Happy Friday! It's hard to believe it's already Memorial Day weekend! With Summer fast approaching I am still wearing flats and pants to work. I am a little nervous to throw on my skirts or dresses without a tan! Speaking of flats I have recently been eyeing Salvatore Ferragamo flats - a wide variety featured on Shopbop. Something Yummy To Try..

I am really not a cook. I consider scrambled eggs cooking. Every time I see a Barefoot Contessa book I want to look through it and fold over the pages of the recipes I want to try. Each time I am on Pinterest I have to pin something noms worthy. I am a foodie, I love trying new restaurants and take each delicious bite of that dessert. But it's so weird I just do not make anything for myself or for guests.

This summer while work slows down and those summer Friday's come into play, I think I should pick one recipe a week to try out. So after some drooling here's my first recipe I'm hoping to master. Wish me luck!

From Iowa Girl Eats... The Superfood Salad with Lemon Vinaigrette

Serves 5

Ingredients:
1/2 cup dry quinoa
1/3 cup red onion, chopped
1 orange, peeled and segments chopped
1 avocado, chopped
1 cup canned black beans, rinsed and drained
1 cup pomegranate arils (about 1 pomegranate worth)
1 cup frozen corn, thawed
1/3 cup cilantro, chopped
salt & pepper

For the Lemon Vinaigrette:
2 lemons, juiced (need 1/4 cup juice)
2 garlic cloves, microplaned or finely minced
dash of sweetener (agave nectar, stevia or white sugar)
salt & pepper
6 Tablespoons extra virgin olive oil

Directions:

Cook quinoa according to package directions. Set aside to cool.
For the Lemon Vinaigrette: combine all ingredients in a jar with a tight fitting lid, and shake to combine. Or, add lemon juice, garlic, sweetener, salt and pepper into a small bowl and whisk in oil.
Combine cooled quinoa with red onion, orange segments, avocado, beans, pomegranate arils, corn, cilantro, salt and pepper. Pour Lemon Vinaigrette over the salad and stir to combine. Serve cold or at room temperature.

A very Happy Mother's Day to all the mamas out there! Today's a special day for me as it is my first time celebrating Mother's Day as a new mom. Hunter is a little over two months now (he really should only be about a week or two old) and to say I'm tired is an understatement. I give my mom SO much credit for doing this five times and my grandmother even more credit who did this eleven, yes eleven, times! But all of these sleepless nights and messy diapers are worth it! Love this boy so much! Happy Mother's Day!

Finally Friday!! After a weekend getaway to Mexico, I was thrown back to my desk literally working for the weekend. This Sunday as we all know is Cinco de Mayo!! And my 25th! I'm treating myself to a much needed haircut and maybe popping into to Intermix since it so conveniently right below the salon. I am looking forward to enjoying the gorgeous weather in NYC this weekend, maybe a walk in the park, dog stalk and get a mr. softee.

I think I drank all the rita's in Mexi and ate all the guac so I need a little break from the traditonal food on Sunday. I'm opting for a 3 layer Magnolia Bakery cake and probably some Italian. Friday Favorites :: The (mini) Wedge

First of all, TGIF.

I think I'm the anti-high heeled lady. Don't get me wrong, I love them and have a borderline ridiculous collection of them but when it comes to wearing them, I point-blankly...don't. Yes, of course to "fancy" events I will suck it up and put on a pair of pumps but I'd rather just be comfortable on a day to day basis. That's why when I started noticing a "mini" wedge trend this season I got very, very excited. I feel like these mini wedges (I don't even know if that's what they are called but that's what I am calling them) are not too casual but casual enough and not too fancy but fancy enough. Know what I mean? I have already purchased a few pairs: these and these. And I love them. Now that the temps are warming up (Amen) I can't wait to start wearing them!

When I think of "hair accessories" the first horrendous thought that comes to mind are butterfly clips. I am guilty and I know so are all of you. How about ribbon headbands? Or huge bows (mine always had dogs on them), but anyways hair accessories are not just for little girls, women can rock them too!

I tend to get extremely bored with my hair. Going for a spring cut and color this Saturday I am really focusing on how I can spice things up during the week. I've begun using a wand on my hair for a slight tousled curl but my recent purchase has got me hooked. Since purchasing this Missoni headband I am all about the hair accessories. The wide-ness of it gives kind off a turban -ish vibe which I'm also digging. I especially love this look for walking around the city with my sunnies or on the beach. It's laid back and super easy. Just swoop your hair into a messy bun and slip on your accessory and voile your good to go!
