Double Decker French Toast

Needing an easy breakfast that tastes amazing? You've got to try this! It's super easy to make, and absolutely delicious. You can match it with your favorite jam or jelly or just cream cheese.

Ingredients:

Cream Cheese

Jam or Jelly of your choice

2 slices of bread

2 eggs beaten

Splash of cream

10 drops liquid stevia

Directions:

Heat pan over medium heat, beat eggs in a plate or bowl big enough to dip the bread into, add the cream, and stevia beat until combined. Once the pan is hot dip bread into the egg mixture and place it into the pan. Cook until golden on both sides. Spread cream cheese over one piece of french toast, top that lightly with jam or jelly, place the second piece of french toast on top. Swipe a bit more cream cheese on top and a dab of jam.

Spring has come early here in Tennessee so we have spent the last few weeks getting the yard in shape, we've been mulching, planting and sprouting seeds like crazy but it is all worth it! The yard is looking amazing and will burst into full bloom any day now. In the meantime, we are pulling our furniture back out into the yard to create some cozy seating areas. This is one of my favorite projects, it's so fun to make each section of the garden inviting and ready to entertain in. From our patio with the big cowboy grill and butterfly benches to our deck with its comfortable dining area each section has, it's own purpose and style.

Plow and Hearth helped us get this area of the yard ready to hang out with friends on sunny afternoons or on lazy mornings when the chores are done. We were so excited to get this beautiful resin wicker swing in the mail the other day! Of course, it arrived on the one day it rained this week and the UPS driver left it in the driveway so after a quick move to the porch we were able to unbox it [watch it here]. It was super easy to assemble, we just pulled it out of the box attached the chains and hooked it up.

We wanted this area to have that sweet southern lazy summer feel so we added some galvanized buckets filled with flowers and white roses.

This swing is so comfortable even without a cushion (we plan on adding one soon!) and goes perfectly with the rest of our wicker furniture. I love the way it looks in our yard.

We absolutely love this swing, it's what our yard has always needed and this is the perfect fit. We couldn't be happier with this product, it's really well made, looks great and super easy to clean the leaves and cedar needles off of.

How To Thin Peaches

It's funny as the year begins and we edge toward warmer weather it easy to get everything done in the orchard and garden but as we hit the end of April and beginning of May (at least here in Tennessee) it seems like EVERYTHING requires something done to it, and it all has to be done at the same time. It's exhausting but so fulfilling! Somewhere between mulching, pulling weeds, repairing raised beds, making more raised beds, planting seeds, spraying trees so they don't develop fungus and bugs don't descend on the fruit, tending to roses, transplanting into the garden, cleaning coops, supervising ducklings swims -the cutest job EVER you can watch HERE- and a thousand other things we finally got around to thining peaches, I know it goes against everything in you to pluck those baby peaches off the tree after all of the work you put in.

Our peach trees are covered in fruit this year and they look fabulous! In fact, it's the best they have ever looked, we took a lot of time to prune, fertilize and spray our trees with liquid copper, organic natural dormant sprays and organic natural fungicides and insecticides the last two years (we'll be writing about that and sharing our recipes and spray lineup soon) and we are seeing the fruit -pun intended- of our labor.

Why Thin Peaches?

Peaches like most stone fruit have a habit of producing more fruit than it can keep up with, which will make the fruit stay small and damage the health of the tree it takes a year or more for the tree to recover (some don't ever). When you thin out the fruit it keeps the tree from being overwhelmed and helps balance out the fertility of the trees for yearly harvests. It also keeps the branches from breaking under the weight of the fruit. It also helps to keep the flesh of the fruit looking healthy, it gives them more access to sunshine and allows them to dry faster.

When To Thin Peaches

Most fruit trees thin themselves to some degree on their own, but almost all stone fruit including nectarines and peaches will need to be thinned. Generally, plan on thining your trees one month after your trees are in full bloom or when your fruit is between 3/4" and 1" in size. If you live in warmer climates like we do this could be as early as April but if you live up in Northern states it will be as late as June. You don't want to do it when the fruit is too small because it can cause split pit in mature fruit. But if you wait until the fruit is bigger then 1" the tree's resources have already been taxed by the extra load.

How To Thin Peaches

Experts sources suggest that you thin fruit to a minimum of 3"-8" between fruit, we went with 5" for ours because they are covered in fruit. We also went ahead and removed any from the crook of branches that would likely break the branch. We thin our fruit by hand with the help of a ladder, simply measuring by palm length between fruit, and then pinch the stem of the fruit we wish to remove with our thumb (you can also gently twist them). If you find clumps of fruit go with the biggest, and remove any that are damaged or show signs of bugs. Favor the ones toward the trunk opposed to the tip of the branch where it is more likely to break off. Another quicker but much less accurate way to do this would be striking the branch with a stick to knock fruit off.

How To Make Wild Violet Syrup

Our violets have bloomed in all of their purple-blue glory! I love watching them wash over the orchard, it's so beautiful. We've spent hours picking them lately for syrups, bread and to be dried into tea. We wanted to share one of our favorite violet recipes in case you have a bunch that you don't know what to do with.

Make sure you know what wild violets look like and don't confuse them with African violets, the ones that are safe to eat have heart-shaped jagged leaves and purple flowers although they can come in many shades and even white. They grow in zones 3-9 in shady places. Wild Violets are full of vitamin A & C (they contain more vitamin C by weight than oranges) and other vitamins and minerals.

Violets can be made into jelly, syrup, tea, violet vinegar, candied flowers, you can even freeze them in ice cubes to jazz up your drink.

