Karo corn syrup 1 cup. (light)

Fact you must know:

you will need around 20 minutes for the preparation of this recipe and then 10 minutes to cook it. After cooking allow it to cool for about 45 minutes. If you add the ingredients as listed above, you will get up to 24 scotcheroo bars.

 

Take a vessel, add corn syrup and sugar mixture to it and place it to boil in a burner. Make sure you don’t overheat this mixture and remove it immediately from heat. The reason is too much heat or cooking will make the resulting scotcheroo very hard. Also take care when adding chocolate chips. It is to be melted in low heat to prevent scorching.

Procedure to make Football Scotcheroos

  • The first step is to get a serving plate or tray ready by spraying cooking spray to be used later.
  •  Take a large saucepan and place it over a burner in medium heat for dissolving sugar in corn syrup. Add corn syrup in the saucepan and add sugar to the saucepan. Keep stirring it continuously until the sugar dissolves very well in the corn syrup. Once the mixture boils remove it from the burner and add peanut butter and stir it very well so that it mixes with it. Then add cereal such that it is evenly coated.
  •  Now they entire mixture must be poured over the serving plate which you prepared in the first step and allow it to cool for about five minutes.
  •  After it cools for some time, now you how to make football shapes out of the cooled mixture. For that first spray your hands with cooking spray and shape the mixture into an football shape of required size. Make sure all the football shape which you make on the same size.
  •  Now take another saucepan and add butterscotch and chocolate chips to it and place it over a burner in low heat. You have to melt it by stirring continuously.
  •  Now spread the melted chocolate over the top and sides of the football shape cereal mixture which you made in the previous step.
  •  Take another small plastic bag and mix the white chocolate chips and oil in it. Place it in a microwave on high heat for about 40 to 60 seconds. Take it out and then cut the bags corner. No squeeze it over the football carefully to make the laces for the football.
  • Allow it to cool for about 50 minutes.

An optional step would be to add a mixture of coconut, water and food colouring in a plastic resealable bag. Toss it so that the colouring mixer well and appears uniformly green. Then sprinkle it in the plate to make the grass in the football playground.

Scotcheroos are dessert bars that contain rice krispies, chocolate, and peanut butter mostly. Generally, they are of butterscotch flavour, but here is a list of scotcheroos, which come to be equally tasty as butterscotch ones.

There are a variety of scotcheroos which can be made, mostly with help of butterscotch morsels or chips. Though it is one of the primary ingredients for this, yet there can be made scotcheroos without it as well.at times, butterscotch overpowers the taste.

The ingredients for this include:

  • 1 cup natural peanut butter.
  • 2/3 cup turbinado sugar.
  • 1/3 cup blue agave nectar.
  • 5 cups whole grain rice puffs(organic).
  • 10 oz bag of dairy free dark chocolate chips.

How to make it:

  • Initially sugar and agave nectar has to be combined and placed in a saucepan over medium or low heat.

Ingredients:

  • 1/4 cup butter.
  • 1 teaspoon vanilla cream.
  • 4 cups mini marshmallows.
  • 1/2 cup peanut butter.
  • 6 cups of rice krispies.
  • 1 oz bag of milk chocolate chips.

Recipe to make it:

  • Take a sauce pan and mix butter and peanut butter inside the microwave.
  • In it, mini marshmallows are added and then coated with this mixture. It is microwaved till it melts completely and becomes puffy.

Ingredients:

  • 1 cup granulated sugar.
  • 1 cup peanut butter.
  • 1 cup light corn syrup or karo.
  • 12 oz packaged semi- sweet chocolate morsels.
  • 1 cup coconut (optional).
  • 5 cups of rice krispies or corn flakes.

Steps:

  • The syrup and sugar is boiled by placing it on medium heat.

Cooking procedure:

  • In a three quart saucepan, pour the corn syrup and sugar and stir well in medium heat.
  • You can put off the heat as the sugar dissolves in and after the mixture has got cooked.

Ingredients:

  • Sugar 1 cup
  • karo corn syrup (white) 1 cup
  • creamy peanut butter 1 ½ cups
  • rice Krispies 6 cups
  • chocolate chips (milk) 1 cup
  • butterscotch chips 1 cup

 

Cooking procedure:

  • Heat sugar and karo syrup together in a heavy saucepan and keep stirring well.

