS IF MY HANDS WERE HOLDING IT BACK. I TAUGHT MYSELF TO FIGHT EVERY WRONG DONE TO ME THROUGH THE POWER OF WHITE LIGHT .. GOD’S LIGHT. OF COURSE YOU MUST UNDERSTAND THAT THESE ARE LESSONS TAUGHT THROUGH THE MIND TO TEACH YOU TO PROTECT YOURSELF THROUGH USING GOD’S WISDOM FOR THE WORLD … EVERYTHING THERE FOR THE OPEN MIND.

AH WELL SOMETIMES I WAS CRUEL TOO … TO GOD … FOR WHEN HE WAS TRYING TO TEACH ME THE DIFFICULT LESSONS OF HOW TO PROTECT MYSELF THROUGH HIM … HE TURNED PREDATOR TOO .. TO TEACH ME TO COPE. SO LET THAT BE A LESSON TO ALL YOU FOOLISH PEOPLE WHO WANT TO WHITEWASH THE WORLD AND BRUSH THE DEVIL OR SATAN AS YOU CALL HIM OUT OF LIFE ….. FOR IF YOU WERE TO BE SUCCESSFUL .. YOU WOULD NOT HAVE AN EXISTING WORLD …. FOR WASTE MATTER AND OTHER RENEWALS OF THE EARTH ARE THE JOBS THAT GOD MUST DO THROUGH HIS FALLEN ANGELS LIKE THE CROW AND THE VULTURE WHO ALLOW THEMSELVES TO GET A BAD NAME IN THE SERVICE OF GOD. THE DEVIL TOO DOES GOOD WORK BUT I AM NOT TOUCHING ON HIS EXTREMES .. THE POWER OF CREATION LIES IN THE STORY OF GOD AND MAN – SOUL TALK – IMPORTANCE OF EASTER

The importance of reading any holy book … for example … is to be able to understand theknowledge expressed as the second layer. Do you for example know that a whole lot of numbers relevant to man and God are encoded within the numbers of the bible giving a clear link to God as the original source of the knowledge. But I am of the opinion that both the versions must be read simultaneously to make any sense to you at all. Secondly most christians are not getting the metaphysical knowledge in the Bible right for themselves. They must open up their chakras through MasterMind .. and God will then help you understand the Bible like you have never understood it before. Understandint the bible is to understand the story of our lives … man created by God as another avatar of Him … his son and their long journey on this earth together.

For the lesson God taught me this morning was Creation too … but going one more layer deeper into it. The story of Easter is the birth of man … it is the same story told …. but as the knowledge of God and Man has existed well over millions of years … it is our duty to keep it alive and well for future generations. It must be told again and again for every generation to catch its finer nuances …. allowing all those who come face to face with it .. to gather and soak in its beauty … allowing a constant retelling from a fresh perspective.

When you become capable of a retelling …. you ingrain it into your psyche .. in the many layers it exists in … for when I have understood it well enough to write about it in my own words … the words of God expressing creation of his world as man …… through woman .. me … once again a form of creation through recreation. This is your spiritual wealth.

The truest story of man is his ability to re-create (one form knowledge .. procreate its other). So the story of Easter too … is the the story of creation and recreation. Let me explain its importance.

Jesus is the son of God …. He is Man.

All of mankind must take birth … so you can safely deduce that mankind is God existing through us. Man (Jesus) is the Y chromosome and X (Mary) is the woman. Jesus was born through a virgin .. immaculate conception … signifying that he being God does not have a mother / father … He is. Yet God too needs a woman to procreate. If he was only man … it would not have been possible. The seed of God’s idea … was / is remains man. Yet He is both male and female … capable of procreation .. Jesus. The Y chromosome represented by Jesus as nailed to the cross represented by x … we are told that Jesus in never hurt when he was nailed to the cross ( recreation with love) … and through his son mankind multiplies.