What you will need:

Quart canning jar
Measuring cup
Lids
Fine strainer
Small Pan
Wisk
Lemon Juice
Wild Violets

Recipe:

1 cup of wild violets
2 cups of boiling water
1 cup white sugar
2 tablespoons lemon juice

Step 1:

Pick the violets, remove stems, leaves and as much of the greens as you can. Wash them gently and let them dry.

Step 2:

Fill canning jar with 1 cup of flowers, meanwhile, boil water. Pour water over flowers, you will begin to see the color bleed into the water.

Step 3:

Cover the jars and allow to steep for 24 hours.

Step 4:

Strain the contents through a fine strainer, into a bowl or large measuring cup. You can discard flowers, you can throw them away or simply compost them like we do.

Step 5:

Add lemon juice to the strained liquid, a drop or to at a time.

Step 6:

Place liquid in a pan and add sugar, bring to a boil, whisk until sugar dissolves. Remove from heat and pour into a clean sterilized jar with a lid. Store in refrigerator.

Parasitic Relationships

As we roll into Joshua 9 we find the Israelites in an encounter with travelers supposedly from a distant land begging for friendship. As we continue to read we discover the truth is these travelers are really from a neighboring city, but they've put together this grand ruse of packing dry moldy bread and putting on worn out clothes so it looks like they've been traveling a long way when in reality they are the neighbors. Scripture tells us that the Israelites sampled their supplies but didn't seek the Lord's will, and instead of seeing these travelers for what they are, they are taken in. They had all the right answers, they knew the right phrases to earn their trust and so the Israelites swear a treaty with them despite the fact the Lord told them to drive all the people in the land of Canaan out.

As we look back on chapter 8 the Israelites have just won a major victory, the chapter ended with Joshua holding his javelin out, and the victory is the Lord's, He gives them the city and they follow all of His directions. Joshua's erecting an altar to the Lord and reads the laws of Moses to all the people and yet as we make our way through this chapter I'm struck by verse 14 The Israelites sampled their provisions but did not inquire of the Lord. What happened between the chapters? Joshua was so in tune, so tight with God so why did he not stop and seek God in this decision also? Isn't it interesting, that at our high point, when everything has been going great, in the wake of a victory that our focus can shift? It's while we are riding out the high of the victory that we can stumble. And then the Israelites discover who these travelers really are... How often the people in our life, the people we thought we knew reveal their true colors and leave us reeling in confusion and disappointment.

The Gibeonites had heard about Joshua's victories, Like Rahab they'd heard that the Lord had promised them this land, they'd seen city after city fall, instead of going to war with their neighbor's against Joshua they want to join him, but secretly unlike Rahab. They didn't want to serve God, they didn't want to be a part of what He was doing because they loved Him they just wanted what they could get out of it. They decided they wanted in on the action, they wanted to be part of that crowd and the protection it promised, they wanted to live off of the coattails of what God was doing. Everyone has heard of the Israelites and their God, maybe they wanted a little of that fame. Instead of coming honestly, they set out to trick and manipulate the Israelites and their God, but instead of coming to God the Israelite's simply blundered in blindly making decisions. God saw through the deception, He could have told them if they'd only asked.

How many of us have has some friendships like this? You thought they were real, but it turned out it was all an act. You thought they wanted to be your friend, to be apart of what God was doing but it turned out they wanted what they could get out of the relationship and so they became like a parasite feeding off of you, sapping the time and energy and resources out of you. Jealous of your attention, and demanding of you until you were so busy trying to satisfy their ravishing appetite that your ministry, your calling, your relationship with God begins to suffer for it and it became a burden you just couldn't get out from under.

I can't help but think of Rahab's heartfelt plea in chapter 2 verse 12-13 “swear to me by the Lord that you will spare the lives of my family and those who belong to me because I have shown kindness to you," such a different approach. Relationships built on lies and manipulations will never be successful, they will only lead to exhaustion and disappointment.

We have to be careful who we let into our inner circle, who we allow in the position to hold our arms up, who we let into our war room to see our plans and our dreams and speak into our lives. We have to guard what God is doing so people can't come in and drown the fire because they feel threatened by what He is doing. We have to guard our friendships so that the people who just want the fame of what God is doing, they want to be known for hanging out where God is moving but they don't want to actually be involved don't sap away our strength and become a dead weight that we are dragging around.

We find in Joshua the perfect example of a parasitic relationship, as the Gibeonites are faced with battle they immediately call for Joshua to come and save them. Gibeon is an important city in the area and all of its men were good fighters but they still make him bring his army and fight their battle. In fact, they sound like whining children manipulating to get their way in verse 6 begging for Joshua's time, energy and resources.

We need friends who will tell us the truth in love, that will hold our arms up when they won't get anything out of it, who will see what God is doing and encourage our hearts, who will be an ally when the battle does come and will fight it with us and storm heaven's gates on our behalf. We need the kind of friends that are the same in the dark as they are when the spotlight is on. We need to seek the Lord in every friendship, every relationship. We need relationships that are a tandem pull toward the Lord, not us dragging them with us.

Spring Farmhouse Living Room

Spring has been around for a while and we are edging toward summer feels with each passing day, so we wanted to put together a new look in our living room. Something with a nod toward summer while still keeping all the spring touches in place. For this look, we went with a really simple fireplace look and lots of flowers around the room.

For the mantel, we kept it really simple with a framed picture in the center, an antique cocoa urn filled with cotton and a cute chicken figurine. On the other side, we repurposed some garden decor and a crystal cross. We place the smaller garden decor piece on a white crock and wrapped a bit of greenery around it. Along the front of the mantel, we hung a simple egg garland [Find the tutorial here] and an adorable welcome to our nest sign in the center of the mantel.

We dress set our smaller galvanized chicken feeder with small nests, little plants, and a rooster figurine. We wanted to keep the decor really low so that it doesn't block people sitting on the couches view. I love how it pulls some of the colors of the table up into the decor on top.

