<strong>Farm Updates</strong></h2>
<p>Well, it&#8217;s been another hot week.  We&#8217;ve gotten a little bit of rain this week but honestly, not enough.  We started watering last week by hand.  Not fun at all.  But definitely needed.  Some seeds we planted last week still haven&#8217;t come up.  When it has rained here, it just evaporates so fast it doesn&#8217;t help the plants and seeds enough.  We are probably going to try and get some irrigation going if everything pans out this weekend.</p>
<h2><strong>Recipes</strong></h2>
<p>Eating fermented food is a great way to get probiotics at every meal.  This week I&#8217;ll share with you some recipes that I have found for fermenting pickles.  Before we get to the recipes however, I want to share an article on the benefits of <a href="http://shadycreekfarmandnursery.us1.list-manage1.com/track/click?u=e803a698f502645a0d0131a78&amp;id=ce2a7a2c38&amp;e=eae5866241" target="_blank">fermenting foods</a> from Nourishing Days.</p>

<h2><span style="text-decoration: underline;">Farm Updates</span></h2>
<p>This week we&#8217;ve been starting more seeds in the field.  We started some more squash and zucchini seeds.  Also, we planted some Purple Queen beans and Carson Yellow Wax beans this week.  I can&#8217;t wait to see both of these beans on the farmers market table.  I know we are a little late planting them but we&#8217;ve got some other green beans already in the field.  Also, we hopefully will transplant a good amount of plants today.  We have loads of tomatoes, hot peppers, more squash, cucumbers, and who knows what else that we need to get in the ground today.  Oh, and guess what I saw in the field yesterday?  Watermelons and Canteloupes!!  But they aren&#8217;t ready yet and I&#8217;m not sure if my mother-in-law will let me bring the canteloupes to market since she planted them.</p>
<p>Check out the picture I took yesterday!!  It looks way bigger than it actually is.  It&#8217;s not quite the size of a baseball.</p>

<p><strong>Farm Updates</strong></p>
<p>Well, this week has been so full of surprises.  A week ago today, I was let go from my 8 to 5 job because of budget cuts.  God is so good.  That has been such a blessing for us.  I finally get to be at home with my children and my husband.  I get to help Todd so he doesn&#8217;t have to wait till 5:30pm to do stuff so I can watch the kids.  We&#8217;ve been wanting this for a long time but I didn&#8217;t want to make the decision because I wanted it to be what God wanted for our lives and not what I wanted.  So, this is obviously what God wants. This is really helping us to plant more and spend more time really working on the farm.   It will take a little while to get everything coming in but when it does, I hope to have y&#8217;all loaded up at the markets and even on the farm.</p>

<h2><strong>Recipes</strong></h2>
<p><span style="text-decoration: underline;"><strong>SWISS CHARD IN DIJON MUSTARD SAUCE</strong></span><br />
from &#8220;More Recipes from a Kitchen Garden&#8221;, by Shepard &amp; Raboff</p>
<p>2 1/2 T olive oil<br />
1 large bunch green onions, chopped<br />
2 cloves garlic, finely chopped<br />
1/2 lb. mushrooms, sliced<br />
1 bunch of chard, finely shredded (including stems)<br />
1 T dijon mustard</p>
<p>Heat the oil in a large skillet. Sauté the green onions and garlic for 2 minutes until softened and tender. Add mushrooms and cook 4 to 5 minutes more. Add chard, cover and cook over low heat for about 5 minutes, or until chard is tender but still crisp. Mix in mustard and heat 1 to 2 minutes more. Stir and serve immediately.</p>
<h2><strong>Farm Updates</strong></h2>
<p>It has been one hot week.  We&#8217;ve tried to stay out of the heat as much as possible this week but you know we can&#8217;t keep out of it completely.  Unfortunately.</p>
<p>Around 6pm or so yesterday, I took my boys outside and sat on the porch while the oldest played around.  It wasn&#8217;t too bad just sitting there. Not too muggy.  We went in for about 30 minutes and then came back out for us to plant some seed.  In those 30 minutes, it got so humid.  It was just crazy that it got that humid in that little bit of time and I thought it might get a little cooler, not hotter.  Anyways, I started 54 zucchini and squash seed yesterday evening.  And while I was seeding, Todd was bush-hogging the out of control weeds in the fields where we haven&#8217;t planted yet.  Hopefully, we&#8217;ll be able to plant some more stuff in the field this weekend.</p>
<p>In the next couple of weeks I hope we&#8217;ll have green beans, maybe a few early tomatoes, squash, zucchini, and maybe cucumbers to bring to the markets.  We do our best to grow these vegetables but it isn&#8217;t really in our hands.  God provides everything these plants need to survive and thrive and feed us.  Honestly, that&#8217;s what I love most about doing this, watching God&#8217;s handiwork.  No matter what we do, sometimes the plants just won&#8217;t thrive and then sometimes we don&#8217;t do a thing, and they turn out to be the most gorgeous plants and vegetables that you&#8217;ve ever seen.</p>

<p>Todd will be at the <a href="http://www.facebook.com/pages/Mount-Holly-Farmers-Market/143897543531">Mt. Holly Farmers Market</a> and I will be at the <a href="http://www.ncagr.gov/markets/facilities/markets/charlotte/fcharmkt.htm">Charlotte Regional Farmers Market</a> Saturday from 8am til 12pm.  I will be in the <a href="http://www.ncagr.gov/markets/facilities/markets/charlotte/fcharlay.htm">Open Air Building A</a>.</p>

<h2>Farm Updates</h2>
<p>This week has honestly flew by.  I feel like we have so much to do on the farm and no where near enough time to do it all.  Especially since I work an 8 to 5 workday and then come home to work some more on the farm.  That makes it just a tad bit more difficult. <img src='http://www.shadycreekfarmandnursery.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Well, I&#8217;m hoping that some of the squash and zucchini we planted a couple weeks ago will be getting ready to produce some awesome vegetables for us <span style="text-decoration: underline;">SOON</span>!  I can&#8217;t wait.  And Todd just sent a picture to me of some huge broccoli in the field.  The green beans are looking really good also.  Hopefully they&#8217;ll be ready to bring to the markets in another couple weeks.</p>

<p><strong><span style="text-decoration: underline;">THE BEST EVER TURNIPS</span></strong></p>
</div>
<div>Source: JustVegetableRecipes.com<br />
Serves: 4</p>
<p>2 pounds White turnips – peeled, cut into 1/2&#8243; pieces<br />
6 – 12 tablespoons Butter<br />
1 Garlic head &#8211; peeled<br />
Salt to taste<br />
Freshly ground black pepper to taste</p>
<p>Bring a lot of salted water to a boil and parboil the turnips for 7 minutes; add the garlic and boil 1 minute longer; drain. Melt 3 to 6 tablespoons of butter and cook the garlic and turnips, covered, over low heat for 5 minutes.<br />
Transfer turnips and garlic to a food processor and puree until smooth, adding 4 more tablespoons butter with the machine turned on. Season well with salt and pepper.  Serve immediately.</p></div>
