Moong Dal Tikki

Serving: makes 15 tikki

Ingredients:

1. Moong dal 1 and ½ cup (soak for 5 hours)

2. Onion chopped 1 small

3. Mint leaves chopped 1 Tbsp

4. Coriender leaves chopped 1 Tbsp

5. Bread crumbs 2 Tbsp

6. Salt to taste

7. Oil 4Tbsp for shallow fry

8. Green chili paste 1 tsp

METHOD:

1. In a pressure cooker add soaked moong dal ,2 cup water and salt and cook for about 5 to 6 whistle

2. After the cooker is cooled drain off the water from dal

3. See that water is completely drained

4. Transfer the dal in a bowl add mint leaves,onion,coriander leaves, bread crumbs, salt and green chili and mix well with hand

5. If the mixture is very soft add little more bread crumbs

6. Make small tikki and if u want just keep in fridge for 10 min

7. Then in a pan add oil and place the tikki

8. And shallow fry in low heat till golden brown

9. Serve hot with chili sauce

SIMPLE MOIST CHOCOLATE CAKE

INGREDIENTS:

1. Plain flour -1 ¾ cup

2. Sugar- 2 cups (powdered)

3. Coco powder – ¾ cup

4. Baking soda -1 ½ tsp

5. Baking powder – 1 ½ tsp

6. Salt – a pinch

7. Eggs – 2 large or 3 small

8. Milk – 1 cup

9. Coffee water 1 cup (dissolve 3 tsp coffee powder with 1 cup water or can use plain water 1 cup)

10. Oil – ½ cup

11. Vanilla essence – 1 ½ tsp

METHOD: This recipe will make 2 cake 9 inches.

· In large bowl add all dry ingredients flour, sugar, coco powder, baking powder, baking soda, salt mix well keep a side.

· Then in other large bowl add all wet ingredients that are eggs beat with fork then add 1 cup of milk, coffee water, oil, vanilla essence mix well and add to the above mixture and mix well.

· Pre heat the oven 15 min before baking.

· Grease the 9 inches 2 baking tray

· And pour the mixture equally and, bake for 30 min at 180^o c.

· Cool the cake completely and dust some icing suger and serve

INGREDIENTS: (can make 10 to 12 shammi kabaab)

1. Chicken or mutton boneless pieces cubed 250gms

2. Chana dal ¼ cup soaked for 2 hours

3. Red chilli powder 1tsp

4. Turmeric powder ½ tsp

5. Ginger and garlic paste 1 tsp

6. Onion chopped 1

7. Garam masala powder ½ tsp

8. Coriander leaves chopped 1 Tbsp

9. Salt to taste

10. Oil for shallow fry

METHOD:

· In a pressure cooker add cubed chicken or mutton,chana dal, red chilli powder, turmeric powder, ginger garlic paste,onion,salt and mix well also add some water

· And cook it for 3 to 4 whistle

· Cool it and open the cooker, if any water is present dry it off in low heat

· Add garam masala and grind it

· Then add chopped coriander and make small tikki shape

· And shallow fry it

· Serve hot with lemon and onion sliced

INGREDIENTS: (FOR PIZZA DOUGH)

1. maida (flour) 1 and ½ cup

2. baking powder ½ tsp

3. yeast 1 tsp

4. salt ½ tsp

5. sugar 1 tsp

7. warm water as required

METHOD:

· In a bowl add all ingredients 1 to 6 and with warm water make a soft dough

· Keep cover in room temperature for 2 hours

INGREDIENTS: (FOR STUFFING)

1. Onion small sliced

2. Capsicum small piece sliced

3. Tomato small sliced

4. Garlic 1 cloves chopped

5. Jeera powder a pinch (optional)

6. Coriander powder ¼ tsp (optional)

7. Tomato sauce 1 Tbsp

8. Sweet chilli sauce 1 Tbsp

9. Black pepper powder ¼ tsp

10. Boiled chicken shredded (optional)

11. Oregano ½ tsp

12. Mozzarella grated cheese 5 Tsp

13. Oil 1 tsp

14. Salt to taste

METHOD:

· In a pan add oil add onion, capsicum and tomato and fry well for few minutes

· Add Jeera powder, salt ,coriander powder and black pepper powder mix well

· Then add chicken, tomato sauce and sweet chilli sauce and oregano mix well for few minutes

DIRECTION TO MAKE PAN POCKET PIZZA:

· Take pizza dough ,divide into 2 balls and roll each ball into 6 inched round

· Place the stuffing on the center and top with mozzarella cheese ,seal all 4 sides

· And place on a pan in very low heat and cover

· After 8 minutes add oil to the pan and fry all the side till golden brown

· Pan pocket pizza is ready to eat

1. ice cream (any flavour of your choice) 1 cup

2. sponge cake ½ cup

3. whipped cream

METHOD:

· take a small piece of sponge cake and crumble with your finger

· then take cup cake cups or cup cake silicon mould

· take 1 tsp of sponge crumble and nicely press with your finger

· then fill the cups with the ice cream

· freeze it for 4 hours

· then decorate with whipped cream

· serve quick

Spicy Sev Masala

INGREDIENTS:

1. sev ½ cup (thin or fat sev)

2. onion 2 Tbsp chopped

3. ginger and garlic paste ½ tsp

4. green chili paste ½ tsp

5. red chilli powder ½ tsp

6. turmeric powder a pinch

7. mango powder ½ tsp

8. Jeera powder a pinch

9. salt to taste

10. oil 2 tsp

11. water 2 Tbsp to 3 Tbsp (just to make sev soft)

12. coriander leaves 1Tbsp for garnish

METHOD:

· in a non stick vessel add oil, then add onion fry till transparent

· then add ginger,garlic and green chili paste fry for some seconds

· then reduce the heat very low and add redchilli powder, turmeric powder, mango powder,jeera powder salt and water mix well

· then last add sev and mix well cover and cook for just 3 to 4 minutes in low heat

· last garnish with coriander leaves

· serve hot with chapatti

Ellu Kozhi Fry/Sesame Chicken Fry (Kerala Style)

INGREDIENTS:

1. Chicken ½ kg (cut into small pieces)

2. Curry leaves hand full

3. Ginger chopped 1 tsp

4. Garlic chopped 1 tsp

5. Onion slices 1 large

6. Red chilli powder 1 tsp

7. Coriander powder 1 tsp

8. Turmeric powder ½ tsp

9. Garam masala powder ½ tsp

10. Ellu /sesame 1 Tbsp

11. Whole red chillies 2

12. Salt to taste

13. Oil 3 Tbsp and vinegar 1 tsp

METHOD:

· First marinate chicken with salt, red chilli powder, coriander powder, turmeric powder and garam masala powder for 1 hour

· In a non stick pan add oil ,hand full of curry leaves fry till crispy

· Then add whole red chilli ,ginger, garlic fry for few minutes

· Then add sliced onion fry till light brown

· Then add marinated chicken mix well

· Then cover and cook in low heat for 15 minutes (stir after every 5 minutes)

· After chicken is cooked make medium heat and dry off all water and roast the chicken till all masala is coated well in chicken

· Last add sesame and vinegar mix well

· And just fry for 2 minutes and switch off the gas

· Enjoy hot with chapatti and dal or as a side dish

Ice cream Pudding

INGREDIENTS:

1. Vanilla ice-cream ½ liter

2. Thick whipping cream 200ml

3. Powdered sugar 3 Tbsp

4. Pineapple jelly sachet 2

5. Water 2 and ½ cup (total)

6. Gelatin 1 Tbsp

7. Dream whip for decoration (optional)

METHOD:

· First make jelly for that, take 1 pack of jelly sachet in a bowl and add 1 cup of hot water dissolve properly and pour it in small square dish and keep it in fridge for setting for 2 hours and after 2 hour cut the jelly into small cubes

· Then again in a bowl add jelly sachet and 1 cup hot water and dissolve

· Mean while in a pan add ½ cup water and 1 Tbsp gelatin and dissolve for just a minute in low heat

· Add this gelatin mixture to the jelly mixture and keep aside in room temperature

· In a large bowl add thick whipping cream beat till its fluffy then add powdered sugar beat again

· Then add soften ice cream and beat for I minute

· Then add the gelatin jelly mixture and beat just for a few second

· Then in a serving dish place the jelly cubes

· Pour the ice-cream mixture

· Keep in fridge for 4 hours Last if u want can decorate with dream whip

· Cut and serve chilled

Gobi Mutter Butter Masala

8. Hing (asafetida) a pinch

13. Garam masala powder

14. Coriander leaves chopped 2 Tbsp

15. Oil 2 Tbsp

16. Butter 2 Tbsp

METHOD:

· First boil Gobi and mutter separately for 5 minutes adding salt

· Grind tomato, green chilli,ginger and garlic and cashew nut all together into smooth paste,(don’t add water while grinding) keep aside

· In a non stick kadai add oil and butter

· Then add Jeera ,hing,turmeric powder, Kusturi methi, coriander powder, red chilli powder and stir for few second

· Then add grind paste stir well for 5 minute

· Then add boiled mutter and Gobi mix well ,if needed add little water

· Cover and cook for 8 minutes in low heat

· Last add garam masala powder and garnish with coriander leaves chopped

· Enjoy with hot chapatti,roti or puri

Palak (Spinach) Chapatti/Roti

1. Maida (Flour) 2 cups

2. Palak (Spinach) ½ cup finely chopped

3. Salt to taste

4. Oil 4 Tbsp

5. Ghee

6. Water as required

METHOD:

· In a bowl add maida,spinach,salt,oil and add water and make a dough

· Let it rest for 10 to 15 minutes

· Divide into equal balls

· Roll each balls and give round even shape

· And place in medium heat Tava, cook both sides ,spread little ghee theboth side

· Serve hot with any vegetable curry or dal or can eat with yogurt too

Murgh Badami Pasandey

METHOD:

· Then add tomato paste, red chilli powder, black pepper powder mix well, and marinated chicken add ½ cup water, cover and cook

· After the chicken is cooked completely add almond powder and milk mix well and cover and cook for another 2 minutes

· Last add garam masala powder and switch off the gas

· Murgh badami pasandey is ready to serve with naan ,chapatti

Dahi Methi Murg

5. Water 1 to ½ cup

6. Methi leaves 1 small bunch chopped finely

METHOD:

· In a pan add oil then add methi seeds ,onion ,green chilli fry till light brown

· Then add marinated chicken stir well

· Add water and cover and cook completely

· Last add chopped methi leaves again cover and cook for 5 minutes

· Dahi methi murg is ready ,enjoy with roti ,chappathi

· bread 2 (each bread cut into 4 circle)

· mayonnaise 1 Tbsp

· capsicum finely chopped 2 Tbsp

· onion finely chopped 2 Tbsp

· tomato deseeded chopped 2Tbsp

· tomato sauce 2 Tbsp

· mozzarella cheese grated 2 -3 Tbsp

METHOD:

· cut each bread into 4 circle

· in a bowl add mayonaise,capsicum,onion,tomato,salt ,pepper powder mix well

· spread 1tsp of mixture in each bread

· top pour little tomato sauce

· last top with mozzarella cheese

· and place in non stick pan cover and cook in low heat till cheese melts

1. oats 1 cup (soak for 30 minutes and drain water)

2. ginger paste 1 tsp

3. green chilli 2 chopped

4. onion 1 small chopped

5. turmeric powder ½ tsp

6. coriander powder 1 tsp

7. jeera powder ½ tsp

8. chat masala powder ½ tsp

9. garam masala powder ½ tsp

10. roasted Chana dal powder 3 Tbsp (besan)

11. salt to taste

12. Fresh bread 3 (grind and make crumbs)

13. coriander leaves chopped 1 Tbsp

14. oil 3 Tbsp

METHOD:

· soak oats for 30 minutes and drain all water

· in a non stick vessel add oil, add ginger, green chilli and onion fry well

· then add oats, mix well

· then add turmeric powder, coriander powder,jeera powder,chaat masala, garam masala powder salt and mix well, cover and cook in low heat for 6 to 8 minutes or till water dry

· then add roasted Chana powder, mix well for 3 minutes

· and switch of the gas

· then add freshly grind bread and coriander leaves mix well

· make kebab shape (can make 10 kebabs)

· and shallow fry the kebabs both sides till golden brown

Dry Fruit Kheer

1. milk 1 and ½ liters

2. condensed milk ½ cup

3. cardamom powder ½ tsp

4. brown sev (thin) ¼ cup crushed

5. sugar (according to your taste)

6. sabudana 4 Tbsp (soak in ½ cup water)

7. pista sliced 2 Tbsp

8. cashew nut 2 Tbsp chopped

9. dated(deseeded)10 chopped

10.kewda essence ½ tsp

METHOD:

· in a deep bottom vessel add milk and boil it in medium heat

· when the milk comes at boiling point add brown sev and sabudana(drain water from sabudana,before adding to milk)

· after 5 minutes add condensed milk,sugar,cardamom powder,pista,cashew nut and dates

· and boil for another 10 minutes

· after kheer is cooled add kewda essence

· and enjoy hot or chilled

Prawns Makhani

INGREDIENTS:

1. Prawns 250 gm (clean and deveined)

2. Tomato paste or tomato puree 3 Tbsp (I used tomato paste it will give nice red colour)

3. Red chilli powder 1 tsp

4. Garam masala powder ½ tsp

5. Fresh cream 4 Tbsp (if you don’t have cream then use in ¼ cup milk add 2 tsp milk powder dissolve and use)

6. Lemon juice 1 Tbsp

7. Corn flour 1tsp dissolve in little water

8. Onion 1 chopped

9. Garlic crushed 2 cloves

10. Sugar ½ tsp

11. Butter 4 Tbsp

12. Salt to taste

NOTE: marinate prawns with salt, red chilli powder ½ tsp and ½ cup coconut milk

METHOD FOR MAKHANI SAUCE:

· In a pan add butter 2 tbsp then add tomato paste or tomato puree, salt, red chilli power 1 tsp,garam masala powder ,fresh cream, lemon juice and mix well

· Then add corn flour mixture and stir well and switch off the gas

METHOD:

· In a non stick vessel add butter ,chopped onion fry till soft

· Then add garlic crushed stir well

· Then add marinated prawns and cook for 5 minutes

· Then add MAKHANI SAUCE and sugar ,stir well

· Cover and cook for 4 minutes in low heat

· Last garnish with coriander leaves chopped

· Enjoy with chapatti

METHOOD:

· In a non stick pan add oil then onion chopped fry till transparent

· Last add green chilli , capscium,little water and cook for more 5 minutes

Chicken Gravy Masala

1. Chicken ½ kg (cut into medium pieces)

2. Onion1 sliced

3. Ginger and garlic paste 1 Tbsp

4. Fresh coconut or dedicated 2 Tbsp

5. Cashew 10 or khus khus 2Tbsp

6. Sesame seeds 1 Tbsp (optional)

7. Green chili paste 1 Tbsp ( taken 4 green chillies)

8. Red chili powder 1 tsp

9. Garam masala powder ½ tsp

10. Tomato puree or tomato paste 3 Tbsp

11. Yogurt 1 cup

12. Water ( add according to the gravy )

13. Salt to taste

14. Oil 6 Tbsp

15. Coriander leaves chopped 1 Tbsp

16. Mint leaves 1 Tbsp chopped

METHOD:

· In a non stick vessel add oil fry sliced onion till light brown and take it off and grind into smooth paste with adding little water, keep aside

· Mean while roast coconut, cashew and sesame seeds in a pan and then grind into smooth paste with adding little water and keep a side

· In same vessel add ginger and garlic paste fry well then add coconut cashew paste and mix well

· Then add green chilli paste, red chilli powder, garam masala powder,coriender leaves, mint leaves, brown onion paste, tomato puree or paste and stir well till oil comes on the top

· Then add yogurt and continues stirring for 3 minutes

· Add chicken and water, cover and cook in medium low heat for 20 minutes

· Keep in stirring in between

· Last garnish with coriander leaves

INGREDIENTS: (FOR DOUGH)

1. Maida 1 and ½ cup

2. Yeast 1tsp

3. Sugar 1tsp

4. Salt 1tsp

5. Egg 1

6. Oil 2 Tbsp

7. Warm water

METHOD:

· In a large bowl add all ingredients 1 to 6 and with little warm water make smooth dough and cover and keep for 2 hours or till dough rise

INGREDIENTS :( FOR FILLING)

1. Butter 1tbsp

2. Onion finely chopped 2 Tbsp

3. Chicken breast cubed 1 cup (small cubes)

4. Salt to taste

5. Black pepper powder ½ tsp

6. Milk ¼ cup

7. Coriander leaved 1 Tbsp

8. Green chilli 1 finely chopped

9. Oil for deep frying

10. Egg 1 beaten (to dip the donuts)

METHOD:

· In a pan add butter add onion fry till soft

· Then add small cubes of chicken fry for 5 minutes

· Then add salt ,black pepper powder ,milk ,coriander leaves and green chilli and cook for 3 minutes

· Cool it

HOW TO MAKE CHICKEN DONUTS

· After keeping dough for rising for 2 hours, punch down it

· And roll it

· And with the cutter cut into small circle

· Take 1 circle flatten with hand

· And fill little filling in the center

· Spread little water on the edges

· Top with 1 more circle and press it

· Make rest the same

· Then dip in beaten egg

· Deep fry it

· Serve hot with chilli sauce

· Can use any filling of your choice

Red Hot Chicken Masala

2. Kashmiri chilli 8 (soak in water for 2 hours and cut and remove all seeds)

3. Onion 2 chopped

4. Ginger and garlic paste 1 Tbsp

5. Tomato puree 1 cup (puree 2 large tomato)

6. Tomato chopped 2

7. Garam masala powder 1 tsp

8. Coriander powder 1 tsp

9. Water 1 to 2 cups

10. Cashew nut or peanut powder

11. Salt to taste

12. Oil 6 Tbsp

METHOD:

· First grind together deseeded kashmiri chilli and onion into smooth paste(don’t add water)

· In a non stick vessel add oil add Kashmiri chilli and onion paste, sauté for 5 minutes

· Then add ginger and garlic paste sauté for few seconds

· Then add tomato puree and tomato chopped and sauté for 6 minutes

· Then add garam masala , coriander powder, salt and chicken

· Fry it till oil seen on the surface this will take almost 10 minutes

· Then add 1 to 2 cups water and cover and cook the chicken completely

· Last add cashew nut or peanut powder

· Serve hot with chapatti,roti,puri