On the side table, we placed our purple garden globe and a vase of fresh lilacs and an antique candy bowl to brighten up the table.

DIY Tomato Arbor

Every year we struggle to keep our tomato plants under control, at the beginning of the year our tomato cages work great but as the plants grow and begin bearing fruit they quickly begin leaning. We've tried staking each cage, but the plant ends up outgrowing the cages and laying all over the ground anyway which blocks our walkways and makes it really hard to harvest the tomatoes as they ripen.

Last year we decided to move our raised beds down to the sight of our original garden, the trees had grown up and it wasn't getting enough sunlight. While we had everything taken apart we thought we try to solve our tomato cage problem, we had lots of wood left over from an old aviary chicken coop we'd torn down years ago. It's been sitting behind our wood pile waiting to be repurposed for another project.

One of the main issues with our old tomato cages is that they weren't tall enough to hold the plant upright, another was that it wasn't strong enough to hold the plant and stay in the ground. To remedy this we took 2x4s cut them to 4 feet tall and attached them with screws to either end of our raised beds, between each of 2x4 we wrapped 17 gauge galvanized steel fence wire in three sections. You'll want to make sure that the wire is nice and tight and secured well to the wood. We wrapped ours several times around the board before continuing to the next 2x4.

We talked about notching the wood or using heavy duty staples to help keep the wire from sliding, but just wrapping it kept it from slipping down.

We planted 3-4 tomato plants beneath the wire and used small sticks and garden ties or pieces of velcro to support the stock until they were tall enough to reach the wire. We also removed the limbs close to the ground to encourage the plants to grow taller (it also helps to keep the plant more orderly Once they were tall enough to touch the wire we removed the sticks for the most part and secured the plant to the wires.

This year we are going to add support to prevent the 2x4s from pulling in, other than that we love this system! It held our tomatoes up off the ground and was strong enough to handle the heavy plants. We probably could have cut the 2x4s longer, but we weren't expecting our tomato plants to get 6 feet tall (a couple even went over our arbors). All together we are really happy with these tomato arbors and plan to continue using them in our garden.

DIY Tomato Arbors:

What you need:

2x4s (1 4 foot section for either side of the box- we use untreated wood but you can use whatever you want.)
17 gauge fence wire
Screws
Drill with the proper attachment.
Tape measure
Saw

Directions:

Cut the 2x4s to the desired height, attach securely to your raised bed using screws (we chose to attach it in the center of most of our beds so we still have room to plant other things in them), wrap wire around the 2x4s tightly, you do not want it to sag as the plants get heavier. Make sure that the wire is snuggly wrapped around the 2x4, if you are going to use heavy duty staples or notch the wood this is the time to do it.

Spinach Enchiladas

This is a really different spin on a classic dish we love. We came up with these on New Year's Eve as we were eating spinach dip waiting for midnight, turns out they are as tasty as we thought they would be!

Ingredients:

10 Ounces frozen spinach thawed
8 Ounces cream cheese
1 Cup shredded white cheddar
1 Cup Jack cheese
1 Cup Mozzarella
2 Teaspoons minced garlic
1/2 Teaspoon Salt
1/2 Cup Sour Cream

1/2 Cup Salsa
Cheddar cheese (topping)
Tortillas

Directions:

Preheat oven to 350F. Mix spinach, cream cheese, white cheddar, Jack and Mozzarella cheese, garlic, salt, sour cream and salsa in a bowl and set aside. Lightly fry tortillas in oil, remove from pan, spoon spinach mixture down one side, add some shredded cheddar cheese to the top and roll tortilla. Place in a casserole dish, continue until the dish is full. Cover with more cheese and bake until cheese is melted.

It Doesn't Have To Make Sense

Have you ever noticed that when God tells us to do something or calls us to a place it doesn't always make sense? The bible is filled with these moments, from God telling Moses to strike a rock for water to holding his staff over his head so the Israelites can claim the victory, or even when Jesus tells Peter to throw his nets into the water in the heat of the day. Often times the things we are called to, the places He leads us to look ridiculous to others and even ourselves.

As we slide into Joshua 6 we find yet another instance of this as the Lord tells Joshua to lead his soldiers around the walls of Jericho - not once, not twice but every day for 7 days. Not only that, but the priests carrying horns and the ark of the covenant are to go as well. As they are making this hike around the city, the priests are to blow their horns while the people remain silent.

Day 1, they set out and make their way around the walls of the city, we can only imagine the reaction of those inside the city- they were already frightened of the Israelite's, they'd heard the stories of the Lord's provision. The story of the Red Sea and countless other times have been passed around for the last 40 years. They are frightened, they've shut up the city behind them, and they can see the procession get closer and closer, with just the sound of the ram's horns and the stamp of feet, power doesn't have to shout. They can see the dust curl into the sky from all of the feet, this is it, the moment they've all been fearing- but the Israelite's don't attack they keep walking. The people inside the city watch, waiting, ear straining for the sound of battle. But nothing happens after they circle the city they return to the camp. Day 2, same thing. I wonder how many days it took for the intimidation to start wearing off, "ahh guys, don't know if you missed it but the gate is back that way. You've only walked by it twice now..." Day 3... the Israelite's are back at it, I wonder how many times around these city walls before the whispering started. We've done this already and nothing happened. We look ridiculous. It's hot, we're tired, so when is God going to come through on His side of this. How long before the age-old question rose to the surface once again, sure He came through back there with Moses, He came through for our parents or grandparents but what about this time? Will He do it for us?