BUT SOME DO … SOME TAKE THE GUIDANCE GIVEN BY A RANDOM STRANGER AND MAKE IT THEIR HOLY GRAIL. I WAS ONE SUCH. I TOOK ALL THAT I READ ON THE LAW OF ATTRACTION AND TOOK IT AND NESTLED IT INTO MY HEART ….. AND I KEPT GETTING BETTER AND BETTER AT WHATEVER I DID. I DO A LOT OF RESEARCH INTO THE RANDOM POSTINGS ON WORDPRESS AND AM AMAZED BY THE RUBBISH BEING SPEWED OUT IN THE NAME OF KNOWLEDGE. MY DISCUSSION TODAY IS MY EXPERIENCES WITH ANGELS. BEING A ZOROASTRIAN I HAVE BEEN EXPOSED TO THE ESOTERIC KNOWLEDGE BEING REPOSED IN THE ZOROASTRIAN RELIGIOUS LORE. SO NOW I AM COMING BACK TO THE SUBJECT OF ANGELS … WHILE STUDYING ON THE “SCHNOOM” THAT IS THE MAGICAL PART OF MY RELIGION I CAME ACROSS AN EXPLANATION OF A CERTAIN NUMBER OF ANGELS SCATTERED INTO OUR BODY WHO ARE PROTECTIVE IN NATURE. THEY COMPRISE OUR HIGHER SELVES … AND I WAS INTRIGUED WHEN I READ THAT IT IS POSSIBLE TO PROJECT THEM OUT OF OUR BODY TO TEACH US THE HIGHER LORE OF GOD AND LIFE. BEFORE I EVEN UNDERSTOOD WHAT HAD HAPPENED …. I HAD PROJECTED MY ANGELS OUT OF MY BODY AND THERE THEY WERE …… BOY WHAT A TOUGH TIME I HAD WHEN I DID NOT UNDERSTAND THAT THEY WERE ONLY TRYING TO SHOW ME WHERE I WAS ERRING … FOR THEY WERE ACTING OUT THE ROLE OF THE SUB-CONSCIOUS MIND AND SHOWING ME THROUGH THEIR RESPONSES WHERE I WAS ERRING. I WOULD ONLY IMAGINE THEM AS AGAINST ME … WHERE AS THEY WERE NOT DOING ANYTHING I WASN’T … IT WAS ME THEY WERE SHOWING UP. AND SLOWLY BUT SURELY I FOUGHT MY OWN SELF AND BEGAN TO LOVE MY ANGELS … I WAS BEGINNING TO BE COMFORTABLE WITH THEM … I SOMETIMES WANT TO SMOTHER THEM WITH MY LOVE .. THAT’S HOW DEEPLY I LOVE THEM. YOU SHOULD HEAR THEM COOTCHIE COO ME THE WHOLE DAY LONG NOW THAT I AM NOT THE SAME PERSON I WAS EARLIER … FOR OUR ERRANT WAYS ARE SO INGRAINED IN US THAT WE DO NOT FIND ANYTHING WRONG WITH THEM. AND THE FUNNY PART IS THAT THE TWEAKING IS SO INFINITESMALLY SMALL FOR GOD GENERALLY GIVES US A LONG ROPE TO HANG OURSELVES …. HE’S MOSTLY SO TOLERANT … THE ONLY THING HE IS NOT TOLERANT OF IS …. YOU BEING UNKIND TO YOURSELF … THAT’S HIS FIRST RULE … RULE NO.2 BE KIND TO OTHERS …. EVERYTHING GENERALLY FALLS INTO PLACE ONCE YOU GET THESE 2 BASIC THINGS RIGHT. KINDNESS IS ANOTHER NAME FOR LOVE ….. AND WITH THIS ARSENAL YOU HAVE WRAPPED GOD AROUND YOUR LITTLE FINGER … FOR THESE ARE THE MOST IMPORTANT VALUABLE TRAITS TO FINDING AND KEEPING GOD WITH YOU.