  • Butterscotch Chips 6 ounces

If you wish for a milk based scotcheroos, you can have that too.

            Cooking procedure:

  • Pour the corn syrup and cup in a sauce pan and heat.

  • Next, mix both chocolate and butterscotch chips in another bowl and put in the microwave.
  • Heat for two minutes, and melt them.
  • Now spread the cereal evenly all over and then allow the dessert to cool.

When it’s hard and crispy, you can cut them into squares and have them as well as serve them.

  1. Vegan Scotcheroos:

 

Things you’ll need:

  • corn syrup 1 cup
  • Ground sugar 1 cup
  • peanut butter 1 cup
  • extracts of vanilla ½ teaspoon

 

Cooking procedure:

  • In a sauce pan, blend corn syrup and sugar and cook at low heat.

Things you’ll need:

  • Gluten-Free Rice Krispies 6-8 cups
  • Peanut Butter (You may even go for nut-butter instead.) 1 ½ cups
  • Gluten-Free Butterscotch Chips –keep an eye for barley or malt 1 bag.  Alternatively you may use Peanut Butter chips.
  • Sweet (semi) Chocolate Chips 1 bag
  • Karo Corn Syrup (Light) 1 ½ cups
  • Brown Sugar 1 ½ cups
  • Butter spray for greasing purpose

 

 Cooking procedure:

  • Take a 9*13 inch pan and grease it with butter.
  • Heat karo syrup and brown sugar together in a saucepan until the sugar dissolves completely.
  • But you got to make sure that the syrup does not harden, which happens in case of excessive heat like boiling.
  • Now without any further heat, put peanut butter in the saucepan and mix well.
  • Stir gluten free rice Krispies in the pan.
  • Combine the chips and microwave it for thirty seconds.
  • Now put the chips mixture over rice Krispies and allow some time for cooling purpose.
  • After it has become hard, you may proceed with the knife and cut into pieces.

 

  1. Cheerio scotcheroos:

 Things you’ll need:

  • corn syrup (light) 1 cup
  • ground sugar 1 cup
  • peanut butter 1 cup
  • sweet(semi) chocolate chips 1 packet
  • butterscotch chips 1 packet
  • Cheerios cereal 4 cups

  • brown sugar 1 cup

In around the second half of 1960s, scotcheroos made a big buzz. You would find them being prepared everywhere, your house, your friends’ place, your uncle’s and all around. This was the most popular and easy to make snack in those days. The stores were loaded with Kellogg’s Rice Krispies, as being the chief ingredient in the delicious sweet course. We all remember those good old days, that our grandmas used to bake mind blowing scotcheroos for us on our holidays as we trotted back home from schools.

Sadly, now these are no more on the hotlist. The restaurants we dine at, display nothing even closer to those lip-smacking scotcheroos in their menu list. Newer items have taken their place. Alas, how badly I miss it! But no more!! We all have enough reasons to rejoice now.

Unfortunately, I did not have rice krispies in my house, but I so badly wanted to have some scotcheroos especially after my sister had given me the recipe a day before. I stumbled upon the packet of rice chex and decided to go with it. Had no idea what it would turn to, but somehow wanted to take the risk. And man, what awesome taste the chex scotcheroos had,what phenomenal flavour, crisp and savoury, only making me yearn for more. And guess what, my whole family loved it. Here I’d disclose what I did with the ingredients in my closet before finally landing up with a freaking delicious food.

 

Grandma always said I could use my resources well. It’s funny that this is the one proof I’ve got. Here’s a picture of a bowl of chex in my kitchen that actually did the job. Surprised and enthused to try more such experiments!