Day 4 same thing. Day 5, by now it's beginning to feel like a broken record. The people of Jericho have got to be confused because to them this looks ridiculous. This is the army they have feared, so much that they have retreated into the city and shut the gates behind them, but all they've done is walk, and blow their horns. Day 6 looks a whole light like the last 5, but what they don't know is God's getting ready to move, each step around that city takes them closer, each blast of the horns ushers it a little closer, I wonder did they know in those inky hours of darkness before dawn on day 7? Did they sense the difference? As the darkness on the horizon shifted, and the Israelite's once again prepared to repeat what they have done all week. Could you feel the anticipation in the camp, that God was going to come through just like He's promised so many times? Or feel the nervousness, that comes when we know He is going to come through, we just don't know how. Did the townspeople go about their business as normal as Rahab gathered her family into the very thing that is about to fall? I wonder did she explain the promise that she was clinging to?

God doesn't ask us to understand, He just asks us to show up, and then keep showing up- when you've been doing the same thing over and over again and nothing changes, when you've been praying the same prayer day after day but you can't see a difference, when you've walked around your personal Jericho again and again but the walls are still standing and you can't see any result, keep showing up. Keep praying that prayer, keep doing the last thing He told you to do until He is ready to move.

Jericho never falls on the first round, only in the repetitive act of faith that brings us back each day. It's in the obedience, that the Israelite's returned each time that the walls fell. It's easy to do something once and then give up when the walls don't immediately fall, when our request isn't instantly met, but the lesson of this place is in the waiting. The lesson is in the following even when it doesn't make sense and continuing when we've already done this.

God likes to use what the world deems as ridiculous, He likes taking what we would say is out of place -like Rahab and using it for His glory. So often we want to throw our hands in the air and walk away after the first round, but there are some Jericho's, some strongholds in our lives that can only be won when we buckle down and keep walking. It is here that our faith grows - I don't see the way, but I'm still here. It doesn't make sense, it's not physically possible, but this is where He has called me and this is where I will stay. I may look weird, people may not get it- but my God has promised me this place and I am going to keep walking around this city until the walls fall.

Day 7 dawns and the Israelite's head out but this time when the priests blow their horns the people shout and God moves just like He promised, and the walls crumble. The battles we fight aren't always quick, sometimes they take the day in day out kind of fighting that requires the faith to move past the disappointment of not seeing a change, we get so caught up needing to understand, needing it to make sense when we just need to keep going, to keep obeying and keep walking around our Jerichos until they to fall.

How To Add New Chickens To Your Flock

Adding new birds to your flock can be super stressful for you and your birds, so we put together this article to help you navigate your way through introducing new chickens to your flock.

If you brought home adult chickens they will need to be placed in quarantine for 7-14 days to ensure that they aren't carrying anything that your flock hasn't been exposed to. Now is the time to check them for mites under their wings and treat it so they do not transfer it the rest of your flock. Keep an eye on them over the quarantine stage to make sure they aren't showing signs of being sick or stressed from the trip to your house. Even if you know the place you got them from was clean and the birds well cared for it's best to keep them in isolation for at least a week.

Introduce them in groups, introductions can be hard on single birds so it's best if they have friends.
Only introduce new birds to your flock when they are around the same size as the ones already in your flock. Chickens can be really mean to outsiders this will help to give the new birds a fighting chance to successfully enter the flock.
Ease them in slowly, place a cage with the new birds inside near your coop where they can see each other.
Slip them into the flock at night while the rest of the flock is quietly roosting. This gives the new birds a chance to get used to their surroundings.
It helps if you introduce new birds and your existing flock in a separate area, we have a temporary fence around our coops where we have been allowing our older birds and new Black French Copper Marans get used to each other.
Some picking on the new birds is normal, but keep an eye on them if the other birds begin to draw blood you'll need to remove them from the flock until they heal up. We treat ours with colloidal silver or any ointment we use on ourselves.
If you notice one bird being more aggressive then the rest toward the newcomers, place it in isolation for a few days.
Don't rush new birds into your flock, do it in bits. You may need to pull them back into a separate cage where your other birds can't reach them.

What We Are Planting

Gardening season is upon us here in Tennessee (if you happen to live in a place that is still cold, we're sorry!), with highs already hitting the low 80's F. Over the last three weeks we have been busy prepping our flower beds and raised beds for plants and getting our seedlings started. We buy some at the store ready to go in the ground but we like to start a good chunk ourselves, this helps to keep the cost down and we know exactly what the plants have been exposed to. It also gives us a wider variety of plants to grow, instead of having to go with whatever the local stores have.

This year we are experimenting with some new varieties and we challenged ourselves to grow most of our flowers from seeds (we did buy some plants for $1-3 on clearance but we want to grow everything else ourselves).

Raspberry Pancake Recipe

Who doesn't love pancakes? Growing up they were our go-to breakfast item for sleepovers, mom would get up early and make homemade syrup with fresh fruit and delicious pancakes for all of us. It was always so good! So we thought we would share one her yummy recipes with you! These are easy to make and taste amazing- best yet they don't have any artificial colors or flavors.

Ingredients:

1 cup of organic flour
1 1/4 teaspoon of non-aluminum baking powder
1/2 teaspoon baking soda
1/4 teaspoon Himalayan Pink Salt
2 free-range cottage eggs
1 cup of cream, half and half or sour cream
1/2 cup milk
coconut oil

Direction:

Place dry ingredients starting with flour in a mixing bowl. Add your eggs (beaten) sour cream and milk to the top and let sit 5 -6 minutes. You will start to see the cream or sour cream and eggs reacting to the leavening. This will make your cakes more fluffy. Gently fold in the ingredients. Do not over mix. Cook on an oiled griddle on medium heat. When bubbles form on top and pop making air holes, flip your pancake. When finished keep on a plate in a warm oven until all are done and ready to serve.

