Add vodka, sweet and sour mix and ice cubes. Stir until cool. Pour contents into a highball glass, then top it up with the Muscato Sparkling. Cover and shake to mix. &lt;br /&gt;Place fish fillets in a shallow baking dish and pour the dressing over top. I liked it so much I decided to include it in our blog.&lt;br /&gt;&lt;br /&gt;To let wine "breathe" is just exposing it to air. &lt;br /&gt;&lt;br /&gt;Letting a wine breathe is most important for young, red wine. Elderly, more expensive wine will not benefit from oxidization. One 15 years or older has already mellowed.&lt;br /&gt;&lt;br /&gt;The more air the wine is exposed to, the more the tannins,(the puckering, dry feeling,) will mellow &amp; smooth out and the fruit will come forward.&lt;br /&gt;&lt;br /&gt;The easiest and quickest solution is to buy a wine aerator, like the one we use (and sell) at Seven Springs. The aerator forces air into the wine which cuts back on the waiting time.&lt;br /&gt;&lt;br /&gt;If you do not have an aerator handy, pour your wine into a glass, about 3/4 full. Wine left uncorked, in the bottle will not get as much breathing room and be able to oxidize.&lt;br /&gt;&lt;br /&gt;A general rule of thumb is about the time it takes to eat dinner. If the wine is very tannic it could be best to let it breathe for 1-2 hours. &lt;br /&gt;&lt;br /&gt;We don't suggest to let the wine breathe longer than 5-6 hours.