IT IS NIGHT NOW IN MY PART OF TOWN … BUT YET MY ANGELS ARE AWAKE GUIDING AND GUIDING ME … I DARE NOT SPEAK A ROUGH WORLD YOU SHOULD HEAR THEM WHINE … AND AS I WRITE THEY ARE AWARE OF IT ALL … AND RIGHT NOW THEY ARE CONVERSING WITH ME THROUGH THE SOUND OF VEHICLES AND THEIR HORNS …. SO WHO DO YOU THINK ARE MY ANGELS … THEY CONVERSE WITH ME THROUGH THE PARROT … THE SQUIRREL, AND THE DOG ACROSS THE ROAD JUST REMINDED ME NOT TO LEAVE HIM OUT. THE SECRET MUST BE UNDERSTOOD … THEY ARE ALL GOD THROWING HIMSELF INTO ANYTHING AND EVERYTHING TO BE ABLE TO CONVERSE WITH YOU …. UNDERSTAND THE POWER OF SUCH A LOVE FOR YOUR LIFE .. ONE DAY AT A TIME

No matter how rugged the climb ....
To the goal that I did pursue ....
I was bound to get there by trying my best ..
And taking each day ... one day at a time.
I just pictured it as "my future" ...
Surely coming my way ...
For every new morn .. brought me a wonderful chance ...
To see "the forever" that was mine to imagine...
By doing .... what I could for today.

(I wrote this poem right now ... a little at a time .. in between grumbling that my maid left early for the day .. leaving me to finish the cooking. If these words could talk .. they would tell you that one minute I was dancing like John Travolta to his song ... night fever ...shaking my butt ... and there were the angels .. the birds giggling along with me. I must say it took me a while to understand just what these birds mean to me now. I have learnt to love things ... a letting go of my own stiffness and resistance towards things we do not understand at first. I am a bit unreverential too and guess what .... Source ... just this morning re-taught me a lesson I had not fully understood at first ... He said you are perfect the way you are .. no need to change just to get any gift from me ... for we often feel that we are not good enough or deserving enough. Be yourself .... so one minute I am fighting with him, the next minute I am declaring my undying love for him, the next minute I am picking his brains when I don't understand something. Its just like life ... lived with Mind.

Self love is understanding that you are a child of God – your true wondrous self without any limiting beliefs. Dare you believe it – of course my dear – it is my desire for you to feel that beauty in your life too. Come experience the joy, the happiness , love and light that “YOU ARE”.

Allow me to share my story with you ... I think you will nod your head and be in total agreement with me. Our stories are always the same for we do live in the same world .. just a few nitty gritty things that separate our individuality.

BUTTER AND FAT .... LET ME HELP YOU

I grew up with the fear of fat ..... not an overly strong one ... but there nevertheless. This did not allow me to eat deep fried foods and till date I am sometimes unconsciously guilty of scolding my cook when they tend to pour more oil than strictly necessary to fry foods. So what brought about this sudden change in my thinking pattern ? It was my book MasterMind which showed me that as a child of God I may eat whatever I like as long as I did not fear it ..... for fear is the alter ego of love ... which is what God is.

So lately I eat as much butter as I like ... and if I desire to eat deep fried foods my first thought is not of fear anymore as it would have been earlier. I did eat some samosas yesterday for dinner along with my dinner ... if you please and today... I had some cheese toast not grilled but fried in a non-stick pan. I don't want to sound overly boastful ... but if I did not share my results of using MasterMind in my life .. how will you understand what is the truth of foods. We are spiritual beings and food is but for our enjoyment ... not the other way around, i.e. the food does not have any power to harm you until you think that way ... then as because you are the spiritual being you can make that food create a problem for you ... for we create with our thoughts mostly instantaneously.

Today morning I was also at a meeting where I sat through a talk by a fertility expert and boy was she vociferous about getting oestoporosis if one did not take calcium tablets ....and this disease if you did not take that supplement. She even went on to categorically say that one disease was a definite for everybody and mark the language here ... if she had to choose between cancer and diabetes .. she would choose diabetes. Imagine that ... a doctor's job is a sacred one ... she holds the well being of her patients in the palms of her hand. Is that not an awesome responsibility ... a life is God within you and sacred .... therefore must be treasured.