Ingredients:

1 1/2 Cup Raspberries

2 Tablespoons Lemon Juice

1/2 Cup Honey

Directions:

Place ½ cup of blueberries in a blender and blend well, add lemon juice. In a small pan put honey and add your berry puree. To this add remaining berries and heat gently. Keep warm and pour over buttered warm pancakes.

Keep Walking and Let God

In the darkness of Good Friday, it's easy to ask why God has abandoned us -in the wake of broken dreams nailed to a tree, in the face of tragedy that struck out of nowhere in the breathtaking triumph of evil that leaves us speechless- as a hammer prepares to strike a nail that will pierce the Savior. The story of the birth of Christ that we just celebrated a few months back comes to a crushing, agonizing stop.

We know the end of the story- but His disciples didn't have the luxury of reading it like we do, they had to live it and when you are in the moment, you can know all the right answers and battered by the storm you didn't expect. We can't see around the bend, we can't see the light of Sunday while we are walking through the darkness of Friday and Saturday. All they could see is their savior, the one they had waited for, their hope, their dream that had come to pass nailed to a cross. This was the end as far as they could see.

We've all been here, wandering in the darkness, of our own personal Friday' when the pain is just too much, the disappointment too overwhelming and we find ourselves saying it can't end like this... Why God?... Why have you forsaken me? Why did you let it end here? It's easy in these moments to forget that Sunday has already been promised. No matter how dark it gets, no matter how much evil gloats at the win, Sunday is on its way.

Where there is even a shred of light the darkness is shattered. It may look like it is over, it may look like your hope is dead. The people closest to you, the people that we're supposed to love you have hurt you the most. The betrayal of a parent, the reveal of the true character in someone you thought you knew. The broken place that you just can't fix, you've been trying so hard to follow Him, the best you knew how. But now you find yourself in an unfamiliar place and what you thought was going to happen didn't happen. The mission you abandoned the boat for has ended on the cross while "It is finished" echoes in your ears.

We like to skip to the Joy of Easter and the resurrection, the triumph and avoid the darkness before, the pain and the disappointments of the dead places. The places where find ourselves not as lost children restored at the foot of the cross, but followers disappointed because our dream ended here. Everything we thought we knew, withers in this dead place and there's nothing we can do.

As we read through the crucifixion of Jesus in Mark 15 and slip into chapter 16 we find the women who followed Jesus on their way to anoint His body- they don't know He's risen, as far as they know their hope, their dream died on that cross. But here they are, returning to the place in which it was laid to rest. When we are disappointed, it's easy to throw in the towel and walk away, to hide like the disciples. The truth is we're angry, and hurt that God would let it end like this. Like the little boy in the Princess Bride, we want to interrupt shouting "Hold it! You read that wrong!" it can't end like this. So I find the faith of these women remarkable. They witnessed the same thing as the disciples and yet here they are returning to the grave, they don't wait for the others, they don't wait to be directed, they just go, even though they know that there is a stone that they can't move on their own. It is hopeless, many would say pointless, but they go anyway. How many of us need to follow in these ladies footsteps and go anyway? We don't understand it, we don't see the way, but we're going anyway... I think sometimes that's all God wants- for us to show up anyway. Even when it's hard. Even when all we see is the darkness. Even when it looks like it ended in death and disappointment. Even when we can't move the stone in the way, show up.

The same cross that represents death in chapter 15, now bridges the gap into chapter 16 where the stone is rolled away. God is already working out what you are worried about. We may not be able to see Him, and the world around us may feel so dark, it may look like it has ended on the cross- but the Lord is at work in the darkness and the cross has no power because the stone is about to roll away. Even if it ends on the cross, it can't stay there. Friday- with all of the disappointments, and pain and failure is the hinge on which the doors of God's grace will swing wide open. It can't end in the dead place, the end of the book is already written. Evil may win the battle, but it's already lost the war. The victory has already been claimed and He can take every mistake, every broken piece and turn it into a miracle.

Often we see the stone in front of us, and we know we can't move it so we walk away- He won't leave it on the cross, or in the grave, but often we do. In our panic to avoid the pain and disappointments, in the fear that we may end up in uncomfortable places, that He may lead us to a place we don't want to go, that it might end up on the cross we hide and allow the story to die here instead of returning like these women.

The devil can try to destroy what God is doing, he can attack it, he can bury it, he can even try to kill it, he'll bring people into your life to try to tear down what you've been building, to speak death over the dream the Lord gave you. He can try to send people to discourage you, he'll try to make you believe that this is where it all ends. That there is no way out of this dead place- but He can't stop what the Lord is doing so keep walking and let God move the stone.

Soar Like Eagles Book Review

Here we are gathering again talking about one of my favorite things! What is that? Reading really good books. The last book that I have finished is the book Soar Like Eagles by Terri Wangard.

This is book 3 in a three book series called Promise For Tomorrow.
I had not read the first two books in the series but feel like this can be a stand-alone as I didn't feel lost in the story at all.

This book starts out in the United States during WWII and then you follow the characters overseas as their lives unfold. In the beginning, we meet Carol and Chet at a railway station serving as a wartime canteen where she is part of a group showing hospitality to the servicemen taking the train headed off to war. The women are serving these brave souls giving their all and they use their ration cards to provide comfort for them. Carol is a writer for Chet and Carol have but a few moments talking but later as he is chugging away on the train wish that they would have shared information to keep in contact. Carol shrugs it off knowing that she too is headed out of the country and going overseas where she is joining the Red Cross in England. She is wanting to see the war up close and longs to be a part of it.

I didn't know much about the Red Cross ladies in WWII and this was something new for me. The story follows Chet and Carol. He a navigator stationed in England and Carol a Red Cross doughnut girl and how their paths cross as war wages. I don't want to give it away but I really enjoyed and recommend this book. It has romance but is a clean book. It reveals another side of the war. One fought from the air as D-day is viewed from a Plexiglas window on a bomber from four miles up and then from below when the unthinkable happens.

