In Quebec, one way people celebrate the end of a long winter is by visiting a <em>cabane à sucre</em> (sugar shack). While historically they were located on farms and were the center of maple syrup production, today sugar shacks are often commercial enterprises where folks of all ages can enjoy food, fun, and entertainment. Most offer tours that show how maple syrup is made, from how sap is extracted from sugar maple trees, to showing how it is boiled it down into syrup. Children of all ages can enjoy maple taffy, which is made outside by pouring boiling maple sap directly onto snow. And, what better way to end your outdoor tour, than by visiting the restaurant and eating a hearty meal of baked beans, ham, bacon, eggs, and/or pancakes, all flavored by &#8211; you guessed it – maple syrup.</p>
<p>&nbsp;</p>
<p>Speaking of breakfast foods, here’s another dish that can be enjoyed with maple syrup:</p>
<p>&nbsp;</p>
<p><strong>Madame Donais’ Traditional French Toast </strong></p>
<p><em>(Serves at least 6)</em></p>
<p>12 eggs<br />
1/4 cup maple syrup<br />
2 tablespoons of liquid lard<br />
Vanilla, to your liking<br />
3 1/2 cups of milk<br />
Homemade bread sliced ??thick (1 lb.)</p>
<p>Place all ingredients except the bread into blender and mix. Pour the mixture into a dish and soak the bread slices. Next, bake the slices with a waffle iron. Finally, serve with maple syrup and fruit, sprinkled with confectioner sugar.<img class="alignleft size-medium wp-image-355" title="breakfast2" src="http://clossaintlouis.com/blog/wp-content/uploads/breakfast2-300x225.jpg" alt="" width="300" height="225" /></p>

In addition to bundling up, some of the adults are probably drinking “Caribou.&#8221; For the uninitiated, Caribou is an alcoholic drink made from port or red wine, a hard liquor such as whisky &#8212; although some recipes use brandy or rum &#8212; and sometimes sweetened with maple syrup or soda pop. It can be served at any temperature.</p>
<p>While legend has it that Caribou was named after a drink from colonial times that contained of a mix of actual caribou blood and whisky, today there are a number of different variations of the drink &#8212; and they don&#8217;t contain unsavory ingredients.</p>
<p>If you&#8217;re unable to travel to Québec for Winter Carnival this year, Caribou is easy to make at home. Here’s a <a href="http://www.carnaval.qc.ca/en/about/traditions/caribou">recipe from the official Carnival website</a>:</p>

Most events take place on the historic Plains of Abraham. Dress warmly or warm up by drinking caribou &#8211; a traditional Quebec winter drink &#8211; at one of the ice bars along the Grande Allée.</p>
<p>The purchase of an effigy – a small Bonhomme keepsake figurine – grants visitors access to most events. The cost is $13 and they are easily available at kiosks, at over 450 stories in Quebec City, as well as online for groups of 25 or more. (Note: some events are free.)</p>

This event will be held for the sixth consecutive year in Quebec City from March 16 to 19 2011. This extreme skating competition mixing hockey, snowboarding and skiing will impress fans of strong sensations.</p>
<p>More than 80 competitors including men and women will slide down the artificial icy runway spread in the heart of Old Quebec to the delight of spectators. This infernal descent of 535 meters long has hairpin turns, steep slopes and insane jumps. It is enough to make this world unique championship one of the hardest on ice competition.</p>
<p>Attracting nearly a hundred thousand people each year, the event will end on March 19. This grand finale promises to be exciting.</p>