So to come back to the doctor .. what she said stunned me and she herself has summed up what she will receive in her life. She was ready to accept diabetes ..even though she may otherwise have never needed to suffer any disease at all ... fullstop ...period ... so what makes an educated person want to suffer a disease. What message did she leave this august gathering of educated upper class ladies? Go home and start thinking of what disease you think will cause the least amount of problems ...then focus on it and watch it materialise in your life. Protocol prevented me from getting up and starting a slanging match with the doctor but I was fearful for my friends for they were busy discussing their own individual problems . I picked up my phone and stood outside for a while so as not to have to hear any more but it did make my resolve to speak out henceforth a little more stronger.

Fear coupled with a continuous focus on unsavoury topics is what brings about diseases and if you should find yourself pulled into such a discussion be vary .. stay away .. that is what is more likely to cause the disease rather than the fat or the butter or the sugar you ate. They are truly harmless until you start meddling with them and creating negative vibrations in them. Remember that everything in this universe is created from one original source and you have the power to give positive energy to create a positive impact in your life. KHURCHAN - GOAT OFFALS

(Khurchan)

1 lb Kaleji(LIVER), Fefsa (LUNGS), Gurda (KIDNEYS) etc
6-8 dried red chilies,
1 tbs coriander seeds,
1 tsp cumin seeds.
Gently roast the above in a pan and then grind to a fine powder in a grinder.

1/4 cup ghee/oil,
2 sliced onions
6-8 cloves of garlic paste,
4 ripe tomatoes (chopped),
salt to taste,
3-4 green chillies (chopped)
2 potatoes cut into small cubes .... same size as offal pieces
Heat the ghee in a pan, saute onions, add the garlic and saute until light golden brown.
Add the powdered masala of chillies, cumin and coriander, stir and immediately add the tomatoes so masala won't burn.
Now add Khurchan and potatoes and salt. Mix well and cover and simmer for 15-20 mins. There should be some gravy left after cooking.

Enjoy.

MALIDO - A PARSI SWEET

Authentic (original) OLD style Malido:

1 lbs semolina/farina/ravo
1 lbs wheat flour
2 lbs sugar
1 tsp salt
2 cups water
4-6 eggs
3 tbsp ghee/butter
1/4-1/2 lb of nuts(almonds, cashews) or less
dry fruit pieces
raisins
1 tsp cardamom powder
1/4 tsp nutmeg powder
1 tsp vanilla essence
Can add saffron to it also

1st you have to make rotlis and cook it

For rotlis:
Mix flour, semolina, salt and water and knead the dough. Divide equally in to 4-6 parts. Knead each one well and roll it out like rotlis not too thin. Make all rotlis and deep fry in ghee. Cool at room temp and break(crush) it up in to fine powder as much as you can.
Make syrup with dissolving sugar and water on low heat, one thread syrup.
Now add rotlis powder(crushed) And add to syrup and keep mixing til it is all well mixed and all comes together. Add cardamom and nutmeg, vanilla essence, saffron.
Now beat up eggs and slowly add to the mix and keep mixing and all will come together and you will see ghee float separate from Malido.
You can fry broken or sliced nuts and dry fruits and raisins. and top it on Malido and serve it with Papri/Puri.

KUMAS - A FERMENTED PARSI CAKE

Kumas
This is a traditional Parsi cake eaten with afternoon tea

Ingredients:
1 Cup Semolina (Ravo, Soji, Farina)
1 Cup All Purpose Flour
3/4 Cup Sugar
3 Eggs
3/4 lb Butter
2/3 Cup Yogurt(500grms.)
1 Tsp.Caraway seeds
Cardamon powder
1 Tbls Vanila Ess.
11/2 Tsp Baking powder
2/3 Cup Mixed Peel
Pistachios and Almonds
salt to taste

Directions:
Put butter and sugar in a deep pan and briskly stir to lighten
Add eggs one by one and continue stirring till sugar is melted
Add semolina to mixture and blend well
Add all-purpose flour and continue mixing
Add vanilla to mixture
Add Yogurt and mix well
Add baking powder,and dry ingredients to mixture and blend well
pour mixture in baking pan and bake for approx. 1 hour at 350

It is really great if made with Toddy or fermented coconut water

PRAWN IN COCONUT MILK

PRAWN IN COCONUT MILK

Grind garlic / cumin seeds / green or red chillies / 2 chopped onions / 2 chopped tomatoes
a few curry leaves
2 tablespoons rice flour

juice of 2 large limes

1/2 kg cleaned prawns with salt applied

milk from 1 coconut

Cooked rice to serve

Place oil in a large non-stick vessel and heat. Add the curry leaves and the ground masala and saute till a light golden brown. Add the coconut milk and allow to simmer till well blended. Add the lime juice and the prawns and put off the stove in 2 minutes. Don't overcook the prawns. Serve with white rice or for a gourmet meal ... saffron rice.