How To Transplant Your Seedlings To The Garden

Spring is here, which means the gardening season is upon so we thought we'd share how to transplant your seedlings into the garden! It doesn't matter if you are planting in the ground or using raised beds like us, we're going to teach you how to give your plants a chance to thrive.

Gardening can be really intimidating, especially to those who are new at it but we have a secret for you! Transplanting is super easy!

Before You Transplant

Check frost dates for your area
Check the conditions each of the plants you plan to transplant need to thrive.
Keep an eye on your local forecast if you are expecting a cold snap hold off until weather is more favorable.
If you started your plants from seeds try keeping a garden journal with the date you planted the seeds and the date you transplant them, this can help you next year when you go to plant.

Preparing Your Plants & Garden

Harden off your plants before moving them to the garden, to do this leave your plants outside starting for several hours and then leave them out longer and longer. Make sure you start off in a sheltered, mostly shady place that is protected from the wind. Slowly bring them into more and more sunlight and expose them to more windy conditions. Make sure you keep the soil nice and moist while you are hardening off your plants.
Don't water your plants as much this week and withhold fertilizer so they will get used to garden conditions
If you are planting in raised beds make sure the weeds are pulled before planting, if you are putting them in the ground you may need to till and add fertilizer or manure to your soil to help your plants thrive in their new home.

Time To Plant

If at all possible transplant your seedlings on an overcast day, or early morning hours this way they have some time to adjust before being exposed to the intense midday sun.
Dig a hole large enough to comfortably hold the roots of the plant, push the soil back covering the roots. Label where you planted each plant if you are keeping a garden journal you may want to sketch your garden and where everything is planted.
Water the soil around the seedlings after transplanting, but be careful not to damage the plants.
Fertilize every couple days using a boxed fertilizer or compost tea (use a big bucket and place some manure at the bottom, fill the rest with water allow to sit for several hours. Use this to water your plants)
Watch for late spring frosts in your forecast. You can cover your plants with sheets or build a cold frame around them, you can also run Christmas lights between your plants to keep them warmer.

Chicken Lo Mein

This recipe is pretty easy to make and really tasty. One of Brianna's favorite things to cook is Chinese, she's always experimenting with new flavors and recipes and this is one of our many favorites.

Ingredients:

3 cups chicken broth
1/4 cup coconut aminos
1 tbsp avocado oil
1/2 tsp olive oil
1 large clove garlic coarsely chopped
1/4 tsp ground ginger
1 tsp cornstarch
pepper to taste
1/2 lb (8 oz) Chinese Noodles
4-6 chicken tenders
2 heads of broccoli, fresh, cut into small pieces

Instructions:

Combine the chicken broth, coconut aminos, coconut oil, Avacado oil, minced garlic, ground ginger and cornstarch in a large pot. Place the chicken tenders on the bottom of the pot, layering the Chinese noodles on top. Heat some oil in a large skillet and saute the broccoli for 3 minutes then add a little water and steam for 4 more minutes. Bring the pot to a boil and then reduce heat and simmer for 5-7 minutes or until most of the liquid is gone and the chicken is cooked through. Remove the chicken from the pot, slice into bite-sized pieces. Stir the chicken chunks and the broccoli together and serve.

Unlikely Vessels In The Hands Of God

I think for the most part when we come to Joshua 2 we tend to skip over Rahab's profession or avoid Rahab entirely. We try to whitewash it a bit, maybe read over that bit of scripture a little faster, the wording can make us feel uncomfortable so we try to soften it.

We have to wonder why God would choose to highlight Rahab in this chapter. Surely there was someone more qualified than this bad girl of centuries past, anyone, more qualified, less messy, someone, with a better reputation. We look for a Snow White or Cinderella or maybe an Esther, but instead, we get Rahab which means insolence, contemptuous, ill-mannered, uncivil, disrespectful, and offensive. Her very name was drawn from a pagan god ra from Egypt, can you find any more of a misfit to take the lead in this story? But God places her in the lead, in all of her unlikely unusable mess.

The bible doesn't go into her story, or what brought her to this place, what pivotal thing had changed in her life that when jumping into the story she has hidden the spies on the roof of her house an act that was treasonous and would have cost her life. But when we reach verse 9 it's obvious that something has changed as she declares boldly that the Lord has given the Israelite's this land, but she goes further than that, her eyes could have told her that. The Israelites have been wandering the desert for 40 years, the stories of the Lord's provision and protection has been spreading this whole time, so now that we reach this point everyone has retreated in fear to Jericho, Rahab's town and shut the gates behind them. This is the same Jericho that in just a few chapters it's walls will fall. She goes on to say, "the Lord your God is God in heaven above and on the earth below." This is a heart change, not just what her eyes have seen. Rahab knew what she was, she could have allowed her worth, her identity, to stay chained to that life. She could have continued living the same old way, kept staying in her comfort zone, remained in Jericho, remained just one more woman forgotten in the annals of time. But something happened in that stronghold in the walls of Jericho, in the weary hours of the night, so that the idolater could recognize the voice of the one true God, hear His call and step out of the status quo, come out of the normal she had been living for so long and into His purpose for her life and in the midst all of the generations to come to the end of time. Not by accident, not by chance, but by divine plan.

This moment is no surprise to God, He knew it was coming since before she was born, every day He looked at her living out of the same mistakes, the same broken choices and He knew that this day was coming. I wonder did He count each step that took her closer to this meeting, did He shush heaven and direct their attention to this moment, this encounter that would set her on a new path?

We are so quick to declare our mistakes, our messy lives unusable. We look at the choices we regret, the places we've stumbled, the places we've fallen short of the mark and label them too big, too bold, too messy for God. But God doesn't see it like we do. Have you ever noticed that we tend to be our own worst critic?