Chex scotcheroos with corn syrup:

Ingredients:

  • Rice or corn chex 6 cups
  • Corn syrup (light) 1 cup
  • Sugar 1 cup
  • Peanut butter 2 cups
  • Chocolate chips (you can have the semi-sweet one) 2 cups
  • Butterscotch chips 2 cups
  • Vanilla extract 1 teaspoon
  • Butter for greasing purpose

 

Method of preparation you will use:

  • Take a glass bowl and a pan measuring 9*13 inches.
  • Now grease both the bowl and pan with butter.
  • Heat corn syrup mixed with sugar in a pan until the mixture starts boiling.
  • Next, add peanut butter (just 1 ½ cups) to the hot mixture.
  • Slowly pour the mixture over the cereal and empty the whole of the contents into the 9*13 inch pan.
  • Now take the remaining peanut butter (which is ½ cup precisely) and mix it with chocolate and butterscotch chips.
  • Then, put the container in the microwave to form the chocolate mix. Keep for 1 minute and 30 seconds while stirring at every interval, until the chips melt.
  • Now take out from the microwave and put in the refrigerator for a few minutes.
  • As it hardens, take out and cut into pieces.

 

A few tips:

  • In place of simply rice chex, you may go for rice krispies of the gluten free variety
  • Also for butterscotch chips, you can opt for the one that’s gluten free. Carefully check the product label before making the purchase.
  • Peanut butter could be taken in 1 ½ cups and ½ cup separately as you will use it twice.
  • Also you may top the chex scotcheroos with chocolate mix, to make it more chocolaty and delicious.
  • While choosing corn syrup from the market, read the contents of the package. See whether it has significant amounts of fructose in it which is not good for health especially for kids, as per many physicians.
  • A pizza cutter or an equally sharp knife must be chosen to cut the chex scotcheroos into proper squares. That will look nice especially if you intend to serve these to your guests.

 

Within only 25 minutes, your yummy chex scotcheroos are ready to be served.

 

Now are you just as much willing to try making chex scotcheroos without corn syrup? A different flavour you would feel, but I bet, you would still like it!

  1. Chex scotcheroos with marshmallows:

What all will you need?

  • Rice or corn chex 6 cups
  • Mini marshmellows 3-5 cups (as per your preference)
  • Sugar 1 cup
  • Peanut butter 2 cups
  • Chocolate chips (you can have the semi-sweet one) 2 cups
  • Butterscotch chips 2 cups
  • Vanilla extract 1 teaspoon
  • Butter for greasing purpose

How will you prepare?

  • The same method as you used for chex scotcheroos with corn syrup. The only difference here is that you use marshmallows instead.

 

  1. Chex scotcheroos with dark chocolate:

What all will you need?

  • Rice or corn chex 6 cups
  • Mini marshmallows 3-5 cups (as per your preference)
  • Sugar 1 cup
  • Peanut butter 2 cups
  • Dark Chocolate chips 2 cups
  • Butterscotch chips 2 cups
  • Vanilla extract 1 teaspoon
  • Butter for greasing purpose

How will you prepare?

  • Use the same method while you prepared chex scotcheroos with marshmallows of mini size.
  • Here in place of semi-sweet flavoured chocolates, you will prepare with dark chocolates for an enhanced zest.

 

  1. Chex scotcheroos with honey:

 

What all will you need?

  • Rice or corn chex 6 cups
  • Honey (as per your preference)
  • Sugar 1 cup
  • Peanut butter 2 cups
  • Dark Chocolate chips 2 cups
  • Butterscotch chips 2 cups
  • Vanilla extract 1 teaspoon
  • Butter for greasing purpose

 

How will you prepare?

  • There is not much difference in the cooking procedure of chex scotcheroos with corn syrup and without it. Just make two replacements.
  1. Corn syrup to be substituted by honey
  2. Milk chocolate to be substituted by dark chocolate

What are the ingredients?

  • 1 cup granulated sugar
  • 18 oz. peanut butter jar
  • 12 oz. box of your favourite crispies
  • 16 oz. light corn syrup bottle

Process

  • Take the baking pan and coat it evenly with a non-stick cooking spray. Then keep aside the chocolate and the butterscotch chips and measure out the puffed rice cereals.
  • Take a pot and bring the sugar and the corn syrup to boil. Once there are bubbles on its surface remove it from the heat and put it aside.
  • Stir in the peanut butter immediately after taking it out from the heat to give it a gloss.
  • Add the rice to the mixture and keep stirring it. Do not pour it all at once and coat the entire cereal evenly.
  • When done, pour it into a baking tray and spread it out evenly.
  • Melt the chips in the microwave for thirty seconds and stir until the lumps disappear.
  • When ready, pour it over the rice mixture evenly and let it cool down to cut and serve later.