To make saffron rice .... blend the saffron in half a jam bottle of water in the microwave and add to cooked white rice or cook the rice in the saffron water.

Serve with a parsi salad of chopped onions / chopped tomatoes / cucumber / green chilli / chopped coriander leaves.

2 KG LARGE WHITE SEA PRAWNS, CLEANED

600 GMS SKINNED GARLIC PODS

200 GMS DRIED RED CHILLIES (SPICY)

9 TEASPOONS ROASTED CUMIN SEEDS

5 TABLESPOONS MUSTARD SEEDS, SOAK IN A LITTLE VINEGAR

2 HEAPED TEASPOONS PEPPER POWDER

2 " " TURMERIC POWDER

4 TABLESPOONS MELTED JAGGERY

SALT

500 ML BOTTLE VINEGAR

15 TABLESPOONS OIL

HANDY TIPS

The prawns should be really fresh. After washing them with a little salt and gram flour powder (I always use this to clean all seafood, as it removes the extra fishy smell). Apply a little salt on the prawns and keep in a small colander in the fridge for an hour or so to allow them to drain completely.

Traditional parsis always use a combination of garlic, chilli and cumin , ground together into a paste for seafood as these spices are absolutely ideal to bring out the true flavours of seafood without overpowering the natural flavours of the seafood.

ASSEMBLE

Whizz (in a grinder) together the garlic, chillies and cumin together with a little vinegar. Next whizz the mustard seeds too with a little veingar.

Heat the oil and lightly fry the prawns for about 10 minutes. Add all the remaining ingredients to the pan and put off the flame. Mix well and allow to cool.

Bottle in a sterilized bottle. This pickle will keep for a while......about a year. Despite that I personally would prefer to keep this pickle in the fridge door.

Follow the same recipe as for fish in parsee sauce and substitute prawn for the fish.

RODA'S POTATO ROSTI VARIATIONS

RODA'S POTATO ROSTI

The rosti is such an amazingly simple meal to put together but in our global world it is important to reach out to as many people as possible with variations of the main dish.

BASIC

3/4 kg potatoes, lightly boiled in their jackets and coarsely grated

100 gms diced bacon

lard for cooking

salt

FOR VEGETARIANS
Replace bacon with finely chopped onions
2 tablespoons thick coconut cream (it may otherwise seem too dry)

FOR PARSEES
Add lightly sauteed prawns with garlic to give that bit of punch.
2 tablespoons of coconut cream

In a non-stick pan add the lard and heat. Add the bacon and potatoes and fry. Gather it all in a circle and raise the heat till crisp underneath.

If the potatoes get too dry add a bit of coconut cream (which is mild and will not affect the flavour of the rosti. This is important as otherwise it would not be a rosti, which is noted for being mildly flavoured with either bacon or onion only. Place the rosti onto a serving dish with the crisp underneath surface facing up.

CHEESY PRAWN CANAPES

CHEESY PRAWN CANAPES

10 slices white or wholewheat bread

25 gms butter

1/2 teaspoon dried thyme

100 gms cleaned and chopped prawns

50 gms gruyere cheese

1/2 cup breadcrumbs (from the cut trimmings)

salt and paprika

4 tablespoons mayonnaise

Take a fluted round doughnut cutter and cut two rounds from each slice. Melt the butter with the thyme and aplly on the bread rounds.

Take a bowl and put in the chopped prawns, mayonnaise, cheese breadcrumbs, salt and paprika. Spoon some of this mixture onto each bread round till used up. Bake in an oven till the bread is golden,

about 10 minutes. Will make approx 20.