Perhaps like the woman in the New Testament with the issue of bleeding she was desperate, something had to change, she couldn't live like this anymore. She'd heard the reports of what the Lord had been doing, she had witnessed the terror that went before the Lord's people- when the Lord is with you it doesn't matter what is in front of you it will part-. She knows what's coming, she's frightened, she knows what this God of the Israelite's can do, and she is daring to hope. She can't see the whole picture, she doesn't know that she ends up in Jesus's family line.

If the Israelite's had entered their promised land with Moses, we never would have found ourselves here looking at Rahab, in all of her messiness setting the record straight once and for all. Perhaps we aren't told all of Rahab's story so that we all find a bit of ourselves here. A piece of that insecurity we've kept buried for so long whispering doubt to our heart- "He can't use you," "You're too broken," "Your too messed up," too "unforgivable" to have worth. Perhaps it's a word that was planted in your heart as a child, declaring you worthless, purposeless, or unwanted. We see our messiness and maybe we can identify with this woman. Maybe we aren't in the same situation, our scars aren't exactly the same, but we connect with this woman who dared. Dared to challenge what everyone saw her as and instead of being only known as the harlot she steps up and becomes one of the few women known by name in scripture.

God didn't change her before He used her. He didn't wait until she had cleaned up her act- instead, He meets her where she is, like the woman at the well in the New Testament and draws her into the greatest story. God likes to use unlikely heroes, broken vessels, to proclaim His goodness. He puts us in places, we don't belong, perhaps so it's all the more obvious that it is His hand. He uses broken vessels so that when He pieces us back together there is no mistaking His fingerprints. Sometimes the very thing we are trying to skip over is what God is trying to use to set the stage. No matter how bad you've messed up, how messy your life has gotten, what titles you've been carrying like Rahab He can take them all and replace them with a new name, son and daughter.

The same God that hung the stars in the sky, set the boundaries of the ocean, and parted the Red Sea and dried up the ground so His children could walk across on dried ground looked down at Rahab and said you are perfect, you are going to take this one, I am going to use you in ways you never imagined and I have a destiny for you that will change the world. How incredible is that? The creator of the heavens and earth looked down and pinpointed one insignificant, messy woman and placed her in a role that would change the world and He's looking at you too.

Neutral Vintage Spring Farmhouse Mantel

Transitioning decor through the seasons is one of my favorite tasks, this week we are tackling our mantel. We had a lot of these colors and textures already up here but we wanted to give it a bit of a facelift. Our last look was early spring when the world hasn't quite woken up yet and nature still has a bit of that winter chill. For this one, we wanted to give a nod to spring planting, and new life while still keeping those rich neutral tones.

We kept the clock and the books at the center of the mantel, we placed a cute framed picture of our ducklings on one side and a creamy mock french birdcage on the other. We placed some cute nests here and there with blown quail eggs and a little duckling figurine. On either side of that, we sat our egg wreaths and small terracotta pots filled with moss in it that we nested our chicken and bluebird figurines in. I think it gives it such a classic farmhouse feel!

How To Raise Friendly Ducks

Ducks are one of my favorite birds to raise, I'm really not sure if there is anything cuter then their sweet little bills and webbed feet. Honestly, it gets me every time! We just added three more little cuties to our flock so we thought we'd share with you some tips on raising friendly ducks, in case you know you end up at your local feed store like we did...

How To Raise Ducks That Like To Be Handled

Hold them a lot as soon as possible! Whenever you have a free moment where you could possibly handle them do it! Moments you are watching TV or working on your computer can double as moments when you are working with your ducklings.

Feed them by hand. You can remove the feeder for a few hours and then feed them by hand before returning it to the brooder. Also feeding them treats by hand like peas, mealworms or sardines in water will get them used to being handled and they will begin to recognize that people mean treats are on the way!

Talk to them whenever you are near them, this will get them comfortable with your voice and they will recognize it as safe.
Never chase or allow your ducks to be chased, this is the quickest way to break trust with your ducks and undo all the work you have been doing.
I like to start my ducklings off in the house, so they get used to being around humans, plus they can hear us throughout the day, and I don't have to go trekking around the backyard in the middle of the night so I can hold them while I work on my laptop.
Have other people handle them as well, and give them treats so they won't just come to you and scatter when anyone else is around.

Bakery Style Chocolate Chip Cookies

Brianna is the queen of cookies at our house, she loves to get in the kitchen and mix up a batch of delicious cookie dough and try new flavors, she also does a lot of chasing us because we stole the mixing bowl... but that's beside the point. These chocolate chip cookies are AMAZING! Seriously I think they are my favorite chocolate chip cookies ever!

Ingredients:

1 Cup salted room temperature butter
1 ½ Cups of raw sugar
2 Large free range room temperature eggs
2 Teaspoon pure vanilla extract
2½ Cups organic all-purpose flour
1 Teaspoon baking soda
¼ Teaspoon aluminum free baking powder
1 Teaspoon sea salt
2 Cups organic chocolate chips

Instructions:

In a medium bowl, mix dry ingredients (flour, baking soda, baking powder, and salt) set aside. In a standup mixer with a paddle attachment, cream together butter and sugar for 2 minutes. Add vanilla and eggs one at a time and mix, scraping the sides of the bowl when necessary. Mix until smooth. With the mixer on low-speed, slowly add the bowl of dry ingredients (don't over mix the dough, just enough to combine). Mix in chocolate chips with a spoon. Chill in the refrigerator for a few minutes. The chilled dough turns out better when baked. You can refrigerate overnight or freeze them if you want to bake later. Preheat oven to 375 degrees when you are ready to bake and line a baking sheet with parchment paper or a baking mat. Place 6 chilled cookie dough balls on a baking sheet and bake for 9-12 minutes (baking time will depend on oven) until edges are golden and the center is light in color. Let cool for 5 minutes on baking sheet then transfer to cooling rack. Makes 18-20

Silent Battles

The Israelites have been wandering in the desert for 40 years, Moses has died and now Joshua is leading the people. As we reach Joshua 2, Joshua is sending two spies to look over the land but especially Jericho. It's not all that different from Moses's entrance plan - except for one key detail, my bible says that he sent them secretly. He didn't take a poll, didn't wait to see what the popular opinion was, he didn't even give everyone a chance to have an opinion, Joshua just tells them to go. The last time they sent a group, but this time he is only sending two spies. This isn't a pleasure trip anymore, he's preparing for war, he's going on the offensive.

I think it's intriguing that the bible says he sent them secretly- he was in charge, in the last chapter it was just saying that if anyone disobeyed his orders they would be put to death so he didn't need to send them secretly but he chooses to.

Not everyone needs to know what's going on, or what we are planning, the easiest way to kill something is in its infancy when it needs to be protected and guarded. So often we allow people into positions they don't belong in instead of drawing close to the Lord and letting Him water what He's already planted in our hearts. We need to be a little more careful about who we allow in our corners to see behind the curtain and witness the little beginnings, so we don't mistake their voices for His. Sometimes our friends are good to us, but they aren't good for us, and they end up hindering everything that God is trying to do.

There are times when we must fight the battles we face silently, in the dead of night with only the Lord by our side, moments when we must prepare quietly for the birth of something new before it is ready to face the world. The truth is you don't need their input, or their approval, there is only one voice you need to listen to. And when you have so many voices talking to you, telling you what to do and what they think the Lord will do, it can be hard to discern His voice amongst the noise.

Often it is the unexpected opposition, that brings you to your knees. You expect it from the enemy but when it in your own camp, from your own friends, from your family it can crumble everything that has been taking form. Perhaps this is why Joshua sent them secretly. Maybe he knew if he sent them openly and the people heard a report that they didn't like they would refuse to follow God it to the promised land like their parents had. So he sends spies ahead secretly, to go look over the land and report back to him.

It's funny how the people the closest to us, the ones that know us the best can be the same ones that scoff at what God is doing in our lives. "You can't do that you're too young," "You can't do that you are too old," "Why would He call you to this place?" "You have no experience," Like flames, these words eat away at everything that you've been building turning them to ashes in our hands until we begin to believe these words.

The spies return to Joshua in verse 23 and deliver their report which perfectly illustrates why we must be careful about who is in our corner, "The Lord has given us this whole land" they could have come back and told him he was crazy, that it was going to be too hard, that it meant fighting, that there were walls that had to come down but they don't, instead they reaffirm what the Lord has already promised. Right now they may not be able to see what exactly God is doing, they can't see how He is going to provide yet- but they know He is going to.

Make sure the people who you allow to walk with you in the silent battles are the ones that will hold your arms up when they grow weary, the ones that will declare what the Lord has already spoken even if it doesn't make sense when you are too tired to do so. We need people who will fight silently beside us and encourage us when we begin to falter. Yes you are going to have to fight this battle, yes there are giants you are going to have to slay but the Lord has given you this land. This place you don't think you'll conquer, this marriage, this relationship, this journey may not be easy, and you may feel like you have been wandering in the wilderness for so long, but this land has already been given to you by the God who opens doors no one can open and shuts doors that no one can shut and He will not fail you or abandon you (Joshua 1:5).

Far Side of the Sea Book Review

We love a good book here at the Cottage and are always excited when we have a chance to get a pre-release copy of our favorite author's newest work. We were recently given the opportunity to review the latest book by the amazing Kate Breslin 'Far Side of the Sea'. Kate is a master storyteller and this book is a great representation of her art. This is the second book in the series. The first being 'High as the Heavens' but will work wonderfully as a stand-alone book.

Far Side of the Sea is set in 1918 in England. The first World War is raging and the bombing is fierce, not just in some far away field but in small country farms, neighborhoods and large towns. Paris is being destroyed, the innocent killed.

Enter Lt. Colin Mabry. After suffering terrible injury and losing his hand in the war he is lucky to be able to even still be in the military but his future brother-in-law secures his position in MI8 doing decoding of messages that come into the facility via carrier pigeon. One day he receives just such a message but it is from Jewel the lady that saved his life in France not long ago that he had presumed dead and she is asking him for help. What follows is a wonderful tale of military intelligence, murder, drama, spies, and the spark of hope in all the darkness.

This is a really beautiful story that keeps you guessing.

A Watch That Tells A Story...

Blueberry Cream Cheese Bread

This bread is pure blueberry cream cheese delight! Super easy to make and need I say it tastes amazing! This is actually an adaption of our Cranberry Cream Cheese bread, but Brianna wanted to try it with blueberries this time.

Ingredients:

1 1/2 Cup raw sugar
2 Cups organic all-purpose flour
1 1/2 teaspoon nonaluminum baking powder
1/2 teaspoons Himalayan salt
2 Cups fresh or frozen blueberries
1 Cup grass-fed butter softened
1 8 Ounce package cream cheese
4 pastured eggs
1 1/2 teaspoon organic vanilla

Directions:

In a standup mixer, beat together butter and cream cheese until smooth, add vanilla and sugar. Add eggs one at a time mixing well in between. In a separate bowl mix, flour, salt, and baking powder. Slowly add flour mixture to wet ingredients. Fold in blueberries with a spoon. Divide evenly between 2 3 1/2 x 8 bread pans. Preheat the oven to 350, bake for 1 hour and 10 minutes or until toothpick comes out clean.
